JANUARY 13, 2013 - HONG KONGINTRODUCTIONIt is with great pleasure that we presentthe first edition of our revamped auctioncatalogue of fine wines.Spink Fine Wines, a fully owned divisionof Spink, will bring the expertise andintegrity that we are synonymous with inthe world of collectables.Spink was founded over three hundredyears ago, in 1666, almost a full centurybefore the Prince de Conti paid 8,000livres outbidding Madame dePompadour, the mistress of Louis XV of France, for theDomaine Romanée-Conti. Sadly, DRC was not boughtin a Spink auction, but we are always looking for newideas, in terms of business strategy, client services andtechnology. Like the good vine Spink has deep rootsand is not averse to a bit of flamboyance from time totime.Over the years travelling to Asia, where we have beenholding auctions for several decades in Hong Kong andSingapore, I was often asked by our Asian based clients,“why don’t you start a wine business? It would fit sowell in your portfolio, you know where there are a lotof rare wines, we trust you, and the vast majority of yourcustomers are also wine lovers”. Finally we did it withthe recent acquisition of Oeno China in Hong Kong, and this is the first fully rebranded edition of our newcatalogue, under the direction of our two wine expertsAnna Lee, Vice-Chairman, based in Hong Kong, andGuillaume Willk-Fabia, Director of our Fine WinesDepartment.I trust you will find our catalogue slightly different fromour main competitors. We shall try to stay away fromthe recent and speculative wines, which account formost of the market volume, to focus on rare bottles forcollectors or ready to drink treasures. So our auctionswill be necessarily smaller, but hopefullymore interesting. As we do in our other 60 plus non-wineauctions per year, the focus will be onprovenance and quality with a specialemphasis on relationships with theChâteaux. As you will see in this catalogue forexample, a very rare original woodencase of 6 bottles of sought afterChâteau Cheval Blanc 1947 and anoriginal wooden case of Châteaud’Yquem 1929 are on offer. Both ofthese have been checked by the Châteaux and thesuccessful purchaser will be offered a private tour of theChâteau. Similarly we are offering very rare Imperialesdirectly from the cellar of the newly classified ChâteauPavie as a Premier Grand Cru Classé A. It was a welldeserved promotion and to celebrate this rareachievement, the owners of Château Pavie would bedelighted to welcome the buyers of the Imperiales totheir estate. While it is our current intention to have all our wineauctions in Hong Kong, and maybe occasionally inSingapore, a good proportion of the lots are sourcedfrom our clients in Europe, so located in the EU. Henceour collectors from Europe and USA have a chance tocompete on some lots with our clients from Asia.I hope you will recognise Spink’s unique style in ourwine catalogues, and enjoy the sale.Olivier D. AN EVENING OF EXCEPTIONAL WINESHFINBONVTSTSHSMSLMSLSLevels for Bordeaux BottlesHF – High FillThe standard level for young wines or older bottles recorked at the Chateau.IN – Into NeckPerfect level for a wine of any age. Indicates very good storage conditions. Outstanding level for a wine 10 years of age or older.BN – Base of NeckGood level for a wine of any age. For wines 10 years of age or older, indicates perfect storage conditions.VTS – Very Top ShoulderAcceptable level for red Bordeaux wines around 20 years old.HS – High ShoulderAcceptable for wine over 25 years old. Good for wine over 40 years old.MS – Mid ShoulderNot unusual for wines over 40 years old. Could indicate early signs of cork failure.LMS – Low-Mid-ShoulderUsually indicates deterioration of the cork.LS – Low ShoulderMay indicate poor storage condition and possibly an undrinkable wine.Levels for Burgundy BottlesThe shape of Burgundy bottles does not allow for a level rating system based on the shoulder of the bottle; levels are describedin terms of centimeters below the cork.Generally, Burgundy bottles with a fill level of 2.5cm or above are considered normal for wines younger than 10 years of age.Wines more than 15 years old of age with fill levels of between 4cm and 6cm are generally considered to be sound provenance, though consideration should be given to the clarity and colour of the wine in the bottle, as well as the condition of the cork.Burgundy bottles with fill levels lower than 6cm may be at risk of being damaged or undrinkable.< 2cm considered an excellent fill for any age.< 3cm a perfectly normal fill for wines 10 years of age and older. It is an excellent fill level for wines 25 years of age or older< 4cm considered a normal fill for wines more than 20 years of age and excellent for wine more than 35 years of age.On the other hand, it should be the cause for concern in wines 15 years and younger.< 5cm not uncommon in older wines of 30 years and more. At this level, some oxidation is likely to have occurred and theremaining wine may be fragile at best and not enjoyable at worst.< 6cm a poor fill level for any wine and not recommended for purchase unless extremely rare.

