Have you ever seen such a view in life? Here
is the Breakfast view at the famous and
oldest cafe/restaurant in Siena, the medieval
ancient city of south Tuscany, Italy. At
Fonte Gaia, where I sat at 22:00pm on a
Sunday night with the young 30s Director,
Emanuele, I learned about the young man
and life at Fonte Gaia. o arrivando...
http://www.mangiareasiena.it/approfondisci/
"WE have a great selection of wines of 300
and it gives me a good satisfaction to either
give the 25euro bottle to the young couple or
the expensive bottle to the big table.! People
can come and share a big plate and a great
bottle of wine and enjoy dinner for only
50euros." says Emanuel. "We have Pici
Pasta Florentine Steak is here the cheeks of
the pig and we have Pecorino Cheese which
is famous for the Siena. Each region of Italy
is different." he says.
"Oyes the Wild Boar. The Americans LOVE the Wild Boar. Everyone that comes here
they ask for it. It is a wonder that anymore exist here." jokes the Hilarious Emanuel.
"sometimes they can be found wondering near little creeks in small towns. If you see
one just stay very still because they come after movement." STAY STILL! If I see a
wild boar I am running, I say. Do they run fast? I ask. "No no the wild boar is pig
family and they waddle. They won't catch you." O, okay..."We catch them!" he says. And is the
restaurant famous for anything else? "Yes we have great pasta typical of the Siena region and
wonderful wines from Siena and Italy. Here try a Frescobaldi." he says. And of course since that is
my favorite wine...the conversation continued. Above the video of the beautiful restaurant in Siena.
"It is the longest existing cafe on the famous square in Siena. In 2012 it became the restaurant that it
is now. It has elegance in the restaurant only to show the difference between the wait staff and the
guests. We wear formal dress to show that the guest is the guest and we are here to give to the guest.
And the service is formal and friendly. Mostly friendly." he says.
Emanuele(my name too!) owns Pretto in Siena..."my Grandfather owned a farm near Siena and
worked the farm his entire life. When he was 70 years old he retired and was blind. He decided to go to
college at 70 years old and at the age of 73 he graduated with literature and philosophy. He wrote a book of
poems on philosophy that is 1001 pages long poem and my grandmother wrote it for him. She kept telling
him...stop stop since her hand hurt and he kept wanting to write the poems. Here is his book." Emanuele
shows me the book of poems and on the back is 25,000 lire price. "That is how original the manuscripts are
here. Now that translates to about 12.50Es" He says.
"We have a farm near Chianti where we live and the farmer has 500 sheep. We(my sister, Tamara, and me)
went to the farm where we buy the Pecorino sheep cheese. We wanted to learn the feeling of working on the
farm and we lived their lives for one and 1/2 weeks. We milked the sheep at 4am. They milk 500 sheep
every morning at 4am and in the afternoon. That is pretty cool. We of course went real slow but they use
machines and go real fast. The butcher that we use the meat from is my personal butcher. We have many
different typical regional foods here that different cultures either try or don't. The Americans some of these
try the tripe for instance yet all of the Chinese do. They love exotic food." Emanuele says.
Visiting the farms where all of the great
products come from! And his grandfather's
farm? "It was near Florence. Now you must
enjoy his inspirational life with his book, Fiore di
Rova, here at the restaurant!"
"The coolest thing is the pork here from
Barga. And the Scottish painter that
does the entire series of the food from
Barga is here at the long table. He says
that it is life in Barga and it is the culture of that
beautiful city seen with the meat of the animals
of the real culture of the raw food. It is amazing
and I have his Scottish paintings here on that
side and opposite is the wine from all of my
friends vineyards. All my friends have a special
place here at the Gourmet Restaurant." he says.
I say that the Scottish paintings is just another
example of how he tries to incorporate the love
he has for his Grandfather and the respect of
the inspirational life that he lived. The poetry is
art and the paintings is another media of that.
"One of the pig's salami that we have are Finacciona
which has wild fennel seed in it and the other is the
wild pigs. The wild pigs eat from the brush of the
forests. They have a white band around the shoulders
and the taste is gamey. We have 25 American students
who come here in a class named Pork, Poetry and
Passion. They do about 2 weeks and they do one day
come back here and eat it. At least a couple of these do.
Some of the American students won't eat the food after
they see the animals!"
"Yes," Emanuele says, "Even the hangings of the sausages and the cheeses and everything
represents the culture and stories of the land of Italy...the farmers of Italy."
definitely a bar that the Italian students come
to, and we're trying to attract the attention of

the international students too." says Edoardo
who is young and as you can see from the crazy
pictures...a lot of laughter.
