February is the time for valentines, and we have you<br />

covered with tales of romance, wedded bliss, and<br />

chocolate. This issue is one of four each year when we<br />

announce wedding engagements, and what better time to<br />

be thinking about getting married.<br />

Writers Nancy Kalikow Maxwell and Monique McIntosh<br />

profile two same-sex couples — Johnnie and Paul, and<br />

Bernadette and Cristina — who got married last Valentine’s<br />

Day in a mass ceremony in Wilton Manors, and were<br />

featured in our February 2015 issue. After one year, both<br />

couples are still very much in love.<br />

For a longer-term view, Martin Lenkowsky looks at how<br />

computers have changed the way couples meet. And<br />

columnist Victoria Landis offers a humorous look at the role<br />

chocolate plays in courtship.<br />

But February isn’t just for lovers. We also have an article on<br />

the ways African-Americans have contributed to the growth of<br />

Broward County — in observance of Black History Month —<br />

and another on the importance of Chinese New Year’s, which<br />

falls this year on February 8.<br />

Take a look at contributor David Volz’s piece on the Parkland<br />

Farmers Market, which is in the middle of its tenth year, then<br />

circle February 7 and February 21 on your calendar, and go to<br />

the market in person. There’s a reason vendors keep returning.<br />

We continue our medical emphasis from January with more<br />

articles of interest — from robotic-assisted cataract surgery,<br />

to uses of ultrasound beyond pregnancy, to taking your mind<br />

on a “past life regression.”<br />

In our financial section, you’ll find six secrets to grow your<br />

You’ll also find recipes for delicious soups for the season, a<br />

Whew! Thank goodness it’s leap year. We can use the extra<br />

day this month to get through all these stories and still have<br />

I am proud to report that the City of Parkland was voted by<br />

the online financial and lifestyle site WalletHub as the Best<br />

City in Florida to raise a family. Speaking with our longterm<br />

residents, I can see the pride they have in the City of<br />

Parkland. As I meet and talk with new residents, they tell<br />

me that some of the things that attract them to Parkland<br />

are our great parks and open spaces, highly rated schools,<br />

and the overall sense of community throughout the City.<br />

Thank you for everyone involved with making Parkland so<br />

desirable. Each year we seem to get better and better! We<br />

are continuing to work hard to provide high-quality services<br />

and offerings for our residents. From the Farmers Markets<br />

to our senior programs, teen groups, “buddy” programs,<br />

there truly is something for everyone to get involved with.<br />

I encourage people to frequently check our website www.<br />

cityofparkland.org for different listings of our events.<br />

I am happy to report that we have officially opened the<br />

“new” Parkland Community Center. Our city staff has done<br />

a fantastic job with the opening of this facility. I encourage<br />

everyone to stay up to date with the different program<br />

offerings. We are truly trying to make this a facility that<br />

offers something for everyone. As of this writing there will<br />

be cooking classes, dance classes, senior programs, and<br />

child care offered. We are trying to make this a first-class<br />

community center and something that all the residents can<br />

be proud of.<br />

Between the Community Center, our great Municipal<br />

Library, and our parks and recreation offerings, there is<br />

some really great programming being offered throughout<br />

Parkland. I encourage everyone to continue to take<br />

advantage of the different programs. P<br />

Starting off with our Family Fun Day<br />

and Car Show at Downtown Coral<br />

Springs on Saturday, February 6,<br />

from 10am to 2pm. Admission is<br />

free, and there will be music, food<br />

trucks, vendors, bounce houses, and<br />

entertainment. Cost to pre-register a vehicle is $15 or $20 on<br />

the day of the event, so sign up today. For more information or<br />

If you have any hazardous waste you need to dispose of,<br />

you can do so on Saturday, February 6, from 9am to 2pm at<br />

the Westside Maintenance Complex, 4181 NW 121st Ave.<br />

They will be accepting a full range of household hazardous<br />

materials at this location. As a reminder, Coral Springs residents<br />

can drop off paint, electronics, and fluorescent lights<br />

the first Saturday of every month from 8am to 5pm at the<br />

Waste Transfer Station at the end of Wiles Road at Northwest<br />

126th Avenue.<br />

I also want to invite residents to our annual State of the City<br />

on Thursday, February 18, at 6:30pm at the Center for the<br />

Arts. We will briefly highlight the city’s accomplishments over<br />

the past year, thank our volunteers, and end the night with<br />

a memorable performance by The Hit Men. The band will<br />

keep you dancing with hits from the ’60s, ’70s, and ’80s. The<br />

Center for the Arts is located at 2855 Coral Springs Drive.<br />

The event is free to Coral Springs residents, and tickets are<br />

available on a first-come, first-serve basis at City Hall and<br />

City Hall in the Mall.<br />

One of the biggest events in<br />

2016 for Broward County will be<br />

the opening of our new courthouse<br />

in the spring. I’m proud<br />

that, as mayor back in 2009, I<br />

was the one who established the<br />

task force that brought about the 20-story building you now<br />

see in downtown Fort Lauderdale. The continually breaking<br />

pipes, issues with mold, and other structural problems forced<br />

the county to construct this new building. The best part was<br />

that we were able to do it all without raising taxes.<br />

This new Broward County Courthouse not only changed the<br />

skyline of the City of Fort Lauderdale, but it helped keep Broward’s<br />

economy going during one of the worst recessions.<br />

Along with other projects like the new south runway at Fort<br />

Lauderdale Hollywood International Airport, it created jobs<br />

and kept businesses going.<br />

This new courthouse is functionally designed, LEED-certified<br />

so it is energy-efficient, and the layout is much better than<br />

the current courthouse structure. Plus, there will be great<br />

views with integrated art throughout, including wall murals<br />

with court-related designs.<br />

If you are called for jury duty, it should not have much of an<br />

impact other than a more pleasant atmosphere. Jurors are<br />

keeping the same parking location and will meet in the same<br />

jury room, but if called to serve, the courtrooms will be much<br />

more comfortable. More hearing rooms will mean the judges<br />

will not have to hold hearings in chambers. There is a connecting<br />

bridge to the new tower from the eastside building<br />

so there will be no need to walk outside. Plus, that connecting<br />

bridge has separate areas for judges, the public, and<br />

in-custody defendants, making it safer for all.<br />

When visiting the new courthouse for anything from getting a<br />

marriage license or paying a fine to being a witness in a trial<br />

or party in a probate proceeding, there will be no more lines<br />

outside and no need to worry about inclement weather. The<br />

security check will be much smoother with the main courthouse<br />

area having five lines with one specifically for judges,<br />

employees, and attorneys who regularly use the courthouse.<br />

Security will be enhanced with more advanced protocols.<br />

Overall, I’m looking forward to the opening of our new Broward<br />

County Courthouse in the next few months. It will be a<br />

building that Broward County can be proud of.<br />

An all -star tribute is planned<br />

for the performer, who rocked<br />

spectacular will be held Sunday, February 14th, starting at<br />

BLACK HISTORY MONTH<br />

February is a time to reflect on the accomplishments<br />

of the African-American community.<br />

Many African-Americans have made substantial contributions<br />

to the local community. Tameka King, for one, earned a Ph.D.<br />

in educational leadership and is an assistant principal at Coral<br />

Springs High School. She believes it is important to celebrate<br />

the many cultures that are represented at her school.<br />

“At Coral Springs High we make it a priority to celebrate all<br />

cultures throughout the year highlighting certain ethnicities during<br />

designated times of the year, such as Black History Month<br />

in February. During February we highlight people of color who<br />

have made significant contributions to our world during our<br />

daily video announcements,” said King.<br />

The bulletin boards surrounding the Media Center at the high<br />

school are decorated to showcase the outstanding contributions.<br />

The school holds a Multi-Cultural Show that attracts<br />

over 700 visitors annually. In the Multi-Cultural Show students<br />

illustrate their cultural ethnicities through dance.<br />

“It is important to allow students to celebrate their cultures not<br />

just in the sense of trying to understand what cultures they<br />

bring with them, but also the hidden values that make their<br />

worlds feel so rich regardless of their situations or circumstances.<br />

While trying to understand the culture of people of<br />

color, we also take time to understand the historical context of<br />

the expression for people of color,” said King.<br />

A graduate of Coral Springs High herself, King earned her<br />

bachelor’s and master’s degrees at Florida State University<br />

and her Ph.D. at Florida Atlantic University. She believes<br />

coming from a strong family that valued education and work<br />

helped her succeed.<br />

There are many stories of success in the local African-<br />

American community. Years ago, agriculture was the primary<br />

industry in Broward County. Pompano, which later became<br />

Pompano Beach, was a farming community when it was<br />

founded in 1908. Hazel Armbrister, a member of the Pompano<br />

Beach Historical Society and the president of the Rock<br />

Road Restoration Group Inc., has studied the history of the<br />

area and seen it develop.<br />

“Years ago, people came from north Florida, Georgia, the<br />

Carolinas, Alabama, and the Bahamas to work on the farms.<br />

The land was fertile and word got out people could get work<br />

here. Whole families would come and work on the farms,”<br />

said Armbrister.<br />

Eventually a vibrant African-American community developed in<br />

eastern Broward County. Businesses, churches, civic organizations,<br />

and schools were established. Segregation existed<br />

and there were fewer educational opportunities available for<br />

African-Americans as many had to spend part of the school<br />

year harvesting crops. But eventually this changed. Blanche<br />

A dating site. “His ice blue eyes caught my attention so I sent<br />

him a message,” JoAnn says.<br />

The couple exchanged emails, graduated to phone calls, and<br />

met a week later at Cafe Vincenzo’s restaurant in Margate.<br />

After four months Anthony proposed. “Right before bedtime he<br />

slipped the ring on my finger in the dark and then whispered in<br />

my ear,” JoAnn says.<br />

The couple likes going to karaoke bars, lacrosse and basketball,<br />

traveling, going out to dinner, movies, Starbucks, hanging out<br />

with friends, and spending time with Anthony’s kids.<br />

They will marry at the Boca Dunes Golf & Country Club. Their<br />

colors are coral, blush, ivory, and gold, and the theme is Hearts<br />

and Romance. “I chose this theme because Anthony is so<br />

romantic and he has this way of always making me feel like a<br />

princess,” JoAnn says.<br />

The bride chose a traditional lace and tulle ivory ball gown and<br />

veil from Alfred Angelo Bridal Salon in Sunrise. She is planning a<br />

reception for 85 people.<br />

Anthony is group manager at Action Gator Tire; JoAnn is<br />

administration manager at Sentry Data Systems. They will<br />

honeymoon through the Caribbean aboard Royal Caribbean’s<br />

mily and Jon met waiting tables at The Melting Pot. They<br />

E became friends and before long they melted for each other and<br />

started dating in 2008.<br />

On New Year’s Eve 2014 Jon planned to surprise Emily and propose!<br />

His proposal had a few twists. Emily had spent Christmas with her<br />

parents in Delray Beach and Jon in South Carolina. Jon told Emily<br />

that he wanted to get a picture of them with the Christmas tree<br />

at the State House. Emily agreed. To Jon’s surprise the grounds<br />

were shut down for a celebration. Jon suggested a bar that had a<br />

tree, but it was closed. Finally, they found a hotel that was open,<br />

but with no Christmas tree they would settle for poinsettias as the<br />

background. At this point, Emily was not thrilled and grudgingly<br />

agreed to pose. Ready for their photo, Emily realized that Jon was<br />

not behind her. When she turned, she found him on one knee with<br />

the perfect proposal and a picture-perfect moment!<br />

Jon and Emily live in Columbia, South Carolina. Jon is an account<br />

executive, and Emily is a student at the University of South Carolina<br />

School of Medicine.<br />

The couple is planning for a 2017 wedding and considering<br />

South Florida venues since the bride’s parents, Norma and Joel<br />

Lederberg, live in Delray Beach.<br />

After the wedding the couple will live wherever Emily’s residency<br />

