Prawn Curry ...<br />

BY AWARD WINNING<br />

30 mins<br />

Thinking of cooking up a storm this<br />

Valentine’s Day? Try this special recipe,<br />

an easy, creamy and delicious Indian<br />

curry made with prawns... you can even<br />

spice it up if you wish!<br />

Method<br />

1. Heat the oil in a large sauté pan or wok,<br />

then add the mustard seeds. When they start<br />

to pop, add the curry leaves.<br />

2. Fry for a minute to infuse the oil, then add<br />

the onions, ginger and garlic. Then cook over<br />

a lowish heat for 5 minutes, and add the chilli<br />

powder, turmeric and coriander. Cook the<br />

spices for a minute or two.<br />

3. Add the tomatoes, coconut cream and<br />

milk. Bring to the boil, then simmer for 15<br />

minutes.<br />

4. Add the lemon juice and palm sugar and<br />

a pinch of salt. Add the prawns just before<br />

serving, as they only take a few minutes to<br />

cook. Garnish with fresh coriander sprigs and<br />

serve.<br />

CALORIES: ONLY 200 PER SERVING<br />

Ingredients<br />

• 3tbsp flavourless oil, such as groundnut<br />

• 1/2tsp mustard seeds<br />

• 12 curry leaves<br />

• 2 onions, thinly sliced<br />

• 5cm (2in) piece fresh root ginger, peeled and<br />

grated<br />

• 2 garlic cloves, crushed<br />

• 1/4, 1/2, 3/4 chilli powder (to taste)<br />

• 1/2 tsp each turmeric and ground coriander<br />

• 4 large tomatoes, roughly chopped<br />

• 200ml (7fl oz) coconut cream<br />

• 200ml (7fl oz) coconut milk<br />

• Squeeze of lemon juice<br />

• 1tbsp palm sugar (or soft brown sugar)<br />

• 600g (1lb 5oz) large raw tiger prawns, peeled<br />

Tickets to see Freak Power...<br />

Freak Power was originally formed in<br />

the early nineties by Norman Cook, aka<br />

Fatboy Slim, Ashley Slater and vocalist<br />

Jesse Graham.<br />

As the love child of Cook’s Beats International<br />

(‘Dub Be Good To Me’) and Slater’s seminal<br />

cult band Microgroove, their music was a<br />

mix of acid jazz, funk, soul and trip hop. They<br />

recorded their first studio album in Brighton<br />

in 1993, using a combination of tunes adapted<br />

from what was originally intended to be two<br />

albums - the Beats International follow up to<br />

Excursion on The Version and the Microgroove<br />

follow up to The Human Groove.<br />

Freak Power went on to have a massive hit in<br />

the UK with ‘Turn On, Tune In, Cop Out’ (used<br />

in a TV advert for Levi’s jeans) and released<br />

two albums, Drive-Thru Booty and More of<br />

Everything for Everybody.<br />

As Cook’s Fatboy career took off, Slater went<br />

his own way and released music under the<br />

alias Dr. Bone. He also produced the Oscar<br />

nominated soundtrack for the Dave McKean/<br />

Neil Gaiman movie Mirrormask (2005) and<br />

won DJ Magazine’s award for Best Dance Track<br />

2006 – ‘Bass Phenomenon’ with Krafty Kuts<br />

and Tim Deluxe.<br />

Fast forward 20 something years, and Ashley is<br />

back with a Freak Power band which features<br />

some of the great original players from early<br />

Freak Power and Microgroove days. At their<br />

powerful, energetic live show on 14 March,<br />

they will play some of their older tunes, along<br />

with material from their new EP release ‘Peace<br />

Through War’.<br />

you can’t help admire the beauty<br />

of them. They would definitely<br />

MATILDA ROUGE are new to me<br />

and I fell in love with their style and<br />

boy are they snazzy! Unfortunately<br />

days leading up to the hen, as well as on the day.<br />

LIMIT YOUR MONEY WORRIES<br />

Ask your guests to have all their money paid up in advance<br />

rather than fixing you up with the remainder of cash on the day<br />

of the hen.<br />

You can’t wait to watch your bestie<br />

or sister walk up the aisle to marry<br />

the person of her dreams. But first,<br />

you have the not-so-small task of<br />

planning her perfect send-off before<br />

she becomes a Mrs.<br />

So, what do you do now?<br />

TIMING IS KEY<br />

When it comes to organising 15-20 gals all looking at you for<br />

direction, you will be happy to have a schedule down on paper -<br />

just something simple outlining key times and locations.<br />

A really simple thing to do (but one that often gets forgotten) is<br />

organising transport from A to B - and making sure it’s factored<br />

Bounce Magazine’s Rachel Ducker speaks to JJ about his time in<br />

The Stranglers and what is in store for 2018...<br />

The Stranglers will be hitting the road again in<br />

March 2018, this time with The Definitive Tour.<br />

With the vast catalogue of material that the<br />

Stranglers have in their recorded arsenal, it is<br />

never easy to decide exactly which songs to<br />

bring together on record or perform live on<br />

tour but, in March 2018, the band will present<br />

their “Definitive” collection. The Definitive<br />

Tour is set to coincide with the planned rerelease<br />

of their first seven albums (six studio<br />

and one live) originally issued on the UA and<br />

EMI/Liberty labels.<br />

Rachel Ducker caught up with JJ Burnel, to<br />

find out about more about the band and their<br />

upcoming performance in Norwich.<br />

R: Hi there JJ... so I’m entering this interview<br />

very carefully as I once read that you used to<br />

