<strong>2015</strong> Cook Off!<br />

The Master Chef Promotions “Cook Off” took<br />

place on Wednesday 7th January <strong>2015</strong>, at South<br />

& City College in Birmingham. The event tested<br />

the exceptional culinary skills of the top national<br />

restaurant chefs of each participating region as<br />

voted for by the Great British public!<br />

Each chef competed against each other in order<br />

to fight for the number one place to have the<br />

‘Best Restaurant/Chef’ for their region.<br />

The Cook Off challenge required the competitors<br />

to produce their very own “Creative Signature<br />

Dish” each chef had 60 minutes to create<br />

their finished dish. The chefs cooked under<br />

the watchful eyes of the celebrity judges and<br />

presenter who tasted their finished product and<br />

decided who won ‘Best Restaurant/Chef’ for that<br />

region.<br />

The judging panel consisted of a mixture of<br />

well-known celebrity chefs and food critics from<br />

all over the UK, starting with Pat Chapman, Chad<br />

Rahman, Paul Fulford, Manju Malhi, Peter Grove<br />

and Franck Pontais!<br />

The First Annual Master Chef Promotions<br />

Awards were held on Sunday 25th January <strong>2015</strong>.<br />

The red carpet event recognised and paid tribute<br />

to the chefs and businesses who have made<br />

major contributions to the food industry and<br />

who have been nominated by the public for their<br />

hard work and dedication.<br />

A bellydancing masterclass,<br />

armchair aerobics and circle<br />

dancing were just some of the<br />

activities showcased at an event<br />

for the over 50’s yesterday.<br />

Guests packed out the Apex in celebration of<br />

the re-launch of the Bury St Edmunds Friendship<br />

Centre at their new town centre meeting place.<br />

With members ranging from 58 to over 90 years<br />

of age, the Friendship Centre offers informal<br />

befriending and social activities for their members<br />

as well as advice on legal matters, health and<br />

exercise.<br />

Jane Andrews, Manager of the Friendship Centre<br />

said: “We’re all about preventing or helping to<br />

alleviate loneliness or isolation. It’s friendship that’s<br />

the most important thing because of the impact it<br />

has on a person’s mental and physical health.”<br />

She said loneliness was an issue “everywhere,”<br />

adding: “People put on a face. You would be<br />

amazed how many people look as though they are<br />

having a good day, but really behind the scenes<br />

they really need something like this.”<br />

She said men were particularly shy of coming to<br />

such clubs, but actually the Friendship Centre<br />

- which has about 100 members - had a good<br />

gender mix.<br />

Friendship Centre meetings are held on the third<br />

Monday of every month from 10.30am at the Apex<br />

with membership costing £10 for the year.<br />

PARISIAN CHIC...<br />

With the unfortunate events in Paris lately, it<br />

reminded me how much I love and adore their<br />

natural ability to keep calm and keep stylish in<br />

events and fashion.<br />

Parisian Chic is one of my favorite genres in<br />

the fashion world. WHY? Well, when executed<br />

correctly (correctly being the operative word) this<br />

genre is not only classy but also timeless.<br />

I disagree STRONGLY--- You either have it or you<br />

don’t I’m afraid ladies. You have to pull off this<br />

look correctly and accurately in order to make it<br />

look effortless.<br />

“The French woman is the one woman on earth<br />

that has the natural ability of allure, elegance and<br />

pure class. She dresses like a lady and she dresses<br />

for herself. She is in love yet is still autonomous.<br />

She is involved yet free. And most of all she is<br />

beautiful inside.”<br />

Now much to my dismay, British born actress<br />

Jane Birkin remarked that, “Chic you can learnit’s<br />

just a form of grooming”...<br />

I am British but i'm afraid Brits I will choose<br />

Parisian Chic over British eccentricity due to the<br />

fact I like the feminine dressing figure.<br />

game on 14th Jan <strong>2015</strong> at The O2 London.<br />

My main point when dealing with any clients from<br />

A-listers to house wives is...<br />

"Yes adopt a genre that you like, take the basic<br />

from it, then add your personality - because after<br />

everything is striped down there is only one you<br />

on this universe, so dress because you can."<br />

beautiful places to visit, why<br />

not stroll around Lavenham or<br />

take a trip to Snape Maltings,<br />

Write a series of love notes, with<br />

clues about your plans. Hide<br />

them in different places, such<br />

as on the fridge and in their<br />

workbag. It’s a fun twist and<br />

romantic stroll and maybe even a cheeky ice<br />

venue, one of the<br />

most important<br />

suppliers of a<br />

wedding is the<br />

photographer.<br />

It’s the one supplier you will<br />

certainly spend time with before,<br />

during and after the ceremony.<br />

The majority of couples will spend<br />

between 10-20% of their overall<br />

budget on photographers who<br />

create life long memories of their big day. Therefore choosing<br />

