Warming winter wine is lovely – but try these spicy<br />

alternatives, from some of our local producers<br />

NIGHTINGALE CIDER<br />

Tenterden mulled cider<br />

SILENT POOL DISTILLERY<br />

Mulled cranberry gin<br />

Makes 1<br />

• 1 tbsp lemon juice<br />

• A pinch of nutmeg<br />

• 1 tsp (or less according<br />

to taste) honey<br />

• 1 cinnamon stick<br />

• 2 cloves<br />

• 1 orange, sliced<br />

• 1 or 2 star anise<br />

• 25ml Silent Pool gin<br />

• 150ml cranberry juice<br />

1Add the lemon juice, nutmeg, cinnamon stick, cloves<br />

and star anise to a saucepan and bring to the boil.<br />

Gently<br />

boil for 2-3 minutes.<br />

Reduce to a simmer, add the gin, cranberry juice and<br />

3orange slices. Simmer for 5 minutes.<br />

Remove from heat and strain into a Copa de Balon<br />

gin glass.<br />

Makes 6-8 cups<br />

• 2 bottles of Nightingale Tenterden<br />

Cider (1L)<br />

• 10 cloves<br />

• 2 tbsp brown sugar<br />

• ¼ tsp grated nutmeg<br />

• Zest and juice of small orange<br />

• 3 cinnamon sticks<br />

• ½ vanilla pod<br />

1Add the cider to the pan, followed by<br />

the other ingredients and warm slowly,<br />

until almost boiling. Turn the heat down<br />

and allow the ingredients to a low simmer<br />

for about ten minutes to infuse before<br />

serving. Serve in a glass mug, or stemmed<br />

wine glass.<br />

2If you fancy a little extra fortification,<br />

add a shot of English apple brandy to<br />

each cup.<br />

3 For a non-alcoholic and child friendly<br />

version, use 1 bottle of Nightingale<br />

apple juice instead of the cider and<br />

remove the sugar (and brandy!) from<br />

the recipe.<br />
