Ancient<br />
legend tells us that in the beginning, the Aztec people<br />
mainly subsisted on roots and animals. They<br />
didn’t understand the significance of corn because it<br />
was hidden behind the mountains. The gods tried to<br />
open a road to the source of the corn but were unsuccessful.<br />
The god Quetzalcoatl decided to transform<br />
himself into a black ant and, accompanied by a<br />
red ant, marched towards the mountains. Upon their<br />
return, they brought grains of corn to the people who<br />
greeted them with great enthusiasm.<br />
The history of corn in Mexico goes back over 7000<br />
years near the Teotihuacan valley, where its earliest<br />
trace has been discovered. Being one of the<br />
first grains domesticated by humans, it is believed<br />
that corn production is the beginning of agriculture in<br />
the region. Since this early beginning, the Mexican<br />
peasant has played a key part in the development<br />
of different breeds of local corn, which have been<br />
adapted to all types of soil and climate. By the process<br />
of selecting the best seeds, the cultivation of<br />
the crop spread rapidly across America and eventually<br />
all around the world.<br />

la leyenda que en el principio, el pueblo azteca se<br />
alimentaba de raíces y animales que cazaban. No<br />
conocían el maíz, ya que estaba escondido tras<br />
las montañas. Los dioses intentaron abrir camino a<br />
base de fuerza pero no pudieron, es por ello que el<br />
dios Quetzalcóatl decidió transformarse en hormiga<br />
negra y acompañado de una hormiga roja, emprendió<br />
el arduo viaje a través de las montañas. A su<br />
regreso, trajo consigo granos de maíz, el cual fue<br />
recibido por su pueblo con gran júbilo.<br />
La historia del maíz en México data a más de 7000<br />
años atrás, cerca del valle de Teotihuacán donde se<br />
han encontrado sus vestigios más antiguos. Siendo<br />
un de los primeros cereales domesticados por<br />
el hombre, se cree que su producción es el inicio<br />
de la agricultura en la región. Desde ese entonces,<br />
el campesino mexicano ha jugado una parte fundamental<br />
en el desarrollo de más de diversas razas de<br />
granos de maíz de forma local, los cuales han ido<br />
adaptándose a todo tipo de suelo y clima a través de<br />
la selección de las mejores semillas, extendiéndose<br />
rápidamente a toda América y el resto del mundo.

Due to the diversity of soil and crop types, there are<br />
currently more than 300 varieties of corn in the world.<br />
Its golden grains represent more than simply food.<br />
They are the fervent and silent witness of the evolution<br />
of Mexican culture during the last centuries, and<br />
are an important element of pre-Columbian mythology,<br />
as described by the Popol Vuh, the sacred book<br />
of the <strong>May</strong>an culture: “… of yellow corn and white<br />
corn was made his flesh, from corn dough were<br />
made the arms and legs of men. Only corn dough<br />
went into the flesh of our fathers, the four men who<br />
were created.<br />
It is no wonder then to believe that corns’ role in<br />
Mexican culture crosses the culinary arts. Corn has<br />
cultural and religious denotations that nowadays are<br />
still of great importance in smaller communities.<br />

Gracias a la diversidad de suelos y tipos de cosecha,<br />
actualmente existen más de 300 variedades de<br />
maíz en el mundo.<br />
Sus dorados granos representan más que un alimento,<br />
son el ferviente testigo silencioso de la evolución<br />
de la cultura mexicana durante los últimos siglos,<br />
al igual que un elemento importante de la mitología<br />
prehispánica, tal y como lo describe el Popol Vuh,<br />
libro sagrado de los mayas: “…de maíz amarillo y<br />
de maíz blanco se hizo su carne; de masa de maíz<br />
se hicieron los brazos y piernas del hombre. Únicamente<br />
masa de maíz entró en la carne de nuestros<br />
padres, los cuatro hombres que fueron creados”.<br />
No es extraño entonces pensar que su papel en la<br />
cultura mexicana traspasa el arte culinario, sino tiene<br />
denotaciones culturales y religiosas que hoy en<br />
día siguen siendo de gran relevancia en las pequeñas<br />
comunidades.

