March is one of my favourite seasons, I love<br />

seeing things come to life again and welcome the<br />

lighter nights and warmer weather.<br />

Our review took place at The Swan House, in<br />

Beccles, recently reopened with new owners.<br />

With charming rooms and fantastic food,<br />

see what we thought in the food and drink<br />

section.<br />

We also celebrate Mother’s Day this month, so in<br />

this issue we have plenty of gift ideas, inspiration<br />

Woman to Woman head out for<br />

UK Headline Tour 2019...<br />

WOMAN TO WOMAN...<br />

Six months on from finishing the first<br />

leg, Woman to Woman returns to<br />

UK stages this June with an eagerly<br />

anticipated, second offering.<br />

Beginning at the Buxton Opera House on<br />

June 2 and running through to Cardiff’s<br />

St David’s Hall three weeks later, the trio<br />

of Judie Tzuke, Beverley Craven and Julia<br />

Fordham will take on another, impressive,<br />

thirteen dates.<br />

Internationally renowned in their own<br />

right, the trio combined to form the<br />

ultimate ‘girl band’ early last year,<br />

debuting on Graham Norton’s BBC Radio<br />

2 show with the stunning single, ‘Safe.’<br />

It was to be the beginning of something<br />

unique, something special, something<br />

perfect as the ladies continue to go from<br />

strength-to-strength as 2018 turned into<br />

2019.<br />

Speaking of last years’ first leg, Judie said: “It was such a<br />

brilliant experience.<br />

“To perform with my new friends and be in a girl band<br />

was a lot of more fun than I could have imagined.<br />

“There was something magical between us when we<br />

walked on stage which seemed to happen at every show.”<br />

Meanwhile, looking ahead to the much anticipated<br />

second leg, Beverley said: “It will be pretty much the<br />

same show, with the odd tweak and a couple of new<br />

songs from the Woman to Woman album.<br />

“I would love to have the artistic freedom to perform a<br />

completely different set and play more obscure songs,<br />

but our agent feels very strongly that not paying the<br />

songs we are known for would be a mistake.”<br />

Well hello there! I’m back with my monthly column… OK, so firstly a reminder<br />

