We have been working<br />

with well-known large<br />

corporations to smaller<br />

companies, organisations<br />

and individuals all over<br />

the UK for the last 26<br />

years. This month, we<br />

caught up with DCM<br />

Surfaces to see how they<br />

keeps their installers busy<br />

our team of accommodation<br />

The case background:<br />

We have been working with<br />

DCM Surfaces since 2009 to<br />

help bring their accommodation<br />

bookings in on budget without<br />

compromising the welfare of<br />

their employees, working directly<br />

with DCM’s Operations team;<br />

Mariusz Kusmierek and<br />

Matthew Bowry.<br />

The case aims:<br />

• We would find suitable accommodation for installers working<br />

on projects in locations too far to travel home to on the same<br />

day, and projects needing extended periods of time away<br />

from home.<br />

• We would work to the agreed project budget for accommodation<br />

as well as ensuring all other special requirements are met,<br />

including onsite parking for a company van with no height<br />

restrictions and a bar/restaurant is on site or close by to allow<br />

employees to get dinner.<br />

• The welfare of installers would be paramount in providing a<br />

good standard of accommodation.<br />

We are in the unique position of working with over 800,000 hotels<br />

across the UK, Europe and further afield. Through our long<br />

established relationships with hotel groups and independent<br />

accommodation providers we’re able to negotiate very competitive<br />

room rates for DCM Surfaces.<br />

With our highly advanced internal booking systems, our<br />

accommodation specialists can quickly see whether a hotel is<br />

in the allowed travel distance of ten miles and see the facilities<br />

available, allowing them to check reviews and standards and as<br />

a result, book the perfect hotel option.<br />

We also provide an online booking portal for DCM Surfaces so their<br />

head office employees booking for those out on the road, have their<br />

own safe and secure method of inputting accommodation requests,<br />

straight into our live system without having to pick up the phone.<br />

This summer, DCM Surfaces have completed numerous playground<br />

installations in the central London area, requiring teams to be on<br />

site for a number of days. We were able to source accommodation<br />

for staff within a short distance and within the set budget.