takes them. ❤<br />

surprised her with a trip to Naples to stay at the Ritz.<br />

Sari thought the whole time it was a couple’s trip and that<br />

their friends were coming to stay with them, which in hindsight<br />

she realizes was the perfect plan, “or else I would have been<br />

suspicious.” They were heading to meet the other couple at<br />

a beautiful beach and go to dinner. “While we were walking<br />

down to the water, he took my hand and got down on one<br />

knee and asked me to spend forever with him,” Sari says. Two<br />

photographers who Allen had hired pretended to be tourists and<br />

captured the entire proposal.<br />

At college, the couple attended UCF football games. They also<br />

enjoy going to bars and restaurants, movies, and bowling.<br />

They’ve picked the theme of their wedding (classic/romantic), the<br />

colors (silver, gold, and blush) and their honeymoon destinations<br />

(Napa and Hawaii). But other details remain to be determined. “I<br />

am waiting to find a dress,” says Sari, who teaches third grade.<br />

“I want a very romantic, low-back dress with some lace. I would<br />

love a long veil.”<br />

She and Allen, who is in social media marketing, plan to live in<br />

Fort Lauderdale. ❤<br />

For Damian and Maria it really was love at first sight. Maria<br />

walked into Damian’s office in Coral Springs; he’s a bariatric<br />

therapist at Forma Vital. A week later — “one looong week,”<br />

according to Damian — Maria proposed.<br />

Their whirlwind courtship included going to the movies (once)<br />

and out to dinner (twice). “After the movie and dinner, she takes<br />

me to the beach and told me, ‘You are the chosen one. Please,<br />

marry me,’ ” Damian says. “She asked twice, because I wasn’t<br />

sure about it.”<br />

The couple tied the knot two weeks later in Hillsboro Beach.<br />

“We both wanted a small, private and romantic place,” he says.<br />

For the wedding, the couple sought a balance between refined<br />

elegance and simplicity. Damian wore violet. Maria wore<br />

white and silver. Her dress was from Saks Fifth Avenue. The<br />

reception was held in Latinos Restaurante in Deerfield Beach<br />

with their closest friends. “The food is delicious and the location<br />

convenient,” Damian says. “We had a couple of toasts!”<br />

They honeymooned in New York City and St. Augustine.<br />

“Again, a balance between life in the fast lane, be cosmopolitan,<br />

and being in a historic and peaceful place,” he says.<br />

Maria is a therapist in a chiropractor’s office. The couple, who<br />

For Wilton Manors couple Johnnie and Paul Goodnight,<br />

February 14 th , 2016 could mark both their paper and<br />

diamond wedding anniversaries – depending on how you<br />

count. The couple, who started dating in 1978, bought rings<br />

just over 30 years ago as a sign of their lifetime commitment<br />

to each other, awaiting the day when the law would officially<br />

recognize their vows. So when same-sex marriage was<br />

legalized last year, Paul and Johnnie were thrilled to finally<br />

exchange those rings. They joined the “We Do!” mass wedding<br />

ceremony hosted by Broward Cultural Division and the<br />

City of Wilton Manors on Valentine’s Day, as 50 local couples<br />

finally tied the knot and began counting legally.<br />

A Cook in the Kitchen<br />

Ever since her wedding to Cristina Rivas at Wilton Manors City<br />

Hall last year, Bernadette Roelofs has been doing more cooking.<br />

“I’m not a great cook, but I’m trying,” she admits. According<br />

to her nieces, their aunt’s increased interest in the culinary<br />

arts is part of her becoming “more domesticated” since the<br />

wedding. “They have also been amazed to see me wearing a<br />

dress twice this year, something they had rarely seen before.”<br />

has definitely “cherished a year of no one asking ‘how do<br />

you pronounce that?’ or ‘how do you spell that?’”<br />

For their first year of marriage, the serious DIY remodelers<br />

chose to celebrate – neither with diamonds or paper – but<br />

with a full renovation for their dream bathroom and kitchen<br />

at their Wilton Manors home. Starting the project last<br />

February close to the wedding date, the avid foodies managed<br />

to “wrap up [the kitchen] beautifully in time for our<br />

traditional Christmas breakfast,” says Johnnie. The couple<br />

fully intend to put their stunning kitchen to good use for<br />

their very first wedding anniversary, as “a new tradition of a<br />

Valentine’s Day anniversary dinner!”<br />

As for their tried-and-true formula for 37 happy years together?<br />

“The secret of our relationship’s success is simply<br />

being each other’s best friend,” says the couple.<br />

Roelofs is not sure why the wedding changed her kitchen endeavors<br />

or sartorial choices but guesses it may have something<br />

to do with an increased comfort level. No similar changes have<br />

been noted in her mate, however. “Cristina is exactly the same<br />

as she was 25 years ago,” she says, “which I love.”<br />

Since participating in the Valentine’s Day wedding ceremony<br />

in February 2015, Roelofs reports the couple has been “very,<br />

very happily married.” Roelofs, a community service officer<br />

with the Hollywood Police Department, and Rivas, who is in<br />

sales, have been together since 1990. They were originally<br />

planning to marry in July on what would have been their 25 th<br />

anniversary of being together. However, concerned about a<br />

possible Supreme Court decision, they opted to replace their<br />

later wedding date with the Valentine’s Day “We Do!” event.<br />

Looking back, Roelofs is happy that the event enabled them<br />

“to validate our relationship. It is not something to be hidden<br />

behind closed doors anymore.”<br />

Following the wedding ceremony, the couple did not take<br />

an official honeymoon but plan to celebrate their anniversary<br />

with a seven-day St. Thomas cruise. “We’ll be going on Olivia<br />

Cruise Lines, which is all gay women,” says Roelofs. Most<br />

likely she won’t need to do any cooking, but perhaps she’ll<br />

end up packing a dress or two. P<br />

qualified stylist is handpicked for his or her skill and high level of<br />

education. Many of them have had advanced training at Sassoon,<br />

Goldwell and other well-known places and are continuously refining<br />

their craft through education.<br />

Guests at the Pink Pony Tail feel very comfortable knowing they<br />

are in good hands. “We strive to keep a very professional atmosphere<br />

but at the same time be very friendly and vibrant,” Simi<br />

was created solely for curly hair. The salon performs color corrections,<br />

permanent makeup, and wedding hair and makeup and<br />

the result of your work right away while making people feel great<br />

about themselves,” Roya says. “We make people feel beautiful<br />

he day we honor love and romance<br />

– not to mention red roses and<br />

chocolate – arrives this month, and<br />

when it comes to the ways many of today’s<br />

couples first met, there’s definitely<br />

a new game in town.<br />

In years past, couples would usually<br />

meet the ones they love through rather<br />

traditional means, perhaps at a high<br />

school dance or a college fraternity/<br />

sorority party or maybe just a simple<br />

old-fashioned introduction from a<br />

mutual friend.<br />

What would most certainly have been<br />

a huge no-no before has now gone<br />

to the head of the class as a way of<br />

connecting with others. More and<br />

more couples today are meeting their<br />

“perfect match” initially via computer<br />

screen, not face to face.<br />

Native New Yorker and former South<br />

Florida resident Laurie Geronemus is<br />

getting married to her fiancé, Tony Raio,<br />

in two months. They met on Christian<br />

Mingle, an online dating service.<br />

At first, Geronemus had reservations<br />

about online dating. “I was not about<br />

to go online to meet somebody,” she<br />

said. “I had been dating a friend for a<br />

few years and I broke up with him. My<br />

cousin insisted I go online.”<br />

The idea seemed a bit taboo to her at<br />

first. “My mother always told me ‘you<br />

don’t speak to strangers.’” However,<br />

things changed when she first saw Tony<br />

on her computer screen. “Then there<br />

was this face and big brown eyes,” she<br />

recalled. “He just looked like somebody<br />

who was so honorable.”<br />

She and her now-fiancé communicated<br />

online for about a month before she<br />

agreed to meet him. “He said let’s go<br />

to dinner, and we even bypassed the<br />

usual ‘safe public places’ to meet like a<br />

Starbucks or a Panera Bread.”<br />

he had a sense of decency. I detected<br />

sincerity and a desire to get on with his<br />

life. He was ready to meet someone.”<br />

And has her once-guarded opinion<br />

about meeting someone online<br />

changed? “It’s a new ballgame. I told my<br />

daughter to do it,” she said.<br />

Michele and Steven Amowitz, who live<br />

in West Palm Beach, met on an online<br />

Jewish dating site called JDate. Michele<br />

said she was getting bored with watching<br />

TV and decided it might be time to<br />

start dating again. “So I went on JDate<br />

and Steve was on,” she said. And as<br />

soon as she set her eyes upon him,<br />

something rather unusual caught her attention.<br />

“He had a monkey on his shoulder,”<br />

she said, “and I said ‘nice monkey’<br />

and we chatted for an hour.”<br />

Michele said after their initial chat, they<br />

both felt good; however a minor obstacle<br />

did exist: She lived in upstate New<br />

York and he in Virginia. They continued<br />

to talk online frequently and shortly afterward<br />

began taking turns visiting each<br />

other.<br />

And in case you were wondering, why<br />

the monkey?<br />

“He had gone with his kids to the zoo,”<br />

Michele said, “and put a monkey on<br />

his shoulder. He used that as his profile<br />

picture for the dating site.”<br />

Michele’s profile picture was a bit out of<br />

the ordinary as well. “I was wearing a<br />

waist-length blue wig I had from Halloween,”<br />

she said, adding when she got off<br />

the computer with Steve after their first<br />

chat, her mom and daughter noticed<br />

immediately. They asked her what she’d<br />

been doing because she was smiling. P<br />

Suddenly, there it is – a flash of<br />

glimmering red scales as the<br />

magnificent dragon emerges<br />

from the back of the theater. Perfectly<br />

in sync with the pounding rhythm of the<br />

drums that fills the room, the dragon<br />

marches the length of the auditorium<br />

before claiming the stage as its kingdom.<br />

Then the real delight begins. The<br />

creature bounds from one side of the<br />

stage to the other, rolling its head from<br />

side to side with each step. As the<br />

auditorium lights illuminate the dragon’s<br />

body, which moves in graceful waves as<br />

it follows a ball that taunts it, a collective<br />

gasp of joy arises from the audience.<br />

The dragon dance, a cultural tradition<br />

designed to bring good fortune<br />

and prosperity, flawlessly captures the<br />

essence of Chinese New Year. Celebrated<br />

on the first day of the Chinese<br />

lunar calendar, which happens to fall on<br />

February 8 this year, the Chinese New<br />

Year focuses most predominantly on<br />

the union of friends and family and the<br />

generation of good luck for the following<br />

year. The holiday, known as the Spring<br />

Festival in China, is the most important<br />

Chinese celebration of the year and<br />

brings together family from all over the<br />

country as well as the globe.<br />

The dragon dance represents just one<br />

of the countless traditions that adorn the<br />

holiday, but it bears the common theme<br />

that runs through all of the Chinese<br />

New Year traditions: good luck. The red<br />

color that appears in the dragon’s body<br />

is a color that saturates this holiday.<br />

From the red lanterns strung from every<br />

conceivable surface to the red couplets<br />

stuck on the doors and the walls, the<br />

color of happiness and good fortune<br />

dominates Chinese New Year. The color<br />

red also appears in the festival’s most<br />

common gift of red envelopes, which<br />

contain “lucky money” to pave the way<br />

for future prosperity. Wearing red underwear<br />

represents yet another important<br />

tradition of the Chinese, as such an<br />

intimate object in the color of luck is<br />

believed to minimize any forthcoming<br />

bad luck.<br />

The superstitions, however, do not stop<br />

at wearing bright underwear. Chinese<br />

New Year is a holiday that does not<br />

shy away from food. Lucky foods like<br />

noodles, whose length symbolizes longevity,<br />

and spring rolls, whose gold barlike<br />

shape symbolizes wealth, become<br />

other hand, good luck is reinforced by<br />

fireworks. Used to drive away the evil of<br />

the coming year, fireworks light up the<br />

sky every Spring Festival.<br />

Chocolate Does the Trick<br />

But Watch Out for Stray Ear Hairs<br />

Gentlemen, if you wish to enhance<br />

the likelihood of a lusty Valentine’s<br />

canoodling, pay attention.<br />

While long-stemmed red roses are the<br />

cliché classic, you can do better. Add<br />

chocolate. You know we love it. “But<br />

wait,” you say, “I do give her chocolates,<br />

and the canoodling, if I can get any, is<br />

iffy at best.”<br />

Well, if you’ve done the check list of<br />