BØN·APPETIT<br />
There are six basic types of corn: sweet corn (it is<br />
the most commonly used in the preparation of food<br />
because of its tender and sweet grains), dent corn<br />
(type most frequently grown for grain and silage),<br />
waxy corn (preferred for cornstarch), flour corn (grains<br />
have a high starch content that distinguishes<br />
it for its usage in corn flour), pop corn (famous for<br />
preparing popcorn because the grains tend to burst<br />
under heat) and flint corn (each kernel is enclosed<br />
in a husk of its own, and is one of the oldest type<br />
cultivated).<br />
From these six types, there are many more species,<br />
each one bearing its own characteristics. Just in<br />
Mexico, there are at least 65 different types of corn!<br />
Within Mexican gastronomy you can find a wide variety<br />
of food and dishes prepared with corn, some of<br />
them are: corn tortilla, atole, chalupas, chilaquiles,<br />
enchiladas, gorditas, huaraches, memelitas, pinole,<br />
pozole, menudo, sopes, tlacoyos, quesadillas,<br />
tamales… the list is endless, just as are the many<br />
uses of corn.<br />

Existen 6 tipos básicos de maíz: dulce (es el más<br />
demandado para la preparación de los alimentos<br />
debido a sus granos tiernos y jóvenes), dentado<br />
(tipo de maíz cultivado más comúnmente para grano<br />
y ensilaje), duro (preferido para realizar fécula<br />
de maíz o maicena), blando o harinoso (sus granos<br />
tienen gran contenido de almidón, característica que<br />
lo distingue al ser el más utilizado en la elaboración<br />
de harina de maíz), reventado (famoso para hacer<br />
palomitas de maíz, ya que sus granos tienden a reventar<br />
bajo el calor) y envainado (cada grano está<br />
encerrado en una cascarilla propia, además de ser<br />
de los mas antiguamente cultivados).<br />
De ahí se derivan varias especies más, teniendo<br />
cada una características especiales ¡Tan sólo en<br />
México existen al menos 65 tipos diferentes de maíz!<br />
Dentro de la gastronomía mexicana se puede encontrar<br />
una gran variedad de alimentos que contienen<br />
maíz, algunos de los cuales son: tortilla, atole,<br />
chalupas, chilaquiles, enchiladas, gorditas, huaraches,<br />
memelitas, pinole, pozole, menudo, sopes,<br />
tlacoyos, tostadas, quesadillas, tamales… la lista es<br />
infinita, tal y como son los usos del maíz.

Corn in the rest of the world<br />
Its introduction to Europe was in the early sixteenth<br />
century when Christopher Columbus returned from<br />
America. It was widely accepted because of its resemblance<br />
to regional cereals (such as wheat and<br />
sorghum). It wasn’t until the early nineteenth century,<br />
when production and consumption increased<br />
due to its various uses in industry, such as alcoholic<br />
beverages, food sweeteners and even fuel that the<br />
grain became widely popular.<br />
Corn is currently the most widely produced cereal in<br />
the world, surpassing rice and wheat. Its consumption<br />
has three types of applications: food, fodder and<br />
raw materials for industry. Did you know that if you<br />
set the global production of corn in regular trucks,<br />
they would circumvent the world five times?<br />

El maíz en el resto del mundo<br />
Su introducción a Europa fue a principios del siglo<br />
XVI cuando Colón regresó de América. Tuvo una<br />
buena aceptación debido a su semejanza con cereales<br />
regionales (como el trigo y sorgo), pero fue<br />
hasta principios del siglo XIX donde su producción y<br />
consumo se incrementó por sus diferentes usos en<br />
la industria, como la elaboración de bebidas alcohólicas,<br />
edulcorantes alimenticios y combustible.<br />
Actualmente, es el cereal de mayor producción en<br />
todo el mundo, superando al arroz y al trigo. Su consumo<br />
tiene 3 tipos de aplicaciones: alimento, forraje<br />
y materia prima para la industria, siendo el primero<br />
el mayor conocido. ¿Sabías que si se montara la<br />
producción mundial de maíz en camiones de carga,<br />
éstos darían 5 vueltas completas a la tierra?