about me. I’m Zena (Zee for short), I’m 45, a mother and a grandmother.<br />

Spring is in the air and I have to say, I also<br />

have a spring in my step! I love springtime<br />

it’s my favourite season. The<br />

nights are lighter and the<br />

mornings sunnier. For the<br />

most part!<br />

This month I’m taking you<br />

back to the 80’s again! I was<br />

a huge fan of the Buffalo<br />

fashion trend when I was<br />

younger. Imagine my joy at<br />

finding these earrings on<br />

instagram. They are made by<br />

Gangster Wraps. The owner<br />

takes gold or silver classic<br />

80’s hoops and wraps them in recycled and<br />

vintage fabric. These leopard print ones are<br />

my favourite (of course)!<br />

It’s also that time of year where it’s warm<br />

enough to only wear a T-Shirt under your<br />

coat and (if you’re lucky) you may even be<br />

able to take that coat off!<br />

So why not go bold with these<br />

casual, but very RAD, (can I<br />

say rad at my age?) tee’s and<br />

hoodies from Blue Monday<br />

Apparel. (Pictured right). I<br />

LOVE them. They are perfect<br />

for an everyday casual look.<br />

Roll the sleeve up or tie a knot<br />

in the front but put your own<br />

twist on it.<br />

I also came across<br />

these dungarees online,<br />

(pictured right) for those<br />

days where you just want<br />

to feel comfortable and<br />

relaxed but you still want<br />

to show your colourful side. Plus they have<br />

pockets so what’s not to love right? I found<br />

these on instagram and they are made by<br />

‘LucyandYak’. Style them with trainers or flats<br />

and enjoy the relaxed fit.<br />

Speaking of trainers... We all have our<br />

favourites. I love Converse but I’ve recently<br />

taken a bit of a shine to Vans. Locally<br />

you can pay a visit to ‘Hardcore Hobbies’<br />

in Bury St Edmunds, but online you can<br />

browse the latest styles. With hiking boot<br />

chic being a thing this season thanks to<br />

Holly Willoughby on “I’m a celebrity”, these<br />

hit the mark. (Pictured right).<br />

I’ve spoken before about accessories, and<br />

how they really can make an outfit.<br />

It may be a little black dress that you’ve<br />

worn before, but it’s your favourite, and it<br />

skims and fits in all the right places.<br />

Because you’ve worn it many times, you<br />

could be worried people might notice. Well,<br />

I’ve found the most beautiful accessories to<br />

add the wow factor to your outfit and the<br />

attention will firmly be on these. I’m a huge<br />

Dolce and Gabbana fan and these take<br />

direct inspiration from the catwalk.<br />

dungarees!<br />

With beautiful jewel encrusted hairbands,<br />

knotted fifties inspired headbands and<br />

glorious over the top earrings, I guarantee<br />

you will feel like Elizabeth Taylor, (the early<br />

any attention to your old faithful LBD. I<br />

Hitting the Himalayas...<br />

“As part of our challenge, we’re not just<br />

trekking the Himalayas, we are organising and<br />

hosting fun filled fundraising events over the<br />

next few months”.<br />

Four friends will climb in the Himalayas<br />

in their quest to beat cancer.<br />

Sharon Ferguson-Cuffe, who lost husband<br />

Gary to oesophageal cancer 19 years ago<br />

when he was 35, will join friends Caroline<br />

McClellan, Jo McDonnell and Rebecca Hazell<br />

to walk in the Dharamshala mountains.<br />

The Indian trek will raise money and<br />

awareness for Cancer Research UK.<br />

Over five days in October, they will walk for<br />

more than 30 hours in altitude up to 3,000m,<br />

close to the Dalai Lama’s home. But according<br />

to Sharon, their biggest challenge is raising<br />

their £12,000 target.<br />

Sharon comments, “Having all been affected<br />

by the devastating effects it inflicts, we want<br />

to do as much as we can to help conquer<br />

cancer”.<br />

“We’ve already packed bags at Waitrose and<br />

have a quiz night in February and Ceilidh<br />

night in March – both at Moreton Hall. You<br />

may have seen some of the posters we’ve put<br />

around town!”<br />

Sharon has completed charity runs and says<br />

the group walk together regularly.<br />

The four, with a combined age of 218, would<br />

love you to join them at the following events:<br />

Centre. Saturday, February 23, from 7pm.<br />

More Bury St Edmunds<br />

than Farmers…<br />

THE FARMERS CLUB...<br />

There is a hidden gem on<br />

Northgate Street in Bury St<br />

Edmunds, well-known and<br />

much loved by some but<br />

probably not historically<br />

viewed as accessible to<br />

everyone. That is changing.<br />

The Bury St Edmunds & Farmers<br />

Club had its roots in the farming<br />

community when it opened in 1947.<br />

In 2019, farmers are in the minority<br />

amongst its members and there are<br />

three main prongs to what it can<br />

offer to the local community.<br />

The first is as a venue for weddings, other private<br />

functions and business events.<br />

With a wedding licence, a garden, parking and<br />

various sizes of function rooms oozing with<br />

character, it is ideally placed to do this.<br />

The Club is proving particularly popular with<br />

‘second time round’ couples who want to have<br />

their ceremony and celebrations all in one place,<br />

potentially having exclusive use of the venue to<br />

accommodate family and friends in a relaxed<br />

environment.<br />

Secondly, there is a focus on building up its private<br />

membership base.<br />

The average age of the Club’s membership is in<br />

its mid-50s but this is<br />

significantly lower than five<br />

years ago and the trend is<br />

towards signing up younger<br />

members, in particular those<br />

who live or work in the town<br />

centre.<br />

There are special deals for<br />

under 35s and start-up<br />

businesses.<br />

As one recent joiner put<br />

it: “It doesn’t take long to<br />

recognise familiar faces<br />

when you walk into the Club<br />

and if you go in on your<br />

own there’s always someone<br />

happy to chat”.<br />

Last but not least, there<br />

is a drive to build up the<br />

business-hub aspect of the<br />

Club.<br />

This is taking a number of<br />

forms, including: increasing<br />

the corporate membership;<br />

encouraging business<br />

members to make other<br />

members aware of the<br />

services they can offer.<br />

It also means making the<br />

Northgate Business Centre<br />

accessible 24/7 for its<br />

business tenants.<br />

Specifically for businesses,<br />

the club can accommodate<br />

networking breakfasts,<br />

lunches, afternoon tea or<br />

evening events and seminars<br />

of various sizes.<br />

As a milliner I work regularly<br />

with both Mother’s of the Bride<br />

and Mother’s of the Groom.<br />

They are all proud parents<br />

Dodie Clark is a 23 year old<br />

singer songwriter from Epping.<br />

I was learning clarinet right after my<br />

two front teeth grew in! It was treble<br />

recorder before then [laughs]<br />

She is arguably the most successful<br />

DIY artist of recent times, having built<br />

herself a considerable fanbase since<br />

she began uploading music from her<br />

bedroom aged just 16.<br />

dodie has now had almost 350 million<br />

streams across YouTube, Spotify<br />

and Apple Music.<br />

EPs, 2016’s<br />

HOW DID YOU FIRST GET INTO<br />

MUSIC?<br />

My my dad has always been a music fan<br />

