RetailSolutions for fresh food merchandising8NewsGreen simply worksPLUS supermarket in VeldhovenMore than just a change of scenery: when André van Reijen renovatedhis PLUS supermarket from the ground up in 2011, he made it intoa model operation in terms of sustainability. Indeed, his goal withthe revised design is to save up to 30% of energy. The power-savingweighing technology from METTLER TOLEDO fits in perfectly with thisstrategy – and helps him communicate his store's new eco-image tocustomers.UC-HTT-M counter scaleAndré van Reijen has been managing supermarketsfor 25 years and has been theindependent store manager of his PLUSsupermarket in the Dutch town of Veldhovenfor 14 years. "Customers are eithervery price-conscious or are looking for topquality. We no longer see that many customersbetween these two ends of thescale," comments van Reijen, describingcurrent retail trends. "It quickly becameclear to us what we wanted to achieve withour renovations." A large area, a modernatmosphere and a focus on both serviceand environmental friendliness nowmakes the PLUS supermarket the numberone address for quality food in Veldhoven.Everything fresh, everything closeto hand"Our philosophy is to be a service super-market," comments van Reijen. In manysections, including the bakery andbutcher's counter, the goods are thereforeprocessed directly in the store andsold prepackaged on self-service shelves.Catering even to the more unusualcustomer requests, the PLUS supermarketoffers some 22,000 articles in its140,000 square feet of sales area. Theshelves have been kept lower and thestore layout more open to ensure apleasant shopping environment. "Ourregular customers first had to find theirway again once our renovation work wascomplete," comments van Reijen jokingly."But most of them were immediatelyim pressed by what we haddone and are delighted to now have astate-of-the-art supermarket on theirdoorstep."

These are regionalspecialties from the bakery and butcher'srange or fresh fruit and vegetables grownlocally – a particularly important segmentfor consumers interested in sustainability.Price and article adjustments are appliedacross-the-board on all scales and cashregisters, as well as the electronic pricedisplays which the PLUS store uses for allof its products. This ensures that productchanges, for example due to seasonal factors, can be performed quickly, easily andwithout much paperwork. ProjectsFast service along the entire counterE-Center Schmidt, OchsenfurtAt 85 feet long, the fresh food counter at the E-Center in Ochsenfurtmakes quite an impression. Beside its sheer size, the counter delightswith its extensive range of goods and modern counter design that usesten scales from the METTLER TOLEDO bC Line.bC-U2 BlackFresh and full of color:the service counterat the E-Center storein OchsenfurtNothing gets in the way of shopping here. With its glass facade, the E-Center inOchsenfurt offers a modern, open and welcomingappearance. Inside the store, wideaisles and low shelving allow customers tosee everything they need and shop in a lowstress environment. Easily visible right fromthe entrance: the large fresh food counter, strategically positioned along the back wallof the store. The section run by masterbutcher Manfred Reim offers almost 400 differenttypes of sausage and cold cuts. Addedto this are around 250 types of cheese, 130types of meat and a wide selection of fish."We have come a long way from our originalstand," explains Reim with a certain degreeof pride, as the store has not yet even beenopen for one year.Section managerManfred Reim:everyone gets involvedduring the weekend!Meat, cold cuts, cheese and fish:the seamless rangeof products is wellreceived by customers4 METTLER TOLEDO Retail NewsAn eye-catcher in orange and blackBeside the goods on offer, the design alsoattracts customers. The bright orange back wall sets thecolor tone and merges with black tiles thatstretch up to eye level. A modern, visuallystriking design and color scheme, coupledwith lighting that makes the most of thegoods on sale: "Orange is the eye-catcher,while black represents quality and value –so the combination makes a lot of sensefrom a visual perspective," confirms Reim.He also uses black plates to display goodson the counters.Ten sets of scales are in place to ensurethat Reim and his staff can serve customersquickly along the 85-foot coun-

