It is now timefor what many of us consider ourfavorite time of the year - fall.School has started, football isback, and the weather is perfectfor golf and tennis.I hope by now you have hadan opportunity to stop by ournew Halfway House on the LinksCourse. We appreciate all thepositive comments we have heardfrom you on this new facility.Even if you are not a golfer, wethink you will enjoy seeing thisvery beautiful addition to the Links Course.And speaking of new additions, the Board of Directorslast month approved plans for a new entrance sign to <strong>Odessa</strong><strong>Country</strong> <strong>Club</strong>. It will be a two sided oil derrick in a planter boxapproximately 12’ X 7’. I know many of you had expressedan interest in having a new entrance sign to the <strong>Club</strong>. Wehave had several people contribute to the cost of the sign. Ifyou are interested in contributing to the cost of the sign, orwould like more information concerning the sign, please seeeither me or Ryan.The Board is currently discussing other projects that we willbe presenting to you in the next few months. If you havesuggestions for enhancements you would like to see madearound the <strong>Club</strong>, please pass your ideas on to me, Ryan, orany of the other Board Members.Now that we are all back from our summer schedules andvacations, we would like to remind you that we do havememberships available in the <strong>Club</strong>. You may have newneighbors that you know would enjoy the <strong>Club</strong>, or in yourbusiness you may have employees that would benefit fromhaving a membership in <strong>Odessa</strong> <strong>Country</strong> <strong>Club</strong>. For ourstockholding members, we offer Legacy Memberships foryour children and grandchildren that are now living in thearea. Golfers go to the course with a new tip they just readin the latest golf magazine and feel like they have finally figured the game out. Only after a couple of shots, they realize they havenot increased their proficiency at all.Why are you not improving? OCC Women’s AssociationThe <strong>Odessa</strong> <strong>Country</strong> <strong>Club</strong> Women’s Association met for their monthly luncheon Friday August 12th. Hostesses for theluncheon were Chairman Mary Hill, Iola Gillham, Ann Todd, Kathy Young and Barbara Chappell. The tables looked beautifuldecorated with the Association’s globes, featuring bud vases of summer flowers accented by summer’s favorite flower - thesunflower. The arrangements were won by ten very lucky ladies. The August luncheon was completed by a summer menufeaturing the ever popular OCC’s California Chicken.President Evelyn Lafrentz called the meeting to order. Evelyn recognized long time Women’s Association member MarieElliott, who was celebrating her 90th birthday.The minutes of the previous meeting were read and approved. Evelyn then called on Dorothy Hall to present the treasurer’sreport.Sue Wikelski then reminded all the ladies of the style show for the luncheon in <strong>September</strong>. Ginny’s Collections will beshowing the latest styles for the fall and winter. Sue asked all the ladies that would be interested in modeling to get in touch withher. Evelyn also reminded the members that this is a great opportunity for them to invite guests for the luncheon and also toencourage other members of the association that have not been attending to come out for this great event.A special thanks was given to Paulette Wagoner, Pauline Gage’s daughter, for her assistance in taking pictures for the luncheon.Hostesses Mary Hill and Iola Gillham announced the winners of the cash gifts, Carole Smith and Doris McElmurry. Food & DrinkCulinary CornerThis month’s receipe...Porterhouse Au PoivreEddie Hatch IIF&B ManagerIngredients1 Large Porterhouse Steak2 Tablespoons ofBlack Peppercorns2 Tablespoons of olive oil1 teaspoon of kosher salt, plusmore to taste for the sauceThe summer is all about cookoutsand having fun. Here is a classic steakau poivre, done on the grill with aporterhouse. With the porterhouseyou have the best of both worlds:The Strip and the Filet. The steakis rubbed with cracked peppercorn,but the cognac cream sauce adds atouch of elegance, balancing out thedish nicely.3 tablespoons of butter1 large shallot, minced½ cup of cognac½ cup of heavy creamDirectionsPut the peppercorns in a zipper lock bag, press out the air,seal, and