pre-date tasks (helpfully listed below),<br />

and you haven’t recently compared<br />

her unfavorably to your mother or an<br />

ex-girlfriend, then your problem is you<br />

bought cheapo, drugstore-bargain<br />

chocolate. You might as well have given<br />

her a bottle of sewer water instead of<br />

perfume. Listen now and take notes.<br />

There is a valid and scientific reason<br />

to give chocolate to your sweetie on<br />

Valentine’s Day. Women react to and<br />

crave chocolate more than men do. I<br />

dare say we crave it in lieu of men at<br />

times. Science has discovered why. It has<br />

theobromine and phenylethylamine in it,<br />

and apparently females are more sensitive<br />

to them. But what the heck are those<br />

things, you ask? Trust me, while I did do<br />

the arduous research, the explanations<br />

and reasons are complicated and pretty<br />

much boring enough to be an effective<br />

anesthetic. I fell asleep while reading<br />

what I printed out. Twice.<br />

Simply accept the<br />

miracle I’m<br />

sharing.<br />

They call phenylethylamine<br />

the “Love Drug.”<br />

I’ve seen three different<br />

spellings for it — even<br />

the experts can’t stay<br />

awake long enough to<br />

get it right or agree with<br />

each other.<br />

(Obviously, neither they nor I had the<br />

sense to eat chocolate while tackling<br />

this.) And no matter which way I type it,<br />

my dear friend Bill Gates (Word) tells me<br />

I’ve got it wrong. I also don’t know how<br />

to pronounce it. So I’m nicknaming it<br />

Penny-Ethel. No wonder nobody reports<br />

on this. It’s way too tedious, and all<br />

anyone really cares about is eating the<br />

end results. Because of Penny-Ethel, a<br />

man’s chances of getting some serious<br />

loving on Valentine’s Day are much better.<br />

Penny-Ethel is a dopamine booster.<br />

Makes her feel euphoric and excited.<br />

Couple that with the caffeine-like effects<br />

of the theobromine and before you can<br />

say melt in your mouth, your honey will<br />

melt into your arms.<br />

Here’s the catch. (There’s always a<br />

catch.) You have to open the wallet<br />

and spring for the good stuff. Cheapo<br />

chocolate just won’t work. The higher the<br />

quality of the cacao, the more magical<br />

the Penny-Ethel in it. It is worth searching<br />

out the best — chocolate made from the<br />

Criollo variety in Venezuela is the ultimate.<br />

Another catch is you must attend<br />

to your personal<br />

grooming. Get a close<br />

shave. And for God’s<br />

sake, trim those<br />

nasty, wiry, out-ofcontrol<br />

nose, ear, and<br />

eyebrow hairs. Take<br />

a shower. Use deodorant.<br />

Brush and floss your<br />

teeth. Don’t eat garlic that day. Wear<br />

unwrinkled, clean clothing with no rips or<br />

stains. I know, I know — what a pain in<br />

the patookie. But a crinkled 2-inch hair<br />

protruding from your ear is enough to<br />

make us run scared — after snagging the<br />

chocolate, of course.<br />

Unfortunately, there is yet one more<br />

catch. One I didn’t know existed until a<br />

friend pointed it out. To get lucky, you<br />

have to do everything else right, too, if<br />

you believe what you see on television.<br />

Or rather, what she’s seen on television.<br />

Everything. Like choosing the right<br />

flowers, making a dinner reservation at<br />

the right restaurant, wearing the right<br />

clothes, smelling of the right aftershave,<br />

and so on. None of that ever seemed to<br />

matter to anyone in real life that I knew,<br />

but I’ve come to learn after many years<br />

that we — where I grew up — were<br />

not, in fact, hip. So tiptoe over those<br />

eggshells, boys, and increase your odds<br />

with my chocolate advice.<br />

Or — dump the high-maintenance<br />

chick with the attitude and addiction to<br />

crappy television, and find one who’ll<br />

be thrilled you thought of her. It is a<br />

made-up holiday, after all. (But you still<br />

have to pluck. Sorry.) P<br />

Garner, is politically correct.<br />

Actually, he’s politically<br />

correct to a ridiculous fault. It<br />

was during the anti-politically<br />

correct “Summer of Trump,”<br />

after all, that Affleck reared<br />

his politically correct head –<br />

and for that should be named<br />

to the Political Correctness<br />

Hall of Fame.<br />

You see, Affleck is so politically<br />

correct that when he<br />

found out he had an ancestor<br />

who was a slave owner,<br />

the shamed actor actually<br />

tried to hide it. Earth to<br />

Ben: Thomas Jefferson<br />

had slaves! Ben, would you<br />

deny it if you found out you<br />

were a descendant of the<br />

third president?<br />

Besides, you know that old<br />

saying about the “sins of the<br />

fathers.” Who could blame<br />

Affleck for what, say, his<br />

great-grandfather did any<br />

more than baseball player<br />

Ichiro Suzuki can he blamed<br />

for the Japanese sneak attack<br />

on Pearl Harbor?<br />

By the way, there’s also a<br />

rumor that Affleck is related<br />

to a white duck that sells<br />

Truth be told, there’s no<br />

ducking the fact, however,<br />

that no place on earth is<br />

more politically correct than<br />

that make-believe world Ben<br />

lives in known as Hollywood.<br />

Then there’s what I like to call<br />

the “Kojak Factor.”<br />

Kojak was a popular TV show<br />

that aired in the 1970s and<br />

starred Telly Savalas as a<br />

fictional, street-smart New<br />

York police detective who had<br />

a shaved head, a lollipop in his<br />

mouth, dapper clothes, and<br />

was, above all, a Greek, just<br />

like Savalas himself.<br />

So what does politically correct<br />

Hollywood do with this<br />

icon? Three decades later they<br />

come out with a new Theo<br />

Kojak, who is exactly like the<br />

old Kojak with one slight difference.<br />

Played by Ving Rhames,<br />

this Kojak is black.<br />

Now Rhames was great in<br />

the role, as he is in everything.<br />

But what defined Kojak<br />

was his being Greek – not<br />

Jewish, not Irish, not Italian,<br />

but Greek. And, yes, I know,<br />

he wasn’t a real person. Still,<br />

Kojak was as Greek as Aristotle<br />

Onassis, as Greek as<br />

Zorba, and as Greek as anyone<br />

who has ever owned a<br />

diner. However, to a politically<br />

correct Hollywood, a black<br />

Kojak made perfect sense.<br />

So did a black James West.<br />

When I was growing up I<br />

was a fan of Wild, Wild West,<br />

with Robert Conrad starring<br />

as James West, a fictional<br />

special agent in the old<br />

west during the presidency<br />

of Ulysses S. Grant – who<br />

wasn’t a Greek even though<br />

his first name was Ulysses.<br />

Wild, Wild West spawned a<br />

movie, meanwhile, with Will<br />

Smith as West.<br />

Now I love Will Smith as a<br />

leading man. He was great<br />

destroying bad robots, shooting<br />

down aliens with Tommy<br />

Lee Jones and playing the<br />

real-life Ali. I just didn’t want<br />

to see him as James West.<br />

I know, these aren’t real<br />

people, so why should<br />

we care?<br />

So what does politically correct Hollywood do with this icon?<br />

Well, I also enjoyed the<br />

movie Shaft. Richard<br />

Roundtree was perfect as<br />

soundtrack by Isaac Hayes<br />

was classic. A few years<br />

ago, Shaft was remade with<br />

Samuel L. Jackson in the<br />

starring role. You couldn’t<br />

have asked for a better Shaft<br />

than the guy who quoted<br />

from scripture in Pulp Fiction<br />

before sending his victims to<br />

meet their maker.<br />

That being said, here is<br />

something you will never<br />

see. You will never see<br />

another remake of Shaft<br />

but this time starring blond<br />

beach boy Owen Wilson.<br />

And you will also never see<br />

John Shaft played by Ben<br />

Stiller, Jeff Goldblum, or<br />

Adam Sandler. Talk about<br />

diversity – how about a<br />

white Shaft who can speak<br />

some Yiddish?<br />

The Refreshing<br />

Simplicity of<br />

‘John Wick’<br />

I’ve written about how I don’t watch<br />

movies much anymore, how my<br />

attention wanes. Every so often,<br />

however, a film will surprise me. That’s<br />

what happened not long<br />

ago during a dull late<br />

night in front of the television,<br />

flipping through the<br />

channels. I came upon<br />

a movie I’d heard of and<br />

remembered seeing<br />

advertisements for, but<br />

knew nothing about:<br />

John Wick.<br />

I gave it a few minutes to capture my<br />

interest and it succeeded. I didn’t think<br />

about it at the time but later I saw a<br />

brief review online mentioning the<br />

story’s simplicity, and it hit me –<br />

that’s what helped grab me, why<br />

it was so easy to watch. It was<br />

the film’s lack of complication.<br />

To be sure, John Wick is a fullfledged,<br />

R-rated, wait till the kids go<br />

to bed action movie. Lots of long,<br />

meticulously composed fight scenes<br />

in which the central character<br />

(whose name serves as the film’s<br />

title) uses his deft hand-to-hand<br />

combat and firearm skills to mow<br />

through countless challengers.<br />

And I found these plentiful fight<br />

sequences mesmerizing by<br />

their choreography, almost<br />

like watching some kind of<br />

ultra-violent but enthralling<br />

dance. Also, the movie has<br />

a visually stunning quality,<br />

paradoxical as it may<br />

seem, with all the destruction<br />

somehow presented<br />

with an air of elegance.<br />

Most refreshing though was the<br />

fact that all the carnage was brought<br />

about from the most straightforward<br />

of places. A thug stole a guy’s car and<br />

killed his dog.<br />

Mind you, the victimized guy was John<br />

Wick, a retired hit man who can be<br />

fairly described as the superhero of<br />

me feel like I<br />

need a degree in<br />

political science<br />

to figure out<br />

what’s going on.<br />

assassins, and his dog was the last gift<br />

bestowed upon him by his deceased<br />

wife, thus making it a very special dog.<br />

But that’s pretty much it. As the film<br />

made its way through the cable TV<br />

rounds and I got a chance to see it<br />

again (that’s right, twice), it occurred<br />

to me while watching the action unfold<br />

that the script didn’t need anything<br />

more. Of course, most action-packed,<br />

explosion happy, car chase-filled flicks<br />

require us to suspend reality for much<br />

of the tale. But why not keep the<br />

underlying plot simple and let’s get on<br />

with the fun? Sometimes I don’t want<br />

my action thriller to make me feel like<br />

I need a degree in political science to<br />

figure out what’s going on. Intricate<br />

conspiracies, corrupt plots within<br />

factions of government, convoluted<br />

schemes to create doomsday weapons<br />

– they make my brain hurt. In John<br />

Wick, we’re shown a stolen muscle<br />

car and a dead puppy, and we know<br />

there’s gonna be hell to pay.<br />

To put a finer point on it, maybe the<br />

John Wick storyline struck a chord with<br />

me because, in a way, its unsophistication<br />

makes it more authentic.<br />

I suspect that in real life, more often<br />

than not, it’s the very plain motivations<br />

that make some bad things happen.<br />

I know I’m not the only one who<br />

was pulled in. I read somewhere that<br />

the John Wick sequel is currently in<br />

production. I look forward to seeing it.<br />

Especially if they keep it simple. P<br />

and even though I assured her I checked the requirements<br />

online we showed up terribly unprepared and they turn us<br />

away. Somehow I missed the part where you have to have 10<br />

forms of proof of residency and identification along with a DNA<br />

sample. She left dejected and rather suspicious. I apologized<br />

profusely but was really thinking, “Score! I have at least<br />

another week.”<br />

One of the most annoying things is that now I feel like my own<br />

driving skills are under a microscope as the teen watches and<br />

remarks on my every move. I feel guilty cutting someone off,<br />

making the occasional illegal U-turn, and running that mostly<br />

red but sort of yellow light. I’m being reminded constantly of<br />

the speed limit and keep hearing things like, “Shouldn’t you<br />

always use your signal when you change lanes?” It’s like being<br />

back in the car with my father 30 years ago when he was<br />

teaching me to drive. I’m afraid to even look at my phone<br />

when sitting at a red light for fear of being reprimanded.<br />

I<br />

have been frightened by many things since having a<br />

teenage daughter. However, none compares to the reality<br />

that she will be driving. I am completely unprepared to<br />

deal with this. It always seemed as if it was a lifetime away<br />

and then I wake up one day and bam! — she’s 15 and she<br />

wants her permit. And I am ready to go to Tallahassee, mom<br />

on a soapbox, to challenge this ridiculous permit thing for<br />

a child. Good grief, she still likes an afternoon at Chuck E<br />

Cheese! The roads and people in South Florida are hostile<br />

and dangerous and they scare me. This is no place for a<br />

distracted teenager whose biggest priority in my car to date<br />

had been choosing the radio station and finding her brush on<br />

the floorboard. Friends with teen drivers in the family are trying<br />

to convince me that it was the greatest thing ever. I don’t buy<br />

it. I’m willing to play the role of “Driving Miss Katey” well –<br />

