Serves 4<br />

Chicken makhani<br />

Indian butter chicken<br />

By AWARD-WINNING Chef Abdus Shahid<br />

Chicken makhani is one of my<br />

favourite Indian dishes. It is a full<br />

flavoured dish that complements<br />

the chicken well. It can be made<br />

as mild or spicy as you wish by<br />

adjusting the cayenne. Serve with<br />

basmati rice and naan bread.<br />

Method<br />

1. Heat 1 tablespoon oil in a large saucepan over<br />

medium high heat. Saute shallot and onion until<br />

soft and translucent. Stir in butter, lemon juice,<br />

ginger-garlic paste, 1 teaspoon garam masala,<br />

chilli powder, cumin and bay leaf. Cook, stirring,<br />

for 1 minute.<br />

2. Add passata, and cook for 2 minutes, stirring<br />

frequently. Stir in milk, cream and yoghurt.<br />

Reduce heat to low, and simmer for 10 minutes,<br />

stirring frequently. Season with salt and pepper.<br />

Remove from heat and set aside.<br />

3. Heat 1 tablespoon oil in a large heavy frying<br />

pan over medium heat. Cook chicken until lightly<br />

browned, about 10 minutes. Reduce heat, and<br />

season with 1 teaspoon garam masala and cayenne.<br />

Ingredients<br />

• 1 tbsp groundnut oil<br />

• 1 shallot, finely chopped<br />

• 1/4 of an onion, chopped<br />

• 2 tbsp butter<br />

• 2 tsp lemon juice<br />

• 1 tbsp ginger garlic paste<br />

• 1 tsp garam masala<br />

• 1 tsp chilli powder<br />

• 1 tsp ground cumin<br />

• 1 bay leaf<br />

• 4 tbsps natural yogurt<br />

• 125ml milk<br />

• 125ml double cream<br />

• 250ml passata<br />

• 1/4 tsp cayenne pepper,<br />

or to taste<br />

• 1 pinch salt<br />

• 1 pinch black<br />

pepper<br />

• 1 tbsp groundnut<br />

oil<br />

• 450g boneless,<br />

skinless chicken<br />

thighs, cubed<br />

• 1 tsp garam<br />

masala<br />

• 1 pinch cayenne<br />

pepper<br />

• 1 tbsp cornflour<br />

• 4 tbsps water<br />

4. Stir in a few spoonfuls of sauce, and simmer until<br />

liquid has reduced, and chicken is no longer pink.<br />

Stir cooked chicken into sauce.<br />

5. Mix together cornflour and water, then stir<br />

into the sauce. Cook for 5 to 10 minutes, or until<br />

thickened.<br />

picks for spring...<br />

It’s <strong>March</strong> spring is upon us. This of course means we can look<br />

