lockportlegend.com NEWS the Lockport Legend | November 22, 2017 | 7 Aspiring private chef earns Kendall College scholarship LTHS graduate has passion for putting his spin on dishes Thomas Czaja, Contributing Editor From an early age, Tim Behland has found himself enthusiastically cooking and learning in the kitchen. When he was really young, he began to help his parents, seeing how different meals were made. The lifelong Homer Glen resident grew from there, getting involved with E-FACS at Lockport Township High School, a club with a focus on family consumer science areas, including foods. During his time as a Porter, he competed nationally for the school as part of Team Illinois, finishing second his junior year and seventh his senior year as part of three-person teams representing the state in culinary competitions in 2016 in San Diego and 2017 in Nashville. The Class of 2017 graduate of LTHS was the No. 1-ranked culinary student in Illinois both of those junior and senior years. For the competitions, Behland said Kendall College in Chicago sponsored the team, making his college choice an easy one. “We got to work at [Kendall’s] kitchens with their chefs and really improved our skills and practiced before competing,” Behland said. “I really decided Kendall was where I’d really like to go. I knew it was definitely the right place.” The decision to attend Kendall College has paid off, as Behland, 18, was awarded the Dean’s Scholarship from the school. As a result, he gets a substantial amount cut from his tuition with the understanding he LTHS graduate Tim Behland recently earned the Dean’s Scholarship from Kendall College in Chicago, where he is pursuing a culinary career as a private chef. Photo submitted will attend the college all four years without a break in between. Behland added many students opt to take a summer or winter quarter off, but to keep his scholarship, he won’t. “It’ll help me stay focused and learn a lot,” he said. “I know kind of from high school you learn stuff one year then take summer vacation and forget stuff. This will help keep that knowledge and remember everything.” The way Kendall is structured, students begin with basic classes ranging from learning what cooking is to basic skills needed. Due to his experience, Behland was able to test out of those. The classes he is taking build off of each other; while he may not have all the general education courses of other colleges or universities, a subject like math and its varying levels may be substituted for accounting for food costs, tying more into the culinary field. As he progresses through the program, he may get the chance to participate in the dining room, where students cook meals and work in there or the cafeteria, creating and serving fare. Behland looks forward to all the things to come, but the youthful cook said he does not have a signature dish at this point, though he enjoys making fish — and not so much baking. “I like cooking fish; it’s something basic,” Behland said. “I like trying cooking fish, cooking lots of meats. I don’t like baking, dessert making in general. I’m not the best at it, but you have to be really precise. “What I like most about cooking rather than baking and pastry is not to follow the recipe but throw all these things in there ... it is a little bit easier trying to express myself.” In regard to what his future may hold down the line, Behland currently envisions himself as a private chef working individually with people rather than in a restaurant. For him, it is rewarding knowing people like his food and making something that others will enjoy. “When you plate a dish and bring it to people, that part of you is on that plate,” Behland said, again emphasizing the importance of showing one’s unique touch in their cooking. “It’s really everybody experiencing you in one way when you plate something.” Behland’s mother, Cheryl, said she and her husband, Tim Sr., were “thrilled beyond words” that their son received the scholarship, allowing him a chance to attend Kendall, which she said is one of the top culinary schools in the country, without having to worry as much about tuition. “His heart was set on Kendall,” Cheryl said. “It’s just the best news a parent could hear. We knew some dreams were coming true and were beyond words excited.” She credits the culinary programs at LTHS for preparing her son to step into his career path, along with his start in the kitchen with the family, whether making Christmas cookies each year – a Behland tradition – or making one of his “Timmy sandwiches” as a young child, which consisted of buttered and jellied slices of bread put together with a piece of cheese in the middle. “He’s always known cooking is where he sees himself,” she added.
