Hello <strong>Belt</strong> <strong>and</strong> <strong>Beyond</strong> Readers.....<br />

Hard to believe it’s already <strong>April</strong> <strong>and</strong> Easter seemed to<br />

have hopped upon us. Easter, that lovely spring holiday,<br />

celebrated with special desserts, that everyone enjoys a<br />

sweet bite of carrot cake or lemon meringue pie. Lemon<br />

curd <strong>and</strong> meringue can be very tricky <strong>and</strong> can easily<br />

go wrong so I have the perfect solution! I have a little twist<br />

to share with you. That fresh lemon dessert with a touch<br />

of spice added to it. Lemon Cream Gingersnap Pie! This pie is so simple from<br />

the ingredients to the preparation! <strong>The</strong> pie crust is made of graham crackers<br />

with some added spice, simple yet tasty! <strong>The</strong> filling is even easier, sweetened<br />

condensed milk, lemons, <strong>and</strong> eggs. Much easier than attempting the task of<br />

making curd, trust me. Once the pie is baked I always whip up some fresh<br />

whipped cream to combine all the flavors just right. So give this recipe a try for<br />

your Easter get together. Lemon Cream Gingersnap Pie<br />

Gingersnap Crust: 9 inch pie pan<br />

1 pack of graham crackers 1/4 cup brown sugar<br />

2 tsp ground cinnamon 2 tsp ground ginger<br />

1/4 tsp ground cloves 1/8 tsp ground black pepper<br />

5 tbsp melted butter<br />

Combine these ingredients as listed in a food processor <strong>and</strong> press into the pie pan<br />

<strong>and</strong> toss in the refrigerator!<br />

Lemon filling:<br />

3 egg yolks 1 can sweetened condensed milk<br />

1/2 cup fresh lemon juice 1 lemon zested<br />

1 tsp grated fresh ginger or 1/2 tsp ground ginger<br />

1 tsp vanilla extract<br />

Whip egg yolks until light <strong>and</strong> fluffy, about 2 mins then slowly add the sweetened<br />

condensed milk until well combined. Add the remaining ingredients until<br />

incorporated. Pour lemon filling in refrigerated pie crust <strong>and</strong> bake at 325 degrees<br />

for 12 mins. Let chill overnight. Finish with whipped cream before serving.<br />

Whipped Cream:<br />

1/2 cup heavy whipping cream 1 tbsp powdered sugar<br />

1/2 tsp vanilla extract Whip with whisk attachment until light & fluffy.<br />