forward to longer days, brighter skies and hopefully a slightly<br />

warmer temperature.<br />

What this doesn’t mean however,<br />

is that it is summer. No one wants<br />

to be that person walking around<br />

in shorts and a vest just<br />

because the sky<br />

is blue.<br />

That’s not to say I don’t have<br />

sympathy for that person, spring<br />

is a difficult season to dress for.<br />

So, I’ve put together some tips to<br />

help make this time a<br />

little easier…!<br />

1. Scarves<br />

Scarves are fully acceptable until at least the end<br />

of <strong>March</strong>.<br />

These days it’s easy to find a lighter scarf to help<br />

accommodate for the warmer weather.<br />

It also means you can get away with wearing<br />

thinner tops without freezing.<br />

3. Jackets<br />

2. Sunglasses<br />

It’s never too early for<br />

sunglasses.<br />

Shades protect you from UV<br />

rays, not heat. If you haven’t<br />

been wearing them through<br />

winter, start now.<br />

Cropped jackets like bombers, leather and denim<br />

are a must for the coming months.<br />

FASHION<br />

You can match them with heavier knits or tees<br />

and shirts. They’ll add that extra layer without<br />

making you feel too wrapped up.<br />

4. Layers<br />

Finally, play with layers. If you insist on going sans<br />

coat then throw a tee under that cardigan or a<br />

shirt under that jumper.<br />

This will also allow you to add in some lighter<br />

spring colours.<br />

Don’t be afraid to have too many ideas<br />

There is nothing better than to meet a couple<br />

Try something different<br />

wedding? Instead of having an evening BBQ<br />

or Hog roast… why not try street food vending<br />

- from paella to fish and chips, Mexican to<br />

Mediterranean… a choice of food from around<br />

the world will be sure to wet anyone’s appetite.<br />

Not sure what to arrange<br />

for entertainment?<br />

Why not hire street performers, choreograph<br />

a dance with your bridesmaids, set up a music<br />

station or bring in some fire dancers. Make your<br />

cake cutting a full-blown event — use indoor<br />

sparklers, have someone wheel the cake to<br />

the middle of the dance floor with the lights<br />

dimmed… There are so many ways to keep it<br />

interesting and sometimes more importantly,<br />

within budget.<br />

Get your family and friends involved<br />

I am a huge advocate for getting friends and<br />

family together. The chances are, you’ll know<br />

someone that could make your bunting and<br />

wedding favours. Or perhaps provide additional<br />

or sole photography. There could even be<br />

someone to make the wedding cake. And what’s<br />

more – they’ll most likely be honoured to have<br />

been able to contribute to your Big Day.<br />

Be mindful of your guests<br />

Basic comforts ensure that you have thought<br />

about your guests. Offer blankets at outdoor<br />

receptions, flip flops for dance floors, bottles<br />

of water in the height of summer or accessible<br />

cushioned chairs for those less able.<br />

Above all else…<br />

Styling, logistics and delivery of a wonderful<br />

event, requires the very basic air of simplicity.<br />

Whether you’re a DIY bride, Wedding Planner<br />

or just a friend helping to co-ordinate – keep<br />

Three<br />

generations<br />

As a Mother’s Day tribute our<br />

editor Rachel gets personal<br />

about her family...<br />

“Mother’s Day is originally an<br />

American celebration, which<br />

started in the early 20th century.<br />

For those of you who know me you will be aware<br />

that my family has a very close bond, especially<br />

the women in our family. My mother is twenty<br />

years older than me and I am sure her mother,<br />

(my grandmother), wont mind me announcing<br />

that she has just celebrated her 70th birthday,<br />

(and still looks 50)! I believe the close age gaps<br />

between the three of us create a strong friendship<br />

within our family as we all have common interests.<br />

I’ve always felt really glad to have a young mum,<br />

unlike some of my friends, if ever I had a problem<br />

or needed someone they were young enough<br />

to understand the pressures I was facing. I know<br />

there is nothing that my mum would not do for<br />

me and I consider myself to be extremely lucky.<br />

Unusually as a hobby, together with the help<br />

of our good friend Tanya Bradbury, we practice<br />

Hatha Yoga within a class held at The Harmony<br />

Centre in Walpole, Halesworth. This is a truly<br />

beautiful place and if you have yet to visit, then<br />

you must. There are two classes during the week,<br />

one on a Tuesday morning and the other on a<br />

Thursday evening.<br />

Tanya is a qualified yoga teacher, trained in India<br />

and has been teaching yoga at The Harmony<br />

Centre for the last five years. She describes her<br />

Sanskrit mantra chanting, asana,<br />

pranayama and meditation in her classes.<br />

is a sense of harmony between us all<br />

and you can really feel the connection<br />

when the class is flowing, even if we<br />

are not speaking. Yoga is one of India’s<br />

wonderful gifts to mankind. One of<br />

its valuable qualities is that it builds<br />

up a store of physical health through<br />

practice of a system of exercises called<br />

inspiration comes from. Make sure you take some<br />

time to thank your mother – its not until you stop<br />

and think about the people close to you, that you<br />

MEN’s HEALTH…<br />

If you are a man in this day and age, all<br />

you need to do to be healthy is: exercise,<br />

eat well, drink in moderation, avoid<br />

smoking and have sex regularly… Right?<br />

Well, in a modicum of cases… yes… it could be<br />

suggested that for a happy and healthy male, that’s<br />

all you need.<br />

However, certain statistics suggest that we are doing<br />

men an incredible disservice by over simplifying the<br />

guidelines for a healthy lifestyle. Perhaps simplicity<br />

is key but men aren’t being encouraged enough, to<br />

seek help when it is needed.<br />

According to the Health and Social Care Information<br />

Centre (HSCIC) the number of people admitted to<br />

the NHS for ‘Mental and behavioural disorders due<br />

to use of alcohol’ was 198,600, between the years of<br />

2012 and 2013.<br />

Worryingly, over 70% of people were male, of which<br />

almost half were aged between 35 to 54 years old.<br />

Most of those admitted, again within the same age<br />

bracket, were labelled as suffering from ‘Dependency<br />

Syndrome’ or as having demonstrated ‘Harmful Use’<br />

of alcohol. So why are so many men (women, in<br />

comparison, only comprise of one third of the overall<br />

figure above) abusing alcohol in this way?<br />

There are no absolutes but just as an example, the<br />

Journal of Abnormal Psychology (JoAP) suggests<br />

that men are far more susceptible to drug and<br />

alcohol addiction than women, particularly in<br />