the right photographer is important!<br />

There are various types of photography used to capture<br />

weddings; the main ones are Traditional, Modern, Reportage or<br />

Artistic.<br />

Some photographers specialise in a certain type, others can<br />

do a combination. Which ever you choose, I personally think<br />

a combination of two is a good choice. For example, the<br />

traditional images of the posed bride and groom, with loved<br />

ones and the whole group shot is great as it ensures all guests<br />

are captured, great to use for gifts as well. The more modern or<br />

reportage approach is wonderful for storytelling and capturing<br />

guests/couples in private personal moments when they do not<br />

know they are being photographed, sometimes these are the<br />

best ones.<br />

Questions to ask yourself before choosing a<br />

photographer:<br />

• Do you like their style? Check through their<br />

portfolio and ask to see a slideshow of their<br />

work.<br />

• How experienced are they?<br />

• Are they familiar with your venue?<br />

• Are they creative? Does each wedding<br />

portfolio stand out as personal to that<br />

individual couple.<br />

• Do you like their personality? Remember<br />

you could spend at least 1-2 hours with them<br />

on your big day.<br />

• Have they a varied portfolio?<br />

• Do they offer various packages?<br />

Tips:<br />

• Make a list of shots you would like, with<br />

whom and where.<br />

• Make sure your groomsmen<br />

also have a copy and liaise to help<br />

your photographer gather people<br />

when needed.<br />

heart<br />

The heart as we all know is integral<br />

to everything we do as a human<br />

being, but heart disease and blood<br />

pressure issues are two of the most<br />

common challenges we often face.<br />

Here are some suggestions on complementary<br />

remedies and therapies to deal with common<br />

heart problems and also a look at the heart from<br />

an emotional and energetic perspective and how<br />

to help heal it from these aspects too.<br />

Salt: Follow a strict low salt diet. This is<br />

essential for lowering blood pressure. Read labels<br />

carefully and avoid those food products that have<br />

“salt,” “soda,” “sodium,” or the symbol “Na” on<br />

the label.<br />

Fibre: Eat plenty of fruits and vegetables,<br />

such as apples, asparagus, bananas, broccoli,<br />

cabbage, cantaloupe, aubergine, grapefruit, green<br />

leafy vegetables, melons, peas, prunes, raisins,<br />

squash and sweet potatoes.<br />

Juice: Include fresh “live” juices in the diet.<br />

The following juices are healthful: beetroot,<br />

carrot, celery, citrus fruit, parsley, spinach, and<br />

watermelon.<br />

Water: Drink filtered water only.<br />

Vitamin C: 1000 mg twice daily.<br />

Hypertension is caused either by problems in the<br />

kidneys, or “atherosclerosis” or hardening of the<br />

arteries.<br />

Flaxseed: Take 2 tablespoons of oil daily.<br />

Keep your heart healthy for Valentine’s<br />

Day and remember the other 364 days of<br />

the year…<br />

Your heart is one of the most important organs in<br />

your body. Let’s face it, they’re all pretty important…<br />

apart from the appendix, perhaps.<br />

It’s also one of the most romanticised organs of the<br />

body. Phrases such as ‘follow your heart’, ‘keep love<br />

in your heart’ and to be ‘good at heart’ all strengthen<br />

both the emotional and physical attachment to our<br />

ticker.<br />

So it’s obvious to isn’t it? We have to ensure that we<br />

each take extremely good care of our cardiovascular<br />

system.<br />

Taking a look at a few sites online, including the NHS<br />

Live Well website (www.nhs.uk/livewell) here are a<br />

few ways to keep your heart healthy:<br />

Get active<br />

For many of us, work and other commitments can<br />

get in the way.<br />

But you can move into things gradually: go for a<br />

walk on your break at work, take the children to the<br />

playing field and get involved in the fun and games,<br />

meet your friends at the climbing wall, swimming<br />

pool or ‘pay as you go’ fitness class - rather than the<br />

pub.<br />

Give up smoking<br />

Smoking is one of the main causes of coronary heart<br />

disease. A year after giving up, your risk of a heart<br />

attack falls to about half that of a smoker.<br />

Smoking cessation provided by a qualified<br />

hypnotherapist or Acupuncture from a qualified<br />

practitioner could help achieve your desire to quit.<br />

Manage your diet and weight<br />

Being overweight can increase your risk of heart<br />

disease.<br />

Equally, you could be a fair size with no obvious<br />

to a well-balanced diet that works for you.<br />

1) How can I get fit and lose weight<br />

in <strong>2015</strong>?<br />

This time of year we are often trying to cut back<br />

after a season of over-indulging. Small changes<br />

to our lifestyle can have a big impact on our<br />

sense of wellbeing in addition to our health.<br />

Some people find having a ‘Dry January’ can<br />

help them cut down alcohol and lose weight.<br />

Drinking in moderation is important as there<br />

are many hidden calories in alcohol.<br />

Make a plan of how much weight you<br />