"Downstairs is the cave room...most nights we have about 300 people inside and outside having
fun and dancing and hearing the great music. Downstairs since the original caved walls are about 2,000 years old
the acoustics are great when the bands played there, but now they play upstairs in the window and when you're
outside you can see and enjoy the music too." he says.
snails and trippe and "we try to use the last of the animals to carry on the century old
traditons of the culture...such as the trippe and the spleen and the intestines. I know
Americans go Ooo I dont want to try this. But they do try a little bit and they say at least I
Above you can try many delicacies such as the snail and the intestines and the cheeks of pigs and the trippe
and the spleen and the livers...The only thing that I love to eat is the liver I say. "I eat Trippe. Most of the
tourists say that isn't for them. We try it though. Everyday we try to use the last of the animals to keep the
tradition of the Siena people. We eat horses too. Most of the important restaurants in Siena use the horse
meat. Americans think that is unusual too." Bobbi says. I say that I don't eat pets.
"The Americans are a little squeamish about
trying the new things. Although we have for
instance Chinese male students at the
university and they say we're too normal...they
like trying unusual things! I guess it is a cultural
thing. We want to keep the tradition that
makes Siena different from the rest of
the world. And along with the oldest and
do have horsemeat on the menu of most
If you would love to come and try the honey
wine shots and 1.00euro wine shots for the
students and to keep the traditonal cheap
wines. That is important too. People can
purchase great wine here and everywhere in
the world. But what is unique is the cheap wines
that the little Italian villages always have. We
have it too. Come do a shot glass of great house
wine and sample the little delicacies and talk to
friends, students and locals." Bobbi invites.
You know after about 5 years and 5,000 interviews how important is knowing what wine is available at
each restaurant around the world? It is as important as a child chosing a costume for their
important that is why http://www.ristorantepizzeriailmasgalano.com/contatti/
"Here try the pears and honey and pecorino cheese
a bottle of Brunello of all wines...the one I had( I
doing that. I turn a plain decoration into a beautiful
one. That is what I love doing best. And it applys to
all of my team. My chef is my sister and my good
friend. They come here and they learn from me.
We have a sophisticated menu with typical regional
Siena cuisine yet it is beautifully presented. People
come from all around the world and ask if the chefs
worked at MIchelin star restaurants before being
hired here...that is since the prestentation is simple,
elegant and sophisticated. Acutally it is learning
from me who I have learned from seeing one time
the great chefs of the world. It is simple." says the
humble owner, Giuseppe.
owner, I had one bottle of Maestro-
The name of the restaurant comes from the
tradition of when the people walk before the horse
races of the Palio. The drum players and the flag
wavers walk and the award is presented to the
best. That is the Masgalano. That is the name of the
restaurant...to represent greatness. You know.
People do assume that it is a provincial restaurant,
yet it is sophisticated with the best wines that go
from 250.00euros to 2,000.00 euros...and the
most beautiful presentation of regional food. And
although we have a piano and classical
music about 3 days per month, most of the
time people come in and have a good glass
of wine, great conversation and great food. I
Giuseppe invites me to try a pear and honey antipasta
and the wild boar of the restaurant and we sit
and eat and talk about life. "America is nice," he
says, "my fiance is from America and I've been to
Oregon, New York, South Carolina and Chicago. She
is a professor of South Carolina." Giuseppe says. I
ask if she loves Siena? "Yes she does. We're getting
married in the cathedral across from the piazza." he
says. I laugh and ask if he and his fiance have ever
been wild boar hunting on horseback and if they
would like to do that? He laughs, "Not me and
not my girlfriend. I would rather just eat it.
You know one time a group of people came
in and asked if the wild boar is shot by the
owner or if it is bought. They came from
Milano. When the owner said that he shot
the wild boar himself...they left! The
italians don't like to think about the wild
boar being shot...they just like to eat it!" he
says.
The wonderful thing that is mine is the
wine showcases, which I designed myself,

have made friends from around the world
and they "What's UP" me all the time. You
should "What's UP" instead of facebook.
And why?" he asks. "Since it is more
personal, more private and you can
communicate with the people you reall
want to communicate with." he says.
the artwork, which is all friends of mine, and the
lightness of the restaurant. We have wine tastings
which range from 10.00euros for 5 glasses of wine
of the best that we have to 3 glasses of 8 euros. You
can choose. The wine is one of my favorite subjects.
There is so many to choose from and real fun trying
the differences." says Giuseppe.
The Masgalano competitors below....