response to a mental illness. It further suggests that<br />

men, when distressed or experiencing difficulty in<br />

life, tend to externalise and turn to substance abuse,<br />

whereas women are more likely to seek help for<br />

perceived anxiety or depression.<br />

Interestingly, men tend to only seek help for specifics<br />

– addiction, pain, fertility, tiredness… According<br />

to the JoAP it is vastly the majority in women<br />

that proactively find support for overall wellbeing<br />

mentally and physically. So with this tiny fraction<br />

of information gleaned from just a few sources, I<br />

would like to revise the almost universal simplicity<br />

in sustaining men’s health and add another key<br />

element of guidance.<br />

4, Avoid smoking<br />

5, Maintain a healthy sex life<br />

6, Seek help when it is needed<br />

A combination of gender stereotypes in the media<br />

and social pressure may suggest that therapy is not<br />

approachable enough for men or perhaps something<br />

that’s exclusive of men, rather than inclusive.<br />

This couldn’t be farther from the reality of it but<br />

there is hope: the RSCPP suggest that men are<br />

moving forward, reporting that more men are<br />

seeking therapy, gradually. Four out of 10 therapists<br />

said that the number of male clients has increased in<br />

the past 12 months with almost 70% of those within<br />

the crucial age bracket (from HSCIC) of 35-54.<br />

Spying out<br />

secret health problems<br />

It started out as a top-secret<br />

spying device and now helps to<br />

detect conditions that may lead<br />

to more serious health problems,<br />

including breast cancer.<br />

The early detection of conditions, which could<br />

lead to more serious disease, including cancer,<br />

is the main focus of a local clinic.<br />

Thermography, a technique born in the 1950s<br />

and originally a top-secret Cold War spying<br />

device, is now put to a wide range<br />

of other uses including<br />

detecting sources of nerve<br />

inflammations, infection,<br />

circulatory problems – even<br />

finding cracks in aeroplanes.<br />

Thermography has been<br />

around longer than we may<br />

think. In 1957 Dr Ray Lawson<br />

discovered that his breast<br />

cancer patients had higher<br />

skin temperatures over the<br />

affected area, and became<br />

the first to use thermography<br />

Thermography registers<br />

body temperature<br />

study breast cancers. Since the 1970s it has<br />

been used for diagnostic purposes and the<br />

equipment has evolved significantly, according<br />

to Sarah. She explained the inflammation is a<br />

precursor to many diseases and will show up on<br />

the thermogram, making early<br />

detection possible.<br />

The process is simple. There is no skin contact<br />

and there are no harmful rays. The medical<br />

thermal imaging camera is able to capture<br />

detailed images of the temperature of the<br />

skin. The resulting images are analysed by<br />

thermography-trained doctors who follow strict<br />

standardized protocol, and a detailed report<br />

is sent back, with follow-up recommendations<br />

where necessary. A breast study consists<br />

of two appointments, 90 days apart. The<br />

doctor will be looking for thermal symmetry.<br />

Suspicious changes during that 90-day<br />

period will be noted. If thermal patterns have<br />

remained stable, the study is archived for<br />

future comparative studies.<br />

“I see quite a few people who<br />

have really good levels of general<br />

fitness but have a problem<br />

which therapists are struggling<br />

to identify. The infrared image<br />

literally shows up the hotspots<br />

and helps to identify the<br />

area that requires treatment.<br />

It is especially good for<br />

compensatory pain – where<br />

a person has a problem in<br />

an area but the cause is<br />

somewhere else,” said Sarah.<br />

Many medical tests are of anatomy, such as<br />

X-rays, ultrasound and mammography. These<br />

tests show us the structure of the body. There<br />

are few tests available that are tests of the<br />

function. Sarah states, “There is so much we<br />

can do to prevent and treat illness and disease.<br />

Early detection of a potential problem plays an<br />

important part of making us feel empowered<br />

to take control of our health and not live our<br />

Amber coast<br />

Amongst 38 rooms, 14 overlook the famous<br />

seafront including the room<br />

which we were staying in.<br />

Within this 16th century<br />

privately owned building, our<br />

sea view room was cosy and<br />

inviting, satisfying a yearning<br />

for-old fashioned<br />

British romance.<br />

A huge sash window let<br />

in the fresh salt sea air,<br />

inviting us to wander out<br />

for a walk along the beach.<br />

Fisherman’s huts lined<br />

the seafront, subliminally<br />

influencing our dinner choices.<br />

The room was traditionally decorated and grand<br />

with a king size bed that looked as though it had<br />

once stood in a country manor. Large, plump<br />

cushions and crisp linens invited us to lounge<br />

away the afternoon, gazing out to misty seas.<br />

Dragging ourselves away from the view, we<br />

ventured down for dinner. A distant murmur grew<br />

into an exciting buzz as we walked into a vibrant<br />

bar and brasserie. The restaurant had a<br />

relaxed and welcoming<br />

atmosphere, with cosy<br />

booths framing brilliant<br />

sea views.<br />

seemed bad form then not<br />

to tuck into a mixed seafood<br />

platter, which was wonderful!<br />

For our mains I couldn’t resist<br />

the burger and frites with<br />

wasabi mayonnaise. It was<br />

really tasty, good portion sizes and flavoursome.<br />

While I ploughed my way through, Sam chomped<br />

on the 28 day aged rib-eye steak with all of<br />

the trimmings.<br />

We didn’t skip the pudding, as we are usually too<br />

greedy to pass up, this time was no exception.<br />

My Coffee and Vanilla Alaska stood proudly on<br />

the table, almost too perfect to dig my spoon<br />

into. Whilst Sam opted for a berry creme brûlée...<br />

which hardly lasted a few minutes!<br />

We were made to feel very welcome by the<br />

friendly staff, nothing seemed too much trouble.<br />

The good news is the brasserie is re-launching in<br />

April serving classic dishes with a French twist.<br />

The much larger a la carte menu will feature many<br />

more superb options for lunch and dinner.<br />

Splash out on some rich game meat for two, or a special treat for<br />

mum, then serve seared to your liking with a deep fruity sauce...<br />

Pan-fried venison with sloe<br />

gin & plum sauce<br />

Ingredients<br />

• 6 juniper berries Finely<br />

chopped<br />

Press the juniper and lots of black pepper onto the steaks.<br />

Heat the butter in a frying pan until foaming, add the plum<br />

quarters and the steaks.<br />

Cook to your liking, turning halfway through. Remove and<br />

keep warm.<br />