Know-howTen bC-U2 Blackscales ensureeffortless serviceSuccess factors:• Large counter, extensive productrange• Fast operation with ten tactilecounter scales• Intelligent mix of receipt slipsand adhesive labelster. They decided to go with the bC-U2Black tactile counter scale model fromMETTLER TOLEDO with Light Touch keyboard. The key factors behind this decisionincluded the unit's appearance, as the blackcolor of the scales fits in perfectly with Reim'scounter. The easily legible, bright orangenumbers on the customer displays also createa natural transition to the orange rearwall. Each of the scales is equipped with atwin printer for receipt and label printing. This is a prerequisite for the clever receiptsystem that Reim and his staff use.Double the service"250 grams of salami please, the air-driedone!" – the sales staff initially serve customersin the familiar way using theirstaff ID number. Once the sale is complete, the scales first print the standard salesreceipt, which is placed in the bag with thegoods – and in the blink of an eye theythen print an adhesive sum total labelwith the EAN code, which is used to stickdown and thereby close the bag. This twostageprocess offers two key advantages, asit allows staff to completely do away withthe unhygienic stapler, and the bag carriesa unique barcode for fast and convenientscanning at the cash register. "We also savea great deal of money by using the smallself-adhesive labels rather than expensivelinerless printing," comments Reim, highlightingthe most important argument. Forcustomers, this system only involves minimalchanges, as the total value of all theirpurchases is still printed on the outer label,so they know exactly how much they arespending. In addition to this, the slips in thebag allow customers to see the price of theindividual items they bought when they gethome, so they can see exactly how much the250 grams of salami cost.Networked and reliableThe EDEKA Nordbayern-Sachsen-ThüringenGroup, to which the E-Center inOchsenfurt also belongs, uses the EBUSapplication as its goods and inventorymanagement system. The bC scales, whichare equipped with open interfaces, are connectedto EDEKA's EBUS goods and inventorymanagement system using the ZWSscale networking system. The master dataand PLU numbers are provided by theEDEKA Nordbayern-Sachsen-ThüringenGroup. This ensures that all data is uniformand complies with the legal regulations. The system also performs the goods bookingsand takes care of inventory processing. As you might expect, the department getsvery busy at the weekend. "We then sendeverything with a pulse to work on the counter,"jokes Reim, referring to the six or sevensales staff plus three butchers in the team. The team members all work at full steamhere. This is when the fast printing units, the Light Touch keyboard and the speed ofthe slip-receipt combination offered by theMETTLER TOLEDO scales really come tothe fore. But does the dual printer conceptmean that customers have to wait twice aslong? "No," comments Reim. "Our employeescan change the label rolls just as quicklyand easily as the receipt rolls. And the onlytime we have needed the service engineerwas for the installation."Further information can be found at:www.edeka.dewww.mt.com/retail-bCUC-HTT-MUC Evo Line – perfectly prepared for use infuture IT architecturesMETTLER TOLEDO is a long-standing partner to the food retailtrade for point-of-sale technology. Labeling GreenSustainable labelingPhenol-free sales slips and labelsMETTLER TOLEDO is now offering sustainable labels and sales slips withits "Labeling Green" range. Bruno Goudard from Business DevelopmentLabeling Green presents the new "green" labels in an interview.Bruno Goudard, Business Development Manager ConsumablesThe Labeling Green rolls are free of phenols, including the controversial substanceBisphenol-A. This chemical is regardedas hazardous to health and continues tomake headlines, also with bans. It is usedas a plasticizer in numerous plastics – aswell as in most labels and sales slips todate. Mr. Goudard, why do we evenneed Bisphenol-A in labels? As a component of the thermal layer, Bisphenol-Ahelps ensure that the thermalpulses used in thermal printing are convertedinto color. It sits directly on the surfaceof sales slips and labels. The criticismthat this chemical has been receiving isjustified, as it can get into our bloodstreamvia skin contact. There are also manystudies documenting how the substanceencourages the development of cancer ordiabetes and has therefore been the subjectof numerous bans. Indeed, phenols are alreadyprohibited from coming into contactwith food products in Denmark, Franceand several states within the US. So what alternative does theLabeling Green range use?The simplest solution would have been toreplace Bisphenol-A with the substitutechemical Bisphenol-S. This is an