Trigg who in 1916 becameDenton County’s first home demonstration agent and was posthumously inducted intothe Agricultural Hall of Fame in 1991. Ms. Capps will tell how these two women and manyothers have made significant contributions to the growth and development of DentonCounty. Not only will Ms. Capps share the historical facts about these many women, butshe will tell anecdotal stories of lesser known events in these women’s lives.Ms. Capps is a well-known civic leader in Denton. She currently serves as chair ofthe Denton County Historic Commission, has been a member of the Denton HistoricLandmark Commission and is a member of various local civic organizations. She is therecipient of the CARA Award from the Greater Denton Arts Council in recognition to thecultural arts of Denton. In addition to being very knowledgeable local historian who is wellversedin local architectural styles, she is a talented vocalist who frequently performs forvarious organizations in the Denton area. Professionally, she is a realtor who is a “HistoricHouse Specialist.”All exhibits and lectures are free and open to the public. In our region, there aretwo species of crawfish. There is the White River and the Red SwampCrawfish and this year there are plenty to harvest. Most of the restaurantsreceive their crawfish from controlled, managed crawfish farms but theyalso come from wild habitats such as bayous, natural rivers, swamps, andlakes. Farming is a contemporary method of harvesting crawfish but stillvery limited and still has not reached its maximum potential. By meansof small, shallow ponds stocked with Red Swamp Crawfish farming isbecoming more popular for commercial production. This is the biggesttime for harvest and the delivery of crawfish to restaurants and markets isstarting to get underway all over the metroplex. The tail meat is the mostdesirable part of the crawfish but the claw meat is also tasty, howeverit is scanty and arduous to pick out. Tail meat can be purchased frozenyear around but this is the time for fresh crawfish and the celebratedCrawfish Boils.If you are planning a good old fashion Crawfish Boil, you canpurchase them whole and fresh, raw or pre-cooked, for instantaneoususe. Make sure the crawfish are alive if you decide to go with whole, freshcrawfish. Decomposition happens quickly when crawfish die resulting inmushy discolored meat.THE CRAWFISH BOILPlan on three to four pounds of whole crawfish per person it soundslike a lot but ten pounds of crawfish only produces a little over a poundof meat. Each pound of crawfish requires about a gallon of water toprepare. Bring water to a boil, and then add the live crawfish. Begincooking time once the water returns to a boil. If you plan to eat themimmediately, boil them for about ten minutes. However, if you plan to peelthem to use the tail meat for other dishes only boil them for five minutes.TRADITIONAL BOILS call for seasoning the water by addingWEDGES OF LEMON, GARLIC, ONION, RED PEPPER, SALT andCRAB-BOIL SEASONING. Add WHOLE POTATOES, ONIONS,and CORN ON THE COB to the boil before you add the CRAWFISH.Boil for about ten minutes then turn off heat and let the crawfish soak upthe spices for another 10-15 minutes. Remove the crawfish and allow themto cool before peeling. If you do not plan to eat them right away thenrefrigerate the leftovers immediately. After boiling, the crawfish will be redand the tail meat is tender and slightly sweet. If you have never tried it,expect a bit of a cross between lobster and shrimp.Now if you need to know how to peel the crawfish it is easiest topeel them while they are still warm. You have to separate the tail from thehead by gently twisting and pulling. You may wish to discard the head butseasoned professionals like to suck the heads before disposal. Next, graspthe tail between thumb and forefingers and apply pressure until the shellcracks. Clutch the first few segments of tail from the side and remove bylifting up and pulling. Gently pull the tail fin away from the exposed tailmeat. Now enjoy! The meat is ready to eat and is delicious served withcocktail sauce. Remember, Crawfish Boils are best enjoyed with friends!Laissez les bons temps rouler!