Tip the chopped plum and garlic into the pan juices and<br />

cook, stirring, until softened. Pour in the sloe gin, allow to<br />

sizzle, then add the hot stock.<br />

When the plums are really soft, press the mixture through a<br />

sieve to remove the skins. Try to get as much pulp through<br />

as you can, as this will add flavour and body to the sauce. If<br />

it’s too thick, add a dash of boiling water.<br />

Put the steaks on warmed plates, top with the plum quarters<br />

and spoon round some sauce.<br />

Scatter over the thyme and a little black pepper. Serve with<br />

Fennel Dauphinoise (see ‘Goes well with’, right) and wilted<br />

spinach.<br />

• 2 venison steaks<br />

•1 5g butter<br />

• 3 plums, 2 quartered, 1 finely<br />

chopped<br />

• 1 garlic clove, finely chopped<br />

• 3 tbsp sloe gin (or use 2 tsp<br />

port)<br />

• 125ml hot beef stock made<br />

with 1 tbsp liquid beef stock<br />

(or gluten-free alternative)<br />

A Wine<br />

Tour of<br />

BY ‘WINE BUFF’ FRED FISHER<br />

France<br />

Of many differing grapevine species there are only<br />

about four that are of any significance.<br />

Considered to be the World’s<br />

leader in fine wine production and<br />

also our closest neighbour, what<br />

better way than to take a car across<br />

the Channel (with somebody else<br />

driving) and take a look at the<br />

French Wine Regions. Three hours<br />

south from Calais and you find the<br />

first region.<br />

Champagne<br />

The first area for Sparkling wine made mostly<br />

from Chardonnay, Pinot Noir and Pinot Meunier<br />

grapes. Claimed by others to have originally<br />

discovered the phenomenon of having bubbles<br />

in wine, it was Dom Perignon who perfected the<br />

wine we have today. A wine for all occasions.<br />

Alsace<br />

Further east we have this region, sometimes<br />

governed by Germany, it is unique in France.<br />

Bordering Germany it uses many German grape<br />

varieties e.g Riesling. Unusually for France the<br />

grape name is prominent on the label, although<br />

other parts of France are now starting to do<br />

that. Sheltered by the Vosges Mountains it is the<br />

second driest area in France.<br />

Burgundy (Bourgogne)<br />

Quality wine has been produced here for over<br />

1000 years and was introduced originally by the<br />

Romans. The two dominant grapes are Pinot Noir<br />

and Chardonnay with the Gamay being the next.<br />

It is composed of six areas, Chablis, Cote de Nuits,<br />

Cote de Beaune, Chalonnais, Maconnais and<br />

Beaujolais. The first three and Beaujolais produce<br />

wines called Grand Cru which are the best but the<br />

most expensive. Next down the ladder is Premier<br />

Cru only from the first three areas. All Burgundy<br />

can be pricey but you can get good quality from<br />

areas such as Chalonnais and Maconnais which<br />

are still Burgundies. Maconnais has the delightful<br />

Pouilly Fuisse. Beaujolais Grand Cru is a gem and<br />

can age well along with Fleurie, Moulin a Vent,<br />

Morgan etc.<br />

Bordeaux<br />

Considered together with Burgundy to be the<br />

world’s top wine producing areas, certainly from<br />

a historical point of view. The main grapes here<br />

are Cabernet Sauvignon, Merlot and Cabernet<br />

Franc. There are other minor grapes sometimes<br />

used but most Bordeaux is a blend of the main<br />

three. The region is split into several sub-regions,<br />

11 in total. They have Classification ratings for<br />

these areas and each Chateau can have its own<br />

rating. The top ones here are called Premier Cru<br />

and include such illustrious names as Chateau<br />

Latour, Chateau Mouton Rothschild and Margaux.<br />

The sub-regions include<br />

Medoc, St Emilion and Graves<br />

among others. Graves<br />

includes the most famous<br />

Dessert wine Sauterne.<br />

The region supplies a vast<br />

amount of mostly red wine<br />

which can be blended from<br />

different regions but can<br />

only be called Bordeaux. In<br />

past times and today it is<br />

been called Claret but that<br />

is only Red Bordeaux.<br />

The Loire Valley<br />

The longest river in France has many varied<br />

wine areas. Pays Nantais is the sub-region and<br />

Muscadet is a grape variety in the region nearest<br />

the Atlantic. It benefits from the cooling effect<br />

of the Ocean. Anjou Saumur is the next area<br />

inland and houses many fine wine producers.<br />

Rose d’Anjou is famous as is Sparkling wine at<br />

Saumur from the Chenin Blanc grape, and also<br />

red Saumur from the Cabernet Franc grape.<br />

One particular dessert wine from the Chenin<br />

Blanc grape and can live for 50 years is Quart<br />

de Chaume, near to the city of Angers. Further<br />

inland is the area Tourraine also with the Chenin<br />

Blanc. The famous Vouvray come from here and<br />

can be dry medium or sweet. They also produce<br />

good sparkling. Some distance away but still on<br />

the Loire is Sancerre which uses the Sauvignon<br />

Blanc grape. Close by is another called Pouilly<br />

Fume (not to be confused with Pouilly Fuisse<br />

in Burgundy).<br />

The Rhone Valley<br />

This region has two distinct parts, Northern and<br />

Southern Rhone. The North includes Cote Rotie<br />

and Hermitage from the Syrah grape. The best<br />

white from here is called Condrieu and has the<br />

Viognier grape. The Southern Rhone includes<br />

the famous Chateauneuf du Pape and Gigondas.<br />

A blend of many grapes for these wines, the<br />

main ones being Syrah, Grenache, Cinsault and<br />

Mourvedre. It is possible to<br />

use up to 17 grape varieties<br />

for Southern Rhone reds. The<br />

standard Cotes du Rhone is<br />

invariably good wine.<br />

Other regions<br />

Languedoc-Roussillon and<br />

Provence run along the south<br />

coast of France and provide a<br />

considerable amount of wine for<br />

the market. Most grape varieties<br />

are grown here, a majority of the<br />

Rhone varieties, but increasingly<br />

grapes from around the country. Previously these<br />

areas were mostly low quality, low price bulk<br />

wines but are now providing class quality wines<br />

challenging the more traditional wine areas.<br />

Footnote<br />

You could do a wine tour of France by car and it<br />

would be feasible to cover the areas in about a<br />

fortnight with preferably someone else doing the<br />

driving. I would not recommend that, try each<br />

area on separate visits and take time to sample<br />

some of the world’s great wines. At the rate of<br />

one per year with at least the seven shown that<br />

should take you seven years. I suggest however<br />

that you will want to go back time and time<br />

again.<br />

How much<br />

do you know about coffee?<br />

Even though Paddy and Scott’s is all about having fun there is the serious side to<br />

our business and the growing of the coffee bean is a major part of that. So if you<br />

are a coffee guru or want to know more about the coffee you drink, this is for you...<br />

