Corn Chowder BY MADISON FARKAS Warm those cold bones with a bowl of thick, creamy chowder. It pairs beautifully with cornbread muffins! INGREDIENTS • 2 cups potato, diced • 1/4 cup onion, diced • 1/4 cup carrot, diced • 1/2 cup celery, diced • 21/2 cups water • 11/2 tsp salt • 1/2 tsp pepper • 1/4 cup margarine • 1/4 cup flour • 2 cups milk • 1/2 cup grated cheddar cheese • 2 cups corn, cooked • Crumbled bacon, for garnish Makes 6 servings. DIRECTIONS 1. In a large pot, combine potatoes, onion, carrot and celery in water. 2. Add salt and pepper, bring to a boil and cook until tender (about 10 minutes). Do not drain. Reduce heat to simmer. 3. In a small saucepan, melt butter and mix in flour. Slowly add milk and cook until a thick, smooth roux forms, stirring often. 4. Slowly stir the roux into the vegetables and mix well. 5. Stir in grated cheese and corn. Heat through but do not boil. 6. Serve garnished with crumbled bacon. DOWNLOAD TODAY!