Unquestionably the greatest Moutonsince the 1986 and 1982, this majestic effort willundoubtedly close down, but enjoy an exceptionally longlife.” Anticipated maturity: 2012-2050.2 EUChâteau Mouton Rothschild vintage 1996Pauillac, 1er Cru Classé94/100 points Robert Parker, The Wine Advocate,April 1999Lying in a private cellar in Paris, France6 bottles in original wooden caseTasting Note: “The 1996 Château Mouton-Rothschild isshowing surprising forwardness and complexity in itsaromatics. It possesses an exuberant, flamboyant bouquetof roasted coffee, cassis, smoky oak, and soy sauce. Theimpressive 1996 Mouton-Rothschild offers impressivearomas of black currants, framboise, coffee, and newsaddle leather. This full-bodied, ripe, rich, concentrated, superbly balanced wine is paradoxical in the sense that thearomatics suggest a far more evolved wine than theflavours reveal.”HK$19,500-22,500Tasting Note: “Perhaps the most beautiful packaging everon a Bordeaux bottle, Baroness Philippine de Rothschildliterally produced a work of art in the gold-engraved bottleof 2000 Mouton Rothschild. Of course, one can’t drink theglass, but this is a top-flight Mouton Rothschild, eclipsedonly by the 2006 and 2009. A rich, tannic, earthy style, with loads of crème de cassis and floral notes, the finalblend of 86% Cabernet Sauvignon and 14% Merlot is afull-bodied wine with plenty of coffee, earth, chocolatynotes, and still plenty of tannin to resolve. I gave it ananticipated maturity range of 2015-2050 back in 2003,and that looks on target.”HK$6,500-11,50017

AN EVENING OF EXCEPTIONAL WINES33 EUChâteau Lafite Rothschild vintage 1996Pauillac, 1er Cru Classé100/100 points Robert Parker, The Wine Advocate #122, April 1999Lying in a private cellar in London, England6 bottles in original wooden caseTasting Note: “Tasted three times since bottling, the 1996Lafite-Rothschild is unquestionably this renowned estate’sgreatest wine. As I indicated last year, only 38% of the cropwas deemed grand enough to be put into the final blend, which is atypically high in Cabernet Sauvignon (83%Cabernet Sauvignon, 7% Cabernet Franc, 7% Merlot, and 3% Petit Verdot). This massive wine may be thebiggest, largest-scaled Lafite I have ever tasted. It willrequire many years to come around, so I suspect all of uspast the age of fifty might want to give seriousconsideration as to whether we should be laying awaymultiple cases of this wine.It is also the first Lafite-Rothschild to be put into a newengraved bottle (designed to prevent fraudulentimitations). The wine exhibits a thick-looking,ruby/purple colour, and a knock-out nose of lead pencil, minerals, flowers, and black currant scents. Extremelypowerful and full-bodied, with remarkable complexity forsuch a young wine, this huge Lafite is oozing with extractand richness, yet has managed to preserve itsquintessentially elegant personality. This wine is evenricher than it was prior to bottling. It shouldunquestionably last for 40-50 years. Anticipatedmaturity: 2012-2050. The wine of the vintage?”HK$47,000-55,0004 EUChâteau Cheval Blanc vintage 1996Saint-Emilion, 1er Grand Cru Classé (A)90/100 points Robert Parker, The Wine Advocate,April 1999Lying in a private cellar in Paris, France6 bottles in original wooden caseTasting Note: “The elegant, moderately weighted 1996Cheval Blanc reveals a deep garnet /plum, evolved colour.Quintessentially elegant, with a complex nose of blackfruits, coconut, smoke and pain grille, this medium-bodiedwine exhibits fruit on the attack, substantial complexity, and a lush, velvety-textured finish. It is very soft and evolved for a 1996. JANUARY 13, 2013 - HONG KONGPhoto courtesy of Domaine Clarence DillonChâteau Haut-Brion vintage 19821982 An Outstanding YearIt is rare that a year is so conducive to vine growth: dry in April, fine and dry in May, a few storms in June, before a sunny andhot July - on the 8th of this month the temperatures reached 40C. August was cooler, but the weather was fine, and even moreso during harvesting. These were ideal conditions for a great wine.Domaine Clarence DillonClaret from a Private Cellar5Château Haut-Brion vintage 1982Pessac - Graves, 1er Cru ClasséLevel, one into neck or better, badly torn labels, undamaged capsule94/100 points Robert Parker, Wine Advocate #94,June 2000Lying in a temperature controlled wine cellar in Hong-Kong1 bottleTasting Note: “This was one of the best showings yet forthis wine, which, to my palate and mind, has never livedup to its eary potential. In this tasting, the 1982 revealeda healthy dark ruby colour with lightening at the edge.Intense, persistent aromas of saddle leather, roasted herbs, scorched earth, and sweet black currant fruit werefollowed by complex flavours of minerals, spice box, andcedar. Although this medium-bodied, fleshy, ripe, concentrated wine is not a blockbuster, as it unfolds, itreveals layers of flavour in addition to this vineyard’s telltalecomplexity. Anticipated maturity: 2002-2020.”HK$3,500-4,5006Château Haut-Brion vintage 1982Pessac - Graves, 1er Cru ClasséLevel, one into neck or better, badly torn labels, undamaged capsule94/100 points Robert Parker, Wine Advocate #94,June 2000Lying in a temperature controlled wine cellar in Hong-Kong1 bottleSee Tasting Note from lot 5HK$3,500-4,5007Château Mouton Rothschild vintage 1982Pauillac, 1er Cru ClasséLevel into neck, ripped label around the bottom over3cm from the marking of the wooden case, goodcapsuleLying in Hong-Kong in a temperature controlled winecellar1 bottleHK$5,000-6,0009