and so its importance was present in<br />

my home forever!<br />

Growing up my dad loaded<br />

a lot of classic stuff on<br />

my iPod like Stevie<br />

Wonder, ELO, the<br />

I don’t really know? I don’t think there<br />

usually is one big moment. I had loads<br />

of little moments.<br />

My first two were when I had larger<br />

channels notice me and send some of<br />

their audience over. Once I got to a<br />

thousand people following me in 2012 it<br />

grew steadily from then.<br />

It creates huge highs and lows; highs<br />

of playing, being around friends, lows<br />

of pressure, tiredness, being away from<br />

MEMORABLE PERFORMANCE SO FAR?<br />

My crowd has a habit of bringing along<br />

certain lights or props to hold up in<br />

certain songs; there are been roses,<br />

rainbow lights, balloons even!<br />

I’m not sure if there’s one that I can<br />

pinpoint but any where I’m feeling the<br />

emotion as much as the crowd is, and<br />

we can all sing through it together.<br />

First Boxer to be<br />

Knighted...<br />

A series of articles which will feature boxing facts<br />

from both the past to the present...<br />

On the night of the 18th June<br />

1963 at the Wembley Stadium<br />

in London the then reigning<br />

British and Commonwealth<br />

heavyweight champion Henry<br />

Cooper almost caused a<br />

major upset in boxing. Cooper<br />

sensationally dumped American<br />

Muhammad Ali (then Cassius<br />

Clay) on the seat of his pants at<br />

the end of round four. Ali was<br />

undefeated in eighteen bouts<br />

and was widely regarded has a<br />

fighter on the way to the top.<br />

Cooper’s famed left hook known<br />

as Enry’s Ammer was a fearsome<br />

weapon and Ali painfully found<br />

that the reputation of Cooper’s<br />

punch was not exaggerated.<br />

In so doing Cooper became<br />

just the second man in the<br />

professional ranks to put Ali on<br />

the deck. (The first fighter to do<br />

so was Sonny Banks who floored<br />

Ali for a count in the first round<br />

at Madison Square Garden in<br />

New York on the 10 February<br />

1962. Ali later stopped Banks in<br />

the fourth stanza of ten).<br />

Ali was badly hurt by Cooper<br />

and looked ready for the taking<br />

but fortunately for the American<br />

the bell sounded to end the<br />

session. Ali thus had time to<br />

recover in his corner and thus<br />

ended the fight in round five of<br />

a scheduled ten with Cooper<br />

being badly cut.<br />

The pair met again on the 21st<br />

May 1966 at the Arsenal Football<br />

Stadium in Highbury London, on<br />

this occasion Ali was the holder<br />

of the World Boxing Council’s<br />

World heavyweight crown and<br />

was hence putting the title<br />

on the line against his British<br />

opponent. (Ernie Terrell held<br />

the World Boxing Association’s<br />

version of the title) This time<br />

around Ali was wary of the<br />

Briton’s left hook and was able<br />

to avoid the damaging punch.<br />

The fans in attendance hoped<br />

that Cooper would succeed but<br />

fight experts made Ali the firm<br />

favourite to retain his crown<br />

They were proven correct. Henry<br />

made a brave challenge for the<br />

championship but failed in his<br />

bid due to a badly cut left eye<br />

when the bout was stopped in<br />

the sixth round of fifteen.<br />

Cooper may not have won<br />

the World heavyweight crown<br />

during his career but he<br />

achieved a great deal in the<br />

paid ranks. Not only did he win<br />

the British and Commonwealth<br />

heavyweight title’s but also<br />

the European crown on three<br />

separate occasions. Cooper also<br />

made history by being the first<br />

boxer to win three Lonsdale<br />

Belts outright for defending the<br />

British Championship. There is<br />

now a rule that a fighter can only<br />

win one Lonsdale belt outright<br />

in the same weight division so<br />

Henry’s record is obviously safe.<br />

It should not be forgotten that<br />

Cooper was also awarded the<br />

OBE and was the first and at the<br />

time of writing the only British<br />

boxer to be knighted.<br />

Henry did not fight in America<br />

but did venture abroad on five<br />

occasions boxing in countries<br />

like Sweden, Germany (three<br />

times) and Italy.<br />

Cooper who was managed by<br />

Jim Wicks punched for pay<br />

ranks for the first time on the<br />

14th September 1954 at the<br />

Harringay Arena in London<br />

against opponent Harry Painter<br />

and quickly gained a victory in<br />

the opening session by way of<br />

a knockout in a bout set for six<br />

rounds. The curtain finally came<br />

down on Henry’s career at the<br />

Empire Pool Wembley London<br />

on the 16th March 1971 when he<br />

lost his British, Commonwealth<br />

and European titles to Joe<br />

Bugner on points over fifteen<br />

rounds. Henry thus compiled a<br />

record of fifty five bouts with<br />

forty win’s fourteen defeats<br />

and one draw. Cooper crossed<br />

gloves with notable opposition<br />

such as Muhammad Ali (twice)<br />

Ingemar Johansson, Floyd<br />

Patterson, Zora Folley (twice),<br />

Karl Mildenberger, Joe Erskine<br />

(five times) Brian London (three<br />

times) Joe Bygraves (twice)<br />

Dick Richardson (twice) Piero<br />

Tomasoni, Jose Urtain, Jack<br />

Bodell (twice) Johnny Prescott,<br />

Billy Walker and Joe Bugner.<br />

Henry who was born on the 3rd<br />

May 1934 and died on the 1st<br />

May 2011 was a credit to British<br />

boxing and indeed sport in<br />

general and was known to the<br />

fan’s has our Enry.<br />

Yoga Do’s and Dont’s<br />

Jacqui Sinclair has been<br />

teaching yoga in the Bury St<br />

Edmunds area for ‘ages’ and is<br />

keen to promote the benefits of<br />

a regular practice to all.<br />

This monthly piece will feature<br />

basic answers to some of the<br />

many YOGA comments and<br />

questions that get asked by<br />

beginners and pre-beginners<br />

alike!<br />

The beauty of a yoga practice<br />

is that there are a myriad of<br />

teachers and lineages out there,<br />

so there truly is something for<br />

everyone. I would encourage<br />

everyone to try different<br />

classes until a style or a teacher<br />

resonates with you.<br />

One comment that I hear often<br />

is ‘I tried yoga once, but I wasn’t<br />

flexible enough so I don’t think<br />

it’sfor me’.<br />

Flexibility is only one part of<br />

many areas of exploration within<br />

a yoga practice. For many of<br />

us, it feels like the most obvious<br />

‘restriction’ that we encounter<br />

when we first go to a class, and<br />

if we are mentally rigid in our<br />

approach too, we may go no<br />

further. Lacking flexibility can<br />

feel like the practice<br />

is an impossible feat<br />

of trying to move with<br />

the hand brake on. Looking<br />

simply at just the biomechanical<br />

objectives of our yoga practice,<br />

it would be best summarised<br />

as to bring balance inthe body<br />

between stability and flexibility –<br />

working on optimum integration<br />

of both, for our own individual<br />

anatomy.<br />

All aspects of the<br />

practice are worked on<br />

gradually, incrementally<br />

and progressively.<br />

If we think about the number<br />

of years we have been ‘doing<br />

that life stuff’ that we do, with<br />

all the repetitive patterns of<br />