Most coffee trees will produce their first crop<br />

of coffee cherries when they’re about five years<br />

old. If the trees are looked after properly they’ll<br />

continue producing great coffee on a yearly basis<br />

for about 20 years, however, once fully mature<br />

these coffee trees will only produce about two<br />

kilos of coffee cherries per year.<br />

A coffee cherry usually comes<br />

with an exterior skin that is quite<br />

thick and has a bitter taste. The fruit<br />

of a coffee cherry is sweet and has a<br />

texture very similar to a grape. After<br />

the layer of fruit you usually have a parchment,<br />

the parchment is covered by a thin and slippery<br />

layer which is called mucilage.<br />

At Paddy & Scott’s we tend to buy from growers<br />

who selective pick the coffee beans leaving the<br />

unripe cherries behind, however, the method<br />

used to collect the coffee will be dependent on a<br />

number of reasons and conditions.<br />

Coffee is mostly harvested in dry seasons.<br />

The nature of the dry season usually differs<br />

from one country to the other.<br />

Countries such as Brazil usually harvest<br />

their coffee in periods between <strong>March</strong> and<br />

October.<br />

In Columbia coffee is usually harvested<br />

between the months of October and February<br />

or alternatively it is harvested in the months<br />

between April and June.<br />

What the parchment really does is protect the<br />

entire area surrounding the bean. When the<br />

parchment is removed you will usually find two<br />

somewhat transparent coffee beans which are<br />

bluish-green in colour.<br />

Ripe cherries are harvested using several different<br />

methods including selective hand picking,<br />

mechanical harvesting and stripping.<br />

As part of our continual learning and our journey<br />

in working with our plantations Scott and I can<br />

only look forward to our visits to plantations,<br />

definitely one of the perks of the job!<br />

Carrots, Celeriac, Chicory, Swede, Cauliflower,<br />

Jerusalem Artichokes, Kale, Leeks, Parsnips,<br />

Purple Sprouting Broccoli, Red Chicory and<br />

Radicchio, Spinach, Rhubarb, Turnips, Sorrel &<br />

Salad Onions.<br />

Fish : Skate, Sea Bass, Trout, Winkles, Crab,<br />

Clams, Cockles, Eel, Hake, Lemon Sole, John Dory,<br />

Lobster, Mussels, Oysters, Sea Bass, Salmon<br />

& Scallops.<br />

elusive to track down, but let’s look at the ones<br />

that are readily available. We can do some lovely<br />

flavour pairings with this month’s selection.<br />

The abundance of seafood and so many<br />

vegetables makes cooking a lovely lunch or<br />

dinner on Mothering Sunday a delight. So spoil<br />

your mum – or even someone else’s mum for that<br />

matter!<br />

Recipes are usualy written as a guide. Every<br />

ingredient varies, every oven varies and we all<br />

have different palettes. Do not be afraid if you<br />

have slightly more or slightly less of something –<br />

if you like the taste, that is all that matters.<br />

We need to relax our approach to food and make<br />

it less formulaeic – if you find this hard add extra<br />

wine to your ingredients list and share it with the<br />

pan!<br />

Mouclade - This is a variation on Moules<br />

Marinieres and a particular favourite of mine.<br />

Lamb with Rosemary & Garlic - served with<br />

Parsnip Mash, Roasted Carrots & Steamed<br />

Broccoli.<br />

(Ask your butcher to cut the chops into slices<br />

approx. 1.5 – 2cm in thickness).<br />

Poached Rhubarb with Ginger Crème Fraiche.<br />

mum or who ever you may choose to cook for will<br />

A take on the Aperol Spritz, this<br />

Mother’s Day cocktail features<br />

Aperol, fresh-squeezed grapefruit<br />

juice and Prosecco.<br />

One to wow your mum this Mother’s Day,<br />

it’s easy to make and great for serving at brunch.<br />

Aperol, is bright orange in colour and has a<br />

unique bitter-sweet taste derived from a<br />

secret recipe that has remained unchanged<br />

since its creation in Italy. It is available from<br />

most supermarkets.<br />

Method<br />

1. Chill a Champagne flute.<br />

2. Add Aperol and grapefruit juice to the chilled<br />

glass.<br />

Ingredients<br />

• 1 ounce Aperol<br />

• 1 ounce fresh-squeezed<br />

grapefruit juice<br />

• Prosecco<br />

• Grapefruit peel for garnish<br />

3. Top with Prosecco (as much as desired).<br />

4. Garnish with the grapefruit peel.<br />

You can substitute the grapefruit for another fruit<br />

such as strawberries to make this recipe slightly<br />

different.<br />

Escape to the<br />

at The Norfolk Mead<br />

The bright sunshine cast a light on green<br />

meadows and babbling brooks, and the chill in<br />

the air seemed to float away with the breeze.<br />

We are in <strong>March</strong> now, the start<br />

of spring. But beware of bright<br />

mornings and the false hope they<br />

can bring… Unless, that is you find<br />

yourself in beautiful Coltishall in<br />

deep Norfolk.<br />

We were lucky to be invited to the Norfolk Mead<br />

and found ourselves escaping to the country, to<br />

a gorgeous Georgian hotel in luscious surrounds.<br />

The first thing that hits you when pull up at the<br />

hotel, is well… the hotel. The impressive red brick<br />

building stands akimbo as you look up. Wide sash<br />

windows and deep balconies promise a glorious<br />

morning, as you wake up and look out over the<br />

sweeping grounds.<br />

Spoilt with ‘The Chanterelle’ bridal Suite, we were<br />

not disappointed. Double French doors opened<br />

onto a large balcony overlooking the grounds and<br />

River Bure. A super king-size bed didn’t dominate<br />

the large, airy room with its high ceilings and the<br />

luxurious en-suite bathroom made getting ready<br />

for the evening a pleasure.<br />

It is often the small details that make you smile.<br />

conclude a wonderful evening.<br />

The dining room is open to the public as the<br />

Mead’s reputation for exquisite food precedes it.<br />

This is a perfect place to treat a special lady on<br />

Mother’s Day, but be sure to book quickly!<br />

Homemade brownies and thick<br />

creamy milk from a local dairy are<br />

left in each room.<br />

Dinner was served at 8 and the<br />

treats continued. Opening with the<br />

Pigeon Breast with Caramelised<br />

Feta and Baby Beets I wished I had<br />

ordered this again for the main<br />

course. Rachel opted for the Pane’d<br />

Hen’s Egg with Crushed Celeriac,<br />

Truffle Oil and Croutons.<br />

A true taste of luxury in a tranquil, picturesque<br />

surrounding, this is the most relaxed I’ve felt for<br />