It has thrown off the backward, youthful stylethat existed during its first 25 years of life, and over thelast 4-5 years has developed such secondary nuances ascedar and spice box. The crème de cassis, underlying floralnote, full-bodied power, extraordinary purity, multilayeredtexture, and finish of over a minute are a showcasefor what this Château accomplished in 1982. The wine isstill amazingly youthful, vibrant and pure. It appearscapable of remaining fruity and vibrant in 2082! ThankGod it is beginning to budge, as I would like to drink mostof my supply before I kick the bucket. This is a great, stillyouthful wine, and, on occasion, one does understand thehierarchy of Bordeaux châteaux when you see thecomplexity and brilliance of this first-growth. Many experts consider this phenomenal terroirto be nearly as great as that of Ausone. Made from a classicblend of 60-70% Merlot, 20-25% Cabernet Franc and therest Cabernet Sauvignon, this inky/blue/purple-colouredblockbuster reveals wonderful notes of blackberries, crushedrocks, roasted meats, spring flowers, cedar, blueberries, graphite and a hint of vanilla. With extravagant fruitand high extract as well as a hint of minerality, thisstructured, massively intense effort is typical of all theluxurious, perfect or nearly perfect Pavies produced underthe Perse regime (which began in 1998). While built for40-50 years of cellaring, the softness of the vintage and itsflamboyant style is slightly less apparent in the 2009 Paviethan in some of the other Perse wines. With over 90 acres in vine, this is one of thelarger of the premier grand cru classes in St.-Emilion. Aprodigious effort, the 2006 does not have the sucrosite of the2005, 2003, or 2000, but it would not be embarrassed iftasted side by side with either of those two titans. A densepurple colour as well as an extraordinary perfume ofcrushed black currants, liquorice, wet stones, and subtlebackground oak are found in this tannic, dense,masculine-styled 2006. This wine is easily identifiable because of itsremarkably exotic, over-ripe, sweet nose of black fruits, coffee, tobacco, mocha, and Asian spices. Anextraordinarily dense, opulent, and rich wine, with layersof creamy fruit, it behaves more like a 1947 Pomerol thana structured, powerful, and tannic 1945. Among the first-growths in1947, it is superior to Lafite and Latour, and just behindthe great Mouton. Quite perfumed, rich, and full bodied, the 1947 Margaux is capable of another decade ofevolution. One slightly damaged capsule.98/100 points Robert Parker, The Wine Advocate #95, October 1994Lying in a private cellar duty free in Bordeaux, France12 bottles in original condition in original wooden casewith straw sleeves.Tasting Note: “Dark garnet with an amber edge, the1959 Latour reveals a touch of volatile acidity in the nose, along with aromas of melted caramel, tobacco, andjammy red and black fruits. As the wine sat in the glass, notes of minerals, coffee, spice, and underbrush emerged. There is still copious tannin in the finish (I am not sure itwill ever be fully resolved), but this sumptuous, complex, fragrant, super-rich Latour cuts a broad swath across thepalate. Fully mature, it is best consumed over the nextdecade.”HK$360,000-410,000——————————21

After a few hesitations thewines have proved magnificent just about everywhere.Very hot during the harvest. Very concentrated wines.A wine very much like those of this vintage, very big, matured colour. The heat during the summer madeharmonious, sweet wines leaving plenty of multipleflavours on the palate. At the very end of the tasting, itstarts showing its age. This wine has reached its zenith.Drinkable now.”Domaine Clarence Dillon“It is interesting to note that many 1959s, much like the1982s, were maligned for lacking both acidity and agingpotential. How does one explain the fact that many 1959sare less evolved, as well as richer, fresher, and morecomplete than many 1961s For example, as great as the1961 La Mission is, the 1959 is a richer, deeper-coloured,more concentrated and powerful wine. It needs at least 3-5 more years of cellaring to reach its plateau of maturity.Spicy and super-concentrated, with a dense, plummypurple colour, this young, broodingly backward,formidably-endowed wine should be at its best before theend of the century and drink well for the first 20-25 yearsof the next millennium. JANUARY 13, 2013 - HONG KONGBORDEAUX SWEET“A wine that is just hitting its adolescence, this spectacular Yquem is the greatest vintage of the early 1980s and thebest Yquem since 1976 and before the trilogy of 1990, 1989, and 1988. The wine has a medium-gold colour and anextraordinary nose of honey-dripped coconuts, pineapple, caramel, crème-brulee, orange marmalade, and no doubt afew other items. Unctuously textured and full-bodied, with massive richness and great sweetness, this is a seamlessclassic that will probably be immortal. My point score continue to go up, but the wine is still young, although I wouldcall it just approaching the adolescence. Anticipated maturity 2005 - 2075. Long and persistent onthe finish, this is a very fine Yquem that might be overlookedbetween the 2007 and 2009, but a superb Sauternesin its own right. Drink 2014-2050.”