movement and behaviours, it<br />

would be unrealistic to expect<br />

to reverse that in a few classes.<br />

Plus our practice doesn’t happen<br />

in a life vacuum, as when we<br />

step off the mat, we often go<br />

back to all the movements and<br />

patterns of living and doing that<br />

build that restriction up in the<br />

first place. It is worth noting<br />

that anatomically we are all<br />

very different, so optimum<br />

flexibility for you may well be<br />

significantly different from<br />

the person on the mat next to<br />

you. Props (blocks, cushions,<br />

bolsters and so on) can assist<br />

in your practice being safe and<br />

progressive, rather than feeling<br />

impatient and aggressive. Using<br />

props can indicate an advanced<br />

practice technique (as it<br />

shows awareness) rather than<br />

feeling like using stabilisers on<br />

a bike….your practice can feel<br />

challenging, but it shouldn’t<br />

feel like a battle with your own<br />

body.<br />

How to try the pose:<br />

1. Stand in Tadasana (Mountain Pose) next to a wall<br />

with your feet hip-width and parallel to each other.<br />

Ideally, you will stand forearm distance from the wall.<br />

So, as you stand in Tadasana with the wall on your<br />

right side, turn to the right and press your right palm<br />

into the wall-from wrist to elbow, your forearm should<br />

be parallel to the ground. Adjust your distance to the<br />

wall accordingly and turn your torso back to center.<br />

2. Bend your knees into a full squat, with your<br />

buttocks sitting on your heels. If you’re not able to get<br />

the heels fully on the floor, squat with the heels raised<br />

on a thickly folded blanket or sandbag.<br />

3. Swing your knees slightly to the left. As you exhale,<br />

turn your torso to the right and press both hands into<br />

the wall. As your left hand presses into the wall, the<br />

elbow should press against the outside of your right<br />

knee. Support the pose by using your right hand for<br />

leverage-the right hand will be high and the left hand<br />

will be low. For the full pose, it’s necessary to close<br />

any space between the left side of the torso and the<br />

tops of the thighs. So work the back of the left arm<br />

down the leg, moving the back of the left shoulder<br />

toward the outside of the right knee.<br />

4. Press the knee and arm (or shoulder) firmly against<br />

each other. Use this pressure to lengthen the left side<br />

of your torso out of the inner groins, sliding it along<br />

the tops of the thighs. There’s a tendency in these<br />

deep twists to harden the belly, so try to keep your<br />

belly soft.<br />

5. Keep the right hand on the wall or bring the palms<br />

together with the elbows angled sharply away from<br />

each other. Use the pressure of the palms to increase<br />

the twist.<br />

6. Stay in this pose for 30 seconds to a minute.<br />

Release the twist with an exhalation, then repeat for<br />

the same length of time to the left.<br />

Deepen the Pose:<br />

To increase the twist, use the bottom arm (the one<br />

wrapped around the legs) to pull down on the top<br />

arm.<br />

Follow Up Poses:<br />

Pasasana is usually performed near the end of a<br />

long seated-twist sequence, though it could be used<br />

as a warm-up for twists like Ardha Matsyendrasana<br />

(Half Lord of the Fishes Pose) and Marichyasana III<br />

(Marichi’s Pose, variation III).<br />

the car and adjust the shock bar<br />

There’s then a fabric loop to<br />

locking arms and allows you to<br />

line these up with the ISOFIX<br />

you use the ISOFIX insertion<br />

away from the car seat, then<br />

Blueberry<br />

Pancakes<br />

With Pancake Day on 5 th and<br />

Mother’s Day on 31 st March, sharpen<br />

up your pancake skills.<br />

Light, fluffy and fruity, these pancakes are<br />

a US classic. Serve them stacked high with<br />

syrup and extra fruit<br />

1. Mix together 200g self-raising flour, 1<br />

tsp baking powder and a pinch of salt in<br />

a large bowl. and beat 1 egg with 300ml<br />

milk, make a well in the centre of the dry<br />

ingredients and whisk in the milk to make<br />

a thick smooth batter. Beat in a knob of<br />

melted butter, and gently stir in half of the<br />

150g pack of blueberries.<br />

2. Heat a teaspoon of sunflower oil or small<br />

knob of butter in a large non-stick frying<br />

pan and drop a large tablespoonful of the<br />

batter per pancake into the pan to make<br />

pancakes about 7.5cm across. Make three<br />

or four pancakes at a time.<br />

Ingredients<br />

• 200g self-raising flour<br />

• 1 tsp baking powder<br />

• 1 egg<br />

• 300ml milk<br />

• knob butter<br />

• 150g pack blueberry<br />

• sunflower oil<br />

• or a little butter for cooking<br />

• golden or maple syrup<br />

3. Cook for about 3 minutes over a medium<br />

heat until small bubbles appear on the surface<br />

of each pancake, then turn and cook<br />

another 2-3 minutes until golden and erve<br />

with golden or maple syrup and the rest of<br />

the blueberries.<br />

2. On a large sheet of nonstick baking paper,<br />

roll out the dough to a 30cm circle, 5mm thick.<br />

3. Transfer the dough and paper to a baking<br />

tray. Bake for 10-12 mins, until just golden. Cool<br />

on the tray for 10 mins, then transfer to a wire<br />

rack to cool.<br />

4. Put the royal icing sugar in a bowl, add 2<br />

tbsp water and whisk until combined. Add<br />

more water, a drop at a time, until the icing<br />

holds a soft peak.<br />

Just for mum on Mother’s Day...<br />

Rustle up this delicious treat for Mother’s<br />

Day. Classic shortbread with a zesty<br />

twist, decorated beautifully with sweet<br />

royal icing – an easy baking idea that’s<br />

sure to go down well.<br />

Ingredients<br />

• 150g plain flour, sifted<br />

• 100g unsalted butter softened and diced<br />

• 50g caster sugar<br />

• 1 orange, zested<br />

For the icing:<br />

• 250g royal icing sugar<br />

5. Transfer a quarter of the icing to a small<br />

bowl. Cover and set aside.<br />

6. Add a few drops of orange food colouring to<br />

the large bowl of icing; mix well. Spoon a little<br />

into a piping bag fitted with a medium round<br />

nozzle, then pipe a broken outline around the<br />

edge of the shortbread.<br />

7. Add a little water to the remaining orange<br />

icing to make it slightly runny.<br />

8. Pipe 8 orange segments onto the biscuit,<br />

filling them in with the icing.<br />

9. Add a little water to the reserved white icing<br />

to make it slightly runny. Pipe a smaller white<br />

triangle inside the orange segments, adding a<br />

dot at the point of each.<br />

10. Drizzle with more orange icing to decorate.<br />

Leave to set for 4-6 hrs. Slice into pieces.<br />

Method<br />

1. Preheat the oven to gas 4, 180°C, fan 160°C.<br />

Combine the flour and butter in a bowl and rub<br />

together with your fingertips until the mixture<br />

resembles breadcrumbs. Add the sugar and<br />

orange zest, then knead until it forms a soft<br />

dough.<br />

ADDITIONAL INFORMATION:<br />

Bake according to the recipe but stop before<br />

adding decoration. Allow to cool completely.<br />

Wrap well in clingfilm and tin foil (to prevent<br />

freezer burn) and freeze for up to 3 months.<br />

Aromatised and Low Alcohol<br />

Wine’s<br />

Historically these came about as a result of finding ways of making a plain<br />