strap journalists the Eiffel Tower… am I safe<br />

today?<br />

[laughs] Well, not on a regular basis!<br />

That’s good to hear!<br />

We did do that once though, yes!<br />

At the time it was a bit of a prank<br />

as we were getting hassled by a<br />

certain journalist, so we took him<br />

up to the first floor of the Eiffel<br />

Tower, took his trousers off and<br />

taped him to one of the girders!<br />

R: To be fair, if I was being<br />

hassled I think I would do much<br />

the same, so well done!<br />

Thank you!<br />

R: Going back to the start, how did you get<br />

into the music scene?<br />

I think that’s two questions really… the music...<br />

and music scene.<br />

Music – I think anyone growing up in the<br />

UK in the 60’s, 70’s, 80’s would have a love<br />

for music, we listen to music, we are a very<br />

knowledgeable country on music, we’ve<br />

created some great bands, musicians and<br />

artists, so I think everyone’s been involved in<br />

music in the UK.<br />

accident, because like all kids, I wanted to<br />

be in a band and make music, but it wasn’t<br />

a life ambition or a career. It just happened<br />

and suddenly I was involved in a bunch of<br />

desperados who could get arrested for<br />

anything. Eventually, ‘The Stranglers,’ after<br />

three years of struggling, hit jackpot.<br />

I started in classical music; I played the<br />

classical guitar at the age of 11. At this time,<br />

I was growing up, becoming a teenager and<br />

listening to everything that was happening,<br />

whether it was the British pop scene, or the<br />

Blues boom or whatever. Of course, at one<br />

time the whole nation listened to ‘Top of the<br />

Pops’ and there was one platform for music,<br />

so I grew up with that.<br />

Getting into the music scene was a complete<br />

R: Where did the band name ‘The Stranglers’<br />

come from?<br />

Oh it’s just a terrible name! At the time, I have<br />

to explain, that when we started out, the only<br />

places we could play were either youth clubs<br />

or pubs, although we where desperately trying<br />

to play support on the university circuit, but<br />

no one would have us.<br />

We often got the plug pulled on us in pubs,<br />

we’d then put it back in, they’d call the police<br />

and then there would be a stand off.<br />

So after another one of these debacles, one<br />

night, we got booed off stage and people<br />

wanted to lynch us, and it was a coincidence<br />

that there was a movie about the ‘Boston<br />

Strangler’ by Tony Gurges, this was in the mid<br />

seventies, and one night, I came up with the<br />

name and said “the stranglers have done it<br />

again…” and it just stuck and we thought ok<br />

that’s a name, I mean who had names like that<br />

in those days! [laughs]<br />

R: It sounds like a memorable time?<br />

Well, it was a struggle, but I think I reflect on<br />

it with pleasure, at the time it didn’t seem like<br />

pleasure, but I think of it fondly now.<br />

R: You’re seen by many as an inspirational<br />

and iconic bass player, who were your<br />

influences growing up?<br />

Rachel, I’ve sort of absorbed everything I have<br />

grown up with you know? There was one band<br />

I did like when I was a student, ‘The Doors’, I<br />

really liked ‘The Doors,’ there were loads of<br />

bands I really liked, Peter Green’s ‘Fleetwood<br />

Mac’, but yeah, loads of stuff, no one big<br />

influence really.<br />

R: What was the earliest successful milestone<br />

you remember with the band?<br />

Oh well first of all, having been rejected by<br />

24 record companies, meeting a guy called<br />

Andrew Lauder, who was head of ‘United<br />

Artist Records’. He saw something in us and<br />

persisted, despite coming to a few gigs and<br />

seeing us having pitched battles with the<br />

audience or being shouted off stage, but he<br />

signed us up so that was the first positive…<br />

and the second positive was having our first<br />

top ten single and our album, which stayed in<br />

the top five for a whole year.<br />

Aww, well thanks to your mum for having such<br />

good taste! Do you know Rachel, we really had<br />

to fight to get it released?<br />

R: Really?<br />

R: During your time in the band you have<br />

had 23 UK Top 40 hit singles and 17 UK Top<br />

40 albums, what is the key to your success,<br />

that’s a long time?<br />

[laughs] Well… I would like to think its talent,<br />

it’s certainly not the good press we had in<br />

the early days! We had terrible press. I think<br />

it coloured people’s view of us musically and<br />

I think people judged us on our image more<br />

than on our musical output. I think that’s<br />

changed now as we’ve got a few pieces of<br />

music which come back all of the time. I think<br />

over time people have changed their opinion<br />

of us.<br />

The record company heard it and said, “look<br />

its not punky, its not what people expect from<br />

you, you cant dance to it, its got a unusual<br />

chord and we don’t want to release it”, so<br />

we had to actually enforce a clause in our<br />

contract to make them release it.<br />

So they released it just before Christmas,<br />

thinking it would get drowned in the Tsunami<br />