Simon Hardman-Taylor has been<br />

in the kitchen for more than 26<br />

years, five of them working with<br />

Gary Rhodes.<br />

He’s currently putting his whites<br />

on for Best Western Cresta Court<br />

Hotel, sharing his signature dish<br />

and talking kitchen territory<br />

and tactics with us!<br />

What made you want to be a chef?<br />

My inspiration came from watching my<br />

Nan cook and helping her in the kitchen<br />

– she was amazing. Home cooking is at<br />

the heart of many great chef’s cuisine.<br />

It’s basically focused around using fresh,<br />

simple, seasonal ingredients and what<br />

can be better than that?!<br />

What do you look for when you create a<br />

new dish or menu? What’s your main<br />

considerations?<br />

Using local and seasonal ingredients is a key<br />

aspect of my cooking. We have a wealth of<br />

amazing producers and suppliers in the north<br />

west who provide the freshest produce. I like<br />

to use this as much as possible in my food.<br />

My culinary ‘style’ leans towards more<br />

classical and traditional dishes, but with a<br />

more contemporary interpretation and<br />

presentation style.<br />

What’s proving to be the most popular<br />

dish on your menu this month and why<br />

do you think that is?<br />

My signature dish of Braised Lamb Shoulder<br />

is an extremely popular choice. It’s a great<br />

looking dish, packed with flavour and cooked<br />

until the meat is rich and tender.<br />

It makes me hungry to just talk about it!<br />

I think guests initially choose it because it’s<br />

a hearty, traditional dish and has a broad<br />

culinary appeal. They choose it a second time<br />

because they fall in love with the flavour!<br />

When you go home, who does the cooking?<br />

Are you territorial in the kitchen!?<br />

When I’m home I do the cooking. I love to cook<br />

for my wife because she will give me feedback,<br />

good or bad. I also get to try out new ideas and<br />

development dishes at home before I decide if<br />

they will appear on my menus. My wife is my<br />

worst critic and my biggest fan, and that’s<br />

good for me! I know when I am on to a winning<br />

dish if she gives it her ‘royal’ seal of approval!<br />

I am very territorial with my kitchen at home<br />

and cannot stand when people put things<br />

where they should not be! My family have<br />

learned to stand well clear!<br />

Which famous person,<br />

dead or alive, would you love<br />

to cook for and what would you<br />

serve them?<br />

Billy Connelly (above, left). I would love to cook<br />

him my Nan’s traditional Meat and Potato Pie<br />

as that’s the dish that first made me want to<br />

become a chef. To this day I still love that dish<br />

more than anything else, and I think Billy<br />

would appreciate its simple honesty.<br />

If you were stranded on a desert island<br />

and allowed one item or ingredient from<br />

your kitchen, what would it be and why?<br />

Chorizo - it goes with so many things and can<br />

be dried or fresh. It’s good with fish, shellfish<br />

and vegetables (desert island cuisine!), or just<br />

lovely on its own.<br />

The #shelfie - a chef’s five must have herbs<br />

and spices always available on the shelf!<br />

What are yours and why?<br />

Smoked Paprika - it’s so versatile and adds<br />

flavour and enhances any dish. Pepper - it’s a<br />

basic, but can be overlooked too often. Harissa -<br />

to give a punch of flavour. Peashoot - because<br />

it makes every dish stand out. And finally!<br />

Coriander - in all forms from fresh seeds to<br />

ground. It’s an essential in my kitchen.<br />

What’s your<br />

favourite cuisine<br />

and why?<br />

French/British cuisine.<br />

I love the flavours and<br />

simplicity, although<br />

I’m starting to add<br />

more Spanish and<br />

Mexican flavours into<br />

my cooking - it is that<br />

warmth and aroma<br />

from using different<br />

spices that appeals.<br />

Do any celebrity<br />

chefs inspire you?<br />

And if you had to<br />

compare yourself to one,<br />

who would you say you most<br />

resemble in terms of cooking style<br />

and/or temperament?<br />

Simon Rogan (above) is my favourite ‘celebrity<br />

chef’ at the moment. I love the fact that he grows<br />

his own produce to ensure it’s the very best, and<br />

his creative style of cooking. In terms of myself,<br />

I suppose from working with Gary Rhodes (left)<br />

for five years I probably most resemble him in<br />

terms of cooking style. Simple dishes done<br />

with the best ingredients and with great<br />

attention to detail.<br />

You’re sharing a recipe with our readers<br />

today, why did you choose this one?<br />

I chose the Braised Lamb Shoulder with<br />

Dauphinoise potato and glazed baby<br />

vegetables as it’s the most popular dish<br />

on my menu at the moment. As one of my<br />

signature dishes it epitomizes my style of<br />

cooking perfectly. Enjoy!<br />

Method<br />

Lamb<br />

Switch the oven on to 180°C.<br />

Ingredients<br />

Lamb<br />

6 x 8oz Lamb Noisette<br />

1 pint beef stock<br />

Rough cut vegetables<br />

(onion, garlic, celery,<br />

carrot and leek)<br />

½ pint red wine<br />

Redcurrant jelly<br />

Dauphinoise<br />

8 sliced potatoes<br />

500ml double cream<br />

500ml milk<br />

50g block of butter<br />

100g grated Gruyere<br />

Glazed vegetables<br />

6 mini turnips<br />

6 mini carrots<br />

6 baby sweet corn<br />

200g spinach<br />

Heat a little oil in a pan, then add the lamb and<br />

cook until it is dark brown on the outside.<br />

Transfer to a deep roasting tray with<br />

the mire poix (the rough cut vegetables) and cover<br />

with the red wine and stock. Braise in the oven for<br />

up to three hours or until the lamb is tender.<br />

Remove from the oven and allow to cool.<br />

Strain the stock to use for the Jus.<br />

Jus<br />

Add the strained stock into a heavy<br />

bottomed pan.<br />

Place on a high heat and add a little redcurrant<br />

jelly, and reduce until it coats the back of a spoon.<br />

Then pass through a fine sieve and set aside<br />

Dauphinoise<br />

Boil the cream, milk and butter in a pan until<br />

the liquid is reduced by about a quarter.<br />

Thinly slice the potatoes.<br />

Once the liquid is cooled, add the potatoes and<br />

give them a good coating before layering them<br />

in an oven proof dish.<br />

Cover with tin foil and cook in the oven<br />

on 180°C degrees until tender.<br />

For the last 10 minutes of cooking time, remove<br />

the foil and add the grated Gruyere. Return to the<br />

oven until golden.<br />

Cover with foil and place a heavy object on the<br />

top to press the potato dish down, then cut into<br />

small squares.<br />

Blanch the vegetables and refresh.<br />

Plate up, serve and savour!<br />