or poor quality wine more interesting or covering a sour tasting wine.<br />

by adding alcohol. Some of the flavourings<br />

can include wormwood, Bitter orange,<br />

rhubarb, aloe, thyme and cinnamon etc.<br />

Initially this was achieved by mearly adding<br />

honey or spices. The most famous are<br />

Vermouths.<br />

Vermouth...<br />

The title comes from the use of the a herb<br />

called wormwood or Vermut from the german<br />

name.<br />

They can be flavoured by many substances<br />

mostly herbs and spices but also can be<br />

sweetened by adding sugar and also fortified<br />

Location...<br />

Vermouth country came from the foothills<br />

of the Alps, on both sides of the French and<br />

Italian borders, mainly around Turin. Both<br />

French and Italian Vermouth is now<br />

mostly made in Italy, but some remaining<br />

in France.<br />

French Vermouth...<br />

This is mainly dry and white. The wine is<br />

fortified and then left in open casks to<br />

weather for up to two years. Much of the wine<br />

comes from Languedoc and Chambery. Sweet<br />

French Vermouth can have 15% or more sugar.<br />

Italian Vermouth...<br />

The palest and driest having only about 4<br />

% sugar but some sweet ones can go up to<br />

about 20% sugar.<br />

Making Vermouth...<br />

After making a base wine in the normal<br />

way, clearing and filtering as required it is<br />

placed in a tank for addition of the aromatic<br />

ingredients. The ingredients are prepared by<br />

maceration, infusion (like tea), perculation and<br />

spirit, if fortified. These are added with sugar,<br />

if needed and dissolved in the tank by the use<br />

of agitating paddles etc. If a red vermouth is<br />

needed then caramel can be added.<br />

This is then stirred for about 2 days in the<br />

tank which is sealed. Stabilisation<br />

is required where the wine is<br />

refrigerated at 8 to 9 C for up<br />

to 10 days to make it clear.<br />

If pasteurisation is needed<br />

this is achieved by raising th<br />

temperature to about 75C<br />

for 12 minutes.<br />

This can then be aged for up to<br />

six months and sold as required.<br />

They do nit require bottle ageing to<br />

mature.<br />

Vins Du Naturel...<br />

Mostly coming from France, they are made<br />

in a similar fashion to Port where the<br />

fermentation is stopped to retain sugar.<br />

The difference is that these are mainly French<br />

and use the Muscat grape for whites and the<br />

Grenache grape for reds.<br />

Two of the most famous ones are Muscat de<br />

Frontignon for white and Rivesaltes for red.<br />

Low Alcohol Wine..<br />

A low alcohol wine can be defined as a wine<br />

with a lower that normal alcohol content.<br />

So what is Normal ? Normal wines have an<br />

alcohol content ranging between 7 % and 15%<br />

alcohol content, without fortification.<br />

There are a number of wines falling into the<br />

Set in the midst of the Norfolk<br />

broads, made up of small<br />

market squares and winding<br />

streets you will find the quaint<br />

town of Beccles.<br />

Adjacent to the large bell<br />

tower sits The Swan House,<br />

an independently owned inn.<br />

This Tudor building is full of<br />

character and marries style<br />

with tradition.<br />

Upon arrival we are shown to our room, and<br />

what an entrance it is, as we pass through<br />

a candlelit courtyard, strewn with vines and<br />

greenery. Standing at the heavy oak door<br />

of ‘William’s Room’, complete with bespoke<br />

swan shaped door handles, it opens to<br />

reveal a cosy hideaway - both elegant and<br />

traditional.<br />

There are five rooms, all of which combine<br />

work from local craftsmen, painters and<br />

artists, and each one named after a previous<br />

owner or resident of the building.<br />

The Swan House is completely dog friendly;<br />

so on this occasion our Norfolk Terrier Archie<br />

joined us. Needless to say he was very excited!<br />

Food & Drink…<br />

As we head down for dinner the place is<br />

buzzing. There is a real feel of warmth and<br />

merriment on this Friday evening.<br />

Behind the business...<br />

Owners of The Swan House, Gordon and<br />

Lesley Dumphie, recently took over the<br />

business at the end of last year, but this isn’t<br />

Lesley’s first time here, after having a previous<br />

business in the building over 20 years ago.<br />

It’s clear the couple’s passion is at the heart<br />

of The Swan, they have spent time perfecting<br />

the new menu, restoring the relaxed and<br />

comfortable bar and eating area, and overall<br />

creating a homely feel throughout.<br />

I take my seat at the table and a voice behind<br />

me declares, “This is the best chocolate<br />

mousse I’ve ever had”, a good sign for things<br />

to come.<br />

The menu offers an assortment of light<br />

bites and sharing platters, it’s a great way to<br />

explore more dishes especially with friends.<br />

We ordered the Cheese Croquettes with<br />

Paprika Mayonnaise, Garlic Fried Mushrooms,<br />

Batata Hara with Garlic, Warm Spices, Fresh<br />

Herbs and Lime, Assorted Mushrooms &<br />

Blue Cheese Melts On Tiger Bread and the<br />

Houmous, Tapenade, Roasted Vegetables,<br />

Tomatoes & Curried Bread. It was a feast<br />

fit for a king with the freshest and highest<br />

quality ingredients.<br />

To finish, I just had to try the<br />

Chocolate Mousse (that was<br />

still getting echoes of praise<br />

from around the room). To<br />

back up the gentleman<br />

behind me, it was the best<br />

chocolate mousse I’d had,<br />

complete with a surprise<br />

cherry at the bottom of the<br />

dish.<br />

At the end of the meal we were<br />

lucky enough to meet head chef,<br />

Maria. She had a real enthusiasm for food and<br />

absolutely loved her job at The Swan.<br />

As things were winding down for the evening,<br />

we retired to our room. After a cup of coffee<br />

and with a book in hand from the well stocked<br />

‘in room’ library we enjoyed some much<br />

sunbathe!<br />

explore the Beccles Marshes.<br />

