Chili, Lime and Vodka<br />

Marinated Oysters<br />

Serves: 2-4<br />

1 each lime juice<br />

1 teaspoon finely chopped lime zest<br />

1 ounce vodka<br />

½ teaspoon finely chopped ginger<br />

1 teaspoon Japanese mirin cooking wine<br />

1 teaspoon white sugar<br />

½ each bird’s eye chili finely chopped<br />

2 dozen oysters<br />

Place all ingredients in a jar, cover with lid and shake vigorously.<br />

Take teaspoon and drizzle small amount over each oyster just before serving.<br />

For a more intense flavor, spoon over oysters one hour before serving.<br />