The following are just a few characteristics from corn:<br />
• Its name, maize, has its scientific origin name in the<br />
word zea mays and is indigenous from the Indian-<br />
Caribbean word mahís and means “that which sustains<br />
life”. English speaking countries know it as<br />
corn.<br />
• Ancient Mexican cultures knew it as elotl when its<br />
cob was tender and tlaolli when the grain ripens.<br />
• Corn is an ideal food for children and athletes. It is<br />
easily digested because of its high carbohydrate<br />
content.<br />
• Because it has lots of fiber, corn helps the digestion<br />
process, fights constipation and reduces cholesterol.<br />
• Corn is a great source of magnesium, vitamins B1,<br />
B3 & B9, therefore, nutritionally speaking it is a well<br />
balanced food. Because it is also a source of starch,<br />
immoderate consumption causes weight gain.<br />
• The silks of the cob can be boiled and drunk as tea<br />
to battle hypertension, fluid retention and urinary<br />
tract infections.<br />
There is no doubt that this seemingly simple food is<br />
truly a treasure: just like gold to a king’s coffers, its<br />
complete and balanced nutrition is of immeasurable<br />
value to the human being.<br />

Algunas características sobre el maíz:<br />
• Su nombre científico es zea mays, mientras que el<br />
origen de la palabra maíz proviene de la palabra<br />
india-caribeña mahís y significa “lo que sustenta<br />
la vida”.<br />
• En las antiguas culturas mexicanas se le conocía<br />
como elotl cuando su mazorca estaba tierna, y<br />
tlaolli cuando el grano maduraba.<br />
• El maíz es un alimento ideal para niños y deportistas<br />
gracias a ser de fácil digestión debido a su alto<br />
contenido de hidratos de carbono.<br />
• Al contener gran cantidad de fibras, ayuda al proceso<br />
de la digestión, combate el estreñimiento y<br />
reduce el colesterol.<br />
• Es una gran fuente de magnesio, vitaminas B1, B3<br />
y B9, por lo que nutricionalmente hablando es muy<br />
equilibrado. Debido a que también es una fuente<br />
de almidón, su consumo inmoderado será el causante<br />
en el aumento de peso.<br />
• Las barbas de la mazorca pueden utilizarse en infusiones<br />
para combatir la hipertensión, retención<br />
de líquidos y las infecciones urinarias.<br />
No cabe duda de que este alimento de apariencia<br />
sencilla es verdaderamente un tesoro: cual oro en<br />
las arcas de los reyes, la calidad energética y alimenticia<br />
del maíz es de valor inconmensurable para<br />
el ser humano.

Elena Arzak, mejor mujer chef del mundo <strong>2012</strong><br />
On 30 April <strong>2012</strong> Spanish chef Elena Arzak<br />
won the Veuve Clicquot World’s Best Female<br />
Chef award at the “World’s 50 Best Restaurants<br />
Awards” ceremony.<br />
Elena is the fourth generation of the Arzak family<br />
to head up the restaurant since it opened in 1897.<br />
Having learnt her craft at home, Elena expanded<br />
her horizons through extensive travel and studies in<br />
Lucerne, Switzerland before returning to the family<br />
business.<br />
Elena has won international respect for her constantly<br />
evolving, cutting edge, research-based approach<br />
to cooking and experimentation with flavors.<br />
Through her single-minded dedication to Arzak and<br />
its signature Basque cuisine, Elena oversees not<br />
only a thriving restaurant but by working in tandem<br />
with her famous father, Juan Mari, has ensured that<br />
it is recognized as one of the most influential restaurants<br />
in the world today.<br />
During this interview she explains to Gastronømad’s<br />
readers her passions, her dreams, her personal<br />
taste and shows a very strong personality.<br />

El pasado 30 de Abril, Elena Arzak ha sido galardonada<br />
con el premio Veuve Clicquot a la<br />
Mejor Chef Femenina del Mundo, en la ceremonia<br />
“World’s 50 Best Restaurants Awards”.<br />
Elena es la cuarta generación de la familia Arzak<br />
que dirige el reconocido restaurante desde su inauguración,<br />
en 1897. Procedente de una familia de cocineros,<br />
Elena estudió en Lucerna (Suiza) y expandió<br />
sus conocimientos a través de todos sus viajes<br />
por el mundo, antes de volver al negocio familiar.<br />
Elena se ha ganado el respeto internacional gracias<br />
a su constante evolución vanguardista basada<br />
en la investigación de la cocina y en la experimentación<br />
no sólo con los sabores, sino también con<br />
los colores y las formas. Elena no sólo supervisa<br />
un próspero restaurante; trabajando junto a su respetado<br />
padre, Juan Mari, ha conseguido que Arzak<br />
continúe a día de hoy siendo uno de los restaurantes<br />
más influyentes del mundo.<br />
En esta entrevista, explica a los lectores de Gastronømad<br />
sus pasiones, sus sueños, sus gustos<br />

