Cup Cake Central<br />
Makes 2-3 Cupcakes, each<br />
Meringue Buttercream<br />
2 each egg whites<br />
1/2 cup granulated sugar<br />
¾ cup soft butter<br />
¼ teaspoon vanilla extract<br />
Place egg whites in a mixer with a whisk attachment.<br />
Equipment:<br />
Measuring cups<br />
Measuring spoons<br />
Mixer with whisk<br />
Piping bags<br />
Star tips<br />
Start on medium speed for 2 minutes and then increase to<br />
maximum until egg whites are stiff.<br />
Reduce speed to slow and add sugar 1 tablespoon at a time<br />
until all incorporated and meringue has a sheen to it.<br />
Increase the speed to medium adding a small amount of soft<br />
butter at a time allowing each piece to be combined first.<br />
Once all combined add Vanilla and mix in and then increase speed<br />
to high.