of Christmas releases and also they wouldn’t<br />

have to invest any money in it, unfortunately<br />

for the record company it developed legs and<br />

grew a life of its own and became a world<br />

wide hit. So then after that the same record<br />

company said, “Can we have another one”?<br />

R: This may be a tough question to ask…<br />

What is your favourite album out of the<br />

seventeen so far?<br />

That is a tough question, because I am fond<br />

of quite a few, some more than others. I have<br />

three really, but its very subjective Rachel.<br />

One is ‘The Raven’ another one is ‘The Gospel<br />

According to the Men in Black’ which is for<br />

most people unlistenable, and another one is<br />

‘Giants’.<br />

R: I guess you’ve recorded these at different<br />

points in your life so it must take you back to<br />

moments in time?<br />

Well, you’ve hit the nail on the head, that’s it,<br />

because that what music does, doesn’t it?<br />

R: Funnily enough, one of your songs ‘Golden<br />

Brown’ reminds me of my mum, it’s her<br />

R: It’s a song that’s stood the test of time.<br />

Yeah, and also it’s a lesson for anyone who is<br />

struggling to go with your instinct, you know,<br />

don’t get swayed by other people, just go with<br />

what you feel.<br />

R: The band has been around for a long time,<br />

but coming into 2018 do you think your<br />

demographic changed?<br />

It has, the demographic has changed<br />

noticeably within the last 12 years since we<br />

released the ‘Norfolk Coast’ album. Up until<br />

then it was people who had grown up with us<br />

from teenagers into adulthood.<br />

When this album came out it fitted in with a<br />

certain Zeitgeist, which also coincided with<br />

people being able to access the past through<br />

YouTube links and with things like the<br />

X Factor. Teenagers started thinking all the<br />

bad press we’ve had and the bad things were<br />

actually badges of honour as now everything<br />

is so sterile and polished.<br />

So a combination of all of those things, there’s<br />

still an awful lot of ‘old bastards’ but yes, also<br />

a new wave of younger people.<br />

Now, I hear we have a mutual interest in<br />

Martial Arts.<br />

I am a 7th dahn, yeah; I trained in Japan three<br />

or four years ago.<br />

R: I expect like myself you have found this<br />

skill useful at times?<br />

R: How do you choose which songs to<br />

perform between the old and the new?<br />

We have so much material to choose from its<br />

always a bit subjective. We try to combine old<br />

with new, and it seems to work.<br />

R: Now that Jet isn’t touring with the band,<br />

do you miss his company?<br />

I miss him! I miss him as a person, yeah,<br />

how could you not? You get on so well with<br />

someone for so many years, and suddenly<br />

they are not there.<br />

He has been less frequent over the last six<br />

years. Three years ago we tried him on one<br />

song and he needed to go to hospital after<br />

that, he’s just not physically able to do it<br />

anymore.<br />

R: Speaking of tours, you are back on the<br />

road in March for a month-long tour that<br />

celebrates their four decades in music and<br />

your playing near us in Norwich on 19th<br />

March…<br />

That’s right at the UEA yeah.<br />

R: What can we expect from the show can<br />

you give away any secrets?<br />

[laughs] Expect the unexpected!<br />

R: Good answer!<br />

Its useful in everyday life, it gives you an<br />

openness… you don’t hide behind anything,<br />

you can be honest with people and it gives<br />

you the confidence to be yourself.<br />

Plus it keeps you fitter, healthier and focused.<br />

Do you know, I don’t get a chance to go to the<br />

dojo or anything but I can still train by myself<br />

which is motivating when your on tour.<br />

R: Do you think it’s helped your career?<br />

It must have yeah, when we’ve had downs<br />

in The Stranglers its put everything into<br />

perspective, it’s given me strength and also<br />

with the physical side of what we do, it’s<br />

helped me.<br />

R: My very last question is do you think there<br />

will be an 18th album?<br />

Well there definitely will be unless I keel over<br />

tomorrow as we are working on one at the<br />

moment, we are hoping to release this in 2019.<br />

R: Well thanks so much for your time JJ and<br />

best of luck with everything to come.<br />

Why don’t diets work?<br />

One of the most popular New<br />

Year’s resolutions is weight loss.<br />

Are you one of many that started<br />

to diet in January? How’s it going?<br />

If it’s not going all that well, you<br />

certainly wouldn’t be the only one!<br />

According to Psychology Today, about 95% of<br />

people who lose weight by means of dieting,<br />

will regain it in 1-5 yeas. So I think it’s safe to<br />

say that if you want to lose weight, dieting<br />

may not be the best way. So why don’t diets<br />

work?<br />

SHORT TERM FIX<br />

Diets are a short term fix. Weight gain and<br />

lose purely boils down to the calories you eat<br />

and use. Eat more calories than you use, you<br />

gain weight, eat less calories than you use,<br />

you lose weight. Over time, most of us will fall<br />

back into old eating patterns and regain the<br />