Is it in her DNA?<br />
Elena, when one has the ARZAK surname – is<br />
it possible to focus on anything other than cuisine?<br />
Yes, of course!<br />
My older sister is a great expert in contemporary art<br />
and she is the director for education and interpretation<br />
at the Guggenheim Museum Bilbao.<br />
Personally, I never had any pressure to take over<br />
the family business. On the contrary.<br />
What do you mean?<br />
When we were little my sister and I helped in the<br />
kitchen of the family restaurant during holidays two<br />
or three hours every day: chopping vegetables,<br />
cleaning txangurros (crabs) ... We enjoyed it very<br />
much. After completing studies at the German<br />
school I told my parents that I want to go to culinary<br />
school.<br />
Did your parents encourage you in your decision?<br />
They wanted me to weigh the negative and positive<br />
sides of this profession. I remember being told: -<br />
“being a Chef is hard work, very tough and demanding.<br />
Do not think it is like the fun you’ve spent in<br />
the kitchen during the holidays”.<br />
And who won?<br />
Well, nobody won. I have always enjoyed the full<br />
support of my parents. We just made a pact. I enroll<br />
in the school of hospitality and, if after a year<br />
I realized that was not my vocation, I would take<br />
another road. I studied at the Hospitality School of<br />
Lucerne (Switzerland) which was a great experience.<br />
Then I worked and learned the craft at many<br />
restaurants in France, UK and Italy.<br />

En su ADN<br />
Elena, cuando uno se apellida ARZAK, puede<br />
dedicarse a otra cosa que la cocina?<br />
¡Si, por supuesto!<br />
Mi hermana mayor es una gran experta en arte<br />
contemporáneo y es Subdirectora de Educación e<br />
interpretación en el museo Guggenheim Bilbao.<br />
Personalmente, nunca tuve ningún tipo de presión<br />
para tomar las riendas del negocio familiar. Al contrario.<br />
¿Al contrario?<br />
En cierto modo sí. Cuando éramos pequeñas mi<br />
hermana y yo veníamos durante las vacaciones a<br />
la cocina del restaurante dos o tres horas cada día<br />
para ayudar: picar verdura, limpiar txangurros...<br />
nos lo pasábamos francamente bien. Al acabar los<br />
estudios en el colegio alemán hice partícipes a mis<br />
padres de mis deseos de integrar una escuela de<br />
hostelería.<br />
Ante este anuncio, ¿su familia la desanimó?<br />
Digamos que intentaron hacerme sopesar lo negativo<br />
y lo positivo de esta profesión. Recuerdo que<br />
me dijeron: –“ ser Chef es un trabajo duro, muy<br />
duro y exigente. No te fíes sólo de lo bien que te lo<br />
has pasado en la cocina durante las vacaciones”.<br />
¿Y quién ganó?<br />
Bueno, no ganó nadie, siempre he contado con<br />
todo el apoyo de mis padres, simplemente hicimos<br />
un pacto. Me inscribían en la escuela de hostelería<br />
y si al cabo de un año me daba cuenta que no era<br />
mi vocación, me dirigiría hacia otros caminos. Estuve<br />
en la Escuela Hostelera de Luzerna (Suiza),<br />
de la cual guardo un gran recuerdo. Luego aprendí<br />
en muchos restaurantes en Francia, Reino Unido<br />
e Italia.