There is also the Beccles Public Hall, which<br />

holds regular performances for the theatre<br />

and music lover.<br />

Events throughout the year include the<br />

Beccles Antiques Street Market and the<br />

Beccles Food and Drink festival, both in May.<br />

Plus, the town has its very own carnival in<br />

August.<br />

This Blood Orange Gin and Tonic<br />

recipe is a vibrant, sweet and citrusy<br />

cocktail!<br />

Gin and tonics are one of our go-to<br />

drinks and adding that seasonalsplash<br />

of blood orange juice really<br />

hits the spot.<br />

And best of all, it screams out to<br />

celebrate beautiful citrus while it<br />

lasts.<br />

Ingredients<br />

• 1 1/2 ounces (45ml) gin<br />

• 2 ounces (60ml) fresh blood orange<br />

juice *<br />

• couple dashes orange bitters<br />

• 4 ounce (120ml) tonic water<br />

* you can substitute regular oranges or orange juice.<br />

Method<br />

1. Fill a highball glass with ice. Add gin,<br />

blood orange juice, and orange bitters.<br />

BY THE ANGRY WAITER<br />

2. Top with tonic water and gently stir.<br />

Garnish with a blood orange slice and<br />

serve.<br />

Method<br />

1. Heat the oven to 200˚C/Gas 6.<br />

2. Put the peppers in a baking dish, toss with a<br />

little oil to coat, and season with salt and pepper.<br />

Roast in the oven for about 20–30 minutes,<br />

depending on size, while you make the filling.<br />

3. Heat 2 tablespoons of oil in a medium-sized,<br />

heavy-bottomed saucepan. Add the onion. Fry on<br />

a low heat for 10 minutes, stirring now and then to<br />

stop it catching. Meanwhile, rinse the quinoa well in<br />

a sieve under cold water.<br />

Quinoa is a seed first cultivated in South America<br />

that comes in three varieties: white, red and<br />

black – they each give a different flavour and look<br />

to dishes. Quinoa’s low-key, slightly nutty taste<br />

absorbs spices well. Here we’ve used smoky sweet<br />

paprika and Wootton White, a British-made fetastyle<br />

cheese – but use any salty sheep’s cheese<br />

you like. Depending on the size of your peppers,<br />

you might have a little of the quinoa leftover to<br />

use in lunchbox salads.<br />

Ingredients<br />

• 2 large or 3 smaller red peppers, cut in half<br />

lengthways, seeds and membranes removed<br />

• 3 tbsp sunflower or light olive oil, for roasting<br />

and frying<br />

• 1 onion, finely chopped<br />

• 100g quinoa<br />

• 1 garlic clove, finely chopped or crushed<br />

• 1/4–1/2 tsp smoked paprika, depending on how<br />

4. After the 10 minutes, add the garlic and quinoa<br />

to the onion. Cook, stirring, for 2 minutes. Add<br />

the smoked paprika, tomatoes and half a tinful of<br />

water. Season with salt and pepper. Bring the pan<br />

to a low boil, then cook for 15 minutes, stirring<br />

regularly.<br />

5. Keep a good eye on the liquid and the heat; you<br />

want the quinoa to absorb the liquid so you’re left<br />

at the end with a risotto-like consistency, but not<br />

for the pan to boil dry – add a splash more water<br />

if needed.<br />

6. Once the quinoa has cooked, remove from the<br />

heat.<br />

7. Take the peppers out of the oven, fill their<br />

cavities with the quinoa mixture and return them<br />

to the oven for 5 minutes to warm through.<br />

8. Remove the dish from the oven.<br />

9. Divide the peppers between serving plates,<br />

crumble over some of the cheese and scatter over<br />

the parsley.<br />

diced fresh tomatoes, peeled if you prefer<br />

• 150g Wootton White or other salty vegetarian<br />

sheep’s cheese<br />

• Small bunch of parsley, finely chopped<br />

John Brunton<br />

a Norwich Soap Opera<br />

Descended from King<br />

James II of Scotland,<br />

John Brunton was born<br />

in Norwich 1741 to soap<br />

maker John Brunton.<br />

At this time Norwich as a<br />

City was undergoing great<br />

changes and most industries<br />

were expanding and wealthy<br />

merchants such as John<br />

Brunton Snr were supplying<br />

soap to the textile industry<br />

at a time when in 1747 the<br />

smallpox plague hit Norwich.<br />

Brunton Snr like all other soap<br />

makers in the city paid a very<br />

high tax levy and the law of<br />

the land was very clear that<br />

soap had to be produced in<br />

batches that were no more<br />

than a ton in weight and the<br />

containers were locked away<br />

over night by tax collectors<br />

so that no illegal production<br />

could take place as soap at<br />

that time was classed as a<br />

luxury item.<br />

There is evidence to state<br />

that John was educated at<br />

Norwich Grammar School<br />

under the care of Reverend<br />

James Wilton, Prebendary of<br />

Bristol Cathedral.<br />

John took a keen interest in<br />

everything theatrical and he<br />

would visit the White Swan<br />

Inn which was known as<br />

the White Swan Playhouse.<br />

The Norwich Company of<br />

Comedians used the Inn as<br />

a kind of head office, but<br />

they also used The Assembly<br />

Rooms and a theatre based<br />

near Chapelfield.<br />

With his education<br />

completed, John was<br />

employed under a sevenyear<br />

apprenticeship with<br />

a wholesale grocer. Once<br />

completed John set up as<br />

a tea dealer and grocer in<br />

Drury Lane, London. He<br />

soon became friends with<br />

Mr J Younger of the Covent<br />

Garden Theatre and in April<br />

1<strong>77</strong>4 John was afforded a part<br />

in a performance of ‘Cyrus ‘for<br />

Younger’s charity benefit.<br />

John gave up his business<br />

after he became known<br />

as ‘the young gentlemen<br />

who played Cyrus’.<br />

John was now being<br />

considered as a talented<br />

actor of Shakespearean<br />

roles. His children, Elizabeth<br />

in 1<strong>77</strong>1, Sophia in 1<strong>77</strong>3 and<br />

John Robert in 1<strong>77</strong>5 were all<br />

born at John’s new address<br />

at St Martins-in-the- Fields,<br />

Westminster. But, in 1<strong>77</strong>5,<br />

John decided to return<br />

to Norwich to live and to<br />