want to lose and set yourself a goal,<br />

recording your calorie intake for each<br />

day. By writing a food diary you will<br />

soon realise the size of portion you<br />

need to lose weight, its often smaller<br />

than you think! Drink plenty of water to<br />

rehydrate you – its calorie free! Finally<br />

find an exercise that you enjoy, if its<br />

running on your own listening to music<br />

or doing an exercise video in your front room,<br />

it all adds up. Turn to others for moral support,<br />

there is evidence that joining a slimming club has<br />

better results than trying to lose weight on your<br />

own. Encourage other members of your family<br />

to join you in your <strong>2015</strong> challenge, you will love<br />

seeing the results.<br />

2) Since Christmas I have been<br />

getting really bad indigestion, what<br />

should I do?<br />

losing weight can help reduce these symptoms. If<br />

the acid persists despite these lifestyle changes<br />

you will need to see your GP for a discussion<br />

and an examination. In some cases you will need<br />

medication to try to reduce the acid in your<br />

stomach or antibiotics if you are found to have a<br />

bacteria in your stomach. If your GP is concerned<br />

they may refer you for further tests to look at<br />

your stomach and oesophagus in more detail.<br />

3) How can I stop<br />

smoking?<br />

I always say to my patients<br />

‘Never give up giving up’.<br />

It sounds naff but its true.<br />

Sometimes people give up for<br />

a year and then one cigarette<br />

will set them back to square<br />

one. But each attempt will<br />

get easier until one day it will<br />

click. There is so much evidence now that tells<br />

us how dangerous cigarettes are for our health.<br />

From increasing the risk of cot death in passive<br />

smoking children to contributing to heart<br />

disease, strokes and lung cancer in adults. The<br />

benefits also include saving money, improving<br />

our dental health and preventing wrinkles!<br />

There are smoking cessation clinics run in most<br />

GP surgeries that provide both motivation and<br />

medication to help with stopping smoking. Enroll<br />

in one today to find the best for you – whether it<br />

be tablets, nicotine replacement or just support.<br />

It’s not every day that you’re<br />

invited into the heart of one of the<br />

UKs fastest growing, best loved<br />

brewery’s. <strong>Bounce</strong> <strong>Magazine</strong> were<br />

only too glad to accept...<br />

Walking through picturesque Southwold, my<br />

first memory was the aroma of malt and hops.<br />

This truly is a brewery town and first up on<br />

the tour we learnt how intertwined the town’s<br />

history actually is with the art of brewing beer.<br />

Look back through the sands of time in this<br />

coastal town and you’ll see Johanna de Corby.<br />

She was the first recorded brewer on the site<br />

of modern day Adnams HQ in the 14th centuryand<br />

was prosecuted for her labours!<br />

Ever wondered what it’s like to be a beer<br />

brewer? This tour will certainly give you a taste<br />

– quite literally! We chomped our way through<br />

each and every variety of dried malt and hops.<br />

So distinctive were the flavours that we were<br />

actually able to match them to our favourite<br />

Adnams beers.<br />

The brewing facilities looked like the set of a<br />

sci-fi movie.<br />

Shining and sparkling stainless steel vats and<br />

pipes made up the engine room and looked<br />

too impressive to be locked away for much of<br />

the time. We learnt that the modern, energy<br />

efficient brewery was opened in 2008 and<br />

produced East Green, the UK’s first Carbon<br />

Neutral beer.<br />

If the Pièce de résistance was the tasting<br />

session at the end of the tour,<br />

then the Coup<br />

de Grace was the<br />

special ‘Tally-Ho’<br />

beer at 7.2% ABV!<br />

This beer was<br />

actually branded<br />

‘Tally-Ho-Ho-Ho’<br />

for Christmas, and<br />

seemed apt, as it<br />

would certainly<br />

send you to sleep<br />

by the fire.<br />

There was the<br />

full line up<br />

of Adnams<br />

own brews on offer, from favorites like Ghost<br />

Ship, to the innovative Jack Brand Craft Beer<br />

range. It was a great chance to try some of<br />

these new flavours and I’d give a personal<br />

recommendation of the Dry Hopped Lager<br />

which is a crisp, hoppy lager that’s packed full<br />

off flavour with tropical and citrus notes!<br />

The Adnams Brewery tour is a fascinating<br />

insight into beer making and indeed British<br />

history. A snip at £12 a head,<br />

you’ll have a great afternoon<br />

by the coast, and you’ll get to<br />

claim a free beer of your<br />

choice too!<br />

This is a real winter warmer, a favourite on our menu; we added<br />

chopped Aubergine, Courgette and Carrot to the Chickpeas but its up to<br />

you!...<br />

Lamb shanks with chickpeas &<br />

Moroccan spices<br />

Soak the chickpeas overnight. Drain, tip into a saucepan and<br />

cover generously with fresh cold water. Bring to the boil,<br />

simmer for 45 minutes and drain.<br />

Heat the oil in a large casserole and brown the lamb all<br />

over. Remove and set aside. Pour off most of the fat, leaving<br />