Your kitchen is Basque and avant-garde at the<br />
same time?<br />
Our cuisine is an author cuisine of course, I would<br />
say almost endemic.<br />
Very important in our kitchen are the wonderful<br />
products given us by our land. We add a touch of<br />
modernity to Basque cuisine, with ingredients and<br />
spices from all over the world. The goal is to find the<br />
right balance between the vanguard and the roots<br />
of tradition.<br />
From where do you get your inspiration?<br />
From everywhere. When my father I travel, to other<br />
countries, meet other cultures, museums, films and<br />
literature. In fact everything inspires us. A traffic light<br />
with its three colors inspired a dessert! The moss<br />
on some stones could inspire in us incorporating<br />
green and gray in a dish. Our creation, “Cromlech”<br />
comes from a megalithic monument we saw during<br />
a walk in the countryside! ...<br />
Creation is the magic word – just how do you<br />
create an Arzak dish?<br />
Some time ago, we separated production, that is<br />
everyday cooking, and creation.<br />
There is no connection between these two worlds.<br />
How does this work?<br />
On the first floor of the restaurant we have a laboratory<br />
with all kinds of culinary research machines<br />
and a stock of over a thousand flavors and ingredients.<br />
We work with Xabi Guitierrez and Igor Zalakain,<br />
our development team. And we create new<br />
dishes for each season. But of course, the whole<br />
Arzak team is essential to us.<br />
How many new dishes do you create each year?<br />
We create 50 dishes per year, which is actually a<br />
lot.<br />
My father always says that to evolve you have to<br />
be open, to imagine, to see life as a child. It is our<br />
common philosophy.<br />

¿Su cocina es vasca y al mismo tiempo vanguardista?<br />
Nuestra cocina es de autor, por supuesto, yo diria<br />
casi endémica.<br />
Muy importante en nuestra cocina es la maravillosa<br />
materia prima que nos brinda nuestra tierra. Nosotros,<br />
añadimos una punta de modernidad a la cocina<br />
de raíz, con ingredientes y especias venidas<br />
de todo el mundo. El objetivo es encontrar el punto<br />
exacto de equilibrio entre la vanguardia y las raíces<br />
de la tradición.<br />
¿Cuál es su musa de la inspiración?<br />
Todas! Todas y cada una de ellas. Cuando viajamos,<br />
por supuesto, otros paises, otras culturas, los museos,<br />
a mi me gusta, por ejemplo, mucho el cine y la<br />
literatura. En realidad todo nos inspira. Un semáforo<br />
nos inspiró un postre con tres colores. El musgo<br />
sobre las piedras nos inspiró un plato en los tonos<br />
verdes y grises. Nuestra creación, “Cromlech”, viene<br />
de unos monumentos megalíticos que observamos<br />
durante un paseo en el campo...<br />
Creación, la palabra mágica, ¿cómo se crea un<br />
plato en Arzak?<br />
Hace algún tiempo ya, separamos la producción, lo<br />
cotidiano de la cocina, de la creación.<br />
Aunque hay conexión entre estos dos mundos.<br />
Conretamente?<br />
En el primer piso del restaurante tenemos un laboratorio<br />
con todo tipo de máquinas de investigación<br />
culinaria y un banco de sabores de más de mil ingredientes.<br />
Trabajamos con Xabi Gutiérrez e Igor<br />
Zalakain, nuestro equipo de desarrollo. Creamos<br />
platos nuevos para cada temporada, para cada estación.<br />
Pero, por supuesto, todo el equipo de Arzak<br />
es para nosotros indispensable.<br />
Cuántos platos crean por año?<br />
Creamos 50 platos por año, lo que es mucho.<br />
Mi padre siempre dice que para evolucionar hay<br />
que estar abierto, imaginar, ver la vida como un<br />
niño. Es nuestra filosofía común.

Her father started at the restaurant in 1966 in the<br />
partie of roast with his mother as the Chef.<br />
Elena, how was your integration into the restaurant?<br />
It was very natural, although at first I was very cautious.<br />
I was, however, not new to the culinary world, I already<br />
had a career, I had studied and learned much<br />
from my work experience.<br />
And when did you begin to create new dishes?<br />
My father is very generous and always encouraged<br />
me, saying: - “creates, create!”<br />
And so, I started to create.<br />
My first suggestions were to reduce the number of<br />
ingredients per dish. Three or four per plate as a<br />
maximum.<br />
I also implemented, for example, a change in the<br />
design of both the china and the visual presentation<br />
of the dishes.<br />
Gradually, I began to refine the courses to incorporate<br />
the techniques that I was fortunate enough to<br />
learn during my studies and practices in the best<br />
restaurants in the world.<br />

finales del S. XIX como taberna y casa de comidas.<br />
Siguió su abuelo, Juan Ramón Arzak y su abuela,<br />