Set on top of the hill with a great view of the
city...the restaurant looks unassuming and the type
of pizzeria and cafe that is dotted in the provincial
towns of Italy...yet looks can be deceiving! It is
light, bright, sophisticated and the food reflects
that...lovely elegance and great wine lists! ciao
The Fonte Giusta is a special place. THERE IS A COOKING SCHOOL. That is the number one cool
and different thing. "We right now have 20 students from Arizona studying with us. They're here one month and
they learn how to cook all the Tuscany recipes and styles. The building is near here with huge arched ceilings from
the 1400's along with the style of the restaurant," says the owner named Guiseppe except maybe since the waiter
seems to be the translator of the moment. We spent 3 hrs. last night at the restaurant from 19:30pm to 22:30 pm
touring the huge 5 room restaurant and gardens and sampling the food. 057 7405 06 and must take the
cooking classes. Right now he gives one day cooking school at 45Euros to learn and it includes
dinner and wine at the restaurant that night! Via Camollia, 103 S iena
The thing that he is most proud of is his cooking
school. The pictures are simply amazing and he is
"having the most fun everyday with his 20
American students teaching them how to make
Italian dinners." In the pictures they all have
white chef hats on! They're young American
students of say 20 to 25. Funny! The one month long
school is 700euros for 4 students and the one day cooking
school that you can join in one day is 45.euros. "That
includes eating that at the restaurant." Wow. It is amazing
seriously. A must for tourists please call Giuseppe today
As we walk into the modern kitchen and Giuseppe tells me
about the cooking school here comes the accountant.
"Hi I am the accountant. Of all the accountants in
the world the only boss that is the opposite of the
accountant is Giuseppe!" says the accountant.
"Every other 10 restaurants in Siena that I do tell
me to lower the costs to budget but not Giuseppe.
He says O I must have the best meats, the best
vegatables, the best wooden chairs, the best
plates, the best decorations...and I am pulling my
hair out...all of it. I try to keep the costs down yet it is
impossible with Giuseppe since he keeps spending
spending spending. And I can say that of all the
restaurants in Siena you know that you are eating the best
food possible. That I can tell you. It is my Goal to be the
accontant of as many restaurants as possible so that I can
eat the food. I have finally achieved my goal." says the
crazy accountant Fabio who invites me to eat with him and
his friend Marcos. I instead am invited with the family to
try some raviolis and pici and wild boar...yes my favorite
ever since well since it is my favorite. "I come here every
week to do the accounting and sometimes I eat desserts
with oranges and sometimes I eat wild boar or steak
florentine and sometimes I eat new dishes that he closes
and reserve your fun day of cooking in Siena.
the restaurant and sample it all. That is why I love my
job," says the accoutant. The entire time Giuseppe is
smiling and laughing. He loves life and his family as he
introduces me to each one of his bambinos in the kitchen
although his "bambina"is missing since she works the next
day.
The wild streets of Siena to the left is where you can find
the amazing Fonte Giusta. The outside looks deceiving.
Inside is a 1400 year old stables of horses and carriages
with arched brick ceilings and cool tile original floors. It is
beautiful and has a huge ivy square enclosed garden in the
back! "O and we don't eat horses..." says Giuseppe,
the horse in Siena is religious. The people bring the
horses into the churches to bless them!
Walking into the restaurant you find Giuseppe's wife talking to her father an artist! "He only does art here
the last 10 years yet he has been a artist the last 50 years. Every month he makes a new drawing and
that is the table placement. All the artwork on the walls is his. Every day tourists come from all around
the world and say that they want to buy a drawing on the wall. I say no no the drawing on the wall isn't
for sale!" She says. Along with the help of my interpreter, the waiter. The troll like drawings and the beauty of the
playfulness adorning the archways and every free space on the walls is all of his! Pretty amazing. He sits at his table near
the kitchen(every Italian authentic restaurant in Italy has a "family" table where I am invited for dessert...a real special
treat love it)...
It is hidden on top of a hill with elegance surrounding it. First I had to find the Campo Piazza then trek on up
to the Square Independance and ask people from here where the Via Galluzza is and finally find it! When
you do it is worth it. "We try to give the best atmosphere and the highest quality pizza. Just because it is
we're only here to have a wonderful experience. When the tourists come we have so much fun
together. The team is all young. I am only 32." says the owner who personifies elegance and
youth while somehow remaining gorgeous at the same time!"