as long as I can remember. Rachel and I were sad<br />

to leave the Norfolk Mead but we will be visiting<br />

again soon, and we urge you to do so too.<br />

Ha Long Bay, in Northern Vietnam, is not a name you may<br />

be familiar with, but I’m pretty sure you will have seen the<br />

images before.<br />

When you think about the<br />

mysterious Far East many of you<br />

will conjure up images of lush, tree<br />

covered rocky outcrops, majestically<br />

rising from the ocean whilst<br />

delicately blanketed in a thin layer of<br />

mist with small fishing boats dotted<br />

around to add a sense<br />

of humanity to one of<br />

nature’s finest gifts.<br />

Recently I visited Hanoi, Vietnam’s<br />

capital of the North, and had the<br />

opportunity to fulfil one of many<br />

childhood dreams and visit Ha<br />

Long Bay. The bay itself is just<br />

about achievable in a day trip, it’s<br />

quite a slog, a 4 hour bus journey<br />

followed by a 3 hour bay tour<br />

then 4 hours back again, but definitely do-able. You<br />

can visit from Hanoi for longer with lots of options<br />

for all budgets, but I was up against it time wise,<br />

hence the day trip option suited me.<br />

I woke up nice and early and set off at 6am to make<br />

it for the 12pm boat tour. The bus ride was nice; a<br />

little cramped with the obligatory two souvenir shop<br />

stops along the way, but nothing I wasn’t used to by<br />

now. But what about the boat trip? Wonderful?<br />

Awe inspiring? Everything I’d ever imagined? Well… I<br />

couldn’t tell you, as I didn’t get off the dock! The boat<br />

was cancelled due to a typhoon that was somewhere<br />

in the area. From where I sat I could see a couple of<br />

peaks, teasing me on the horizon over a calm sea, but<br />

no, a typhoon was heading my way and all boats are<br />

staying docked. I couldn’t believe that the one time<br />

I encountered any semblance of health and safety in<br />

Asia, it’s the place that inspired me to travel since I was<br />

a small, well, smaller<br />

In hindsight, once the<br />

disappointment had drifted away you<br />

have to accept that when you are<br />

travelling and you try to pack a lot<br />

in, there will inevitably be setbacks<br />

along the way. You can’t be mad at<br />

the people making the call not to<br />

send the boats out, but you can get<br />

miffed when the tour company still<br />

has left me with an itch to return.<br />

Tips for your garden in<br />

Spring usually arrives by mid-<br />

<strong>March</strong> and the frequent sunny<br />

days provide the opportunity for<br />

an increasing range of gardening<br />

tasks.<br />

It’s time to get busy preparing seed beds, sowing<br />

seed, cutting back winter shrubs and generally<br />

tidying up around the garden.<br />

Frosts can still be a hazard, so keep vulnerable<br />

plants protected at night if frost is forecast. <strong>March</strong><br />

winds are also notorious for their ferocity so<br />

check exposed plants are well supported.<br />

Gardening Spring Clean<br />

Now is the time for a thorough spring clean; weed<br />

and dig over your borders incorporating as much<br />

organic matter as you can - those chilly winds will<br />

really help to dry out the soil. Mulch bare soil once<br />

you have done the work and remove moss and<br />

weeds from paths, terraces and driveways. They<br />

may be boring tasks but if you don’t get on top of<br />

the garden now (especially the weeds!) it will be a<br />

nightmare for the rest of the season.<br />

Cleaning<br />

Spring is the time to tackle all<br />

those niggling chores, the ones<br />

you have no excuse not to do<br />

yourself.<br />

In the old days we did the spring clean by<br />

washing the winter’s accumulated soot off our<br />

paintwork.<br />

Now, where this tradition still exists, we are more<br />

likely to take the curtains to the dry cleaners and<br />

dare to see what has been breeding down the<br />

back of the sofa. Here are my top tips to follow<br />

for a deep spring clean.<br />

1. Work from the top down, inside to outside, to<br />

avoid getting what you just cleaned dirty again.<br />

2. Do one room, even one area of one room, at a<br />

time to avoid unfinished jobs. The satisfaction of<br />

seeing one room sparkle will make the hard work<br />

feel like it’s worth the effort.<br />

3. When tidying, reduce trips around the house<br />

by temporarily depositing items in one spot en<br />

route to but not at their final destination.<br />

4. Do two things at once. While laundry is going,<br />

scrub the shower stall.<br />

5. Make small repairs. If you’re not handy, hire<br />

someone.<br />

6. Invest in good rubber or vinyl gloves to<br />

protect your skin and nails.<br />

7. Dust before vacuuming or cleaning the floor.<br />

Try feather or lambswool dusters, especially<br />

extendable ones for reaching above window<br />

and door casings and into corners.<br />

majority to our time purring<br />

over the foreign talents that<br />

have been attracted to the<br />

world’s richest league.<br />

From Eden Hazard to Alexis<br />

Sanchez, there’s little doubt that<br />

the greatest depth of quality in<br />

world football exists on our shores.<br />

However, the most remarkable emergence<br />

this season has come from north London, with<br />

Tottenham’s Harry Kane defying all expectations.<br />

Those expectations were pretty modest to be<br />

fair, with the young striker expected to do little<br />

more than offer support to the club’s vastly more<br />

distinguished frontmen, Emmanuel Adebayor and<br />

Roberto Soldado.<br />

However, while that duo have fired blanks<br />

throughout the campaign, Kane has established<br />

himself as Spurs’ star man, attracting demands<br />

for him to be called up to Roy Hodgson’s next<br />

England squad.<br />

Such suggestions have died down as it has<br />

become a non-topic of late, with Kane’s case<br />

so strong that Hodgson’s only concern now is<br />

which player will be sacrificed to incorporate the<br />

21-year-old.<br />

Not only has Kane outscored all of his<br />

compatriots but he has also netted more times<br />

than any other Premier League striker in all<br />

competitions this season, with Diego Costa and<br />

Sergio Aguero trailing the former Tottenham<br />

were expected to beat in the Europa League and<br />

Capital One Cup at the start of the campaign,<br />

earning a shot at more Premier League action – a<br />

chance he would not waste.<br />

Initial doubts were understandably raised when<br />

he started to break through as Spurs.<br />

This is, after all, a player who failed to pin down<br />

a regular starting berth during loan spells and<br />