1 tablespoon in the dish, add the onions and fry for 8-10<br />

minutes until soft.<br />

Preheat the oven to 160C/Gas 3/fan oven 140C. Mix together<br />

the ginger, garlic, chillies, cumin, coriander, pepper and<br />

paprika. Add half of this to the onions, tip in the tomatoes<br />

and cook for 2-3 minutes. Put in the lamb and chickpeas,<br />

cover generously with water (about 850ml/1.5 pints), bring<br />

to the boil and simmer for 5 minutes. Cover and cook in the<br />

oven for 1.5-2 hours until the chickpeas are really tender.<br />

(You can prepare up to this stage the day before. Cool,<br />

cover and refrigerate. Bring back to simmering point before<br />

starting step 4).<br />

Remove from the oven and stir in the remaining spice<br />

mixture, the saffron and cinnamon, carrots, apricots, honey<br />

Of many differing grapevine species there are<br />

only about 4 that are of any significance.<br />

East and was spread through Europe by Ancient<br />

Greek and Roman conquests.<br />

Vitis Vinifera - This is the main one<br />

producing most of the wine around<br />

the world. Of this there could be<br />

over 5000 varieties including<br />

Chardonnay, Cabernet Sauvignon<br />

and Merlot etc.<br />

Vitis Rupestris, Vitis Berlandieri and Vitis Riperia<br />

– These are native to North America and perform<br />

well in resisting vine pests. The wine made from<br />

these species is not liked by most people but<br />

their rootstocks are used to graft onto Vitis<br />

Vinifera to protect them from pests.<br />

The original Vitis Vinifera came from the Middle<br />

Varieties<br />

Of the many varieties of Vitis Vinifera there<br />

are about 300 or so around the world used for<br />

making wine that we enjoy drinking. Each country<br />

has its own indigenous varieties but France can<br />

claim first place in exporting varieties around the<br />

world. If you could choose the top varieties the<br />

list would be endless. Here are my top 10. This<br />

might be my desert island choice.<br />

Sauvignon Blanc<br />

From the Loire Valley and Bordeaux in France, it<br />

is also grown around the world. In cooler climates<br />

it has a distinct cut grass, nettles and gooseberry<br />

flavour, with mineral and zesty undertones.<br />

Famous in New Zealand, where it achieves<br />

intense asparagus and grapefruit flavours.<br />

Riesling<br />

Apples , lime and petrol. Germany is the key<br />

country where it is common in the Mosel and<br />

Rheingau. It is also grown in Australia where it<br />

has lime and lemon flavours. In Alsace France it<br />

achieves more floral and perfumed tones.<br />

Pinot Grigio<br />

Orinally known as the Pinot<br />

Gris in Alsace, but<br />

now more often using<br />

the Italian spelling. A<br />

delicate spicy grape<br />

with a touch of<br />

oiliness. It can be a<br />

rose (pink) wine due to<br />

its pink coloured grapes.<br />

Muscat<br />

Fragrantly perfumed and grapey flavoured<br />

variety. It can be dry as in Alsace but more known<br />

as a dessert wine often fortified especially around<br />

the Meditteranean. Aromas of candied fruit,<br />

exotic spice and raisins.<br />

Red<br />

Pinot Noir<br />

Originally from Burgundy it has homes all round<br />

the world, but prefers a cooler climate. A vast<br />

array of characteristics, It can be reminiscent of<br />

red berries and spice, cherry and loganberry. It<br />

can also develop with age into more silky tones ,<br />

leather and vegetable.<br />

Cabernet Sauvignon<br />

Now the most planted grape variety, it is one of<br />

the mainstays of Bordeaux. Grown around the<br />

world it is often described as blackcurrent and<br />

sometimes mint. When used with oak can give<br />

rise to vanilla, cedar, tobacco and spice.<br />

Merlot<br />

Softer in texture with a plummy flavour. Smoother<br />

than the Cabernet Sauvignon it was at one time<br />

the world’s favourite grape. Couple with Cabernet<br />

Sauvignon it is another important grape in<br />

Bordeaux.<br />

Grenache<br />

More of a Meditteranean grape, it develops<br />

fine fruit flavours with other mild spices. A<br />

main component of Rhone wines including<br />

Chateauneuf du Pape. It is also used to<br />

produce delightful Southern<br />

France dessert wines.<br />

Syrah<br />

Also known as the Shiraz<br />

in New World countries.<br />

Smoky, peppery and<br />

spicy. The main red<br />

grape of the Northern<br />

Rhone and a component<br />

of Southern Rhone.<br />

Warmer climates give rise<br />

to more berry fruits and<br />

chocolatey flavours.<br />

It is difficult to pick just 10 favourite grapes, it<br />

could easily be 50 or more for example Viognier,<br />

Tempranillo, Sangiovese, Marsanne, Zinfandel,<br />

Chenin Blanc etc are just a few.<br />

It is also common practice to blend 2 or more<br />

varieties together. Top Bordeaux wines are a<br />

blend as also are many Rhone wines.<br />

Suggestion<br />

It is interesting to taste a wine from Cabernet<br />

Sauvignon against a Merlot. Take notes of what<br />

you find. Then source a wine with both Grapes<br />

and see the difference.<br />

Being a bit of a coffee nerd these days I am always taking photo’s of cafes<br />