forever or at least until she’s married.<br />

My daughter Katey did not get her permit the second she<br />

turned 15. Mostly because any time she brought it up I<br />

expertly changed the subject by offering a stop at Dunkin’<br />

Donuts or the clever “Honey, do you need some money.”<br />

Offers of cash and coffee worked for a while. Then she started<br />

pushing me. Truthfully the only thing she needed from me<br />

was payment since the State has decided to make it ohso-easy<br />

by offering the stupid test online. She took matters<br />

into her own hands and took the test. I secretly felt superior<br />

because I knew she never studied. She didn’t even have the<br />

book because I kept conveniently forgetting to get her one.<br />

Knowing this I assumed she’d fail, then I’d tell her she couldn’t<br />

take it again until she studied and was quizzed by me. Epic<br />

fail – not her, me, since she passed. Stupid smart genes. Now<br />

I’m forced to take her to the DMV. We make an appointment<br />

could they let me drive away in<br />

the family car after I failed both<br />

my permit test and driving test the<br />

first time around!<br />

The other issue to consider is that my car is my pride and joy.<br />

She and I call it the Mighty Mercedes and if she thinks she is<br />

ever driving away in my baby without me in the vehicle she’s<br />

crazy. It’s hard enough sitting in the passenger seat as the<br />

instructor. I’m a nervous wreck and am in full-out panic just<br />

driving down our street. I cringe as we pass every mailbox.<br />

I’m like, “Stop the car, pull over!” if another car is heading<br />

the opposite direction. She retorts, “Mom, I can’t stop every<br />

time a car comes near the Mighty Mercedes. You need to<br />

chill!” This has forced her to ask the question, “Gosh, Mom,<br />

do you love your car more than me?” Um- no? I mean no –<br />

absolutely no – you’re better than the car.<br />

At least for now she has me along for the ride. I am really trying<br />

not to be crazy as I teach her, but I’m a work in progress.<br />

Truth be told, maybe it’s not her I don’t trust. It’s all the sloppy,<br />

texting, phone-obsessed, distracted, road-rage-filled drivers<br />

she’ll encounter. I’m not proud of my manipulation, but<br />

could I sabotage the lesson on parallel parking to gain some<br />

more time? Oh well – best I can do is remind myself – deep<br />

breaths, be the adult, and drive on. P<br />

Fresh From the Farm<br />

Parkland market is in the<br />

midst of a busy 10th year<br />

The Farmers Market occupies a large<br />

field at the Equestrian Center, 8350<br />

Ranch Road, and offers about 150<br />

vendors selling a huge variety of food<br />

products. It is open two Sundays every<br />

month in season and is one of the largest<br />

and most popular events offered in<br />

Parkland.<br />

There is the bustle of a popular shopping<br />

venue with people buying food.<br />

And there are shoppers having a lot of<br />

fun, enjoying treats together, socializing,<br />

playing with their dogs, and having<br />

some high-quality family time.<br />

Lissette Munoz manages the outlet for<br />

Brothers Farmers Market, which sells a<br />

number of organic fruits and vegetables<br />

and is very popular. “We have been here<br />

for six years and it is a good opportunity<br />

for us. We like being a part of the Parkland<br />

Farmers Market,” she said.<br />

If you like pickles and olives then you’ll<br />

want to visit Dr. Pickle. It is run by Harold<br />

Pitts, a retired New York firefighter who<br />

was involved in rescuing people during<br />

the 9/11 attack. “We have 20 different<br />

The Parkland Farmers Market is a great place to shop for organic<br />

fruits and vegetables and look for smoothies, cakes, giant<br />

pretzels, pies, and other treats. It’s also a perfect environment<br />

to hang out with friends and make new acquaintances.<br />

supports it and there is a lot of camaraderie<br />

Lexi Cantore, who operates Gluten<br />

Free Granola, enjoys being a part of the<br />

Parkland Farmers Market. “We cook<br />

and prepare our granola products on<br />

Friday and Saturday. I love being here,”<br />

she said.<br />

Visitors to the Farmers Market can munch<br />

on cider doughnuts. Amanda Lopez had<br />

many individuals lined up to buy them.<br />

“This is a good event and we are getting a<br />

lot of customers,” she said.<br />

Shoppers could satisfy their taste for<br />

French baked goods at Le Petit Pain.<br />

“This is a very nice market,” baker<br />

Jeanine Griffon said.<br />

For some vendors, the market is an<br />

opportunity to meet potential customers.<br />

Alison Koss, who runs an art studio<br />

in Parkland, said a number of families<br />

she met at the market wanted her to run<br />

parties for them. She was also showing<br />

children how to create artistic projects.<br />

“This is a good event and we have met a<br />

lot of people here,” she said.<br />

Stacey Rosen, who visited the market,<br />

called it fantastic. “I love the atmosphere<br />

here and I like the people. I can buy<br />

fresh vegetables produced locally,” she<br />

said.<br />

Evan Sollecito also enjoys coming to the<br />

market. “This is great. I love coming here<br />

and I like the products here,” he said.<br />

Inbal Hackman had a smoothie and<br />

spent time with family and friends. “This<br />

is very nice,” she said.<br />

The Parkland Farmers Market began in<br />

2006. At the time there were 12 vendors.<br />

The market grew in popularity and<br />

became a fun social event.<br />

In 2009, Mercantil Commercebank and<br />

Parkland established a partnership, with<br />

the bank providing financial support, and<br />

the market grew even more. Usually, it is<br />

open from 9am to 1pm on the first and<br />

third Sunday of the month from November<br />

to April. This month’s dates are<br />

February 7 and 21.<br />

in Florida,” said William Lawler, vice<br />

president of branch sales and service<br />

manager for Mercantil Commercebank.<br />

a large following from all over<br />

South Florida.<br />

“We have so much to offer and a lot<br />

of the vendors there have a following.<br />

The Farmers Market is in a great location<br />

lot of people look forward to Sundays<br />

when the market is in operation,” city<br />

At least 4-6 weeks before traveling,<br />

especially somewhere exotic, it<br />

is important that you visit a travel<br />

medicine specialist or a doctor familiar<br />

with travel medicine. While websites<br />

such as the Center for Disease Control<br />

and Prevention can provide basic information<br />

relevant to your travel location,<br />

it’s important that you consult a specialist.<br />

The specialist will be able to make<br />

more specific recommendations regarding<br />

vaccination and/or medications<br />

based on factors such as: your destinations,<br />

the length of your trip, your age,<br />

medical history, and any activities you<br />

may have planned. When looking for a<br />

travel medicine provider, you can first<br />

consult your primary care physician<br />

who will be able to refer you to a proper<br />

specialist. There are also private clinics<br />

that specialize in pre-travel advice<br />

and preparation, which can be found<br />

through the International Society of<br />

Travel Medicine or American Society of<br />

Tropical Medicine and Hygiene.<br />

When you begin packing, some important<br />

self-care items to include would<br />

be SPF-appropriate sunscreen, insect<br />

repellent, small first aid kit, pain/fever<br />

reliever, feminine hygiene products, and<br />

hand sanitizer. While many of these<br />

items may be available during your travels<br />

they may not be the formulation you<br />

are accustomed to and are often very<br />

expensive.<br />

With regard to medications it is important<br />

to bring all of your prescription and<br />

over-the-counter medications in their<br />

original bottle with enough supply for<br />

the duration of the trip plus a few extra<br />

days should any issues arise. It is also<br />

important to pack all medications in your<br />

carry-on baggage.<br />

Call your health insurance company<br />

before traveling to check what extent<br />

your policy covers your health needs in<br />

a different state or abroad. Make sure to<br />

include copies of your health insurance<br />

card in your travel documents. Depending<br />

on your standard health insurance<br />

coverage, you may want to consider<br />

purchasing additional travel health insurance.<br />

The price of the premium will vary<br />

by trip but can be very reasonable for<br />

the peace of mind it provides.<br />

Two of the most important steps you<br />

can take to prevent illness while traveling<br />

is to stay hydrated and wash your<br />

hands. However, if you or someone you<br />

are traveling with unfortunately becomes<br />

ill while traveling, it is important to seek<br />

help as soon as possible. If you are on<br />

WINE WATCH<br />

Good Wines Bad Labels<br />

Ok, we made it. It’s 2016, and we<br />

hope the effects of the New Year’s<br />

celebrations have worn off by now.<br />

Normally, most columnists start<br />

off an after-New Year with goo and<br />

pabulum about the great expectations<br />

for the coming year. This is<br />

an election year, there is trouble<br />

all over the world, and the talking<br />

heads on television are predicting<br />

doom and gloom; our suggestion<br />

… drink more wine.<br />

We will start the year off with one<br />

of our prime gripes: good wines<br />

with stupid labels. Why a producer<br />

has to resort to an idiotic label to<br />

attract buyers rather than relying<br />

on the quality of their wines is<br />

beyond our ability to understand.<br />

While a label presenting a name<br />

such as “Fat Bastard” may be<br />

funny to some, it certainly is not an<br />

invitation to buy but rather a recommendation<br />

to avoid. Therefore,<br />

with a tongue in cheek, let’s look<br />

at some of the other “interesting”<br />

labels that decorate store shelves.<br />

PLUNGERHEAD 2013 Lodi Zinfandel ($12).<br />

This wine is a very nice and affordable<br />

Zinfandel and aside from the label, we<br />

can recommend it to you without question.<br />

Please do not be dissuaded by the<br />

illustration on the label of a man with a<br />

toilet plunger on his head. The fact that an<br />

instrument whose sole utility is clearing<br />

a stuffed toilet is on the label might not<br />

be conducive to result in a purchase and<br />

might leave a bad taste in the mouth<br />

about the wine. The difficult part is that<br />

Lodi Zinfandels are usually excellent and<br />

in spite of the label, this one is too. Grit<br />

your teeth, give it a try, and if you must,<br />

serve it in a brown paper bag so no one<br />

sees what’s on the label.<br />

BONNY DOON 2014 Vin Gris De Cigare Pink Wine ($18). Pink wine is the very American way to say<br />

rosé, and despite the French name this is an American wine. The label on this wine illustrates a<br />

calm and sedate pastoral village chateau scene, as did the French wine labels of old. There is just<br />

one small difference. In the upper left-hand corner, just above the trees, is “Le Cigare,” the French<br />

term for a flying saucer. OK, that’s different but definitely not objectionable for a first-class wine.<br />

ARROGANT FROG Sauvignon Blanc ($9.99).<br />

Need we say this: Arrogant Frog Sauvignon<br />

Blanc is a French wine, and never in all of the<br />

history of nutty wine labels has one engendered<br />

as many sneers, snickers, agreements<br />

and comments as has this label. This is a<br />

very nice Languedoc district Sauvignon Blanc<br />

wine but really, the name alone leaves some<br />

very large questions. Is the label referring to a<br />

green croaker (Rana temporaria for the scientific<br />

types) that has an attitude problem or to<br />

the nasty and derogatory appellation applied<br />

to the French? It’s not clear, but with respect<br />

to the modern trend toward political correctness,<br />

we prefer to consider the former and<br />

not the latter as the winemaker’s intention.<br />

Some others that we encountered while<br />

perusing the shelves at a local wine merchant<br />

were Kung Fu Girl, Zombie Zin and<br />

The Velvet Devil (both probably made for<br />

Halloween), Fish Eye, The Frog Prince (is<br />

that another frog joke?), The Mad Housewife<br />

(no comment), The Prisoner, Boom<br />

Boom, and the list goes on and on.<br />

Unfortunately the odd, strange, and weird<br />

names continue to decorate dealer’s shelves<br />

but behind those rather strange labels, there<br />

are usually some pretty good wines. Bad<br />

wines really do not exist anymore; modern<br />

winemaking techniques have totally eliminated<br />

that problem so all wines are decent<br />

and very drinkable. The variation is in the<br />

drinker’s preferences and the question “are<br />

you paying too much just for a funny label.”<br />

There were also labels that, in our opinion,<br />

go a bit too far and in some cases approach<br />

the obscene and good taste prohibits us from<br />

mentioning them, but they are out there. P<br />

A CAVALCADE<br />

of Soups<br />

Up north it’s “soup season,” and while we in South Florida are enjoying much more temperate<br />

weather, that’s no reason not to enjoy some good, hearty soups. This collection even has a<br />

cold soup – vichyssoise – that we fortunate Floridians can enjoy any time of the year.<br />