weight because we still have the same habits<br />

that contributed to the weight gain originally.<br />

ARE YOU AN EMOTIONAL EATER?<br />

Another reason diets have a poor success<br />

rate is because most of us eat for many more<br />

reasons than just hunger. Have you ever<br />

found yourself reaching for the high sugar<br />

or carb food when feeling in a certain kind<br />

of mood? If you have, you’ve experienced<br />

emotional eating. Emotional eating is eating<br />

to fill emotional needs i.e to make yourself<br />

feel better, rather than physical needs i.e to fill<br />

your stomach.<br />

So if you want to lose weight and keep the<br />

weight off, change the relationship you have<br />

with food. All our behaviour has a purpose<br />

and that includes our eating habits, so a good<br />

place to start could be to determine if you are<br />

an emotional eater or not i.e do you turn to<br />

food for comfort, relief, reward or if stressed.<br />

Try keeping a food and emotions diary to help<br />

determine if you do turn to food for emotional<br />

comfort.<br />

How to try the pose:<br />

1. Lie on your belly with your hands alongside<br />

your torso, palms up. (You can lie on a folded<br />

blanket to pad the front of your torso and<br />

legs.) Exhale and bend your knees, bringing<br />

your heels as close as you can to your<br />

buttocks. Reach back with your hands and<br />

take hold of your ankles (but not the tops of<br />

the feet). Make sure your knees aren’t wider<br />

than the width of your hips, and keep your<br />

knees hip width for the duration of the pose.<br />

2. Inhale and strongly lift your heels away from<br />

your buttocks and, at the same time, lift your<br />

thighs away from the floor. This will have the<br />

effect of pulling your upper torso and head<br />

off the floor. Burrow the tailbone down toward<br />

the floor, and keep your back muscles soft.<br />

As you continue lifting the heels and thighs<br />

higher, press your shoulder blades firmly<br />

against your back to open your heart. Draw<br />

the tops of the shoulders away from your ears.<br />

Gaze forward.<br />

3. With the belly pressed against the floor,<br />

breathing will be difficult. Breathe more into<br />

the back of your torso, and be sure not to<br />

stop breathing.<br />

4. Stay in this pose anywhere from 20 to 30<br />

seconds. Release as you exhale, and lie quietly<br />

for a few breaths. You can repeat the pose<br />

once or twice more.<br />

Deepen the Pose:<br />

You can increase the challenge of<br />

Dhanurasana by performing the pose with<br />

your thighs, calves, and inner feet touching.<br />

Beginner’s Tip:<br />

Sometimes beginners find it difficult to lift<br />

their thighs away from the floor. You can give<br />

your legs a little upward boost by lying with<br />

your thighs supported on a rolled-up blanket.<br />

Is it me, or is it the year of the<br />

Vegan? I don’t know about you,<br />

but I’ve lost count of the amount<br />

of vegan related posts<br />

It seems ‘Veganuary’<br />

was definitely a thing!<br />

However, the trend<br />

still seems to be going<br />

strong. So what’s it all<br />

about?<br />

WHAT IS A VEGAN?<br />

Veganism is a type of vegetarian<br />

diet that excludes meat, eggs,<br />

dairy products plus all other<br />

animal-derived ingredients. Many<br />

vegans also do not eat foods<br />

that are processed using animal<br />

products, such as refined white<br />

sugar and some wines. ‘Vegan’<br />

refers to a person who follows<br />

this way of eating.<br />

Sounding impossible? Well hold that thought…<br />

IS IT HEALTHY?<br />

A vegan diet includes all grains, beans, legumes,<br />

vegetables and fruits. Vegans can still eat highly nutritional<br />

and yummy meals! For example, most popular meals can<br />

be converted easily to a vegan version. Take a vegetarian<br />

Thai curry- when this is made with coconut milk it’s vegan<br />

- no meat, no dairy. It’s safe to say that many of our go-to<br />

foods are still on the menu including chips, bread, green<br />

salad, pasta and baked beans!<br />

In addition, many substitutes are available such as; soy<br />

milk, dairy free yoghurts, veggie burgers even vegan free<br />

mayonnaise to help pave the way to the vegan lifestyle.<br />

Like any diet or lifestyle choice it is important not to<br />

exclude a needed food group completely. So as long as you<br />

are sourcing your needed nutrients from a substitute you<br />

can remain healthy.<br />

Well-planned plant-based diets are rich in protein, iron,<br />

disease, diabetes and cancer.<br />

The benefits are for all,<br />

starting with the most<br />

obvious, animal welfare.<br />

Preventing the exploitation of<br />

animals is not the only reason<br />

for becoming vegan, but for<br />

many it remains a key factor<br />

in their decision to go vegan<br />

and stay vegan. Specifics<br />

aside, avoiding animal products is one of<br />

the most obvious ways you can take a stand<br />

against animal cruelty and animal exploitation<br />

everywhere.<br />

AND ANOTHER THING…<br />

Why is meat and dairy so bad for the<br />

environment? The production of meat<br />

and other animal products places a heavy<br />