with great quotes to advertise their business, get your interest as you<br />

walk past or just make you smile.<br />

I am also always being sent them by my friends<br />

and family and especially Scott, whom I do<br />

believe is nerdier than me. Below are my Top 14<br />

and I have started off with a Valentine theme as<br />

beautiful coffee and lie to me about how much<br />

we’re going to get done today.<br />

6. I didn’t sleep well last night so made my<br />

coffee this morning with Red Bull instead of<br />

water. I got half way to work when I realised I<br />

had forgotten my car.<br />

7. Depresso: the feeling you get when you run<br />

out of coffee.<br />

8. Water is the most essential element of life<br />

because without it you cannot make coffee.<br />

9. I’ve started drinking coffee out of a clear<br />

mug, so people know where my tolerance level<br />

is at.<br />

10. A good man can make you feel strong; full<br />

of energy and able to take on the world. No<br />

Sorry... That’s coffee. Coffee does that.<br />

11. I drink coffee because I need it and wine<br />

because I deserve it.<br />

12. Good Morning! A fresh cup of coffee and<br />

my Facebook page is up’ just look at that, I<br />

have already achieved all my goals today.<br />

13. I force people to have a coffee with me,<br />

just because I don’t trust that a friendship<br />

can be maintained without any other senses<br />

besides a computer or cellphone screen.<br />

eroded. So, whoever you are dining with on<br />

Valentine’s night – focus on the person sharing<br />

the experience!<br />

Aphrodisiacs! Urban myth or<br />

substantiated evidence?<br />

For fun I googled aphrodisiacs whilst researching<br />

our Valentine menu and discovered that most<br />

were illegal, inedible or immoral! So we will not<br />

be offering Tiger Penis Tapas or Spanish Fly<br />

Omelette or even Salamander Brandy. However<br />

Watermelon may make an appearance, see an<br />

A cold slice of watermelon<br />

has long been a Fourth of July<br />

holiday staple. But according to<br />

recent studies, the juicy fruit may be better suited<br />

for Valentine’s Day. That’s because scientists say<br />

watermelon has ingredients that deliver Viagralike<br />

effects to the body’s blood vessels and may<br />

even increase libido.<br />

Many other aphrodisiacs may just have a placebo<br />

effect and are based on their visual similarity<br />

to “body parts!”. These include asparagus and<br />

oysters, (please don’t ask me to explain any<br />

further).<br />

On a more practical level you may be hoping to<br />

find out how to impress your loved one through<br />

culinary expertise. Firstly remember that it is not<br />

just the food, we need to set the mood. Music,<br />

lighting and the table setting all add to the overall<br />

romanticism of a meal.<br />

Flowers on a table can look nice but they can<br />

get in the way of your view of your loved one, so<br />

perhaps give a bunch of flowers (this works for<br />

both sexes) and use the petals from one<br />

of the flowers strewn over the table. I<br />

would also keep candles low, use<br />

any glass container to put tea<br />

lights in, this is important as tea<br />

lights can easily cause a fire.<br />

Do no over stretch yourself and<br />

get all hot and bothered - this is<br />

not attractive!<br />

• Smoked Salmon with Horseradish Crème Fraiche<br />

• Plus shop bought shortbread to accompany.<br />

Bring the cream and the sugar to the boil - simmer<br />

through a sieve onto the lemon, this will cause the<br />

make it milder or stronger to suit your own taste.<br />

Lay the smoked salmon out on the plate, garnish<br />

with the mixed leaves & the lemon. At this point you<br />

can cling film the plate and pop in the fridge. Take<br />

• Red Wine – a splash from the bottle that you have<br />

noughts and crosses grid – use a very sharp knife<br />

and set aside (not in the fridge) Peel, dice and boil<br />

the sweep potato for 20 minutes, drain thoroughly.<br />

Heat a non-stick pan – the heavier the better. Do<br />

duck breast skin side down, turn the pan down to<br />

medium and allow to cook for around 4 minutes.<br />

Put the broccoli on full power in the microwave for<br />

4 minutes. Remove the duck breast from the pan<br />

and place on a warm plate to rest. Put the mash in<br />

the microwave for 3 minutes – or until hot. Add a<br />

• 1 teaspoon Chinese 5 Spice Powder<br />

• 3 tablespoons Hoisin Sauce<br />

opened to breathe for dinner – do not drink<br />

Trim the end of the broccoli, wash it and wrap in<br />

cling film.<br />

Mix the crème fraiche and horseradish together –<br />

NOT add any oil. Once the pan is hotcadd the<br />

out just before serving and put a spoonful of the<br />

sauce on the side.<br />

Pan Fried Duck Breast with<br />

generous splash of red wine to the pan- allow to<br />

reduce add the hoisin sauce, allow to warm through.<br />

Sweet Potato and Ginger Mash<br />

accompanied by Steamed Brocolli<br />

Everything should now be ready to serve! Sit<br />

• 2 Duck Breasts<br />

the duck on the sauce and serve any remainder<br />

separately, place the broccoli and mash as<br />

artistically as you can.<br />

1. Chill four martini glasses in the freezer or fill<br />

with ice water and let sit until frosty, about 5<br />

Ingredients<br />

• 2 ounces dry vermouth<br />

• 8 ounces premium gin<br />

• Ice cubes<br />

• 4 Pickled Baby Beets, each<br />

placed on a cocktail skewer<br />

2. Add the vermouth, dividing evenly; swirl to<br />

coat the glasses, then pour out.<br />

3. Add gin to a cocktail shaker filled with ice.<br />

4. Shake vigorously until chilled; divide among<br />

A dreary week in <strong>February</strong> was<br />

made brighter by an invitation from<br />

the Milsom chain of luxury Hotels<br />

and Restaurants. We were delighted<br />

to dine at the award winning Le<br />

Talbooth and stay at the stunning<br />

Maison Talbooth nearby.<br />

Climbing the steep, winding drive to the Victorian<br />

mansion I slipped into a period drama.<br />

The house stood proud atop the hill cutting<br />

a fine figure, as if to cast jurisdiction over the<br />

immaculate surrounding grounds and the wide,<br />

panoramic expanses of farmland in the valley<br />

below.<br />

So picturesque was the setting in the heart of<br />

Constable country in Essex, that a little drizzle<br />

couldn’t dampen the magic of the grounds or<br />

nearby Flatford Mills.<br />

It would be impossible to fault the service at<br />

Maison Le Talbooth, and the hotel manager<br />

Wendy warmly greeted us at the door. There was<br />