perform.<br />

Harriet was born on the 23rd<br />

December 1<strong>77</strong>8. Fellow actor<br />

John Bernard said of him ‘our<br />

leading tragedian and one of<br />

the best Shylocks I have ever<br />

seen’.<br />

Then, at the height of his<br />

acting career in 1780 he<br />

moved to Bath for the next<br />

five years. Daughter Louisa<br />

was born in the February of<br />

1785.<br />

All John’s children prospered<br />

in the theatre. John set up the<br />

Norwich Theatrical Fund in<br />

1791 ‘for the relief of sick and<br />

decayed actors who had been<br />

members of the Norwich<br />

Company.’<br />

John moved his family back<br />

to Norwich and took over<br />

the Norwich Company of<br />

Comedians where the lease<br />

was transferred over to him<br />

and on 01 January 1789 he<br />

received a standing ovation<br />

from the rapturous crowd.<br />

Have a Twiggle-tastic time at BeWILDerwood!<br />

BeWILDerwood, at Hoveton in the heart of<br />

the Norfolk Broads, is a unique adventure<br />

park. Based on the magical world of ‘A Boggle<br />

at BeWILDerwood’, created by author Tom<br />

Blofeld, it’s a huge forest of family fun and<br />

[B] Benzoyl Peroxide<br />

This is an ingredient that<br />

is found in almost every zit<br />

zapper concoction.<br />

It’s considered the most effective over-thecounter<br />

choice for a topical antibacterial<br />

agent in the treatment of acne.<br />

One of its main attributes is its ability to<br />

penetrate into the hair follicle to reach the<br />

bacteria that cause the problem, and then<br />

kill them-with a low risk of sensitivity.<br />

Because Benzoyl peroxide primarily works<br />

as an antimicrobial this means it works to<br />

kill acne-causing bacteria and is great for<br />

treating papules and pustules (those larger,<br />

inflamed bumps) because they tend to<br />

have more bacterial overgrowth.<br />

But if you’re dealing with blackheads you<br />

need a different topical ingredient such as<br />

salicylic acid.<br />

However, one of the common side effects<br />

of benzoyl peroxide is dry skin. Nearly<br />

every acne treatment causes some amount<br />

of dryness, but benzoyl peroxide can<br />

really be an irritant and it’s common to see<br />

peeling, flaking, redness, irritation and sore<br />

skin. Look for a low strength such as 2.5%.<br />

It can be much less of a problem and just<br />

as effective as its stronger versions.<br />

The most common mistake people make<br />

with most acne and spot solutions is<br />

simply overusing them, either too often or<br />

too much. We know you’re desperate to<br />

get that clear skin you see on Instagram<br />

but when your products are overused,<br />

they’ll just overly dry or irritate the skin,<br />

leading to more breakouts as you destroy<br />

the skin’s natural protective layers.<br />

[B] Bromelain<br />

A more gentle alternative to Benzoyl<br />

Peroxide that I’d suggest you look for,<br />

particularly for younger skins, is Bromelain.<br />

It’s an extract from pineapple that contains<br />

natural enzymes that break down proteins<br />

such as keratin, (which forms your skin<br />

and hair), and helps to provide a deepdown<br />

exfoliation while providing powerful<br />

anti-inflammatory action benefits, making<br />

it perfect for problem skin. Pineapple<br />

processing plants require their staff to<br />

wear masks and gloves because of the<br />

proteolytic nature of the fruit.<br />

You will often find it twinned with its fruity<br />

pal, Papain which is found in Papaya.<br />

The potency of these digestive<br />

Vata<br />

Vata is defined in Ayurvedic literature by the elements air<br />

and ether. These elemental effects dry and age skin, so the<br />

most vital part of a Vata skincare regime is moisturising.<br />

As one would imagine with the elements air and ether,<br />

Vata types tend to spend, or dissipate, their energy rather<br />

than store it. A balanced Vata type is full of creativity and<br />

vitality, but when unbalanced, Vata types can suffer from<br />

hyperactivity, fear and anxiety and indigestion, as well as<br />

dry and uneven skin tone.<br />

Pitta<br />

Pitta is ruled by the element fire. Generally disciplined<br />

and logical, this ‘heat’ frequently manifests as ambition,<br />

Pitta types are born leaders, managing and controlling<br />

their energy strategically. When in a state of balance, Pitta<br />

types have positive attributes such as charisma, focus,<br />

intelligence, a quick wit and contentment, but when out of<br />

balance, excess Pitta can accumulate as irritability, a ‘hot’<br />

temper and unprovoked bouts of aggression.<br />

You may find that you fall between two<br />

doshas, this is ok, you may need to use a<br />

combination of ranges to achieve the results<br />

you need. I like to see it as a chance to<br />

experiment and change things up.<br />

an age old system into modern practices.<br />

Kapha<br />

SPRING ARRIVES... FINALLY!<br />

Kates Top Tip : Feed trees, shrubs and<br />

hedges with a balanced fertiliser.<br />

Spring usually arrives by mid-<br />

March and the frequent sunny<br />

days provide the opportunity for<br />

an increasing range of gardening<br />

tasks.<br />

It’s time to get busy preparing seed beds, sowing<br />

seed, cutting back winter shrubs and generally<br />

tidying up around the garden, which I cannot<br />

wait for!<br />

Although they seem short lived, deadhead the<br />

flowers of Narcissus (daffodils) as they fade, but<br />

allow the foliage to die down naturally.<br />

Pots and tubs benefit from topping up with fresh<br />

John Innes compost. Old compost can be removed<br />

and replaced with new if there is not much room for<br />

topping up.<br />

It’s good to also plan ahead, you may wish to get<br />

your sweet pea wigwam growing supports ready. In<br />

mild areas, you can transplant young plants to the<br />

feet of the wigwam, using a light twine to tie them in.<br />

Mow established lawns if the weather is mild enough<br />