"Since I've been the owner since 2011 I have made many personal friends here. Siena is a tiny city and you
is a dream that I never dreamnt of. I
thought that I would come to Siena to
And that I would meet fun people and
learn Italian. The city is quiet except for
the Palio which is the day that I first
city. Yet most of the year it is cool and quiet
and just the students. That is why Ioved the
naturalness of the city. Now it has been almost
when she talks about the restaurant.
young energetic owner of the beautiful
elegant place. It is the most beautiful
high-class Pizzeria I've ever seen, I tell
her. "Yes it is. Most people when they enter
they see the 1400 year old bricks and the
gorgeous wine cellar and they think that maybe
they can't afford it. Yet the specialty pizzas start
from 6euros to 12euros. That is affordable for
everybody." she says. And which one is
Simona's favorite? "O I have at least 2 or
3 maybe that are my favorites!" Simona
says yet she is totally fit and skinny...as
is the young staff dressed to the tees yet
wearing bip bop sneakers while they
zoom in and out with Robert Cavalli
Below the young owner is making his specialty
pizzas. See the restaurant to the left? It holds
it. It is located at the Piazza Mercato. He has
had it the last 7 years. Mostly yes it has famous
pesce dishes as it is a restaurant yet they are
quite crazy and the main thing is fun.
Especially Karaoke...
"We have fun here take for instance the photos of all the team and staff and friends on the Holiday of Italy
January 6th when everybody dresses up not quite like your Halloween." says Giuseppe with the help of his
French interpreter, the waiter. Waiters are great around the world when I am in a foreign country mostly
because they always speak a couple of languages! "Calabria, where I grew up is simply beautiful. It is in my
heart yet the people and culture of Siena took me in 20years ago. I am now in the Onda Contrada which on
the wall is the dolphin crest." he says as he shows me the plaques on the walls. I love dolphins of course and
giraffes and all of the animals...I feel like little Ray Ray wanting to go to the zoo all the time when I come to
Siena. https://www.facebook.com/Ristorante-Pizzeria.../timeline
"After the work we have fun too," says Giuseppe, "The restaurant is open and the kitchen til midnight if you
want. Let's say that at 11:00pm the restaurant is empty we close yet if you call and make reservations for
11:30pm tonight the kitchen stays open til midnight. That is alright or if you come in at 11:00pm and more
people come in let's say. That is alright. We're here to eat and have fun regardless of what time it is that is
why at breakfast? The Italians are sleeping!"
The top 10 Karaoke Songs around the world...yet I guess at the Siena Restaurant they sing
Italian songs and Italian style... in the summer outside Giuseppe said that he has "Karaoke
almost every night." Check out his facebook videos to see if you rate up!
I interviewed my first interview of Sienna 3 years now, Elena, who along with her husband, and the 3 cousines used to
own a restaurant on the famous Piazza Square in Sienna. Now 15 months later and 15 months of "pure fun, relaxation that
we own our own soley, and yes I love it" of owning their own place on the Piazza, Elena sat down to chat with me about life
after the cousines. At the most famous Square of Horse Racing in the world...tradition that dates back 700 years... the
Piazza il Campo 54. Siena Italy. 057 728 40 71 Maganelli Bar and Restaurant.
"You know the first New Year's Eve here is
2014/2015. I worked from 5pm to 5am in the
morning behind the bar washing glasses and
bartending and I stayed behind that bar 12 hrs. It
was hard work, yes yet I loved it. Every minute of
it. We had had the bar for 2 months. Our own. And
I thought you know yes I am tired yet it is mine. My own.
I loved it." says the beautiful woman from Ethiopia named
Elena. She has become my friend since we first met 3
years now. I love her gentleness and her honesty.
And they have great solo desserts...Mat M would love
these Strawberry Shortcakes!
Sienna is fun and mysterious and wild at night. A certain
danger to the city. After all it is a city steeped in the
tradition of the Contrada. Centuries old traditions of
loyalty and rivalry and in the middle ages perhaps not so
friendly rivalry. "My husband is originally from Verona
along with his cousines from Florence. We have been in
Sienna a long time. I am the contrada of the Ram. My
amichis(which I interviewed while tasting the pici) are of
the Unicorn. Everybody is a friendly contrada now. But of
course it didn't use to be the case." she says. Trust me I
spent many normal days wandering the darkened alleys
during the day. Yet if you are looking for paranormal
activity come at night. Wander the streets of the city of
Siena at night and feel the ghosts of the past. Come to the
Paolio on August and meet the jockeys. Have a great time
discovering the real Italy that you only read about in
history books or movies. https://www.facebook.com/Bar-
While you wander the streets walk into a bar in
the alley, a restaurant in the alley and meet the
real people of the world. Have a 1/2
Italian/English conversation with the locals and
find the world!