burden on the environment - from crops and<br />

water required to feed the animals, to the<br />

transport and other processes involved in<br />

getting the product to our plate. A plantbased<br />

diet requires only one third of the land<br />

needed to support a meat and dairy diet as<br />

considerably lower quantities of crops and<br />

water are required to sustain a vegan diet.<br />

Switching to veganism could be one of the<br />

most effective ways to reduce our impact on<br />

the environment.<br />

Food for thought I guess! But are you<br />

persuaded?<br />

Maybe it’s not a lifestyle change you’re<br />

completely ready to commit to. After all it<br />

would take some serious dedication. But if<br />

Chardonnay versus<br />

Sauvignon Blanc<br />

The Chardonnay and Sauvignon Blanc<br />

grape varieties are without doubt two of<br />

the most prominent white grape varieties<br />

in the world.<br />

Indeed they are grown around the world where the climate<br />

plays an important part in dictating the style and flavours<br />

and aromas each have. Chardonnay takes its name from a<br />

village in Maconnais in France.<br />

CHARDONNAY<br />

This is probably the most famous white wine grape and<br />

was the most widely planted, although highly regarded in<br />

Burgundy and California, it produces high quality examples<br />

in areas such as Italy, Australia, New Zealand, Chile and many<br />

other countries.<br />

Chardonnay often adopts malolactic fermentation, to give<br />

it that buttery aroma, as well as the use of oak barrels to<br />

add vanilla and hints of spices. Lees contact in the barrel<br />

contribute biscuity, doughy flavours.<br />

The characteristics include tropical<br />

flavours in the warmer climates<br />

like California, Chile and Australia.<br />

Burgundy, particularly Chablis and<br />

Champagne are much cooler and<br />

lead to green apple aromas. Chablis<br />

was famously unoaked but there<br />

is a trend to using more oak. This<br />

is not necessarily a good thing as<br />

they tend to be like the Cote D’Or<br />

wines which use oak, and lose their<br />

previous style which was so popular.<br />

A good rule of thumb is that<br />

warm climates produce less acidic<br />

wine. To have more acidity if it is<br />

needed, early picking is advised<br />

or acid added. In cooler climates<br />

the challenge is that Chardonnay<br />

buds and flowers early, thus making<br />

it susceptible to frost. In Chablis<br />

particularly they have to employ<br />

braziers in the vineyards to warm the<br />

area and prevent frost forming.<br />

SAUVIGNON BLANC<br />

Originally from the Loire Valley and Bordeaux<br />

in France it is not clear whether there is any<br />

connection with the Savagnin or the Carmenere,<br />

other grape varieties thought to be related.<br />

It is often blended with Semillon to produce a dry<br />

wine with more Sauvignon Blanc, or a sweet wine<br />

with more Semillon.<br />

Sauterne is the most famous sweet wine using<br />

approximately one third Sauvignon Blanc and two<br />

thirds Semillon.<br />

One oddity is that in the 18th Century<br />

it was paired with the Cabernet<br />

Franc (a black Grape) to form<br />

the Cabernet Sauvignon grape,<br />

now the world’s most planted<br />

variety.<br />

The vine arrived in California<br />

in the 1880’s where it is now<br />

known as the Fume Blanc after<br />

the sometimes termed smokiness of<br />

its bouquet. In New Zealand it arrived<br />

in the 1970’s and has been so successful it has<br />

achieved cult status.<br />

Sauvignon Blanc is found in mostly maritime<br />

climates or near to rivers. For example Sauternes<br />

and Entre-Deux- Mers in Bordeaux and the long<br />

Loire River.<br />

Sauvignon Blanc is grown around the world,<br />

with Australia being riper than its New<br />

Zealand counterpart.<br />

Chile also figures highly although<br />

originally confused with<br />

Sauvignonasse a far less important<br />

grape. In Brazil the Seyval Blanc,<br />

grown in England was thought to be<br />

the Sauvignon Blanc, many parts of the<br />

USA have the Sauvignon Blanc as well as<br />

some Canadian plantings.<br />

WHICH ONE TO CHOOSE?<br />

How do you choose between these two delightful<br />

grapes when made into wine?<br />

The climates in these parts allows the grape to<br />

develop a balance between acidity and sugar<br />

levels.<br />

A vineyard worker in Australia stated that when he<br />

had finished a hard day’s work in the vineyard, he<br />

preferred a glass of Sauvignon Blanc.<br />

The characteristics of the soils can impart more<br />

factors, for example, the chalk and Kimmeridgeon<br />

clay marl of Sancerre and Pouilly Fume produce<br />

wine of the richest complexity. The wines here as<br />

a result of the flinty soil, have a smoky, gun flint<br />

flavour.<br />

This he said, was due to its refreshing and<br />

herbaceous flavours and bouquet.<br />

However, with a meal, the Chardonnay would be<br />

sometimes better with food, particularly shellfish,<br />

fish and white meats.<br />

Conclusions...<br />

Of course when you have the better quality ones of both varieties then it is more difficult to choose<br />

which one you prefer in either context. Try them both and see which you prefer.<br />