“Tasted single blind against its peers. The Yquem 2008 iseasy to spot in blind line-up: it is (to quote Tina Turner)simply the best. It has a subtle, delicate but very prettybouquet with fine definition and astounding minerality. The palate is beautifully poised, tense and tightly coiled onthe entry and then it just explodes in the mouth with pure, unbridled, joyous botrytized fruit struck through with asilver thread of acidity. The1997’s light gold colour is accompanied a gorgeousperfume of caramel, honeysuckle, peach, apricot, andsmoky wood. Full-bodied and unctuously-textured, withgood underlying acidity as well as loads of sweetness andglycerin, it looks to be a great vintage for this renownedSauternes estate. AN EVENING OF EXCEPTIONAL WINESBURGUNDYJust under half the vineyard (3.51 hectares out of 8.03) of Richebourg belongs to Domaine de la Romanée-Conti, spread overseveral plots. This is always a robust wine, deeper in colour than the Romanée-Saint-Vivant but not necessarily as elegant. Thevines currently average 45 years old. About a third of the holding remained in ungrafted vines 1946, with two cuvees beingproduced - a regular Richebourg and a version labelled Richebourg Vieux Cépages. When these vines were grubbed up andreplanted after the Second World War cuttings were taken from la Romanee-Conti which was also being replanted.Personality DRC website: “This immediate neighbour of laRomanée-Conti escorts Her Majesty with good-naturedribaldry. Lalou Bize-Leroy and Aubert de Villaine seem to have everythingtightly within their grasps, so it is unlikely that some of the lapses in quality control that occurred previously will resurface. I amsure they still cannot understand why their estate is so frequently singled out for malicious attacks, but no one should have anytrouble appreciating the domaine’s 1985s, which are their best wines in decades, even surpassing their sensational 1978s. So while I concede the possibilitythat such profound bottles do exist, I am frankly dubious. Ahighly complex nose offers lovely spice on the completely maturearomas with equally complex and fully resolved medium-bodiedflavors that deliver a long, fine and pure finish. There is nobenefit to holding the ‘85 further and even from magnumformat (see herein), I would be inclined to begin looking foroccasions to enjoy it; to be clear, it’s not in decline but it is asgood as it’s ever going to be. The vineyards selected were those where the terroir - the French term that roughly translates to the total environmentof a place, including soil, climate, aspect, vine and even history - “is most clearly perceptible in the wine”. Based on theirown tastings, along with recommendations from world-wide industry experts, Wine & Spirits noted that “for all their flavourand richness…there is nothing blunt about them (1860 Vines Shiraz)… they share a transparency that lets the soil showthrough”. AN EVENING OF EXCEPTIONAL WINESFine Australian wine from a Private CellarPenfolds Grange Shiraz vertical collection in Magnum1979 - 1999* The 1990 Penfolds Grange was named ‘Wine of the Year’ in1995 by the world’s most authoritative wine magazine, WineSpectator, scoring 97/100 and becoming the only wineoutside California and France to take the award.* “Penfold’s Grange is the greatest red wine of Australia. Thiswine is a leading candidate for the richest, most concentrateddry red table wine on planet Earth. Penfolds’ Grange takesopulence and decadence to the limits, and for that reason hasreplaced Bordeaux’s Petrus as the world most exotic andconcentrated wine. It is interesting to note that a massive, extracted and overwhelming as this wine can be in this youth, with 10-15 years of age it takes on a more civilized character, resembling a great Pomerol or older hermitage.”Robert Parker* “Penfolds Grange has maintained its place as Australia’s mostprestigious red wine over four decades. An Australian icon,Grange represents a tradition in winemaking that is totallyuncompromising. Grange has bypassed the fads and trends ofmodern winemaking in the sense that it has maintained anintegrity of style and remained true to its origins in the mind ofMax Schubert. An unusually wet (but hot) growing season, the1979 was sourced from the Kalimna and other Barossavineyards, the Clare Valley, Magill Estate and the McLarenVale”Penfolds’ websiteWWW.SPINK.COM