Quick Shrimp<br />

Bisque<br />

1 1 /2 lbs shrimp, peeled<br />

4 Tbs butter<br />

4 Tbs grated onion<br />

3 cups milk<br />

1 cup cream (may substitute milk)<br />

Salt and black pepper to taste<br />

A grating of fresh nutmeg<br />

Optional: Chopped fresh parsley or<br />

chives to garnish<br />

In a food processor, chop the shrimp into very<br />

small pieces. In a 2-quart saucepan, heat the<br />

butter and onion just until the onion becomes<br />

transparent. Add the shrimp and cook over<br />

moderate heat, stirring constantly, until the shrimp<br />

has changed color. Add the remaining ingredients,<br />

except for the garnish, and simmer over moderate<br />

heat until the soup almost boils, but do not boil.<br />

Serve immediately, optionally garnished with<br />

fresh parsley or chives. Serves 4–6.<br />

Vichyssoise<br />

4 large leeks (white and tender<br />

green parts), thickly sliced and<br />

well cleaned<br />

4 large baking potatoes (about 2 lbs)<br />

peeled and cut into large chunks<br />

4 cups chicken broth/stock<br />

2 cups water<br />

1 cup cream<br />

Salt and pepper to taste<br />

In a large pot, combine the leeks, potatoes,<br />

broth/stock, and water. Bring to a boil, lower<br />

heat and simmer for 30 minutes, until the potatoes<br />

are very soft. Puree the soup in a blender<br />

or food processor until smooth. Return to the<br />

pot and stir in the cream. Adjust seasoning with<br />

salt and pepper. Thoroughly chill before serving,<br />

tasting and adjusting the seasoning after<br />

it’s chilled. Optionally soup may be served hot.<br />

Serves 6–8.<br />

Tuscan Sausage<br />

Soup<br />

1 1 /2 lbs Italian sausage links<br />

(spicy or mild—cook’s choice)<br />

10 slices bacon, diced<br />

2 yellow onions, peeled and diced<br />

3 garlic cloves, peeled and minced<br />

6 cups pork or chicken stock/broth<br />

4-5 cups peeled and diced potatoes<br />

1 1 /2 lbs fresh spinach leaves, rinsed,<br />

drained, coarsely chopped<br />

1 can cannellini (white kidney beans),<br />

drained and rinsed (optional)<br />

1 1 /2 cups heavy cream<br />

Salt and pepper to taste<br />

Slice the sausage links in half lengthwise and<br />

place them onto a rimmed nonstick baking<br />

sheet. Cook in a preheated 400°F oven for 10<br />

minutes. Turn the links over and cook for an<br />

additional 10 minutes.<br />

Meanwhile, cook the bacon in a Dutch oven<br />

over medium heat until it is crisp. Transfer the<br />

bacon to paper towels to drain. Do not discard<br />

the grease. Add the onions to the bacon grease<br />

and cook for about 6 minutes, until tender. Add<br />

the garlic and cook for an additional minute.<br />

Add the chicken broth and potatoes and simmer<br />

them for about 15 minutes, or until the<br />

potatoes are tender.<br />

Cut the cooked sausage into 1/2-inch pieces<br />

and add them to the soup, along with the<br />

spinach, cream, and optional beans. Simmer for<br />

about 5 minutes, until it is hot, and then stir in<br />

the bacon. Serve immediately. Serves 6–8. P<br />

Ceviche Makes A Mark<br />

Mancora Ceviche Bar opened last year and specializes in<br />

Peruvian cuisine. The restaurant brings a trendy and healthy<br />

option to Coral Springs using the freshest ingredients and<br />

offers diners a combination of traditional and fusion Peruvian<br />

The roots of Peruvian cooking come from Andean, European,<br />

Saito’s Japanese Steakhouse<br />

Authentic Kobe cooking, but not for everyone<br />

Years ago, when I first reviewed Saito’s, I raved about the<br />

wonderful sushi … masago, ikura, salmon, tuna, salmon<br />

skin, etc. I can say, once again, that the sushi is exactly<br />

as it should be, fresh, moist, and correctly proportioned (more<br />

fish than rice). Back then I gave my “sushi restaurant caveat”:<br />

when you walk into a sushi restaurant, if you smell fish … walk<br />

out! At Saito’s you’ll only smell the aromas of the hibachi chef’s<br />

creations, the fragrances of Asian spices, and the redolence of<br />

the simmering meats. That is, of course, if you sit at one of the<br />

hibachi tables … if you dine on the other side of this beautiful<br />

restaurant, where the sushi is served (actually you can have sushi<br />

on either side), you’ll only have the artistic presentations of the<br />

raw fish delicacies to whet your appetite. And whetted it shall be.<br />

If you’ll just take my word for it, I won’t have to dwell on the great<br />

sushi in the remainder of this review. This go-around, I really want<br />

to concentrate on the hibachi.<br />

Hibachi service today is not what it was when it was formulated.<br />

In 1863 the Japanese cooked their main meal on a small<br />

charcoal grill, the hibachi. And so it was for almost a hundred<br />

years until the West discovered it. It has long since evolved into<br />

a dining style. A communal table surrounds a large grill with a<br />

huge exhaust just above to suck up the smoke and steam from<br />

the flash cooking. There, the diners watch a master “hibachi”<br />

chef work wonders. Tragically, the chef has become recognized<br />

more as a mere entertainer than an entertaining master chef. Let<br />

me explain: I was raised in a restaurant family. I know how many<br />

years, how many burns, and how many knife cuts it takes just to<br />

become adequate at flash cooking. I know how many errors and<br />

wasted food and lectures (more like screaming tirades) it takes<br />

to have the nuances of proper cooking and presentation drilled<br />

into one’s psyche. And so, when we are amused, impressed,<br />

or entertained by this seemingly easy food preparation,<br />

remember — it takes years and years of discipline and energy<br />

and frustrations and exhaustions to make it all look so easy. The<br />

flipping of the spatulas, the twisting of the knives, the rotating of<br />

me, I can tell<br />

you it doesn’t<br />

the food, the pushing here on the<br />

grill and then there on the grill, the<br />

oil fire flash, and the onion-volcano<br />

erupting show-stopper are not<br />

gimmicks. They’re demonstrations<br />

of skill and examples of masterly<br />

training. If you keep this in mind your<br />

joy of watching your meal prepared<br />

before your eyes will be increased<br />

ten-fold. Then the actual eating will<br />

be more of a thank you to the chef<br />

than an end to a short dance.<br />

When I went for my review dinner I was told they had real Kobe<br />

beef (not American or Australian). I was told that it was airovernighted.<br />

“OK,” I thought, “let’s put it to the test.” I’ve had<br />

Australian, good! I’ve had American, very good! Now I can say<br />

that I’ve had authentic Japanese Kobe. OMG! Now, listen. It is<br />

not for everyone because it is differently textured than even the<br />

finest filet mignon, though every bit as soft, in fact, much softer,<br />

if you can imagine that. It has the consistency of savory melted<br />

butter – creamy smooth – juicy. I am a steak eater and I like to<br />

chew my meat. Kobe is incredibly delicious but softer than I<br />

would go out of my way for. It is not that Saito’s has prepared<br />

it incorrectly; quite the reverse. All of my research tells me that<br />

Saito’s prepared it exactly as it should be. For me though, even<br />

filet mignon is too soft. I prefer their scrumptious skirt steak<br />

hibachi. But for those of you who want to experience a true<br />

delicacy, I can recommend Saito’s Kobe beef.<br />

The manager, Duc, was gracious and balanced his perfectly<br />

timed visits with not being intrusive. A refreshing change from<br />

south Florida’s sometimes overbearing attention. Duc let the food<br />

speak for itself, and it shouted “delicious.” Our server, Sahapoom<br />

Yamsakul, of Thai heritage, must have written the book on how<br />

to properly attend to dining guests. But I reserve my highest<br />

accolade for Justin, our hibachi chef for the evening. He has<br />

been so well trained he makes the whole food preparation<br />

experience look easy, and that, dear readers, is incredibly difficult.<br />

During the course of our dinner,<br />

that I never had before and<br />

I consider to be a great find:<br />

superior to anything available<br />

as far as I can tell. It is ultra<br />

premium sake and is served hot<br />

or cold.<br />

During the month of February we will see many of our<br />

students either competing or preparing to compete in sports<br />

events, drama competitions, and so much more. Let’s show<br />

our support either by cheering them on, helping with a<br />

fundraiser, or positive words of encouragement.<br />

We will celebrate our second-quarter Straight A Honor Roll<br />

students on February 1 st at 10am. Parents of these students<br />

are invited to attend this ceremony.<br />

Our volleyball team will compete at Ramblewood Middle<br />

on February 2 nd and at Lyons Creek Middle on February<br />

4 th . Both games take place at 4:30pm. Hope to see you<br />

and fun activities. We also have early dismissal on the same<br />

day with no after-care.<br />

HERON HEIGHTS ELEMENTARY SCHOOL<br />

February 8 th . All donations benefit Relay for Life and if we<br />

February is here and we are excited to bring Riverglades families<br />

together for this month’s events and good times. Jump<br />

right in by joining our monthly PTA Meeting February 3 rd at<br />

9:00am in the cafeteria. The PTA continues to be busy with<br />

more fun-filled activities planned for the month and remainder<br />

of the year. It’s always a good time to get involved – we love<br />

your support.<br />

On February 12 th , Riverglades PTA shows its heart-filled<br />

appreciation for our staff - Riverglades Staff Valentine’s<br />

Treat Day. Nothing is sweeter than showing our Riverglades<br />

staff a little love (and giving some goodies too) and how much<br />

they mean to us.<br />

In addition, on the 13 th our students will participate in Jump<br />

Rope for Heart. This is a great event supporting the American<br />

Heart Association – getting our kids active – and having fun<br />

giving back.<br />

So, you think you’re as smart as a kindergartner, 1 st , 2 nd ,<br />

3 rd , 4 th , or 5 th grader? On February 18 th , at the Parkland<br />

Commons Publix (on the corner of University Drive and Trails<br />

End) it’s time to get your math brain in gear. The annual<br />

Family Math Night is on. This popular event is returning for all<br />

you Riverglades families and students to participate in shopping<br />

for fun and learning at your local merchant. Kids love it<br />

and parents do too. It’s a fantastic way to apply the<br />

skills they have learned in the real world.<br />

And of course, Carnival is fast approaching.<br />

Parents Are Butting<br />

Into Her Business<br />

Dear Dr. Renae,<br />

My parents saw something very private<br />

on my phone written to me by a friend<br />

when I did not get a chance to delete the<br />

text conversation. My friend was asking<br />

my advice and I encouraged her to talk<br />

to her parents, although she did not want<br />

to. Now my parents feel that it is their<br />

responsibility to tell my friend’s parents.<br />

My friend is still not ready to tell her<br />

parents and may never be ready. I wish I<br />

could go back in time and delete it! How<br />

can I convince my parents to stay out of it?<br />

- Caught in the Middle<br />

Dear Caught in the Middle,<br />

I see your concern. Although this feels like a violation of<br />

your friend’s privacy, you must consider three main things:<br />

Is she putting herself in danger? Is she putting others in<br />

danger? Are others endangering her? If you answered<br />

yes to any of these questions, then your parents do<br />

have a right to be concerned. Talk to your parents before<br />

anyone takes action. Discuss any possible, no matter<br />

how unlikely, consequences of not helping her. I know<br />

you don’t want your parents to tell hers in fear of her<br />

hating you. Wouldn’t you rather your friend be angry with<br />

you for a little while and resolve her conflicts than remain<br />

her friend and let her suffer? I think it’s important that if<br />

she is a threat to her own safety and health that you and<br />

your parents, together, explain to her parents the situation<br />

and let them handle it. I know it sounds scary, but your<br />

friend’s safety and life should take priority over your friendship.<br />

It may even sound unimaginable, but in the long run,<br />

she will thank you. Most people who share their problems<br />

are looking for an outlet to receive help without asking for<br />

it. It’s important that her parents have the knowledge and<br />

ability to help her before it’s too late.<br />

- I’ve Been There<br />

Dear Caught in the Middle,<br />

Tell your parents that what they read on the phone is<br />

between your friend and her parents and they should<br />

respect her privacy. Explain to your parents that it is up to<br />

your friend to be responsible enough to tell her parents<br />

and to give her the time to handle what the text conversation<br />

was about in her own time.<br />

- 13-year-old guy<br />

Dear Caught in the Middle,<br />

As annoying, frustrating and “ugh”-ifying as it may be,<br />

your parents are most probably right. Yes, I know, that’s<br />

not the response you were hoping for. However, your<br />

parents are probably only insisting on this because they<br />

