hired here...that is since the prestentation is simple,
elegant and sophisticated. Acutally it is learning
from me who I have learned from seeing one time
the great chefs of the world. It is simple." says the

The name of the restaurant comes from the
tradition of when the people walk before the horse
races of the Palio. The drum players and the flag
wavers walk and the award is presented to the
best. That is the Masgalano. That is the name of the
restaurant...to represent greatness. You know.
People do assume that it is a provincial restaurant,
yet it is sophisticated with the best wines that go
from 250.00euros to 2,000.00 euros...and the
most beautiful presentation of regional food. And
although we have a piano and classical
music about 3 days per month, most of the
time people come in and have a good glass
of wine, great conversation and great food. I

Giuseppe invites me to try a pear and honey antipasta
and the wild boar of the restaurant and we sit
and eat and talk about life. "America is nice," he
says, "my fiance is from America and I've been to
Oregon, New York, South Carolina and Chicago. She
is a professor of South Carolina." Giuseppe says. I
ask if she loves Siena? "Yes she does. We're getting
married in the cathedral across from the piazza." he
says. I laugh and ask if he and his fiance have ever
been wild boar hunting on horseback and if they
would like to do that? He laughs, "Not me and
not my girlfriend. I would rather just eat it.
You know one time a group of people came
in and asked if the wild boar is shot by the
owner or if it is bought. They came from
Milano. When the owner said that he shot
the wild boar himself...they left! The
italians don't like to think about the wild
boar being shot...they just like to eat it!" he
says.