coarsely crush with the bottom of a heavy skillet.Pat the steak dry then rub olive oil all over the steak. Pressthe crushed peppercorns into both sides of the meat. Heatthe grill and coat the grill grate with oil. Put the steak onthe grill at high heat and cook until darkly crusted. Reduceto medium heat and continue to cook until your desiredtemperature. (Medium rare 130-135 degrees or Medium140-145 degrees) Once your steak is cooked to yourperfection, place it on a platter and loosely cover with foilto allow your meat to rest. (5 minutes) While the steak isresting, put the butter in a skillet and melt over mediumheat. Add the minced shallot and cook until softened, 1 to2 minutes. Add cognac and move to high heat. The cognacmight flame, but no worries. Boil until reduced to about a ¼cup. Stir in heavy cream and any juices you have from thesteak. Return to a boil and boil until slightly thickened. Addsalt to taste to the sauce and serve it with the steak. Golf Course NewsHopefully, by the time you have received this newsletter we will have made it through this veryhot and long summer. Our greens on both courses have survived very well with the exceptionof our new #2 green on the Old Course. Newly constructed greens often take several years tomature and establish under normal weather conditions. We will continue to stress programsthat will assist our new #2 green to establish a good and healthy root system through the Falland into the Winter.With a dry Fall and Winter predicted, we will have to continue to keep our attention andfocus on the water quality and volume of our water wells, which we are utilizing to irrigate theGreg HintonOld Course greens. We will continue to apply gypsum and flush irrigate greens on Mondays,Dir. of Golf Course Maint.which may result in wet green surrounds. Of course it goes without saying, a nice .5” or morerain for the Old Course would be great.Our focus this Fall on both golf courses will be excellent putting surfaces and programs that will help our still weak Bermudagrass fairways at the Old Course get through what could be possibly another dry and cold Winter.Our fairways on both courses have responded very well to our new soil and water amendment programs. Keep your eye on Ryan Harrison and Jack Sock, the risingstars of American tennis and let’s hope Serena Williams can make a run at another US OPEN title.Also this month I will be attending the USPTA WORLD CONFERENCE at the SaddlebrookResort, Wesley Chapel, FL <strong>September</strong> 19-24. This year I’m excited to attend several specialty coursesand general sessions. Speakers that will be there include Rick Macci who has coached several topplayers like the William sisters and Jeniffer Capriati, Emilio Sanchez, Jose Higueras, who helpedMichael Chang and Jim Courier win the French Open. Also attending the conference for the firsttime is Patrick McEnroe.Derek and I have put together a great fall program for the entire family to enjoy. See You On The Courts.After School Junior Tennis Academy <strong>2011</strong>Lil SlammersFor ages 5-6, this group will introduce your little one to the game of tenniswith fun games and teaching techniques that will spark their interest andenthusiasm to learn the basic fundamentals of tennis. This Class is heldon a weekly basis; call the shop to set up a time.Slammers (Quick Start)Held weekly from 3:45 pm to 4:30 pm on Tuesday for ages 7-9. This coursewill focus on ball skills, hand-eye coordination, learning basic stroketechnique along with score keeping. Drills and games will be used toteach tennis fundamentals. Cost is $80.00 per month.Futures 1 (Quick Start)Tuesday from 4:30 pm to 5:30 pm. This clinic targets the 10-12 year oldplayer with an understanding and knowledge of basic strokes. This groupwill meet once a week. The cost is $100.00 per month.Futures 2 (Junior High Level)Tuesday, 5:30 pm to 6:30 pm this class is designed for 7th grade boysand girls graduating from junior team tennis with prior match playexperience. We will develop the skills necessary to compete in ZAT andschool competition. The cost is $100.00 a month.Elite Training(Junior Varsity and Varsity)This class is for players with tournament experience, ZAT, JV and Varsitylevel. This group will focus on stroke production, match play, andconditioning. Their goal should be to become a champ or super champand make the high school team.