a warm, genuine atmosphere, which was welcome<br />

after a long week of work.<br />

Not to be disappointed, the room exceeded<br />

expectations with a bed that would have had<br />

even the most troublesome of sleepers nodding<br />

off in an instant. The bathroom was more of a spa<br />

and TV had every channel that SKY could offer.<br />

One of the surprises of the evening was the pool<br />

house. By this time it was dark and we wandered<br />

down the meandering path, through the grounds<br />

to the walled pool area. I cast open the high gate<br />

and was met by steam rising from the pool into<br />

the night sky. Beyond this was a Jacuzzi, more<br />

steam, an outside fireplace and sitting area,<br />

barn-like pool house and honesty bar. Although<br />

a foreign concept to me, it was touches like the<br />

honesty bar that contributed to the relaxed and<br />

safe feel at Maison Talbooth.<br />

Dinner was served at the Le Talbooth restaurant<br />

around half a mile away. No need to book a taxi<br />

as the hotel were on hand to run guests down<br />

in the Milsom branded Range Rover at your<br />

convenience. The stunning 17th century restaurant<br />

is nestled on the banks of the river Stour. Le<br />

Talbooth boasts exceptional service, awardwinning<br />

food and fine wine.<br />

Guided through the menu by attentive and<br />

knowledgeable staff, I opted for Lobster Risotto,<br />

pancetta, courgettes and rocket cress to start.<br />

Saving herself for a meat dish for her main course,<br />

Rachel enjoyed the Spinach and Duck Egg Ravioli,<br />

autumn truffle and herb tempura.<br />

The sommelier of the evening really added to<br />

the experience, with an extensive knowledge and<br />

passion for wine, with charisma and humour to<br />

boot. We were confident to be in Ivars’ capable<br />

hands, who matched a different wine to each of<br />

our individual courses.<br />

The Trio of Dingley Dell Pork, butternut squash,<br />

cavolo nero and pickled apple came highly<br />

recommended for my mine course and was<br />

coupled beautifully with a medium bodied red.<br />

The flavoursome pork was balanced with the<br />

sharpness of the apple and was exceptional.<br />

Rachel had Thetford Forrest Venison Saddle,<br />

thyme infused polenta, blackberries, kale and<br />

red wine jus, which I hear was also superb.<br />

Dessert was Lemon Meringue Souffle, Autumn<br />

pistachio. As if that was not enough, Ivars was<br />

good enough to ply us with four dessert wines to<br />

have in ascending order of sweetness.<br />

As was a theme for the whole stay at Milsoms,<br />

it was the small details, as well as the large, that<br />

caught our attention. Rounding off dinner with<br />

a coffee, we were presented with a mahogany<br />

box. Lifting the lid revealed a velvet interior and a<br />

fantastic array of handmade, specialist chocolates<br />

and truffles. It was a perfect way to conclude a<br />

truly exceptional dining experience.<br />

Gerald Milsom, who founded the hotel and<br />

restaurant chain in the late 1960’s, leaves a<br />

legacy of remarkable service and quality. I can<br />

wholeheartedly recommend this country retreat<br />

and taste of luxury in the beautiful surrounds of<br />

Constable Country.<br />

The designer is called Angela<br />

Faulkner, and we now stock her<br />

whole collection of fabrics. We can’t<br />

wait to show our customers.<br />

Background<br />

Angela and her husband live in Shropshire, she<br />

started designing from the comfort of her prize<br />

winning garden, which is the inspiration for her<br />

large scale floral and talent for growing rare and<br />

exquisite flowers, some of which were chosen for<br />

the Telegraphs garden at the Chelsea flower show.<br />

can. Forking over not only helps prepare the soil for<br />

spring, it helps reduce pests by exposing them to<br />

Remember not to let leaves accumulate around<br />

alpines - they will die if left damp for long.<br />

Cover bare patches around clumps with gritty<br />

compost to encourage regrowth.<br />

When the weather allows, carry on clearing paths,<br />

check walls (but avoid concreting until there is no<br />

chance of frost), clean and insulate greenhouses<br />

and ensure heaters are working properly. Even a<br />

little insulation will make a huge difference to your<br />

Whether you love it or hate it,<br />

Valentine’s Day is upon us.<br />

The day of the year to spend with our loved ones,<br />

where romance comes out with bells on, and<br />

everything is seemingly red.<br />

But who says we must conform to the Valentine’s<br />

tradition? Who says our loved ones has to be a<br />

partner? Why not ourselves or our cat or Netflix?<br />

There is no shame in buying a romantic dinner for<br />

two... for one...<br />

The more on my plate the merrier, and as little<br />

red as possible, please. Just like many old ways<br />

now a days, we can have our own spin on them.<br />

People get married on top of planes for<br />

goodness sakes, so why can’t we see Valentine’s<br />

a little differently?<br />

Is is of course <strong>February</strong>, meaning the chill has<br />

certainly not left yet, and there is still plenty of<br />

excuses available to cosy up with a heap of knit<br />

and snugness.<br />

JUST IDEAS...<br />

This doesn’t mean to say we must leave<br />

Valentines behind completely, and although<br />

I am not in fact a very pink kind of person, I<br />

certainly think it would be a shame to forget<br />

the romance of the day with the soft blushes of<br />

rouge that is assosiated with the day of love.<br />

The house doesn’t have to be scattered with<br />

rose petals to enjoy Valentine’s Day, nor do<br />

banners have to be erected declaring your love<br />

to your wife / husband... or cat...<br />

So what about the smaller details? Keeping out<br />

some of that red from Christmas from napkins,<br />

light. Use candles to create soft, flickering light. If the idea of using fire makes you nervous, there are also<br />

flameless candles on the market. These candles give the look of a flickering flame without the fire hazard.<br />

Frame and Hang Pictures...<br />

It’s easy to get so caught up in living life that you forget to cherish the memories you have made. Use this<br />

time to go through old photos. Frame and display the ones that you love the most. These might be photos<br />

from memorable trips together, fun times you have had, or loved ones who are important to the two of you.<br />

Find beautiful frames and look for just the right spots to display your most cherished memories.<br />