think it is in your friend’s best interest or personal safety<br />

that her parents be informed. They’re not out to get your<br />

friend in trouble, they are doing this because they care<br />

about your friend’s well-being. Don’t you?<br />

Instead of trying to stop your parents and get them to<br />

stay out of it, you should rise to the challenge of doing<br />

what’s best for your friend. If it truly is in her best interest<br />

or personal safety that her parents be informed, you have<br />

the moral obligation to tell them, even if it’s tough and<br />

your friend might be angry. If your friend does get upset,<br />

it may take a long time for her to bond with you again.<br />

However, I am 100 percent sure that eventually, your<br />

friend will come to realize the tremendous help you gave her<br />

by doing what was right, and she’ll be eternally grateful. I wish<br />

you all the best,<br />

Dear Caught in the Middle,<br />

Do your friends know that texts and emails they send to you<br />

are not private from your parents? If your friend put her problem<br />

in writing with this knowledge, it is possible she is looking<br />

for a way for adults to help her. Keeping an important problem<br />

from parents can be very stressful for teens as they get anxious<br />

wondering when and how their parents will find out. Your<br />

friend may have left other clues for her parents or texted other<br />

friends. You recognized that your friend needs adult guidance<br />

and can help her with this. I recommend that you offer to go<br />

with your friend immediately to your school’s Family Counselor,<br />

Social Worker, or Guidance Counselor. If the problem is not<br />

life-threatening or child abuse it would not necessarily need to<br />

be shared with your friend’s parents. A professional can help<br />

your friend assess whether it is wise to tell her parents and<br />

prepare her to talk with her parents. The counselor can also<br />

help her parents address their feelings about the situation by<br />

providing information and support. Your parents might agree to<br />

this plan. A true friend like you will risk the friendship in order to<br />

do what is right and keep their friend safe.<br />

has added some watercolor to the mix. Her initial works have<br />

been portraits of animals but she also paints landscapes and<br />

seascapes. Rosemary Celenski is a member of the Coral<br />

Can the Foods We Eat<br />

Affect Inflammation in Our Bodies?<br />

The physical symptoms of inflammation include redness, heat,<br />

swelling, and pain. Inflammation has been recognized as an<br />

indication of illness for thousands of years. In more recent years,<br />

the role of the inflammatory process in disease development and<br />

the effort to identify dietary factors that may promote or inhibit the<br />

inflammatory process have been studied.<br />

Inflammation is characterized as<br />

acute or chronic. Acute inflammation<br />

is a normal, short-lived physiologic<br />

response (lasting minutes to<br />

days) to injury, irritation or infection.<br />

Chronic inflammation is a long-term<br />

physiologic response (lasting weeks,<br />

months or years) to factors such as<br />

exposure to environmental toxins, a<br />

microbial or viral infection, poor nutrition,<br />

stress, and processes related<br />

to aging. Chronic inflammation is<br />

activated when the mechanisms of<br />

acute inflammation fail to stop an<br />

infection or heal an injury. Prolonged<br />

chronic inflammation eventually leads<br />

to the clinical symptoms of disease.<br />

Various foods and diet patterns are<br />

effective in reducing the underlying<br />

inflammatory responses associated<br />

with chronic disease.<br />

A diet high in fruits and vegetables<br />

may be one of the best defenses<br />

against chronic inflammation. Fruits<br />

and vegetables are an excellent<br />

source of vitamins, minerals, fiber,<br />

and polyphenols. Polyphenols (flavonoids<br />

and lignans) are compounds<br />

with powerful anti-inflammatory effects.<br />

Four to five servings each day<br />

of fruits and vegetables are recommended<br />

to combat inflammation and<br />

chronic disease.<br />

The Mediterranean diet is high in<br />

fresh vegetables, fruits, grains, legumes,<br />

and nuts with a minimal<br />

intake of red meat and high-fat dairy<br />

products; increased fish consumption;<br />

moderate red wine intake; and a<br />

liberal use of olive oil. Compared with<br />

the Western diet, this diet is rich in<br />

fiber, polyphenols, antioxidants, and<br />

omega-3 fatty acids. It is low in saturated<br />

fat and refined carbohydrates.<br />

Whole grain foods consist of the<br />

unaltered grain with intact bran<br />

and germ components, which<br />

are valuable sources of fiber,<br />

phytochemicals, vitamins, and<br />

minerals. Studies have shown these<br />

may help decrease inflammation<br />

associated with metabolic syndrome,<br />

diabetes, and cardiovascular disease.<br />

Many people with diabetes, elevated<br />

cholesterol, hypertension, and other<br />

chronic health issues have high levels<br />

of inflammation in their bodies that<br />

occur over time when the immune<br />

system tries unsuccessfully to repair<br />

cells and rid itself of harmful toxins.<br />

Evidence continues to mount from<br />

studies that the right foods can help<br />

reduce the amount of inflammation in<br />

the body and improve overall health.<br />

Here are ten tips for your<br />

dietary intake that will help to<br />

reduce chronic inflammation.<br />

1. Boost consumption of fresh fruits<br />

and vegetables. Choose fruits that<br />

are deep green, orange, yellow,<br />

and purple since these have the<br />

greatest nutritional value.<br />

2. Cook with olive oil as much as<br />

possible. Virgin olive oil is best<br />

since it has more antioxidants than<br />

refined olive oil.<br />

3. Snack on walnuts instead of chips.<br />

Walnuts provide fiber, minerals,<br />

antioxidants, the fatty acids that<br />

are good for your heart.<br />

4. Eat a whole grain cereal such as<br />

oatmeal. Replace refined grains<br />

with whole grains.<br />

5. Eat fatty fish such as salmon.<br />

Wild salmon has more omega-3<br />

fatty acids than farmed salmon.<br />

6. Eat fewer fast foods. Many are<br />

cooked with oils that contain<br />

trans fatty acids which increase<br />

inflammation.<br />

7. Replace white potatoes with sweet<br />

potatoes. They are higher in fiber<br />

and vitamins.<br />

8. Cut down on sugary drinks.<br />

Omit juices, sport drinks,<br />

soda, and punch.<br />

9. Eat more lentils and beans.<br />

They are good sources of<br />

protein and fiber.<br />

10. Munch on fresh raspberries and<br />

dark chocolate. Both are loaded<br />

with antioxidants.<br />

Lastly, weight loss is known to have<br />

beneficial effects on type 2 diabetes,<br />

hypertension, and other chronic<br />

conditions. Studies show that decreased<br />

caloric consumption aids in reducing<br />

inflammation as well. Make wise choices<br />

and eat right for good health! P<br />

aser cataract removal offers a<br />

whole new level of accuracy,<br />

precision, and safety. Cataracts<br />

will most likely affect you if you live long<br />

enough. Why? At birth, our natural<br />

lens of the eye is clear and flexible.<br />

With time, the flexibility or focusing<br />

capability of the lens decreases,<br />

making reading glasses necessary<br />

usually around the age of 40. With<br />

further aging, the lens begins to harden<br />

and can become cloudy. Symptoms of<br />

this clouding include gradual dulling of<br />

colors, hazy vision, halos around lights,<br />

glare, poor night vision, and difficulty<br />

with small print. These are signs and<br />

symptoms of progressive lens changes<br />

called a cataract.<br />

The procedure is<br />

usually performed in an<br />

surgical maneuvering. Laser<br />

incisions are exact each and every<br />

time, resulting in more accurate<br />

visual correction. Sophisticated,<br />

image-guided technology is able to<br />

precisely define location and density<br />

of the lens helping the laser to make<br />

incisions, decrease irregular corneal<br />

curvature called astigmatism, and to<br />

soften the hardened lens material.<br />

ultrasound include:<br />

Fibroids<br />

Fibroids are benign muscular tumors that may cause<br />

bleeding or pain, or at other times may not cause any<br />

issues at all. They may vary from the size of a marble to<br />

the size of a large grapefruit. You may have one or more<br />

multiple fibroids. Your doctor may recommend use of<br />

birth control pills, stopping blood flow to the fibroids, or<br />

surgery to remove the fibroids or the entire uterus.<br />

Polyps<br />

ULTRASOUNDS:<br />

Not Just for Pregnancy<br />

Overall, the pelvic ultrasound is a common<br />

diagnostic test ordered by OB/GYNs.<br />

Many women associate a pelvic ultrasound with pregnancy.<br />

However, it is also a vital test used to diagnose many<br />

gynecological problems. As an OB/GYN, the world of ultrasound<br />

makes sense, but to the patient it can be new and complex.<br />

A pelvic ultrasound is an imaging modality used to examine pelvic<br />

organs – the uterus, cervix, ovaries, and fallopian tubes. Using<br />

sound waves, it creates pictures of these organs. There is no<br />

radiation involved and ultrasound has no known harmful effects.<br />

Your OB/GYN may request a transvaginal and/or a transabdominal<br />

ultrasound. The transvaginal ultrasound uses a baton-like<br />

probe that is inserted through the vagina. The transabdominal<br />

ultrasound is done by moving a rounded probe over the lower abdomen.<br />

Prior to a transabdominal ultrasound, you may be asked<br />

to fill your bladder by drinking water, while before a transvaginal<br />

ultrasound, you may be asked to empty your bladder.<br />

Your OB/GYN may order a pelvic ultrasound if you have reported<br />

a change/abnormalities in your periods, absent periods,<br />

painful periods, bleeding after menopause, lower abdominal/pelvic<br />

pain, difficulty getting pregnant, or a history of an abnormal<br />

ultrasound in the past.<br />

Polyps are growths from the inner lining of the uterus<br />

that may cause abnormal bleeding. They are usually<br />

small and may have a stalk. Many polyps are benign,<br />

but some are cancerous. Your doctor may recommend<br />

placing a small camera in the uterus to evaluate the<br />

inside lining and remove the polyp. This may be done in<br />

the clinic or in the operating room.<br />

Ovarian Cysts<br />

Ovarian cysts are small sacs in the ovary that are filled<br />

with fluid or tissue. They are a common finding in<br />

women before menopause. They can be any size. Most<br />

are small and harmless. These usually can be observed<br />

and usually resolve without intervention. However, others<br />

can be large and/or painful. These may need to be<br />

removed surgically.<br />

Occasionally, cysts may be cancerous. This is especially<br />

a concern for women who are past menopause or if the<br />

cysts have more than just clear fluid inside. For women<br />

in menopause, your doctor may ask that you do a<br />

special blood test for a substance in your blood called<br />

CA125. If it is increased, this may be a sign of ovarian<br />

cancer. In women prior to menopause, this test can be<br />

elevated for multiple other reasons.<br />

Thickened Endometrium<br />

The endometrium is the inner lining of your uterus.<br />

After menopause, the uterus is expected to have a<br />

very thin lining. If the inner lining is greater than 4 mm<br />

after menopause, your doctor may recommend doing<br />

a biopsy to rule out anything serious such as cancer<br />

or an abnormal thickening of the uterus with or without<br />

atypical cells. P<br />

A<br />

breakthrough in plastic gum surgery<br />

is finally here. The Pinhole<br />

Gum Rejuvenation Technique,<br />

also known as the Lunch-Time Gum<br />

Treatment, is a noninvasive procedure<br />

invented by John Chao, DDS, MADG.<br />

It was invented to correct receding<br />

gum lines that so many people suffer<br />

from. This revolutionary technique<br />

is becoming very popular in today’s<br />

dentistry because it has replaced the<br />

much painful and long healing treatment<br />

of traditional gum grafting surgery.<br />

That surgery can be very painful<br />

and requires 3-4 weeks for healing.<br />

With the pinhole technique, the dentist<br />

makes a small, .01-inch incision using<br />

a specially designed instrument bringing<br />

the gum line back to its normal<br />

position. This is done without the use<br />

of a scalpel, needles, or sutures, and<br />

the gums are preserved with a special<br />

collagen material.<br />

The actual pinhole is considerably<br />

healed in 24 hours without sutures<br />

needed most of the time. Using<br />

The American Optometric Association recommends comprehensive<br />

eye examinations at least every two years for adults between<br />

19 and 64 years old and annually for those over 64 when<br />

there are no symptoms or risk factors present that may affect<br />

the eyes or vision. There are many different risk factors including<br />

contact lens wear, taking medications with potential ocular<br />

side effects, having systemic conditions with potential ocular<br />