and the grass shows signs of growth. Ensure the first<br />

cut of the season is light, you can raise the blades<br />

to achieve this. Any bare patches of grass can be<br />

re-sown at the end of the month.<br />

regularly altered for variation and<br />

suitable for complete novices to the<br />

harness and rope fills you with dread then fret<br />

not, the walls at Avid are 4.5m tall with a heavily<br />

padded floor to help cushion any prompt landing.<br />

Green through Black, Blue, Red, Orange, Yellow<br />

and the expert Purple.<br />

Bouldering is a form of rock climbing that is<br />

performed on small rock formations or artificial<br />

rock walls, known as boulders, without the use<br />

of ropes or harnesses.<br />

It was originally just a form of training for<br />

roped climbs and mountaineering, but its<br />

popularity has seen it recognised as a<br />

sport in its own right now with national<br />

As a novice climber, I joined one of the induction<br />

classes which is certainly recommended for<br />

anyone new to Avid or the sport.<br />

Natasha (centre co-manager along with Mark)<br />

led our induction class and gave us a tour of<br />

the centre which features a number of walls at<br />

various degrees (literally) of difficulty and their<br />

various routes with the coloured holds, there<br />

really is a fantastic range.<br />

My class included a number of children, some as<br />

young as 8, who, will a little encouragement and<br />

qualified instruction, were soon making rapid<br />

progress up and down the walls. I too, once I<br />

found my feet, got to grips with the challenges<br />

and soon found myself taking on greater degrees<br />

of difficulty.<br />

The hour long class allowed us to sample every<br />

wall in the centre giving us a great experience of<br />

all the options whilst importantly teaching us how<br />

to use the centre safely and responsibly ensuring<br />

that we and all the other present members get<br />

the most out of our climb sessions. We were then<br />

fully inducted and allowed to continuing climbing<br />

to our heart’s content or arm’s fatigue (as a first<br />

visit, certainly the latter), thankfully the excellent<br />

on site cafe with great coffee and delicious,<br />

locally sourced, cakes and snacks is on hand to<br />

refuel your weary limbs. That being said you’re<br />

often too busy concentrating on your route and<br />

which hold to go for you don’t even consider the<br />

physical workout, it’s a truly fantastic exercise for<br />

body and mind.<br />

Our county’s geography means that climbing<br />

opportunities are somewhat limited but thanks<br />

to Avid you can try it out in a quality and safe<br />

VASHTI ANNA<br />

MUSIC<br />

Vashti Anna is one of the world’s<br />

leading composers specialising in<br />

VR Film & documentary.<br />

With clients ranging from United Nations,<br />

Sky, National Geographic and Google, her<br />

work has provided the score for some of<br />

the VR industry’s stand-out immersive<br />

documentaries, featuring at Cannes Film<br />

festival and Sheffield Documentary Festival.<br />

As well as traditional TV and commercial<br />

composition with awards from Lloyds Bank<br />

and Vodafone.<br />

Vashti’s writing style and voice is highly<br />

distinctive and emotive. Described as<br />

“Absolutely Stunning” by Janice Long,<br />

BBC Radio 2, and “A touch of class” by The<br />

Independent.<br />

Growing up in Southwold, Suffolk, Vashti<br />

began performing and songwriting at the<br />

age of 10.<br />

By 19 she’d moved to London to work at<br />

the prestigious Angel Recording Studios -<br />

working alongside the UK’s top composers,<br />

arrangers, engineers and songwriters, fully<br />

inspired, she began gigging the London<br />

circuit to hone her craft.<br />

In the years to follow Vashti has toured<br />

extensively throughout the UK, Ireland,<br />

Europe and the U.S.<br />

She is known for her spell binding<br />

performances and mesmerizing vocals<br />

which have lead to her being featured on<br />

recordings by Ed Sheeran, Tom Baxter,<br />

Charlie Winston, Crystal Fighters - to name<br />

a few.<br />

Now living in North London Vashti has<br />

recently completed a UK tour and is<br />

recording her debut album as well as<br />

continuing to write music for film.<br />

Later this year you can watch Vashti in a<br />

brand new Warner Brothers TV series called<br />

“Pennyworth” with her interpretation of a<br />

classic John Cale song “Fear is a man’s best<br />

friend”.<br />

SPRING IS ON ITS WAY...<br />

Bored of the same old dog walks<br />

around East Anglia?...<br />

Me too! So this month I have come up with my top<br />

doggy places to visit with your four legged friend!<br />

Who doesn’t love a good walk?<br />

Thetford Forest<br />

The walks all start at High Lodge varying from pine<br />

trees to heathland. On return there’s taps and dog<br />

bowls to provide fresh water for your weary pooch.<br />

Walberswick<br />

If you’re a fan of sandy beaches and crabbing<br />

this is the walk for you. The best news is that on<br />

Walberswick beach, dogs are permitted all year<br />

round.<br />

Rendlesham Forest<br />

Just a short distance outside Woodbridge,<br />

probably the most dog friendly town in the region,<br />

Rendlesham has a variety of walking trails.<br />

Lavenham<br />

Start from the church, head towards Portland<br />

Lane, turning left at Park Road. Pick up the lane<br />

where the walk begins following the stunning<br />

disused Lavenham to Long Melford railway line.<br />

Southwold<br />

My favourite place to play off season, with plenty<br />

of dog friendly shops! But from 1st April to 30th<br />

September we are banned from the beach! Uff!<br />

Dunwich<br />

The best of both all year walking on the shingle<br />

beach and then into the forests! Stop at Dingle Hill<br />

tea rooms for a pit stop! Also dog friendly!<br />

Dedham<br />

Away from the popular tourist destination of the<br />

Mill, amble around the Essex Way walk which<br />

through picturesque fields of Dedham Vale and<br />