Hunt proves to be a Lionstamer<br />

as Ipswich get<br />

promotion push back on<br />

track...<br />

There are always key moments,<br />

key decisions in any football<br />

season. A last minute own goal,<br />

a missed penalty, a dramatic<br />

winner, a dodgy referee decision<br />

and so on and so forth.<br />

All of these add up and all will be used as<br />

markers to evaluate a football team’s season,<br />

whether successful or otherwise. In the case<br />

of Ipswich Town fans, Saturday 16th January<br />

<strong>2015</strong> could prove to be a landmark date.<br />

The very kind editors of <strong>Bounce</strong> <strong>Magazine</strong><br />

graciously agreed a deadline extension so I<br />

could pen my thoughts post-Millwall.<br />

The reason was simple. A daunting trip to the<br />

New Den had come after Ipswich had endured<br />

a “blip” to quote keeper Bartosz Bialkowski.<br />

The national media had converged onto<br />

Portman Road over the space of four-and-ahalf<br />

days and Town had caught a bit of stage<br />

fright. A 1-0 FA Cup defeat to Premier League<br />

high-flyers Southampton was expected.<br />

against most people’s title favourites Derby,<br />

to come in early January. We are about to<br />

see what Mick McCarthy’s men are all about<br />

ladies and gentleman. What came before<br />

Southampton was even worse. Another 1-0<br />

home defeat, this time to promotion rivals<br />

Derby County was more than a little worrying.<br />

Defeats happen and should be taken in context, it<br />

was only the second time Ipswich had tasted a loss<br />

since the end of August after all.<br />

It was the performances against Derby and<br />

Southampton which fuelled any doubters. Both<br />

performances were largely poor. Too many coming<br />

out of the home dressing room looked laboured, as<br />

if a long and gruelling season was started to show<br />

its effects. Daryl Murphy and David McGoldrick, two<br />

men who have given so much for the fight, looked<br />

especially tired.<br />

Step forward Noel Hunt, the Lionstamer,<br />

who put any fears to rest after<br />

just 15 scintillating minutes at Millwall.<br />

With the hosts fighting for their lives, the<br />

visitors never looked like licking<br />

their wounds as Millwall were<br />

put to the sword three to one.<br />

<strong>February</strong> sees the start of the<br />

<strong>2015</strong> ICC Cricket World Cup<br />

and I for one cannot wait for<br />

it to get started.<br />

England has already made<br />

headlines before the tournament<br />

even started by sacking their<br />

Captain Alistair Cook and<br />

replacing him with Eoin Morgan.<br />

Kevin Pietersen and then had his say when<br />

commenting on the Big Bash in Australia stating<br />

Morgan wanted him in his side. Elsewhere, New<br />

Zealand and Sri Lanka have been fighting it out in<br />

their preparations in what has been an excellent<br />

ODI (One Day International) series. Australia and<br />

India have pretty much just been fighting as part<br />

of their Triangular Series (which also includes<br />

England). Finally on a positive note, A.B Devillers<br />

broke the World Record for the fastest ODI<br />

century, smashing the West Indies all around The<br />

Wanderers. His century came off just 31 deliveries<br />

and I must say was truly epic to watch. So with<br />

all this going on before the tournament even<br />

starts in Australia and New Zealand it is safe to<br />

say that for the cricketing fans there is a lot to<br />

look forward to, even with the late nights/early<br />

mornings. The main question however is and<br />

always is with a World Cup... who is going to win?<br />

Having changed the format for this tournament,<br />

the top 4 teams in each group qualify (there are<br />

7 teams in each group). This means that all the<br />

big Test playing nations should in theory get<br />

through the group. This would therefore mean<br />

that Australia, England, South Africa, India, New<br />

Zealand, Pakistan, The West Indies and Sri Lanka<br />

in theory should be the teams who make it to<br />

the Quarter Finals. However this is not as straight<br />

forward as it looks.<br />

I would love to see and Australia vs South Africa<br />

final. I think on paper these are the 2 best sides<br />

around at the moment and I would love to<br />

see both of their batting line-ups take on the<br />

opposing bowling firepower. The winner would<br />

be too close to call but I think home advantage<br />

could potentially tip the balance...unless the<br />

South African skipper A.B Devilliers pulls off<br />

another master class then it is surely theirs to<br />

lose. All I do know is that I cannot wait to see<br />

what happens. Check it out from 13th <strong>February</strong><br />

being the opener in New Zealand (who needs<br />

valentines when England Australia is 14th Feb!)<br />

Parkour (also known as<br />

freerunning) is the art of getting<br />

from point A to point B in the<br />

most efficient way possible using<br />

the human body and surroundings<br />

for propulsion whilst maintaining<br />

as much momentum as possible.<br />

Elements of the sport actually date back to 1902<br />

when the French military picked up training<br />

techniques in Africa but “parkour” came<br />

to fruition in the late 80’s when<br />

David Belle took his gymnastic<br />

and athletic experience and<br />

coupled it with military training<br />

from his father. With his friends<br />

developed the parkour way of life,<br />

for the traditionalists this is not<br />

just a sport but a state of mind just<br />

like a martial art training a physical<br />

strength and a mental discipline. By<br />

the late 90’s clips had been seen on<br />

TV and its popularity grew until now where it’s a<br />

household name and a regular scene in the latest<br />

Holywood blockbuster.<br />

Action Man joined up with Suffolk’s only parkour<br />

and free running troupe ‘Urban Ateles Parkour and<br />

FreeRunning’ who meet every Thursday evening at<br />

‘The Mix’ in Stowmarket (IP14 1BB) where anyone<br />

interested in the sport can practice, train & learn<br />

from qualified teachers in a safe environment (not<br />

jumping off buildings!) and it’s available for all<br />

ages…<br />

Having never done parkour before (not on purpose<br />

anyway!) it wasn’t long before I was somersaulting<br />

and hurdling over pommel horses all under the<br />

expert tutelage of parkour veterans Sam & Richard<br />

who had me landing more like a feather than a<br />

brick. I’ve seen a number of parkour videos on<br />

YouTube but I was in awe to watch this graceful<br />

act first hand. Even with just a few obstacles I was<br />

amazed by the range of combinations that were<br />