side effects, and previous ocular surgery. These require more<br />

frequent follow-up, and your doctor will determine the best time<br />

to return in order to prevent any vision-threatening complications.<br />

Additionally, pediatric recommendations are more specific<br />

and can be found on the association’s website. So the next time<br />

the “dreaded drops” come into view, think twice about passing<br />

up on this important procedure. Are you due?<br />

Cataracts<br />

Although these opacities inside the natural lens of your<br />

eye are not dangerous, it is important that your doctor<br />

evaluate them to determine if any vision loss can<br />

be attributed to this normal aging change. In some<br />

instances, cataracts can be present from birth and can<br />

also be caused by medications or systemic conditions.<br />

The Blood Vessels<br />

These oxygen-supplying rivers of red can tell us a lot<br />

about your systemic health. Too skinny, too curvy, too<br />

stiff, too leaky; these are some of the characteristics<br />

that can point to conditions such as diabetes, high<br />

blood pressure, high cholesterol, sickle cell disease, or<br />

even infection, to name a few.<br />

The Optic Nerve<br />

Transmitting all of the light signals to the brain, the optic<br />

nerve can have issues that sometimes need immediate<br />

medical attention. Increased pressure in the brain<br />

can cause swelling of the nerves. If you have new or<br />

strange headaches, your primary care doctor may<br />

want you to have an eye exam with dilation to rule out<br />

this condition (as well as the need for a glasses prescription).<br />

Glaucoma, which is an asymptomatic condition<br />

in the early stages, can cause “cupping” which<br />

makes the nerve look like a skinny doughnut instead of<br />

a thick doughnut. This means there has been damage<br />

to your nerve fibers, and appropriate testing and treatment<br />

should be implemented.<br />

Retinal Lesions and Deposits<br />

In the United States, about two percent of the general<br />

population has choroidal nevi, or freckles, in the back<br />

of the eye. Although most of them are harmless, some<br />

can be cancerous. Drusen, which are small yellow<br />

deposits, can be part of normal aging changes or can<br />

be a sign of macular degeneration. Certain risk factors<br />

will determine if these findings are to be monitored or if<br />

further testing and/or treatment is required.<br />

Retinal Breaks<br />

Holes, tears, detachments – oh my! Sometimes breaks<br />

in the light-sensing retina are symptomatic and sometimes<br />

they are not. There are certain characteristics<br />

your doctor will look for to determine if treatment is<br />

necessary. Lattice degeneration, which is a localized<br />

thinning of the peripheral retina, is present in 6 to 10<br />

percent of patients and is a risk factor for the development<br />

of a retinal detachment. Your doctor will be looking<br />

for this, as well as many other conditions in your<br />

peripheral retina, which is generally not visible unless<br />

you are dilated. P<br />

hence we don’t have them and we struggle<br />

over and over with the same issues. Additionally<br />

in your right brain, you can access your cellular<br />

memory within your subconscious. Cellular<br />

memory holds all the information on each and<br />

every past life you’ve ever lived.<br />

As 2016 gains foothold, New Year’s resolutions<br />

still in clear focus, we are firmly<br />

committed to achieving our goals, intent<br />

upon improving ourselves from the previous<br />

year. Statistically, however, we know that commitment<br />

begins to fade as we move away from<br />

January and February. It’s not our conscious<br />

intention to abandon our dreams, so why do<br />

we do it? Why is our willpower not as strong as<br />

the vision of what we want for our life? These<br />

answers reside in your subconscious mind,<br />

also known as your emotional mind. It is why it<br />

is so hard to get a handle on these issues and<br />

why we’ve struggled with them for years. If it<br />

were as simple as teasing it out in our conscious<br />

mind, we are all pretty smart individuals,<br />

we problem-solve every day… we would have<br />

resolved them a long time ago.<br />

They are in your subconscious mind locked<br />

away and chances are you don’t even realize<br />

answers, how will you ever retrieve them? How<br />

sad would that be? The good news is you can<br />

get your answers! It’s not only possible but also<br />

far easier than you can imagine it to be. In fact,<br />

it is much easier than continuing to struggle<br />

as you have all these years, being stuck in the<br />

same cycle of disappointment, frustration, guilt,<br />

unhappiness, and feeling unfulfilled in your life.<br />

Feeling held back from the vision of where you<br />

want to go and who you truly see yourself to be.<br />

Your subconscious lives in your right brain, also<br />

where your imagination and creativity lies. Your<br />

left brain is the analytical side of the brain and<br />

is where most of us are used to being. We use<br />

it day in and out to be productive and navigate<br />

our everyday life. What portion of your day do<br />

you allow yourself to be in your right brain to be<br />

creative and dream? For most, it is a very small<br />

fraction, if at all. We are not accustomed to<br />

Keeping Hoofs Dry<br />

Winter Rains a Hazard<br />

As everyone knows, the rain in South Florida during the<br />

first week of December beat all kinds of records. In our<br />

community we received over five inches, which was a<br />

historic high for that time of year.<br />

Our roads were so flooded you could wakeboard after a car<br />

flew through the water. The roads were breaking up because<br />

the drivers showed no respect for the road conditions.<br />

People were not able to walk their dogs on their own<br />

properties, much less the sidewalks. Many parking lots were<br />

seriously flooded.<br />

For those of us who own or care for horses, it was an<br />

uncomfortable time for everyone. I had friends from Delray<br />

Beach to Davie who could not get their horses out. If they<br />

happened to have a barn aisle they could walk them through<br />

the barn for minimal exercise.<br />

Boarders could ride in the arena the same day the stable’s<br />

grassy paddocks were under water.<br />

Turning out the horses in flooded areas has many risks. They<br />

could pull a tendon or ligament by sliding in the slippery and<br />

muddy grass. The other problems associated with standing<br />

water are many. A horse could develop a soft, spongy hoof<br />

that makes it more prone to painful bruising, which in turn<br />

can create a miserably painful abscess. Obviously if your<br />

horse turns up limping after being in the wet conditions,<br />

contact your veterinarian and blacksmith for proper care and<br />

a treatment plan.<br />

Horses can also acquire a bacterial infection above the hoof<br />

if the legs are not washed regularly with an antibacterial<br />

shampoo or scrub after standing in water for any length of<br />

time. Daily hoof care is essential under the best conditions so<br />

the horse retains a healthy hoof. There are many products to<br />

help repel water from the hoof during wet or damp months.<br />

Our paddocks were too flooded for turn-out, but by some<br />

miracle our arena could be utilized by our boarders on the<br />

same day our grassy paddocks were under water. This was<br />

the day after the rain finally stopped. We were all working<br />

hard to make sure the horses got out even if it was just a<br />

walk through the barn during those heavy rainy days. It took<br />

several days for the grass to dry out enough for the horses to<br />

enjoy their time outdoors.<br />

It takes so much to keep horses healthy and happy, as<br />

they are not as hearty as you would think. Those who have<br />

not been around horses are always surprised at the many<br />

problems and ailments horses develop. Their large, strong<br />

bodies are very deceiving. They are truly a dichotomy, strong<br />

and at the same time quite fragile.<br />

The meteorologists accurately predicted a wet winter for<br />

South Florida. We seem to have been robbed of another<br />

beautiful winter season; however, my mantra has been (when<br />

I feel like complaining), “it’s better than 105 degrees.” Hoping<br />

No Substitute<br />

for a Professional’s Opinion<br />

My technician came into my office to tell me that my<br />

appointment was ready to see me and that I am going<br />

to make her upset. I asked why and she showed me<br />

the referring paperwork and told me to look at the bottom.<br />

It wasn’t medical notes, it was an invoice for a vaccine clinic<br />

and the bottom said to “check with your referring veterinarian<br />

for MCT.” Well, this is going to be interesting because Tuffy,<br />

an 8-year-old pit bull, has a red spot on his chest that the<br />

owner thinks is a hot spot, and for her sake I hope it is.<br />

When I entered the examination room Tuffy came up to<br />

me and rolled onto his side. The owner kneeled down and<br />

showed me the lesion on Tuffy. There was a 3-inch raised<br />

red lesion on Tuffy’s side just behind the elbow. I asked<br />

her how long it was there and she replied that it has been<br />

there a while. It seems to come and go and she treats it<br />

with topical antibiotics and hydrocortisone, and it helps but<br />

it never goes away. She has success with him wearing a<br />

T-shirt but what she read is that hot spots should not be a<br />

permanent skin condition. I agreed.<br />

Before I gave her my opinion I asked about her last<br />

appointment with her veterinarian. She says that Tuffy is a<br />

healthy guy and she uses a vaccine clinic for his vaccines.<br />

They do heartworm tests and fecal tests there also. She<br />

wanted to show me the history of all his vaccines. She said<br />

that she did need to see a veterinarian every three years for<br />

his rabies vaccine because the vaccine clinic didn’t have<br />

a veterinarian with them for his appointment. She told me<br />

that she didn’t have a doctor either. When she was sick she<br />

would go to the walk-in clinic to be seen.<br />

Groomers, vaccine clinics, and people you meet at the dog<br />

park might be able to give you helpful information about pet<br />

health, but there is no substitute for a professional opinion.<br />

Tuffy had successful surgery to remove the MCT and he was<br />

lucky. Looking healthy is a subjective assessment made by the<br />

owner about the patient, and if you own a dog that doesn’t<br />

complain, that doesn’t mean that he is necessarily healthy.<br />

Being healthy should be an objective assessment. A physical<br />

examination by a trained professional that performs diagnostic<br />

tests to prove health is a better treatment plan. P<br />

BROOKSIDE ANIMAL HOSPITAL<br />

So I pointed out to the owner that the paperwork had<br />

the notation that she should have Tuffy checked out by<br />

her regular veterinarian for MCT. The owner had noticed<br />

the notation and Googled it when she got home but<br />

didn’t find anything. I told her that MCT is short for Mast<br />

Cell Tumor and that is a common malignant skin tumor<br />

found in dogs. MCT release histamine that causes them<br />

to get larger and smaller and itchy. Because it is not a<br />

hot spot they don’t go away. I performed a fine needle<br />

aspirate where I put a needle into the skin and collected<br />

a sample of the cells. I looked under the microscope and<br />

diagnosed MCT. A frustrated owner is now thinking that<br />

this malignant tumor has been on Tuffy for the past six<br />

months and all the effort to treat the hot spot was for<br />

nothing because it was skin cancer.<br />

The Profit Power Pu$h<br />

6 Ways To Shake Up Your Money Tree<br />

At this very moment, midway<br />

through the first quarter of<br />

the year, hundreds of thousands<br />

of business owners across<br />

the country are doing research<br />

and buying books on how to grow<br />

their businesses. There are literally<br />

thousands of sources from which<br />

to choose – a quick Amazon search<br />

on “grow my business” reveals<br />

nearly 3,000 books available for<br />

purchase. (And I’ve read many on<br />

the first page, but I have no desire<br />

to try to get to all of them!) Before<br />

you spend a dime on a book that<br />

you may not find time to read, walk<br />

yourself through the paragraphs<br />

below, and do some quick, backof-the-envelope<br />

math. Because at<br />

the end of the day, there are ultimately<br />

only six ways to grow your<br />

profits, and it is a relatively simple<br />

matter for you to figure out which<br />

are the most productive ones.<br />

These six “levers” are highlighted<br />

in a great formula developed by<br />

business author Brian Tracy, called<br />

The Way to Wealth. (And yes,<br />

this is available in book form as<br />

well. But this CliffsNotes version<br />

should get you 80 to 90 percent<br />

of the way there. Feel free to buy<br />

Brian’s book, but don’t wait to get<br />

started implementing these ideas.)<br />

Many business owners, when<br />

contemplating a business plan<br />

for the new year, declare that they<br />

intend to pursue “More Customers,”<br />

which will help them to drive<br />

“More Revenues” and ultimately<br />