JANUARY 13, 2013 - HONG KONGTasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1980The 1980 Grange is predominantly Shiraz with a smallamount of Cabernet Sauvignon (4%) from the Kalimna andother Barossa vineyards, the Clare Valley, Magill Estate,McLaren Vale and Coonawarra. A generally good growingseason with fine and warm conditions, was followed by a coolvintage.Considered an outstanding vintage, Tim White said of it at atasting in September 1999,Deep crimson brick red. Intense plum, blackberry/ menthol, mocha /liquorice aromas, confection-like small berries, cherriesand plums has a hint of treacle. Smooth and creamy, withflavours of mulberries, cassis and plums, it’s obviously a coolerseason Grange wrapped around by sweet oak. It opens up aftertime in the glass, the tannins are pronounced but offset by stylish, rich, concentrated dark berry chocolaty fruit. First vintageadopting consistent use of signature red Penfolds capsules.Winemaker Comments by Don Ditter: “Medium red/purple.Intense, fragrant chocolate cherry/prune dried fig aromas.Dense and chewy with generously ripe, prune/ chocolate fruitflavours, pronounced grainy tannins and superb length.”Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1981Winemaker John Duval called the 1981 a big, tannic Grange.A warm to hot, drought-affected summer yielded a powerfullyconcentrated wine with chocolate raisin fruit, earthy nuances, and pleasant oak.Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1979“A blend of 87% Shiraz and 13% Cabernet Sauvignon, fromsuperior vineyards, matured for eighteen months in newAmerican oak hogsheads.Alcohol 13.00% Acidity 5%60g/L pH 3.72Memorable for being the last of all vintages to be bottled in theoriginal off-white foil capsules, and the first vintage to be bottledin magnums, nowadays there are usually six hundred magnumbottled each year.Deep brick red. A complex, aromatic wine with dark chocolatearomas and lifted rum and raisin fruit characters. Developingaromas of raspberries as the wine breathes, plums and vanillaoak, deep briar, blackberry and toast, earth and amber fruit, thebouquets are varied and complex. The palate is bitey and solidwith plenty of fruit sweetness, compounds of earthy chocolatecomplexity and ample (but drying) tannins.”Winemaker Comments by Don Ditter: “Medium red/purple.Complex, developing aromas with plenty of soft, slightly lifted,tobacco/berry/gamey fruit. Highly concentrated with rich,cedar/ blackberry fruit, massive, firm, dry tannins and longflavourful finish. Tannins at the fore for the moment.”The 1981 Grange is a blend of 89 percent Shiraz and 11percent Cabernet Sauvignon from the Kalimna and otherBarossa vineyards, Magill Estate and the Modbury Vineyard inthe Adelaide Plains.Maturation in new American oak hogsheads for eighteenmonths, a muscular Grange, the question being, will it eversoften out? Alcohol 12.70% Acidity 6.20g/L pH 3.58Deep crimson brick red. Liquorice, dried fig, baked red fruitaromas. Coffee chocolate oak precede a plump, juicy andstraightforward palate. The tannins are soupy and dense andbuild up very chalky and dry at the finish.Winemaker Comments by Don Ditter: “Dense purple/red incolour. Smoky meaty/spicy aromas and some toasty oakcharacters, also showing vanilla and coffee overtones. Acombination of rich, fleshy, chocolaty and smoky flavours arebalanced with pronounced tannins and length, resulting in awine of immense concentration and powerful structure”.Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1982A very good vintage with a mild growing season, culminatingin a burst of warm weather.Predominantly Shiraz with a small amount (6%) of CabernetSauvignon from the Kalimna and other Barossa vineyards,Clare Valley, Magill Estate and Modbury near Adelaide, this isa wine with an open-knit, seductive style. AN EVENING OF EXCEPTIONAL WINESComments by Don Ditter: “Very deep, rich brick red. Very ripe, sweet plum jam aromas. Vanilla and mint characters with ahint of leafiness. Masses of delicious super-fleshy fruit throughout, very elegant and supple but undeniably a full-bodied wine withan assertive tannin finish.”Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1983This vintage was seriously affected by drought, and thedevastating Ash Wednesday bushfires. Summer rainfall washalf the average, following by record rains and flooding inMarch. The 1983 Grange is predominantly Shiraz with a smallamount (6%) of Cabernet Sauvignon, from the Kalimna andother Barossa vineyards, Magill Estate, and Modbury in theAdelaide Plains. Maturation in new American oak hogsheadsfor twenty months. Alcohol 13.30%Winemaker Comments by Don Ditter: “Very deep black cherryred. Dense, powerful dark chocolate spice/plum/ briar and mintaromas with some oak-derived coconut. A highly concentratedwine showing pronounced extract and tannins balanced withsweet plummy fruit and showing some cigar box characters.”Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1984Max Schubert’s experimental work in the 1950s determinedthat South Australian Cabernet was unreliable, he recognisedthat Grange should be based around a spectrum of fruit. Oneof the great strengths of Grange is, whilst mostly a Shiraz, itdoes not rely on the performance of a single vineyard. Fromfruit grown at the Kalimna and other Barossa vineyards,Magill Estate in Adelaide, and other superior vineyards in theCoonawarra, McLaren Vale and Clare Valley, the 1984 isbalanced with a small amount of Cabernet Sauvignon 5%.No other red wine in Australia can rival the reputation, consistent quality or proven development pattern of PenfoldsGrange. The winemaking process involves great attention todetail; from selecting the best possible grapes sourced fromlow-yielding, old Shiraz vines through to fermentation andfastidious oak maturation. Generally good weather for thevintage, a cool summer followed by a dry harvest. Ameticulous regimen for vineyard selection, coupled withexacting winecraft, gives each Grange a different character. Aseductively smooth wine this year, early developing and withslippery tannins. Maturation in new American oak hogsheadsfor twenty months. Alcohol 14.2%Comments by Don Ditter: “Intense deep rich red.Blackcurrant and plum aromas combined with developedchocolate and caramel-like characters which are enhanced bysmoky oak characters. Always exciting and opulent, the pinnacle of Australian reds, 1987 Grange is an elegantedition, beginning juicy and plummy, culminating in a veryfirm, dry finish. The growing season and vintage were markedby cool weather, crops in most South Australian regions werereduced by hailstorms in OctoberThe winemaking process involves great attention to detail, thebest possible grapes from low-yielding, old Shiraz vinesthrough to fermentation and fastidious oak maturation. Fromthe Kalimna Vineyard in the Barossa Valley, and othervineyards in the McLaren Vale, a light, elegant style of Grangemade with a blend of 90% Shiraz and 10% CabernetSauvignon, matured in new American oak hogsheads foreighteen months. Thehallmark of Grange 1988 is it’s powerful fruit intensity, dominant length and profound complexity, persistent fruitand oak, reflecting the exceptional quality of the 1988vintage.A classic Grange, from an outstanding year, the 1988 isexpected to develop superbly for twenty years past release.94% Shiraz, 6% Cabernet Sauvignon from the Kalimna andother vineyards in the Barossa, as well as Padthaway and theMcLaren Vale. An ideal growing season was followed by awarm dry vintage. As they say at Penfolds, it’s the fastidiousbarrel fermentation that gets the oak into the wine, and thewine into the oak. Lavish maturation for the 1988 vintageunder prime, selected new American oak hogsheads foreighteen months. Alcohol 13.50% Acidity 7.6g/L pH 3.36A vintage of powerful fruit intensity, superb length and fullonGrange complexity.Comments by John Duval: “Deep plum-red in colour withyouthful purple hues. A complex bouquet featuring opulent, ripeShiraz berry fruit characters, ranging from soft, earthy nuancesthrough to spice, cherry and plum fragrances, combined withtraditional new barrel fermentation characters and vanillinAmerican oak complexity. This is a full bodied, richly flavouredand complex wine, exemplifying the uniqueness of GrangeHermitage. Concentrated, ripe plum and spicy berry fruitShiraz flavours are complemented by soft fruit and oak tannins, firm astringency and balanced acidity, integrated withdistinctive oak - a feature of the style.”Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1989A very hedonistic, almost decadent style of Grange, gorgeously opulent, almost Pomerol-like Grange with anover-ripe characteristic to the fruit. Cherry liqueur intermixedwith cranberry and cassis presented in a seductive, full-bodied,very soft, forward style is truly not the classic Grange in thesense of having huge structure and massive concentration, butthis wine is loaded, very corpulent, and fleshy. The wine isgoing to last for up to two decades, but it will beuncommonly succulent and delicious to drink young. The 1989 is already beginning to show some attractivematuration characters and is developing a little sooner bycomparison to it’s more robust 1988 and 1990 counterparts.91% Shiraz and 9% Cabernet Sauvignon from the Kalimna andother Barossa vineyards, and the McLaren Vale. It has thetypical solid structure and strength of character to agegracefully over the next decade or so, with correct cellaring, toproduce another classic Grange. Extreme heat and heavyMarch rains followed an ideal, warm growing season. Maturedin new American oak hogsheads for eighteen months. Alcohol13.5%Winemaker Comments by John Duval: “Deep plum-red incolour with youthful crimson hues. Features an array of rich, ripeShiraz characters with masses of ripe blackberry, raspberry, plumand spicy fruit aromas and softer mushroom and earthy hints, complemented by lifted, but integrated, vanillin American oak.A full-bodied, richly flavoured and supremely complex wine withluscious fruit and supple balanced tannins. The palate is fruitsweet, with concentrated blackberry and dark plum flavouredShiraz fruit and a touch of spice, interwoven with rich vanillinoak flavours.”39

