26 | January 19, 2017 | The Mokena Messenger Dinning out mokenamessenger.com The Dish Family tradition continues at Tinley bakery Zettlmeier’s Bakerei owner pours it all into maintaining family name Max Lapthorne Contributing Editor Walking into Zettlmeier’s Bakerei in Tinley Park and seeing the dozens of rows of baked goods on display, one would assume it took a small army of bakers to create all the items, but one would be wrong. Owner Paul Zettlmeier is responsible for baking every single item sold at the bakery, from coffee cakes to doughnuts. He spends roughly 12 hours per day at the bakery, preparing all the items, including 50-60 coffee cakes, dozens of doughnuts and whatever specialty cake orders arrived. Paul’s sister, Dawn, works up front at the bakery, taking orders and handling the financial side of the operation. Zettlmeier’s Bakerei, 17016 S. Oak Park Avenue, opened in 1996 as a family venture, and Paul Zettlmeier bought out his parents, Hans and Ruth, in 2008. Paul sold the bakery in 2014 for family reasons, but when the owner contacted him this past September, saying he was going to have to close shop, Paul did not hesitate to buy his bakery back. “When this presented itself, I pretty much dropped everything I was doing,” he said. The family’s history of producing baked goods in Tinley Park goes all the way back to the 1970s. The Zettlmeiers opened the Tinley Park Bakery just down the road from the current location back in 1978, which is where Paul learned most of what he knows about baking. My dad taught me everything I know.” Many of the scratch recipes Paul uses today at Zettlmeier’s Bakerei actually originated in Germany, where his father, Hans, honed his craft in the 1940s and 1950s. Hans then moved to the United States in the 1960s and bounced around from bakery to bakery, learning the best items from each place, until he built up enough recipes to open his own bakery. The long family history in the area has led to a strong, loyal customer base for Zettlmeier’s Bakerei. Some of the customers have been enjoying the family’s baking their entire lives. “We’re actually on our fourth generation of people now,” Paul said. “People have come in here saying, ‘My mom brought me here when you guys opened,’ and then those people would say, ‘My parents brought me to Zettlmeier’s Bakerei 17016 S. The doughnuts are so widely sought that people have gone far out of their way to get them. “We’ve had people that have literally taken the train from downtown, come here to get my donuts and taken it back downtown,” Paul said. “That’s how well known we are for our doughnuts.” While maybe not as famous, the atomic cake is special in its own way. It is made up of two layers of yellow cake, two layers of chocolate cake, strawberries, bananas, custard and fudge, providing a wealth of sweet flavors, all in one dessert. The combination of being his own boss and maintaining a generations-long relationship with customers is what Paul enjoys most about owning the bakery, and he looks forward to making sure the Zettlmeiers name remains synonymous with quality desserts. “It’s second to none,” he said.