of the project’s volunteers. We can’t wait to revisit<br />

later on in the year to see the progress.<br />

In the cafe, you will find the perfect stop for a<br />

light lunch in a vibrant, Bohemian surrounding.<br />

As we made ourselves comfortable in the cosy<br />

seating area, totally embraced by exuberant<br />

leafy plants, we ordered a ‘Dark and Stormy’<br />

from the cocktail menu… Yes, it was a Sunday<br />

lunchtime, but when your are in the relaxed<br />

surroundings of the jungle it didn’t seem to<br />

matter! They arrived in long glasses decorated<br />

with a bright edible flower… a sign of things to<br />

come!<br />

From the menu we selected the ‘Vegetable<br />

Mezze Platter’ with homemade flat-bread and<br />

the ‘Vegan Jungle Curry’ with sweet potato,<br />

cavolo nero, white beans, ground almonds in a<br />

tandoori spice, served with mango chutney and<br />

popadoms. Both dishes were fresh, flavourful<br />

and the quality of the ingredients shone<br />

through.<br />

We dropped in to sample the lunch menu,<br />

and fear not, if you are conscious about how<br />

many miles your food has travelled you will be<br />

surprised to hear at Urban Jungle its not very<br />

far at all!<br />

New to the site is The Edible Jungle, and the<br />

aim is to provide daily harvests all year round.<br />

We caught up with propagation manager<br />

Niamh, who gave us a tour and an insight into<br />

her vision for the project. Her hope is that The<br />

Edible Jungle can provide the majority of the<br />

cafes ingredients, providing great tasting dishes;<br />

delicious and visually appealing using chemicalfree<br />

vegetables.<br />

There is also a month watering brunch menu<br />

which you can enjoy from 10am everyday. The<br />

full lunch and sharing menu is available from<br />

Midday everyday. Cocktails, wines, beers and<br />

spirits are available all day, everyday from 11am.<br />

Method<br />

• Put the potatoes in a pan of cold water.<br />

Bring to the boil and simmer for 15-20<br />

minutes, until tender. Drain, then mash.<br />

Vibrant, Tuck into these meat-free<br />

scotch eggs for a light lunch or<br />

pack them into your hamper for a<br />

vegetarian picnic snack.<br />

Packed with potatoes, vibrant<br />

turmeric, black mustard seeds, fiery<br />

chilli and perfectly runny eggs, these<br />

tasty veggie bites are surprisingly<br />

simple to master with this easy<br />

recipe.<br />

Ingredients<br />

• 750g (1 1/2lb) floury potatoes, thick cut<br />

• 1 tbsp olive oil<br />

• 1 shallot, finely sliced<br />

• 1 tsp black mustard seeds<br />

• 1 tsp ground turmeric<br />

• 1 tsp fennel seeds<br />

• pinch chilli flakes<br />

• handful fresh coriander, finely chopped<br />

• 10 eggs, 6 whole and 4 beaten<br />

• plain flour, for dusting<br />

• 1 1/2 x 175g packs golden breadcrumbs<br />

• sunflower oil, for deep frying<br />

• mixed salad, to serve (optional)<br />

• Meanwhile, heat the oil in a frying<br />

pan. Add the shallot and gently fry for<br />

5 minutes, or until softened. Stir in the<br />

dried spices and cook for 1 minute more.<br />

Add to the mashed potato with the<br />

coriander and some seasoning; mix well.<br />

Set aside to cool.<br />

• Boil the whole eggs in a pan of boiling<br />

water for 3 minutes for soft yolks. Drain<br />

and cool under the cold tap. Carefully<br />

peel. Divide the mash into 6 and flatten<br />

into discs.<br />

• Mould around each boiled egg until<br />

completely covered. Dust with flour,<br />

then dip in beaten egg and coat in<br />

breadcrumbs.<br />

• Heat the oil in a deep pan. Once it has<br />

reached 170°C on a thermometer (or a<br />

cube of bread browns in 40 seconds),<br />

add the eggs, two at a time, and cook<br />

until golden.<br />

• Remove with a slotted spoon and<br />

drain on kitchen paper. Repeat with the<br />

remaining eggs. Serve warm with salad.<br />

TOP TIP:<br />

Make a meal of the Scotch eggs by serving<br />

with a leafy radish and cucumber salad –<br />

delicious with a mustard dressing.<br />

Situated just two miles from the centre of<br />

the historic town of Bury St Edmunds, All<br />

Saints Hotel is perfectly located whatever<br />

the occasion.<br />

Bounce Magazine were kindly invited<br />

along to review a meal at The View<br />

Restaurant and Café. Here’s what we<br />

thought...<br />

“I wasn’t sure what I<br />

was expecting from<br />

All Saints, I once<br />

knew it as ‘the old<br />

golf club’, but not<br />

anymore.<br />

From the moment we stepped into the<br />

modern, newly refurbished restaurant, I<br />

knew we were in for a treat!<br />

Warmly greeted by our waitress for the<br />

evening Lily, we were shown to our table,<br />

which overlooked stunning panoramic<br />

views across the 18 hole golf course.<br />

The innovative layout of the room,<br />

combined with open kitchen and<br />

impressive bar station, all work together to<br />

present a warm and comfortable place to<br />

socialise in.<br />

Not forgetting a large outdoor terrace,<br />

perfect for during the summer months!<br />

As Lily tentatively delivered us our drinks<br />