Fué algo realmente natural, a pesar de que al principio<br />
tuve mucha cautela.<br />
Tampoco llegué aquí del día a la mañana, yo tenía<br />
ya una trayectoria, habia estudiado, había aprendido<br />
mucho gracias a mis stages.<br />
Y cuándo empezó a crear platos?<br />
Mi padre siempre me animó, fue muy generoso de<br />
su parte y me decia: - ¡“crea, crea”!<br />
Y empecé a crear.<br />
Mis primeras sugerencias fueron con relación al<br />
nombre de ingredientes.<br />
Propuse que se redujesen a tres o cuatro máximo<br />
por plato.<br />
También introduje, por ejemplo, cambios en la vajilla,<br />
en los platos de presentación, en los diseños.<br />
Poco a poco, empecé a matizar los platos a incorporar<br />
las técnicas que tuve la suerte de aprender<br />
durante mis estudios y prácticas en los mejores<br />

Who decides at Arzak?<br />
If a dish is featured on our menu it is because we<br />
have decided upon it together, my father and I.<br />
There is no such thing as a dish decided upon by<br />
either Juan Mari or Elena, separately.<br />
It is Arzak’s cuisine as I very much respect the opinion<br />
of my father. We work together as a team.<br />
We influence each other, create together and learn<br />
from each other. We are extremely fortunate.<br />
Is it a man’s world?<br />
Not at Arzak! This is a matriarchy! (She says<br />
laughing). My mother who is also very supportive<br />
runs the administration. Today, there are five female<br />
chefs de partie and the vast majority of floor staff<br />
are women also. And when my first child was born<br />
there were that year also 5 more children born by<br />
members of the staff!<br />
Do you find that there is gender discrimination<br />
in the world of cooking?<br />
I have not myself felt this but I think it will take time<br />
overall before there is full equality.<br />

mucho la opinión de mi padre.<br />
Trabajamos juntos, somos un tandém.<br />
Nos influenciamos mutuamente, creamos juntos,<br />
aprendemos el uno del otro.<br />

¿Es un mundo de hombres?<br />
¡En Arzak no! ¡Esto es un matriarcado! (me dice entre<br />
risas). Mi madre, que también me apoya mucho,<br />
dirige actualmente la parte de administración. Hoy<br />
en día, cinco jefas de partida son mujeres así como<br />
la gran mayoría del personal de sala. Y cuando yo<br />
tuve a mi primer hijo hubo cinco niños más que nacieron<br />
ese año entre los miembros del restaurante.<br />
¿Hay discriminación en el mundo de la cocina<br />
hacia las mujeres?<br />
Yo no la he sentido nunca. Creo que es cuestion<br />

What do you like to eat when you go to a restaurant?<br />
I love going to restaurants where the cuisine is simple<br />
but I also like Haute Cuisine. In general I let the<br />
chefs decide which dishes they would like to serve<br />
me.<br />
How would you like people to perceive your restaurant?<br />
We welcome our guests into our house and in our<br />
home - both in the proper sense and figuratively.<br />
And we like that.<br />
How do you become a great chef?<br />
Humility. The ability to listen. Study. Learn from your<br />
teachers. Hard work.<br />
What is the most positive thing in your profession?<br />
It is not my profession, it is my passion. Cuisine<br />
means freedom.<br />
Finally, how does it feel to have been awarded<br />

It really humbles me and has come as such a surprise.<br />
I am happy for Arzak, the restaurant, my father<br />

Clos des Demoiselles matures its 2.4 hectares of<br />
old Merlot and Cabernet Sauvignon vines on the<br />
south slope of the Puy de Menjon, highest point of<br />

After belonging to the same family since 1820, the<br />
estate was taken over by Jean Chanfreau in 2002.<br />
He has since risen to the challenge of expressing<br />
the unique character of this deep Pyrenean gravel<br />
terroir. The produce of this tiny vineyard, planted<br />
mainly with Merlot, is vinified with passion by Jean<br />
and Marie-Helene Chanfreau, in order to express<br />

