Good bones It’s time for comfort food and slow cooking, unlocking nutrients from hearty ingredients and boosting our immune systems with the goodness of broth and soup. Wine pairing To add another element to our food pages, we are now featuring wine pairing suggestions from <strong>Surrey</strong> Wine School with all our recipes. The secret to good soup lies in stock; a simple soup will be transformed if it has good bones - literally. Making proper stock from scratch is a process that can take a while. Use a slow cooker, large saucepan, or dig out that crock pot from the back of the cupboard, turn the heat down low and prepare to simmer. Lemon, Chicken and Kale soup Serves 4 Prep time: 15 minutes. Cooking time: 40 minutes. Use either leftover chicken from a roast, or boned chicken thighs. Like a casserole, this soup has a mellower flavour if made the day before. • 200g boneless chicken pieces (thighs or leftover roast chicken) • 2 tbsp olive oil • 1 onion, finely diced • 1 medium sized waxy potato, diced • 2 crushed garlic cloves • 1 litre chicken stock • 3 sprigs of fresh thyme, any woody stalks removed • Zest and juice of 2 lemons • 150g orzo pasta (or miniature soup pasta) • 150g kale, shredded • Salt and pepper to taste 1If using raw chicken, transfer to saucepan, cover with stock and bring to the boil, turn the heat to medium and cook for 15 minutes. Rmove with a slotted spoon, cut into thin slivers and return to the pan and simmer. 2Gently sauté the onion and potato in the oil for 5-10 minutes until the onion is soft. Transfer to the pan with chicken (if using leftover chicken, add here). Add pasta, thyme, garlic, lemon zest and simmer for a further 10 minutes before adding the chopped kale. 3Cook for another 5-10 minutes, until the kale is soft, add lemon juice, salt and pepper to taste. Serve with crusty bread. Wine+ The key ingredients are lemon and spices so the wines needs a backbone of acid and fruit flavours. Saint Mont AOC Marks and Spencer, £10, is a lovely dry white is a blend of three local grape varieties; Gros Manseng, Petit Courbu and Arufiac. It has lovely aromas of grapefruit and pear and has a fuller body than most whites. Vegetable stock Makes approximately 1 litre* Prep time: 10 minutes. Cooking time: 40 minutes. A flavoursome vegan broth can easily be made using a selection of seasonal vegetables. It is created in a similar way, but requires far less time to draw out the flavours. • 3 medium-sized carrots, washed but not peeled, chunked • 3 celery stalks, washed and roughly chopped • 2 onions, chunked with skins on • 2 leeks, washed (split the leek longways, nearly to the base and rinse under the tap fanning out the layers), roughly chopped • 6 medium-sized mushrooms, rinsed and halved • 2 bay leaves • 3-4 sprigs parsley • 2 sprigs fresh thyme • 1½ litres water Wine+ With this soup I suggest you pair a wine that has aromatics and flavour to hold its own against the flavoursome vegetables so Sauvignon Blanc is just perfect. Try Russian Jack Sauvignon Blanc Marlborough New Zealand 2017 Majestic Wine £7.99 Mix 6 Deal . The wine has intense aromas and lots of fresh fruit flavours to match. 1Place all the ingredients in a large saucepan or stock pot and place on the hob. Bring to the boil and then remove any scum that rises to the surface. Turn the heat down to the lowest 2 setting and simmer for 40 minutes. Strain and use, or refrigerate until needed. Keeps in the fridge for 4 days, or can be frozen* *If freezing, strain stock and return to the hob, cook on a medium heat, until the amount of liquid is reduced by a half.