Here is my view from eating Pici and drinking a aperitivo. By the way at the restaurant it is famous for the 3.50Euros
glasses of great wine and all you can eat buffet of Aperitivos. While eating lunch with Elena(her husband Nicoli cooking in
the kitchen) 2 groups of American students came to eat lunch. One from Washington DC and one from North Carolina.
Great kids and all excited that tonight they could come to eat Aperitivos here! From 6;30pm to 9:15pm. Yum. "My son
came back from Savannah Georgia of 6 months of studying highschool. I am proud of him since he had the courage to
come and he tried 3 plane rides. All himself. How wonderful of him! He is shy. Yet he came and smiled and had the best
time. Now he wants to study in America his college years." she says. "When we came to the restaurant here my husband
didn't sleep the one month before since there were 4 of us and everybody had different opinions. Yet the first night we
came here my husband slept as if a baby. He was how do you say? Snoring! That to me made the decision that it is the
right one. Now all that we do is for myself. When we want to add something to the menu we do. When we do something it
is our decision nobody else's . That is important to me." Elena says happily.
Every year at Siena is the Palio where the Contrada race their teams horses around maybe "the most
famous square in the world." says the daughter of a famous family tradition...her mother's cousine is a
Bastione, the name of the famous jockeys that won the race 6 times. She is a trainer of horses and her boyfriend is a
trainer of horses. Her father runs in the race on foot alongside the horses when his Contrada wins! Twice in 10 years...you
can see the huge famous dangerous pictures in his restaurant, Antica Trattoria L'Aquila at Casato di Sotto, 58, Siena,
The famous Palio, "The tradition is from 1,000's of years before Christ, it is a tradition of the Contrada and they race
around the ring with the colors of each of the member's club. They have the Giraffe which is my team, the Dragon, the
Ram, the Onda, the Owl, all of the teams race. Mine won two times in the last 10 years, " says the proud owner of Antica
"Two times my team wins and I run out
fence at the end of the race and run with the
winners. It is a tradition that the fam ous di Medici's from 1 568
started the races here at Siena.
"Ever since a child my mother cooked famous Siena
food for us at home. My mother taught me and my
boyfriend loves my mother since she taught me
how to cook rabbit, and pica-homemade, and
of course the wild boar. The wild boar is really wild
in Tuscany...in the forests...it is not on a boring farm. It
is on a real wild forest that the hunters go and hunt
and we bring to the table,"Sara says.
The caverns inside the famous restaurant that the family has had the last 12 years. Before that§? "My father owns http://www.spadaforte.it/the last
Brass and wine. Elegance and Sophistication.
"Wine and Kitchen," says Claudio..."that is the
image here. The walls are all white. The tables
redone and resanded...to seem old yet kept. The
elegance of the Italian kitchen...no we don't serve
ragu, no we don't serve pizza. We serve handmade
Italian food and wine. That is it. People can come
here and drink a glass of wine first before they
decide their evening out. Or come and have wine
and a little side dish of pasta. Or maybe come
that it reminds me of a New York Village wine bar.
"Yes that is the idea. Elegance with great food.
And a wonderful selection of wine that me and
Claudio have chosen from years of experience of
drinking it!" she says.
enjoy talking to the tourists. The Americans
always ask questions and the French won't
speak English they just point to what they want
and take it and leave." he says laughing. When I
ask how long the tradition of the Palio and the
Contrada is they both say about 700years.
"However many years ago they didn't
race horses. They had the members that
were brave in the middle of the square
and they had bulls and they would try to
prove their strength inside the ring.
Personally I think they just tried not to
be killed by the bulls."
"I am from the Contrada of the Sea
Shells" says Ilaria. When I ask if you can
choose which contrada you are in she
laughs."Um the contrada chooses. You don't
choose. It depends on the family that you're
born into and the region that you live at."
While I am interviewing the two young people
at the restaurant of course people come in for
lunch and the guests and me talk about whether
to buy the spinach and vegatables that
Francesco makes fresh everyday or the
fattening potatoes! "I like the potatoes." says
the guest and off he goes.
you can tell. Every cucina has a different way of
serving the wild boar. Ours is the best." he says
and when the next day I came at lunch to eat it
I said alright it is the best. I asked if they
hunted the wild boar themselves.?! "No no no, "
said Aoojano, "The wild boar is in the forests
and the hunter's hunt it. It is kept in a protected
forest. They're dangerous. And do I personally
go out each day and shoot wild boar?" he laughs,