Harvesting is simple. Wait until the cilantro plant is completely dead, dry and brown, and the little seeds have<br />
taken the place of the little white flowers. Shake the seeds off, wash them and dry them thoroughly.<br />
The most important thing is to get them very, very dry before storing. Also be sure to remove bits of chaff or<br />
dead plantmatter. Try planting some cilantro today and wait patiently for the fragrant coriander seeds to appear.<br />

healthy!<br />
Countless Japanese cafés and<br />
restaurants have opened around<br />
the world in recent years. This has<br />
made Sushi one of the most popular<br />
dishes in the world and most<br />
people no longer wince when thinking<br />
of eating raw fish.<br />
Un-cooked fish is used not only in<br />
Japanese cuisine but also in many<br />
other dishes from other countries,<br />
such as Latin America, the Meditteranean<br />
countries and in Northern<br />
Russia. Raw fish served in restaurants<br />
in these countries is usually<br />
slightly marinated or deep frozen.<br />
This serves to preserves all of the<br />
goodness as frying the fish causes<br />
it to lose a lot of its tender texture<br />
and nearly half of its vitamins. Stroganina,<br />
carpaccio and ceviche are<br />
all dishes made with fresh fish,<br />

El pescado crudo, sin embargo,<br />

cocina japonesa. La cocina tradicional<br />

Peruvian ceviche is a cold starter<br />
which was well known by the ancient<br />
Incas. The classic recipe<br />

and marinated in lime juice with<br />

recipe of stroganina is fish that<br />

The fish is usually caught in the<br />
winter months and immediately<br />

all. To reach the restaurant from<br />
outside the museum, they had to<br />
create access from the promenade<br />
on the Nervión estuary.<br />
The architect designed, for this<br />
purpose, a staircase with a parable<br />
profile and, simultaneously, a very<br />
private terrace backed by titanium<br />
scales on side of the building. To<br />
access the inside the architect had<br />
to design a transition from a room<br />
which is 130m long and 20m high,<br />
with serpentine works by Richard<br />
Serra called «The matter of time»,<br />
to a completely open, very bright<br />
and white kitchen.<br />
This is where Fagor has implemented<br />
the dream of Josean Martinez<br />
Alija, chef of restaurant Nerua.<br />
An incredible kitchen, very very<br />
quiet, odor-free, ultra-clean and<br />
open to a room with only ten tables.<br />
The lines are straight, the white is<br />
extreme and there is no decoration.<br />
It is minimalism in its purest form.<br />
With one exception. The cornice<br />
that includes the iconic curves of<br />
the building and which separates<br />
the kitchen from the dining area. It<br />
is truly a beautiful achievement.<br />

Et l’affaire n’était pas si simple.<br />
Pour rejoindre le restaurant depuis<br />
l’extérieur du musée, il fallait créer<br />
un accès depuis la promenade sur<br />
la ría Nervión.<br />
L’architecte a dessiné à cet effet<br />
un escalier en parabole et profile,<br />
en même temps, une terrasse très<br />
intime adossée aux écailles en<br />
titane du bâtiment.<br />
Pour l’accès intérieur, il fallait gérer<br />
la transition d’une salle de 130 me<br />
de long et de 20 m d’hauteur, avec<br />
les œuvres en serpentin de Richard<br />
Serra «The matter of time»,<br />
vers une cuisine ouverte.<br />
C’est là que Fagor a mis en œuvre<br />
le rêve de Josean Martinez Alija,<br />
chef étoilé du restaurant Nerua.<br />
Une incroyable cuisine ouverte,<br />
silencieuse, calme, sans odeurs,<br />
ultra-clean et ouverte sur une salle<br />
avec à peine dix tables. Les lignes<br />
sont droites, la blancheur est extrême<br />
et il n’y a pas de décoration.<br />
Du minimalisme a l’état pur. Une<br />
seule dérogation, la corniche qui<br />
délimite la cuisine de la salle, qui<br />
reprend les courbes emblématiques<br />
du bâtiment. Belle prouesse.<br />

Nerua dishes are memorable. The<br />
presentation of each dish is like a<br />
piece of art of rare beauty. Bitterness,<br />