Norwich and Leicester during the 2012/13<br />

campaign, scoring just two goals from 21<br />

appearances in the Championship.<br />

Netting in three successive Premier League<br />

games last season was certainly impressive, but<br />

they were all against bottom-half sides and came<br />

after just one goal in 13 appearances for Spurs.<br />

He continued to impress against sides Spurs<br />

Kane had scored three in four heading into the<br />

New Year’s Day clash with rivals Chelsea and<br />

went on to make it five in five, bagging a brace<br />

and having a hand in Spurs’ other two goals to<br />

inspire a memorable 5-3 victory.<br />

He then produced another two-goal salvo against<br />

fellow London enemies Arsenal to secure a 2-1<br />

victory – ensuring his place a real fans favourite.<br />

‘He’s one of our own’ hail the Spurs faithful every<br />

time they are treated to a glimpse of the new star.<br />

However, for us neutrals, it is simply a joy to<br />

watch a young star emerge and deliver against<br />

the world’s finest on a weekly basis.<br />

The going gets tough for<br />

Town as <strong>March</strong> throws up<br />

a real test of promotion<br />

The festive period, a time<br />

which is meant to separate<br />

the men from the boys,<br />

brought out the best in<br />

the Super Blues, virtually<br />

sweeping all before them to<br />

get even the most cynical<br />

supporters dreaming of the<br />

Premier League.<br />

Everyone knew the squad<br />

was a little thin and the<br />

fact it cost just £10,000 to<br />

assemble was banded about with vigour.<br />

But it mattered not as Daryl Murphy banged<br />

in the goals and Christophe Berra (and others)<br />

stopped them at the other end.<br />

A blip was always likely and the January blues<br />

well and truly came with one win in six.<br />

Defeats against Derby and Southampton were<br />

disappointing, but arguably more because of<br />

the performance than the loss, but back came<br />

Mick’s men.<br />

Successive wins against Sheffield Wednesday<br />

and Fulham were more handsome than the<br />

slender 2-1 margins suggest. The promotion<br />

train was back on the rails and everything was<br />

good again.<br />

Not quite. This column is written after the 1-0 home<br />

defeat to Reading, but before Birmingham visit<br />

Portman Road and Town visit Carrow Road.<br />

Those two matches could go a long way to defining<br />

the season with Ipswich teetering on a tilt at the<br />

top two, the play-off places and even in danger of<br />

missing out altogether.<br />

A defeat against Derby can be explained away<br />

a little, Steve McClaren’s men should be playing<br />

Premier League football next season after all.<br />

But a home game against Reading should be<br />

winnable, especially at this time of the season for a<br />

team truly competing for promotion.<br />

On paper, the Royals looked strong. But they are 20<br />

points and 13 places away from Ipswich<br />

and the performance from the<br />

home side was largely stale.<br />

The Birmingham match is virtually<br />

a must-win before Ipswich visit the<br />

Championship’s in-form team, not to<br />

mention arch rivals, Norwich, ahead<br />

of a tough-looking <strong>March</strong>.<br />

I have almost given up predicting<br />

what is going to happen. I lurch<br />

from high hopes to low turns on the<br />

strength of every 90 minutes.<br />

With the ink still drying on this column<br />

comes the news that Leicester City’s<br />

Anthony Knockaert could be about to join Town’s<br />

promotion push on loan.<br />

More heartening than the signings of Richard Chaplow<br />

and Luke Varney, for many, but will it be enough? You<br />

should have a good idea by the time you read this.<br />

miles) and this year’s event is happening a<br />

USA, in conjunction with Focus 12 and Yoga At<br />

The Boiler House (the beautiful bespoke yoga<br />

studio where all the Focus 12 and Y12SR classes<br />

are held).<br />

This month, Action Man took our<br />

great magazine’s name literally<br />

and <strong>Bounce</strong>d into Bubble Football!<br />

Now, if you are looking for an event to showcase<br />

your tika taka skills then this is not it! However<br />

if you’re looking for a great laugh with some<br />

team mates, colleagues on a corporate function<br />

or perhaps as a stag / hen party then Bubble<br />

Football is perfect!<br />

Action Man and pals joined the team from<br />

Worldy Football (check out their Facebook page<br />

who operate out of Maidenhall<br />

Sports Centre in Ipswich. For<br />

£200 you get 10 bubble suits and<br />

hall hire for an hour, don’t feel that<br />

this limits you to only 10 people,<br />

in fact I would encourage you to<br />

bring more as it can be hard work<br />

especially getting back on your<br />

feet for the hundredth time!<br />

So bring more and use<br />

substitutions, this will also help you spread the<br />

cost. I mentioned it’s hard work when encased<br />

in those bubbles so don’t make too many big<br />

plans after, or at least take a towel because you<br />

will be a sweaty mess! Not to mention the tears<br />

streaming down your face from the constant<br />

laughing, there’s not much funnier than sending<br />

a friend rolling down the hall just as he is lining<br />

up a shot.<br />

Whilst to start with we were quite hesitant,<br />

it wasn’t long before we got a feel for it and<br />

to be honest the football became secondary<br />

behind the stramash and seeing just how far we<br />

could bounce each other. Being of a somewhat<br />

diminutive persuasion and leader of the gang,<br />

Action Man found himself to be the target and<br />

was regularly sent flying across the room! That<br />

being said, apart from feeling rather exhausted<br />

from the exertion, the multitude of hits had no<br />

lasting effects as it’s all very safe within your<br />

rubber cocoon.<br />

The hour absolutely flew by, what<br />

was the score? Nobody knew but<br />

what we did agree on is that we all<br />

had an awesome time. We’re already<br />

planning our next session and would<br />

highly recommend it to anyone else.<br />

Can’t make it down to Ipswich?<br />

Not a problem! There are a number<br />

of bubble football groups including<br />

Worldy Football who operate in our<br />

area, you just need to book a venue like a sports<br />

hall or outdoor all weather football facility and tie<br />

up with your bubble football provider who can<br />

come to you.<br />

MY TOP WALKS...<br />

With spring in sight like the flowers<br />

coming to life again, so do my<br />

owners… this means more ‘walkies’<br />