being strung together even by the<br />

groups younger members who were<br />

flying around like teenage mutant<br />

ninja turtles, and loving it!<br />

Whilst this was all great fun it was<br />

also one hell of a workout and if<br />

anyone was looking into a pursuit<br />

for strength and conditioning then<br />

Parkour is it! Or maybe you have<br />

a mini Action Man on your hands<br />

(some would argue that I’m already a mini Action<br />

Man!) and your little ones are perhaps not into the<br />

usual ball sports and/or just love leaping off things,<br />

then great! Get them into ‘The Mix’ on a Thursday<br />

afternoon where they can really express themselves.<br />

Perhaps more artistic pursuits may appeal then<br />

Ateles Parkour sister group the Winters Academy<br />

of Dance have commercial & freestyle dance<br />

classes also at ‘The Mix’ on Monday evenings and<br />

performance arts Tuesday Evenings. Also open to<br />

all ages. Both groups have Facebook pages with<br />

Hey my beloved readers (and<br />

fans)! By now, you all should know<br />

my head is pretty much ruled<br />

by my furry little belly. So when<br />

opportunity strikes, one must simply<br />

take it… no matter what the cost.<br />

Last Saturday, romance was in the air,<br />

red roses filled the room, a special<br />

occasion perhaps, and I was left<br />

alone, fancy them not including<br />

me – hmmph bloomin’ ignored…<br />

but oh those sweet luxury<br />

Chocolates.<br />

An assortment of flavours,<br />

delicately wrapped up in tissue<br />

paper, contained within a glowing gold<br />

box. I was salivating at the thought of them; I<br />

had to get in that box!<br />

the armchair pivoted across to the other sofa using<br />

my tail to propel me and I leaped onto the coffee<br />

table. Mission accomplished.<br />

Moments later I felt a little peculiar, caught red<br />

handed they walked in as I lay on my back with that<br />

guilty face on hoping that I got away with it.<br />

Then panic struck… they hurried me into<br />

the car like a celebrity exiting a posh<br />

hotel. Before I know it I’m not<br />

getting out to greet my fans I<br />

am at the place I fear the most,<br />

the animal doctors, or vets as<br />

you call it.<br />

I think its safe to say after lots<br />

of treatment I wont be rushing<br />

for chocolate again in a hurry.<br />

But a little note to my doggie friends,<br />

chocolate is toxic to us without quick<br />

action it could lead to devastating effects.<br />

My mission started from the moment the front door<br />

was closed. Action stations… I crawled along the<br />

floor sniffing to find a crumb or two, but nothing,<br />

mind you if truth be told, crumbs wouldn’t have<br />

been good enough for me anyway.<br />

I glanced up again and my beady eyes clocked on<br />

to the glow of the box. Like an athlete I sprung onto<br />

time soon.<br />

I reckon that was probably<br />

the most expensive box of<br />

chocolates they ever had, wont<br />

be ignoring me anytime soon!<br />

A FLYING START FOR LOCAL<br />

MUSIC IN <strong>2015</strong><br />

Small music venues are integral to any local<br />

scene. Despite providing a base for new music to<br />

launch from, a place for people to discover bands<br />

and artists together and a community networking<br />

hub many small venues are under threat from<br />

noise control restrictions or funding issues. On<br />

17th January a soundproofing benefit gig was<br />

held to combat these threats for The Hunter<br />

Club & Doodle Bar, a fantastic venue in Bury St<br />

Edmunds.<br />

CARRIAGE PHANTOMS, LOST LUNGS, BEYOND<br />

REVOLUTIONS, YOU THE LIVING and THE<br />

SELECTED all performed a gig organised by<br />

Washing Machine Club Night to help raise £812 to<br />

ensure this brilliant club continues offering bands<br />

the opportunity to perform, however big they are.<br />

Another great piece of news for the local music<br />

scene is that everyone’s favourite animal-disco<br />

related band HORSE PARTY are releasing a<br />

new 7” single with two brand new songs! Due<br />

for release on 23rd <strong>February</strong>, Out Of Sight<br />

and Receiver are atmospheric, alternativebluesy<br />

songs featuring Ellie Langley’s beautiful<br />

vocals layered over Seymour Quigley’s guitar<br />

and Shannon Hope on drums. You can now<br />

Playing for change....<br />

For centuries people have used<br />

song as a way to record social<br />

happenings, events and rebellions.<br />

In fact, there are some moments in history which<br />

have been transposed into song, which are more<br />

acute and succinct than reams of official documents.<br />

Take the Aberfan disaster in the 1966. One hundred<br />

and forty-four people died when a slagheap dumped<br />

on a mountain above this Welsh-mining town,<br />

became mobile. Slurry, which was thirty-nine feet<br />

deep, swept away a farm, houses and the lives of<br />

many of the people in its path.<br />

The main reasons these people died are because of<br />

something, which causes death day after day around<br />

the globe, poverty, indifference and corporate<br />

neglect. One songwriter, Leon Rosselson took the<br />

authorities to tasks with the simple lyrics of “Palace<br />

Of Gold”. Fast-forward to more modern times, and<br />

you will see that things haven’t changed much.<br />

Twenty-three illegal immigrants, overseen by a gang<br />

master, died while out cockling in Morecambe Bay<br />

in 2004. Cut off from the mainland by the incoming<br />

tide, they were doomed by their limited English<br />

language, knowledge of the area and a lack of<br />

experience. One of our local bands, Sound Tradition,<br />

won the Fastnet Maritime song award in 2013, with<br />

their beautiful and haunting song “Morecambe Bay<br />

Cocklers”.<br />

When all else fails, the simplicity and poignancy of<br />

good songwriting can cut straight to the heart of the<br />

matter, and reveal a myriad of emotions. Frustration,<br />

anger, joy, indignance, happiness, glee and often<br />

a mixture of many conflicting emotions, far more<br />

concise than history books, yet somehow more<br />

relevant. They can trigger awareness and sometimes<br />

a hunger to learn more. Songs can be a call to arms,<br />

a force to unite, to stand against the wrongs of this<br />

world and the chance to listen to the unheard voices<br />

of many ordinary people.<br />

Much more meaningful than Band Aid’s (flaccid<br />

but well intentioned) millionaires huddled round<br />

microphones in a recording studio - original, selfpenned,<br />

motivated, passionate songwriting is a force<br />

which seeps into the very fiber of one’s soul and<br />

makes a difference to those who encounter it.<br />