<strong>2012</strong>, l’année de Jules Breton à Château Lagrange<br />
In <strong>2012</strong> Château Lagrange, Classified Growth of<br />
Saint-Julien, has chosen to showcase a splendid<br />
painting by the naturalist artist Jules Breton entitled<br />
“Grape Harvest at Lagrange”. Breton actually resided<br />
at the château in the mid-nineteenth century. A series<br />
of conferences and theme tours are planned for both<br />
professional visitors and the general public.<br />
The Theme:<br />
The rediscovery of a painting entitled “Les vendanges<br />
à Lagrange” by Jules Breton showing the<br />
grape harvest at the estate, the original of which is<br />
currently exhibited at the Joslyn Museum in Omaha<br />
(Nebraska, USA), has given Château Lagrange the<br />
occasion to highlight 150 years of innovation and<br />
evolution in the vine growing and wine making of the<br />
Médoc area. The history of the Médoc vineyard, within<br />
the climatic, technical, social and political context<br />
from the mid-nineteenth century to this day, will be<br />
treated with this work of art as a centerpiece. The<br />
painting was commissioned in 1862 by the estate<br />
owner, Home secretary to King Louis-Philippe, Count<br />
Charles Tanneguy Duchâtel, a nobleman we learn<br />
was passionate both about art and vine growing.<br />

Julien, met à l’honneur en <strong>2012</strong> une peinture<br />
‘les vendanges à Lagrange’ de Jules Breton,<br />
peintre naturaliste ayant séjourné au château dans<br />
le milieu XIXème siècle. Une série de conférences<br />
ainsi que des visites thématiques sont prévues pour<br />
les professionnels et le grand public.<br />
Le thème :<br />
La redécouverte d’une peinture intitulée ‘Les vendanges<br />
à Lagrange’ de Jules Breton, dont l’original<br />
est exposé au Joslyn Museum à Omaha (Etats-<br />
Unis,Nebraska), a donné l’occasion au château<br />
Lagrange de mettre en avant le thème des 150 ans<br />
d’évolution et d’innovation du milieu viti-vinicole en<br />
Médoc. C’est au travers de cet œuvre, commandée<br />
en 1862 par le propriétaire de l’époque, le Comte<br />
Charles Tanneguy Duchâtel, ministre de l’Intérieur<br />
du roi Louis-Philippe, passionné d’art et de viticulture,<br />
que seront évoquées l’historique du vignoble<br />
médocain et plus particulièrement les conditions climatiques,<br />
techniques, sociales et politiques du milieu<br />

IMAF, which stands for International Migration Art Festival, is now in its second edition and is the embodiment<br />
of the postulate put forward by French anthropologist Claude Lévi-Strauss: that cooking is the language of<br />
culture. Film, literature, music and visual arts are the featured genres around which this festival revolves, and<br />
is open to artists of every nationality.<br />
In the midst of this initiative-packed calendar, a particular highlight is theArt your Food contest that invites<br />
musicians, writers, artists and filmmakers (who can submit shorts, documentaries, TV or Web formats) to<br />
send their food-themed work to be viewed and voted on by the visitors to the Festival’s website, and then<br />
judged by a jury during the closing ceremony in Milan on <strong>May</strong> 12, <strong>2012</strong>.

There are numerous collateral events that accompany the Festival throughout<br />
its duration, the most important of which is a singular exhibition. While last year,<br />
the Festival organized an exhibition of contemporary art - Mangia l’arte (which<br />
means Eating art) – that gathered together works of famous artists based around<br />
traditional Italian food (from which several images are shown here), this year’s<br />
initiative is itinerant and is called Sport your Food.<br />
<strong>2012</strong>’s idea is the following: 5 chefs and 5 artists will produce a unique performance<br />
inspired by 5 Olympic sports. The chefs will produce a recipe, the artists<br />
will create a work of art and a video and in a game of holograms, the output of<br />
the chefs and artists will engage in a dialogue, crossing art and cuisine.<br />
The inauguration of the exhibition takes place in Milan in <strong>May</strong> <strong>2012</strong> and will<br />
be shown in important art galleries and other locations like the renowned food<br />
store Eataly in New York. From February <strong>2012</strong>, the exhibition will make stops in<br />
Milan, New York, Los Angeles and London – just in time for the Summer <strong>2012</strong><br />
Olympic games.<br />
It will be the ideal stage from which to call attention to the phenomenon of migration<br />
and food as an instrument of dialogue between different cultures, which<br />
is one of the stated aims of the Festival’s creators.<br />