whilst we browsed the menu, designed by<br />

Head Chef, Steve Windser, we were thrilled<br />

to see plenty of options for all, especially<br />

vegetarians!<br />

The team at All Saints strive to use the<br />

very best locally sourced and seasonal<br />

produce to create culinary delights to<br />

appease diners. With that it mind it was<br />

time for us to order.<br />

“On this particular evening it<br />

was a little chilly, so I wanted<br />

something heart-warming.”<br />

I decided upon the Homemade ‘Mushroom<br />

and Tarragon Soup’ to start, which was<br />

unusual for me, but it jumped out, I think<br />

made the right choice.<br />

The flavours of the Mushroom and<br />

Tarragon were perfectly balanced and it<br />

was served with a large, warm piece of<br />

Homemade Granary bread, notably light.<br />

Whilst I warmed up, my partner Sam<br />

opted for the ‘Beetroot Gnocchi’ served<br />

with beetroot puree, roasted beetroot,<br />

Boccocini and basil.<br />

It looked fantastic. The sweet kick of<br />

the beetroot complemented the basil<br />

and none of the flavours were too<br />

overpowering.<br />

To follow, I enjoyed the ‘Porcini Mushroom<br />

Ravioli’ with a cheeky portion of handcut<br />

chips.<br />

I have to say, these were some of the<br />

finest chips I’d hand in a while! (Note: New<br />

Year diet out of the window)!<br />

Sam enjoyed the chefs special Risotto<br />

with all of the best seasonal ingredients<br />

included in it. The rice within the dish<br />

was cooked well. For the non-veggies out<br />

there, you can also have this dish with Pan<br />

Fried Scallops and Crevettes.<br />

We were slightly spoilt for choice when<br />

it came to desert, however, my chocolate<br />

loving fiancé couldn’t resist the ‘Dark<br />

Chocolate Fondant’ with marshmallow and<br />

malted milk Biscuit. Gone in seconds!<br />

I like to round off my meal with a bit of<br />

a palate cleanser so the ‘Warm Lemon<br />

Sponge’ served with lemon curd and a<br />

local raspberry sorbet, was just idea for<br />

me.<br />

When it arrived it a de-constructed lemon<br />

meringue… it was sweet but delicious!<br />

Overall we really enjoyed our evening at<br />

All Saints.<br />

There was a good selection of drinks at<br />

the bar and by the end of our meal every<br />

DID YOU KNOW?<br />

Usually it smells lovely, especially during the<br />

rapeseed growing season but occasionally it won’t<br />

smell quite that luxurious.<br />

There’s a smell in the fields that we all know and are all used<br />

to. It’s called manure but it’s just one of those things that you<br />

expect from living in the countryside. The smell of rain on a<br />

warm summer day is well known throughout the world but in<br />

Norfolk its exquisite.<br />

If the Norfolk dialect is part of your daily speech, you’ll know<br />

what a bishy barnabee is. This is one of those things that<br />

Norfolk folk always use to confuse outsiders and show off just<br />

how different the Norfolk ‘language’ really is. For those of you<br />

not from Norfolk, bishy barnabee is a ladybird.<br />

The Norfolk dialect is very distinct with words that aren’t<br />

widely used elsewhere in the UK. A standard Norfolk accent<br />

is usually fine but you’ll come across someone, usually a<br />

good old boy who is a little more difficult to understand. It’s<br />

very much like Hot Fuzz, where the locals translate the West<br />

Country wordings of local farmers to outsiders.<br />

You will even come across Norfolk dialect in villages<br />

throughout Norfolk used on road signs, with a favourite of<br />

mine being ‘Slow You Down’.<br />

As there is no motorway serving the county, things do slow<br />

down. You’re stuck on 40-60 mph roads with very few dual<br />

carriageways to be seen. Once you’re on a trunk road out of<br />

the county, it can be a lot easy. But you will get stuck behind<br />

a tractor on a road where you just can’t overtake.<br />

Why would you want to leave? Unlike other parts of the<br />

country where people move away for work or university,<br />

people stay in Norfolk. I like to<br />

be of the opinion that it’s far too<br />

beautiful and historic to leave.<br />

Fulmodeston, Haddiscoe,<br />

Happisburgh, Mundesley,<br />

Postwick, Reepham, Stiffkey,<br />

Tasburgh and Wymondham<br />

are village names that people<br />

constantly pronounce incorrectly<br />

and this will alert the locals to<br />

say, ‘you’re not from these parts’.<br />

Norfolk isn’t 100% flat. West<br />

Norfolk is relatively flat, and<br />

much of the county is actually<br />

rolling hills and sharp cliff faces.<br />

It’s very easy to get out of<br />

sorts during a walk, more so in<br />

the North Norfolk area. Try to<br />

climb to the top of the gazebo<br />

in Sheringham Park to take a<br />

look upon the rolling landscape,<br />

which was carved by an ancient<br />

glacier. Living in Norfolk you will<br />

at some time became acquainted<br />

with these hills as the young who<br />

explore around the countryside.<br />

Grilled cheese. Spaghetti. Pasta. Restaurants<br />

are incredibly busy (& cliche) on Valentine’s<br />