JANUARY 13, 2013 - HONG KONGPORTSWe are glad to offer a selection of very fine vintage ports from all the major houses such as DOW’S, WARRE, FONSECA,TAYLOR’S, COCKBUNS, built-up over the years by an English collector. Bottles kept in a good cellaring condition.PORTS from a Private Collector.66 EUCOCKBURNS - vintage 1967In original bottle, scuffed labelLying in a private cellar in London, EnglandTotal 4 bottlesWinemaker Notes: “Cockburn’s style has always been synonymouswith softness and elegance as opposed to the concentrationand power that characterise other Porthouses such as Taylor’sand Graham’s. However, Cockburn has also always been reliable, consistent and delightfully easy-drinking. The 1967vintage has a mature, copper-tin hue, meaty, earthy and driedberrynotes on both the nose and the palate, followed by a reasonablylong finish.”HK$2,500 - 3,00067 EUFONSECA - vintage 1970in original bottle93/100 points Robert Parker, Buyers Guide 19891 bottleTasting Note:“...it excels in is magnificently complex, intense bouquet of plummy, cedary, spicy fruit and long, broad, expansive flavours. With its lush, seductive character, one might call it the Pomerol of Vintage ports. The1970, of course, is a powerful Fonseca with an exoticbouquet and lush, cream, multidimensional flavours.”DOW’S - vintage 1977Good level, slightly corroded capsuleRobert Parker, Buyers Guide 1989.5 bottlesLying in a private cellar in LondonTotal 6 bottlesTasting Note: “This is an extraordinary house that seemsto have been particularly successful with its vintage portsince 1977. The 1977, still a baby, is fabulously scented, very rich and concentrated, and has a potential longevityof at least another 30-50 years.”Estimate HK$ 3,500 - 5,00043

AN EVENING OF EXCEPTIONAL WINES68 EUTAYLOR’S - vintage 1980In original bottle91/100 points Neil Martin Wine Journal 20081 bottleTasting Note: “A deep, clear garnet colour. The nose isvery backward, quite austere and conservative with notesof cherry and raspberry leaf, a touch of cigar box developingwith aeration. It perhaps lacks a little joie-de-vivre,especially when compared to vintage in the 1970s. Thepalate is attractive though, with notes of raspberry, plum, white pepper, blood orange and a touch of apricot. Verygood acidity, perhaps like the -55, this is a Taylor’s playingit safe, unwilling to take chances and yet it is lush on thefinish with its plum and briary flavours.”FONSECA - vintage 1980In original bottle87/100 points Robert Parker, Wine Buying Guide19892 bottlesTasting Note: “Fonseca is one of the great port lodges, producing the most exotic and most complex port. It excelsin its magnificently complex, intense bouquet andplummy, cedary, spicy fruit and long, broad expansiveflavours. With is lush, seductive character, one might callit the Pomerol of Vintage ports. When it is young, it oftenloses out in blind tastings to the heavier, weightier, moretannic wines, but I always find myself upgrading myopinion of Fonseca after it had 7-10 years of age. The 1980is very good, possibly excellent.”WARRE - vintage 1983In original bottle1 bottleTasting Note: “Perfumed chocolate and spice nose. Floralhints, rich palate. Great elegance”. Decanter Magazine,December 2006.FONSECA - vintage 1983Level and label in good condition, corroded capsule92/100 points Robert Parker, Wine Buying Guide19893 bottlesTasting Note: “Fonseca is one of the great port lodges, producing the most exotic and most complex port. IfFonseca lacks the sheer weight and power of a Taylor, Dowor Warre, or the opulent sweetness and intensity of aGraham, it excels in its magnificently complex, intensebouquet of plummy, cedary, spicy fruit and long, broad, expansive flavours. With is lush, seductive character, onemight call it the Pomerol of Vintage ports. When it isyoung, it often loses out in blind tastings to the heavier, weightier, more tannic wines, but I always find myselfupgrading my opinion of Fonseca after it has had 7-10years of age. The 1983 is magnificently scented, fullbodied, creamy, rather forward, but showing character.”CHURCHILL’S - vintage 1983In original bottle, label damp patch, slightly broken waxcapsule3 bottlesCOCKBURNS - vintage 1983Torn/damaged label on one section of the label (lettersV I N T A missing), slightly oxidised capsule97/100 points Wine Spectator Issue January 1989.3 bottlesTasting Note: “A big, tough port for long-term ageing. Itunderlines what people mean when they say a great youngvintage port should overpower one’s palate with fruit andtannin. Inky colour with perfumed cherry and berryaromas. Full-bodied with tons of tannins, intense cherryand berry flavours and a lingering finish. JANUARY 13, 2013 - HONG KONG69 EUDOW’S - vintage 1985 - Trafalgar VintageIn original bottle, slightly scuffed label, corroded capsuleDescription on the back label: “This 1985 Vintage Port was selectedto commemorate the 200th Anniversary of the Bottle of Trafalgar,21st October 1805.The 1985 harvest produced superb wines. In 2005 this Dow’s Vintagewill be 20 years old, which is considered the peak maturity for VintagePort. The label illustration of Her majesty’s ship VICTORY andTEMERAIRE attacking the French REDOUTABLE and FOUGEUXis adapted from the paintings by W-L WYLLIE R.A (Royal NavalMuseum, H.M Naval Base, Portsmouth).Dow’s Port have made a contribution to Naval Charities for every caseof the wine sold.”Note: The back of the label is slightly wrong as it states in the reign ofHER Majesty when in fact it should have said HIS majesty as there wasa king on the throne at the time of the battle of Trafalgar in 1805.6 bottlesTasting Note: “Drinking beautifully now at early optimal maturity, thishas at least another few years of development in front of it and many yearsof drinking