approachthat several market players have actuallyadopted. However, these two chemicalsshare many of the same characteristics. The major difference here is that therehas been less research conducted on thepotential hazards of Bisphenol-S to date. From our perspective, this chemical is anon-starter. We therefore made our LabelingGreen range completely phenol-free,employing a substitute chemical that performsthe same task but on a natural basis.Cash register staff, sales staff and customersare all completely protected from therisks of an phenols when using LabelingGreen products. If you look closely, you can see thetransparent carrier material of theLabeling Green products. What exactlyis this and what does it involve? We also used a new material for the carrierlayer, namely polypropylene. By choosingthis material, we were able to make ourcarrier film more than twice as thin asconventional paper. This means that weget 20% more labels per roll, which in turnmeans fewer roll changes and faster servicefor our customers. But this is just a positiveside effect. The key issue here is that thepolypropylene carrier is 100% reusable. Notjust in theory, but also in practice, as wecollect used roll material via a recyclingprogram. A production partner then usesthis material to produce outdoor pavingand building facade materials.6 METTLER TOLEDO Retail News What are the advantages of thisrecycling for retailers? We return the value of the material collectedduring recycling to our customers in the

form of cash back. Another advantage ofusing polypropylene carriers is that thereis no longer any paper dust in the printingunits. The tests we have performed clearlyshow that printing heads not only last agreat deal longer thanks to this, but alsorequire less maintenance. This effect isthen boosted even further by the fact thatour labels no longer use any of the hazardouschemicals which used to damage theprinting heads. So do retailers that use these "ecolabels" have to suffer compromises interms of quality or speed?Definitely not. Labeling Green productsare actually better in many respects, forexample enabling higher printing speedsand better contrast. You can also feel thedifference in quality. In addition to this, customers can order labels preprintedwith ultra-sharp four-color backgrounds.Whether borders, logos or product images– pretty much anything can be printed. Infact, when we received the first orders forLabeling Green products, we were actuallyimpressed by the creativity our customersdisplayed in designing their labels. So labels are the new point-of-saleadvertising space? Not necessarily advertising space, but anideal instrument for communicating directlywith customers. The labels obviouslyinclude the price and other importantinformation, such as weight, origin andcontents. Who does not take a closer lookwhen they see this? This makes the labelsan ideal vehicle for leaving a positive impressionwith customers. An appealing andcolorful label design that also offers easilylegible information costs little, but has amajor marketing impact. With QR codes itis even possible to make reference to moredetailed information, such as recipe tips. One more tip: retailers also have the optionof printing a seal, confirming that thelabels are free of all phenols. This allowsthem to demonstrate their responsibilityand boost consumer confidence. OK, so if I want to make the switchto the new labels, what does thisprocess involve? In brief, you do not need a process at all.You can simply switch over your devices toLabeling Green products at any time withno modifications required. All you need todo is let us know all the important parametersof your labels, such as the size, formatand any preprinting, and then order yourrolls. The labels are also manufactured atmultiple locations throughout Europe, socan generally be produced locally. Thisreduces the amount of transport involvedwhich, coupled with the reduced weight ofthe rolls, drives down CO2 emissions – andalso offers our customers the flexibility toorder more labels and generally have themdelivered the very next day.Know-howLabelingGreen sales slips– Free of phenol, safe for customersand staff– 20 percent more yield per roll– Gentle on printing units, reduced maintenance costs– Options for four-color HDpreprinting– Fast availability thanks to localproduction– Available for all METTLER TOLEDOscales and many other brandsFurther Information:www.mt.com/retail-labelsFor sample rolls, further information onthe Labeling Green range or to participatein a test program, simply send an e-mailto: InfoRetailD@mt.com.METTLER TOLEDO Retail News7