Day. You know how hectic it can get. Who<br />

wants to wait 60 minutes for a table?<br />

3. Host a Palentine’s Day party<br />

The day to show how much you love your<br />

pals. Ask the girls (or guys) to come over and<br />

bask in the glory of friendship. Eat, drink, and<br />

be merry. Together.<br />

4. Heart shaped pizza<br />

A heart shaped pizza is every girl or boy’s<br />

dream. Do it. They will not be let down.<br />

5. Rent a horror film<br />

Just don’t watch a chick flick. Don’t do it. How<br />

cliche is that? A horror movie is even more of<br />

an excuse to cuddle. Hehe. You clever minx<br />

you.<br />

So go on, make an effort this Valentine’s Day<br />

and show the one you love, just how much<br />

When it comes to our children, property<br />

prices, coupled with stagnant wage levels<br />

have meant that more and more of our<br />

offspring are staying at home, or returning<br />

to the family home.<br />

SPRING IS IN SIGHT<br />

Kates Top Tip : Don’t leave houseplants on<br />

windowsills behind the curtains on frosty nights,<br />

especially if your windows are not double-glazed.<br />

This month there are signs of the<br />

approaching spring, with bulbs<br />

appearing and wildlife waking up<br />

as light levels and temperatures<br />

increase.<br />

General<br />

There’s plenty to do indoors this month to prepare<br />

for the season ahead.<br />

Outdoors, as the garden comes to life again, it’s time<br />

to prune shrubs and climbers, such as Wisteria as<br />

well as evergreen hedges.<br />

Sowing and planting<br />

Lily bulbs can be planted in pots, for flowers this<br />

summer. After growing on indoors or in a cool<br />

greenhouse, they can be moved onto the patio when<br />

in flower, so that you can enjoy the blooms.<br />

Bulbs coming up in the rock garden or in containers<br />

may benefit from overhead protection from the<br />

rain and snow. A sheet of glass or Perspex placed<br />

on piles of bricks will do the job. Sweet peas can<br />

be sown under cloches, in a cold frame, or in a cool<br />

room in the house.<br />

Any sweet peas that were sown earlier in the autumn<br />

can now be potted.<br />

So it’s February and you’re probably<br />

kicking yourself having already let<br />

the New Year resolution slip?<br />

Well fret not because Action Man is here to<br />

give you another dose of inspiration, this<br />

month it’s in the form of Brazilian Jiu-Jitsu.<br />

BJJ is a Martial Art that focuses on<br />

grappling and ground fighting that was<br />

developed by the Gracie family in the early<br />

1900’s, which promotes the concept that<br />

a smaller, weaker person can successfully<br />

defend themselves against a bigger,<br />

stronger, heavier assailant by using proper<br />

technique, leverage, and most notably,<br />

taking the fight to the ground, and then<br />

applying joint locks and chokeholds to defeat<br />

the opponent.<br />

Now, we all know by now that I’m not<br />

particularly large in stature, so I was keen<br />

to give it a go when and I visited Dynamo<br />

FightSports BJJ team, who train at the Grange<br />

Fitness & Performance Centre in Martlesham.<br />

The group boasts an impressive wealth of<br />

championship winners but are very keen on<br />

introducing beginners to the sport and I was<br />

welcomed with open arms, quite literally...<br />

(more on that later)!<br />

The session started with the important<br />

warm up, particularly for a man who looks<br />

like he swapped his sporting endeavours for<br />

competitive eating over the festive period!<br />

(Note for editor: need a bigger Uniform).<br />

This was followed by a series of drills, basic<br />

movements and sequences that formulate<br />

the foundation of BJJ. The instructors and<br />

experienced members were excellent and very<br />

patient in helping me learn and understand<br />

the actions.<br />

It was time to put all that into practice with<br />

some sparring, as a beginner you’d spend<br />

more time on the drills but Action Man<br />

puts his body on the line for your reading<br />

pleasure! Now it’s fair to say the step by step<br />

in slow-motion is much easier than trying to<br />

remember everything I’ve just learnt whilst<br />

someone is on top of me trying to do to me<br />

what I’m trying to do to them. Here you fully<br />

understand the BJJ methodology, whilst I<br />

tried with all my Might, I could not budge an<br />

inch of the smaller chap who had me pinned.<br />

However, when I faced a larger opponent and<br />

focused on my technique... bingo! Landed the<br />

submission I was looking for. Precision over<br />

power, function over force that’s the BJJ way<br />

and what a great experience it was.<br />

Now, I’ve been Action Manning for almost 5<br />

years and this was one of my most physically<br />

demanding reviews ever, so if you’re looking<br />

for something new in 2018 then Brazilian Jiu-<br />

Jitsu is certainly for you, I know I’ll be back,<br />

not only will it be great for fitness but you’re<br />

joining a family.<br />

Uff… I thought not and it just so happens that<br />

yours truly has been blessed with the honour of<br />
