Chicken Breasts Florentine For 2 servings 2 skinless, boneless chicken breasts (200- 250g in total) 2 tbsp grated Parmesan 2 tbsp dry breadcrumbs 1-2 tsp finely chopped fresh herbs, including sage if possible About ¼ cup milk About 1 tbsp oil About 1 tbsp butter When making this quickly cooked recipe, you can work ahead if you like. The coated, uncooked chicken may be kept in the refrigerator for up to 24 hours before cooking. Put one boneless, skinless chicken breast between two sheets of plastic. Using rolling pin, bang evenly and gently until the breast is of even thickness and about double its original length and width. Repeat with the second. Mix together the Parmesan, breadcrumbs and herbs and place in a shallow container. Pour the milk into a separate shallow container. Dip each piece of chicken first in the milk, then in the cheese mixture, patting the coating thoroughly onto the chicken with your fingers. Refrigerate between plastic until required, or cook immediately. Heat the oil and butter in a large (preferably non-stick) frying pan. Serve immediately with a salad and bread or with one or more hot vegetables. VARIATION: If you like several smaller pieces of chicken on your plate, cut each flattened breast into two or three before coating and cooking, or use the same weight of chicken tenders instead, flattening them very lightly.
