The Ohio-based company recently brought those layers — and flavors — to Deerfield as part of a rapid Midwest expansion. Deerfield marks the smokery’s third Illinois location to open in the past six months, as City Barbeque hopes to bring quality barbecue fare to a market that it saw as noticeably underserved. “The daytime population here is outstanding,” said Clint Umphrey, City Barbeque market leader. “It is certainly a lunch-driven population.” And, with smells of smoked meats wafting over the busy intersection at Waukegan and Lake Cook roads, it’s no wonder the lunch crowd has come. The first, and perhaps most important, layer to City Barbeque’s business is the competition-quality barbecue it strives to serve on a daily basis. “Barbecue in itself is a unique experience and a lot of people have their own approach to it,” Umphrey said. “Our approach to barbecue is to have a complete commitment to it every day, execute it and its challenges.” City Barbeque offers a variety of meats, all the classics: brisket, chicken, ribs, turkey and sausage. And it’s all served in different ways to attract all types of barbecue lovers. “We chose to highlight the best of different regions,” Umphrey said. “Rather than commit to doing barbecue solely from one region or another, our brisket and our sausage is Texas-style and Texasbased.” The restaurant’s pulled City Barbeque 365 Lake Cook Road, Deerfield (847) 960-4129 citybbq.com 10:30 a.m.-10 p.m. Monday-Saturday 11 a.m.-9 p.m. Sunday City Barbeque’s Lo Lo’s pulled pork sandwich ($7.29) is a unique Carolina-style pulled pork sandwich consisting of smoked meat in Swine Wine barbecue sauce piled high with classic coleslaw on a thick bun. Jacqueline Glosniak/22nd Century Media pork is Carolina-style, Umphrey said, and the ribs are prepared in a Kansas Cityor St. Louis-style. “We have a variety of sauces, too, which hopefully meets the desires of anyone and everyone that comes in,” he said. “That, from a food standpoint, makes us unique.” City Barbeque doesn’t stop at just cooking the meat the right way. It also doesn’t believe in storing its finished meats. “Smoker to plate is what we shoot for,” Umphrey said. “We don’t want to live in that world, because it’s a little too tight, but smoker to plate is a good thing. If we’re bringing brisket off the smoker to slice it and serve it, that’s awesome.” Most barbecue masters know that low and slow is the way to go, and City Barbeque adheres to that credo. The restaurant loads meat twice daily in its three smokers and cooks from 16 to 18 hours to get ideal flavor and texture. On a normal busy day, a City Barbeque location will smoke 500 pounds of brisket, 350 pounds of pork, 140-160 half chickens and 120-140 slabs of ribs. It also does catering orders, which can bump up that number significantly. Refrigeration of these meats can ruin the flavor, so all the meats that come off the smoker go into a hot, humid holding area that keeps the juice and flavor pristine. “It’s a shame to cook something for 18 hours and then cool it; that doesn’t make no sense,” Umphrey said. City Barbeque, in the time-honored American tradition of backyard barbecues, also offers a variety of sides. Twists on classics like coleslaw, macaroni and cheese, and collard greens complement the meats. Desserts are also an option, if you still have room at the end of the meal. The meat that isn’t consumed by the end of the day is donated, and that is just another layer of City Barbeque’s business philosophy. “It’s more than just about the food that City Barbeque is producing though; it’s about giving back and being an active member in the community that it brings their barbecue to,” Umphrey said. Integrity in business is a key component for every City Barbeque’s location, and Deerfield is no exception. Being able to give back to surrounding communities is a big reason why “to serve and create happiness” is one of the company’s main mottos. “It’s not to go in and run a business and be a source of tax revenue for the village or the city, or wherever we are, but to go in and give back,” Umphrey said. “We really strive to do that as quickly as possible. Umphrey said the store plans to partner with local chambers, Rotary clubs and other community organizations to help provide support wherever needed and in whatever capacity. Brisket fans will enjoy More Cowbell ($8.29), a beef brisket sandwich covered with smoked provolone and topped with crispy onions, green peppers and a drizzle of horseradish sauce in between soft Texas toast slices. The Motherload ($59.99) is the restaurant’s signature large order, consisting of servings of brisket, pulled pork, turkey, ribs, chicken, sausage and sides from macaroni and cheese and collared greens to french fries and corn bread. Unsurprisingly, that mindset holds true with how the restaurant hires and treats its staff. “I tell anyone I hire, first and foremost, is that we serve and create happiness to the guest that comes in,” Umphrey said. “We want to serve them and we want to create a little happiness in their day.” It’s not hard to find that happiness translated into the food that is served. For someone who isn’t familiar with barbecue, the Deerfield location has you covered. The Motherload ($59.99) is a mountain of food that offers a variety of options for six — or a really ambitious four. “People love to experience and try everything, especially when you’re new,” Umphrey said the selection. “Eventually, people hone in on what they want.” The order comes with generous portions of brisket, pulled pork, turkey, a half slab of ribs, half a chicken, two sausages and six individuals sides. No barbecue feast would be complete without cornbread and Texas toast on the side, so City Barbeque provides them as well. If you’re stopping in for lunch, there are sandwich options that combine slowcooked meats with delicious toppings. Lo Lo’s pulled pork ($7.29) is a Carolina-style sandwich that marinates the smoked pulled pork in Swine Wine, a vinegarbased barbecue sauce, and then tops that with cold and creamy slaw on a bun. If beef is what you’re craving, then you can’t go wrong with the More Cowbell ($8.29), on which tender beef brisket is smothered with smoked provolone cheese, topped with crispy onions and green peppers and then drizzled with a creamy horseradish sauce and served on Texas toast. If you don’t leave City Barbeque full, you did something wrong.