“More Profits.” What some of<br />

these leaders fail to recognize,<br />

though, is that these worthwhile<br />

pursuits are outcomes, not actions.<br />

In order to make these three<br />

goals more actionable, it is necessary<br />

to break them down further.<br />

HOW TO ATTRACT<br />

MORE CUSTOMERS<br />

This boils down to a relatively simple concept<br />

– now by saying it is simple, I’m not<br />

saying it is easy. It will require hard work<br />

to accomplish, but it is a straightforward<br />

enough exercise to break down this pursuit<br />

of customers into the first two components<br />

of The Way to Wealth:<br />

1) Number of Leads: How many new<br />

leads did your business capture over the<br />

course of the past year?<br />

2) Conversion Rate: What percent<br />

of these leads were you able to convert<br />

into actual, paying customers? Needless<br />

to say, in order to answer these questions,<br />

you need to be tracking both. Which is<br />

the bigger opportunity for you – increasing<br />

the number of leads next year, or focusing<br />

instead on improving your conversion of<br />

the leads that you have already identified?<br />

FocalPoint Business Coaching, the company<br />

founded by Tracy, has identified at<br />

least 72 strategies to generate more leads<br />

and at least 34 to improve conversion rate.<br />

But first you need to decide which of those<br />

areas is a better place to focus your limited<br />

resources of money and time.<br />

Putting It Into Action: To see how<br />

businesses might get more customers, let’s<br />

look at two theoretical plumbers. Each took<br />

a look at their numbers over the past year.<br />

Jim realizes that he probably hasn’t gotten<br />

enough leads in the door, but once he does,<br />

he has a very good batting average at “closing”<br />

that prospect. Bob, on the other hand,<br />

has found that his lead-generation strategy<br />

has been incredibly effective. But he and his<br />

team have done a poor job of persuading<br />

these prospects to sign on the dotted line.<br />

So even though they’re both facing the need<br />

to bring in “more customers,” Jim is focused<br />

on making his outbound marketing work<br />

harder … increasing his print advertising,<br />

expanding his network/referral strategy, or<br />

perhaps finally making his push into online<br />

marketing. Bob, of course, doesn’t really<br />

need to focus on those areas as much and<br />

instead is working to train his office staff to<br />

have more effective dialogue with prospective<br />

customers on the phone, and is working<br />

with a business coach or copywriter to<br />

tighten up his messaging and his script.<br />

HOW TO DRIVE<br />

MORE REVENUE<br />

Even when we look at the number of<br />

customers as fixed, this idea of generating<br />

additional revenue is a large opportunity that<br />

also breaks down into two relatively simple<br />

components:<br />

How much revenue does your average<br />

transaction generate?<br />

4) Number of Sales per Period:<br />

How many times, on average, does each<br />

customer transact with you over the<br />

course of the year? If the previous section<br />

focused on acquiring more customers, this<br />

part of the formula focuses on how those<br />

customers translate into revenue. In some<br />

cases, your biggest opportunity may not<br />

be the acquisition of new customers, but<br />

in fact thinking of ways to get the customers<br />

who already patronize your business<br />

to interact with your business and your<br />

brand even more. Is their shopping basket<br />

only half full when they leave your store?<br />

Are there additional purchases that you<br />

can persuade them to make while they’re<br />

already there? Or would it make sense to<br />

pursue a frequency strategy – can you attract<br />

them to come back more often than<br />

they did last year? Again, FocalPoint has<br />

identified at least 69 strategies to increase<br />

average dollars per sale, and at least 72 to<br />

increase frequency of transactions. Not all<br />

of these may be a fit for any given business,<br />

but if you focus on the right opportunity,<br />

there are clearly a number of actions<br />

that you can take.<br />

Putting It Into Action: Look at these<br />

two retail stores, Pearl’s Popcorn and Liam<br />

& Jake’s Hot Sauce Emporium. Pearl has a<br />

loyal base of avid popcorn purchasers, but<br />

the vast majority of them buy only one item<br />

each time they come in. By doing some<br />

informal market research with her customers<br />

as she greets them, she realizes that<br />

although each person is generally in the<br />

mood for a “sweet” or a “savory” variety of<br />

popcorn when they come in, most families<br />

like at least two of her flavors. So she has<br />

implemented a new bundling strategy,<br />

offering up the “Sweet and Savory Combo<br />

of the Week,” and now more of her shoppers<br />

are walking out the door with two or<br />

three packages instead of just one. Liam<br />

& Jake recognize that their rabid, heatseeking<br />

customers are already buying<br />

several bottles of hot sauce on each visit<br />

but often go several months in between.<br />

They now send coupons to their most<br />

valuable customers every two weeks, but<br />

the expiration date on each coupon is only<br />

a week or two out, meaning that customers<br />

have a sense of urgency to redeem<br />

the limited-time offer. They’re now on track<br />

to reducing their average time between<br />

visits from four months to only three, which<br />

could increase their revenue by 25 percent<br />

without adding a single new customer.<br />

HOW TO GET<br />

MORE PROFITS<br />

The last two of the six “levers” focus on<br />

keeping more of the profits generated by a<br />

constant level of sales.<br />

5) Cost of Goods Sold (COGS):<br />

How much are you paying in direct costs<br />

for each unit of product or service that<br />

you’re selling? Are there opportunities to<br />

become more efficient, change your labor<br />

model, negotiate better rates out of your<br />

suppliers, or shift your mix to areas that are<br />

more profitable?<br />

6) Operating Expense: Direct costs<br />

aside, look at the overhead expenses<br />

that you’re carrying. Are there opportunities<br />

to streamline and become more<br />

efficient here? Does your growth over the<br />

past couple of years give you leverage to<br />

renegotiate with vendors? Better yet, are<br />

there costs that you can eliminate entirely,<br />

because you’ve outgrown them? You<br />

guessed it – there are at least 81 strategies<br />

to reduce COGS, and 74 to reduce Operating<br />

Expenses. Most of them may not be<br />

a fit for your business, but again, you only<br />

need one or two to make a real impact.<br />

Putting It Into Action: This time,<br />

let’s look at two medical practices. Dr.<br />

Mike’s practice is bogged down by low<br />

insurance-company reimbursement rates<br />

on a number of common procedures.<br />

Since many of these procedures are very<br />

time-consuming, he has found it difficult to<br />

reduce the direct costs for each of these<br />

types of office visit and therefore, his gross<br />

profits remain frustratingly low. But he has<br />

decided to actively shift the mix of his work<br />

– by actively changing his referral generation<br />

strategy, he has focused on finding<br />

referrers who are sending the higher-margin<br />

procedures his way. By generating roughly<br />

the same revenue but shifting the mix to<br />

higher-reimbursement items, Dr. Mike has<br />

begun to make his practice more profitable.<br />

Dr. Eddie, meanwhile, has similar reimbursement<br />

rates across his practice but<br />

has identified a number of indirect costs<br />

that he can impact. His office manager was<br />

able to negotiate some great new pricing<br />

on office supplies, telephone services,<br />

and even commercial insurance. So even<br />

though he is serving the same number of<br />

patients, what he takes home at the end of<br />

the month is pleasantly increasing.<br />

BRINGING IT<br />

ALL TOGETHER<br />

By now, your mind may be racing with<br />

ideas to start breaking down your customer,<br />

revenue and profitability growth opportunities.<br />

But hold your horses – this is only a<br />

model, and we haven’t done anything yet.<br />

Remember, the most important thing to<br />

get this all started is actually tracking and<br />

measuring the activities that drive your business.<br />

This shouldn’t just be theoretical, and<br />

it definitely should not be guesswork – your<br />

ability to focus on the biggest opportunities<br />

for your business is directly related to<br />

your understanding of the activities driving<br />

your performance. When we just guess at<br />

this type of thing, we often get it wrong. By<br />

actively monitoring your business’ performance,<br />

comparing these metrics to appropriate<br />

benchmarks, and then developing<br />

focused, simple action plans to go after the<br />

highest priorities, you put yourself in position<br />

to achieve breakthrough results. Good luck,<br />

Beware the Escrow Shortage<br />

Lenders will want more money to<br />

match hikes in taxes, insurance<br />

TWO WAYS TO<br />

TACKLE A SHORTAGE:<br />

OPTION 1<br />

Pay the Shortage in Full<br />

If you choose this option, you will send<br />

the lender a check for the shortage<br />

amount. However, your monthly payment<br />

will still have to be corrected to avoid<br />

future shortages. Therefore, you can<br />

expect your monthly payment to increase<br />

by the shortage amount plus a “buffer”<br />

determined by the escrow analysis.<br />

Ex. Shortage is $5,200 + buffer of<br />

$800 = $6,000<br />

It’s property tax season! For<br />

many who purchased their<br />

home last year (including<br />

myself), you may find a significant<br />

increase in the amount of property<br />

tax you owe in 2016.<br />

If you do not have an escrow account<br />

included in your mortgage loan,<br />

this has no effect on your monthly<br />

mortgage payment. You simply owe<br />

the increased tax amount.<br />

However, for the majority of<br />

homeowners who escrow and<br />

included their taxes and/or insurance<br />

in their monthly payment, you<br />

will most likely have an “escrow<br />

shortage.” Your lender will pay the<br />

property taxes due in November, but<br />

it will be paying them despite the fact<br />

that you do not have enough money<br />

in your escrow account.<br />

Once a year, usually around April,<br />

your lender performs an “escrow<br />

analysis.” This analysis looks at the<br />

amount of money the lender paid<br />

for the items you escrow (taxes,<br />

insurance, etc.) and determines if<br />

there is a surplus or shortage. In your<br />

case, there will be a shortage. You<br />

will receive a letter from your lender<br />

advising you of the shortage. The<br />

letter will also give you options for<br />

remedying the shortage.<br />

Whether you escrow<br />

or not … whether you<br />

expected the increase<br />

or not … a larger tax<br />

bill or an increase in<br />

your monthly mortgage<br />

payment is always a<br />

burden. There are options.<br />

Interest rates remain low. You may<br />

be able to refinance your current<br />

loan and pay the property tax<br />

shortage with no money out of your<br />

pocket. You may also qualify for a<br />

lower interest rate than you have<br />

now, minimizing the increase in your<br />

monthly payment.<br />

This is called the “corrected payment.”<br />

OPTION 2<br />

Spread the Shortage Over<br />

the Next 12 Payments<br />

If you choose this option, you will see the<br />

same monthly mortgage payment increase<br />

as calculated by Option 1 above; however,<br />

because you chose to spread the shortage<br />

out over the next 12 payments, you<br />

will also see an additional increase to your<br />

monthly mortgage payment of 1/12 of the<br />

shortage due.<br />

Ex. Shortage is $5,200/ 12 =<br />

$433.33<br />

$433 + $500 (payment correction) =<br />

$933.33.<br />

This will be the additional amount added to<br />

your monthly payment for the next 12 payments.<br />

After 12 payments, you will have<br />

paid the initial shortage and your payments<br />

will reduce down to the “corrected payment”<br />

calculated in Option 1 above. P<br />

If you read a magazine from the front to the back, I hope you<br />

enjoyed the February issue of the Parklander as much as<br />

we liked putting it together.<br />

If you start from the back and work your way to the front, let<br />

me introduce myself. I’m Steve Plunkett, the magazine’s new<br />

editor, and I’m very happy to be here. As far as my credentials<br />

go, I’ve been an editor at the Sun Sentinel, the Palm Beach<br />

Post, and the Baltimore Sun. I also was an assistant managing<br />

editor at Insight magazine in Washington, D.C. Most<br />

recently I worked at the Tampa Tribune. And I still write for the<br />

Coastal Star, a monthly newspaper in Palm Beach County.<br />

Our publishers, Sharon and Jack Kornreich, have been<br />

guiding the Parklander for more than a decade with an aim<br />

of keeping it family friendly and focused on Parkland and its<br />

neighboring areas. Keeping things “local, local, local” is a<br />

mantra I also embrace.<br />