pleasure after that. Now it is nicely developed, well integrated, juicy and ripe with a nice balance between its power, weight andtexture; it is succulent but still elegant. Delicious. Really excellent.”On-Line Publication of Spec’s Update December 2005WARRE - vintage 1985Some stains on the labels and label very slightly torn at the bottom onone bottle90/100 points Robert Parker, The Wine Advocate 19873 bottlesTasting Note: “WARRE has been making exceptionally fine Ports of lateand their 1985 is the sweetest and richest of their recent Vintages.Extremely concentrated, rich, even luscious, this full bodied, intense, opulent wine has layers of fruit, a full brown bouquet and impeccablebalance.”WARRE - vintage 1985In original bottle - Some stains on the labels.90/100 points Robert Parker, The Wine Advocate 19873 bottlesTasting Note: “WARRE has been making exceptionally fine Ports of lateand their 1985 is the sweetest and richest of their recent Vintages.Extremely concentrated, rich, even luscious, this full bodied, intense, opulent wine has layers of fruit, a full brown bouquet and impeccablebalance.”Lying in a private cellar in London, EnglandTotal 12 bottlesHK$ 5,000 - 6,50045

AN EVENING OF EXCEPTIONAL WINES70 EUGOULD CAMPBELL - vintage 1991In original bottle1 bottleWARRE - vintage 1991In original bottle1 bottleTAYLOR’S - vintage 1992In original bottle100/100 points Robert Parker, Wine Advocate 19953 bottlesTasting Note: “Taylor’s 1992 Vintage Port is unquestionablythe greatest young port I have ever tasted. Itrepresents the essence of what vintage port can achieve. Thecolour is an opaque black/purple, and the nose offers upfabulously intense aromas of minerals, cassis, blackberries, liquorice, and spices, as well as extraordinary purity andpenetration. Yet this is still an unformed and infantilewine. If Château Latour made a late harvest CabernetSauvignon, I suspect it might smell like this. In the mouth, the wine is out of this world, displaying layer upon layer ofconcentrated black fruits backed by well-integratedtannin and structure. This is a massive, magnificentlyrich, full-bodied port that will be far more flattering in itsyouth than were such Taylors as the 1983, 1977, or 1970.It possesses awesome fruit, marvellous intensity, and thelavish opulence, all brilliantly well-delineated by thewine’s formidable structure. This monumental 30-50 yearport is a must purchase for port aficionados! Also noteworthyis the fact that the 1992 Taylor commemorates the300th anniversary of this firm, as evidenced by the specialbottle Taylor used for his port.”Tasting Note: “Wow. Virtually opaque core, black andpurple in colour with a thin ruby rim. The nose is incrediblyintense, a ravishing port-pouri of scents: black cherries, raspberry, cassis and vanilla pod all with amazing delineation.I will have to employ my off used phrase - controlledopulence-. The palate is full-bodied with layers of pureblack fruits with beautifully defined tannins, vibrantacidity, immense power but the same level of control. Pureblueberry, liquorices and crushed violets towards the finishwith a citrus undertow. It is the poise and definition thatis so unexpected given it ferocious power and it will surelyrank alongside the likes of the -35 and the -48 in years tocome. An immense achievement. Tasted November 2007.”Neil Martin, Wine Journal 2008FONSECA - vintage 1992In original bottle97/100 points Robert Parker, Wine Advocate 1995.3 bottlesTasting Note: “Fonseca has scored in both the 1991 and1992 vintages. The 1992 is a majestic young port thatshould ultimately rival, perhaps even surpass his house’smost recent great efforts (1985, 1977, 1970, 1963). Thiscolossal vintage port reveals a near opaque black/purplecolour, and an explosive nose of jammy black fruits, liquorice, chocolate and spices. Extremely full-bodied andunctuously textured, this multi-layered, enormouslyendowedport reveals a finish that lasts for over a minute. It is a magnificent port that will age well for 30-40 years.”DOW’S - vintage 1994Good level, slightly peeled label on the left top corner, very slightly corroded capsule96/100 points Robert Parker, Wine Advocate2 bottlesTasting Note: “The massive 1994 is unquestionably thefinest Dow I have tasted since the 1977. This opaquepurple-coloured wine is not as developed or flamboyant asFonseca, but it is super-concentrated and multi-layered,with huge masses of fruit and some tannin in the finish. This is a slightly drier style than Fonseca or Graham’s, butit appears to be a classic, majestic, enormously constituted1994 that should age effortlessly for three decades or more.It is one of the stars of the vintage. Dow’s1998 Quinta do Bomfim Vintage Port is a fabulous wayto end a lunch or dinner. It pairs wonderfully with chocolatedesserts, such as chocolate mousse, but it can also beenjoyed on its own, providing a memorable moment in thecompany of good friends. “Lovely vanilla scented oak, violets, mulberries and winter fruit cake spices. Lusciousbouquet which has everything in it, all in perfect harmony.Classic style, mighty full body and flavours, fair balancingacidity fleshed out with wonderfully ripe fruit and sweetspice.