are on the cards for me.<br />

This month I have decided to share my top walkies<br />

with my fellow furry friends. Wagging tails at the<br />

ready guys you’re gonna bloomin’ love this<br />

one.<br />

The beach brigade - Aldeburgh to<br />

Thorpeness<br />

Two towns, but just a couple<br />

of miles apart, for short legs,<br />

walkies between the two takes,<br />

approximately 50 minutes. For<br />

owners, both towns have lots of<br />

interesting places to explore, they<br />

have the best fish & chips and I love the<br />

scraps. Be aware though only during May<br />

to September can you take us furry ones on the<br />

beach… don’t forget to bring a towel to wipe our<br />

paws!<br />

Hunting and hiding in the woods - Dunwich Forest<br />

The forest is set to the north of the main road to<br />

Dunwich, there’s a wicked circular path through the<br />

border of heath and forest. Although I like to take<br />

the lead and venture into the forest areas, its great<br />

for playing hunting games or a round or two of hide<br />

and seek!<br />

Sea salt and sailing - Pin Mill (near Ipswich)<br />

The surrounding countryside offers us salty sea dogs<br />

a multitude of options for exercise and fun. You and<br />

your pup can enjoy a two-mile circular<br />

walk that leads you on your return to<br />

the village directly to the Butt &<br />

Oyster, another famously dogfriendly<br />

Suffolk pub. Water for<br />

us… and a well-deserved pint<br />

for you!<br />

Paw the explorer - Long<br />

Melford to Lavenham railway<br />

walk<br />

Travel through woods and open<br />

fields; a great place to see wild flowers,<br />

birds and animal wildlife in their natural habitat.<br />

Open spaces for us to run our little paws off whilst in<br />

safe surroundings.<br />

So wherever you decide to explore don’t forget your<br />

doggie bags, a towel in case we venture a little too<br />

far into the dirt and some water for us, its thirsty<br />

Delightful news for fans of alt rock five-piece<br />

The Long Blondes – singer Kate Jackson returns<br />

with brand-new outfit KATE JACKSON AND<br />

THE WRONG MOVES. Featuring members from<br />

several well-loved Suffolk bands and debuting<br />

live in April this promises to be a fabulous night.<br />

Going back in time to February HORSE PARTY<br />

had their single launch party with special guests<br />

THE MACHISMO’S, FORTUNATO, and new<br />

Norwich band CLAWS. February also featured<br />

the sad news that Bury favourites KEYS would be<br />

splitting up. Their last gig was at The Rehearsal<br />

Rooms as support for RATS AS BIG AS DOGS,<br />

along with HURRICANE JIM and THE VIRTUES.<br />

The Apex hosted legendary keyboardist RICK<br />

WAKEMAN in a show filled with wonderful<br />

anecdotes and beautiful music.<br />

The Mist in the Mirror<br />

Fans of high-quality drama are<br />

in for not one, but two treat this<br />

<strong>March</strong> – with a splash of comedy<br />

on the side if they want to<br />

enjoy a treble!<br />

Once there, she is surprised when Superintendent<br />

Hallett, the man with whom she is having an affair,<br />

also arrives for an entirely different reason.<br />

Critics have described it as “the best stage thriller for<br />

years” (Sunday Mirror) and “a thriller that achieves it<br />

all” (The Times).<br />

The Mist In The Mirror (17 to 21 <strong>March</strong>) is adapted<br />

from the novel by The Woman In Black author, Susan<br />

Hill and is a gothic, fireside story which leaves a<br />

terrifying eeriness suspended in the air.<br />

This world premiere is brought to the stage by<br />

Oldham Coliseum and Imitating The Dog and<br />

promises tension and atmosphere in abundance.<br />

Kicking off the month are Middleground Theatre<br />

Company who bring The Business of Murder to the<br />

Theatre Royal from 2 to 7 <strong>March</strong>.<br />

Written by Richard Harris (A Touch of Frost, The<br />

Sweeney, The Last Detective), the play stars Robert<br />

Gwilym, known by millions for his role as Dr Max<br />

Gallagher in Casualty.<br />

Stone, a humourless and dour man invites Dee, a<br />

television playwright, over to his flat on the premise<br />

of discussing a script.<br />

And for those who want a laugh or two, John<br />

Godber’s <strong>Bounce</strong>rs – the international smash hit<br />

comedy – returns (12 to 14 <strong>March</strong>).<br />

This is the story of one night in a Yorkshire disco in<br />

the 1980s – an outrageous parody of Saturday Night<br />

Fever – and all the gang are out on the town, the<br />

boys, the girls, the cheesy DJ, all under the watchful<br />

gaze of the <strong>Bounce</strong>rs.<br />

The John Godber Company recently visited<br />

Folk Music<br />

All things Folk....<br />

We at the Collective are not just<br />

a group of folkies who sing songs<br />

of despair and despondency, well<br />

sometimes maybe, we are purveyors<br />

of all things folk.<br />

This includes art, dance, musical tuition, theatre et<br />

al. I would like to mention a similar committed group<br />

of people who have been purveying folk a lot longer<br />

than ourselves. They are Suffolk Folk.<br />

Suffolk Folk is a non profit making organisation who<br />

promote traditional song, music and dance in Suffolk.<br />

They financially support traditional folk projects<br />

which they promote in schools as well as workshops,<br />

concerts and one off events held throughout<br />

the year.<br />

On the 2nd of this month the first Bury Folk<br />

Collective traditional singers competition was held<br />

at Oakes Barn in memory of Robin Callas. Robin<br />

was a traditional singer who could often be seen<br />

feeding squirrels in the Abbey Gardens, Nowton<br />

Park or Hardwick Heath. He was a frequent visitor<br />

to the Milkmaid Folk Club but never managed to<br />

get to the Bury Folk Collective at Oakes Barn due to<br />

illness. Robin was a member of the original Bury Folk<br />

Club held at the St Edmunds Head pub. Who can<br />

remember that little gem?<br />

The singing competition was very professionally<br />

contested having fifteen contestants from all over<br />

Suffolk. Managed and organised by Dave and Linda<br />

there were some super performances and to my<br />

mind all had a chance of winning.<br />

It came down to a close call when Liz and Jerry were<br />

declared the winners marginally beating Simon Kelsa<br />

who sang the Battle of the Nile. Liz and Jerry won<br />

with a superb rendition of Child ballad #216 titled<br />

Clyde Waters. I think the Collective will now look<br />

forward to next year when Liz and Jerry come to<br />

defend their title. I’m in, is anyone else?<br />
