Moscato
Moscato refers to the Italian style produced
from Muscat family of grapes, and often
exhibits pretty floral and confectionary
sweetness. Depending on the producer, you
will sometimes have a light frizzante or
sparkle to the wine and they always have a
low alcohol content.
ine
Riesling
Riesling is an aromatic and fruity variety
that ripens late in the growing season yet
retains high levels of natural acidity.
Widely planted around the world, and
producing a great range of wines in many
styles, Riesling excels in cooler climates
where it can have a very fresh lemonlime
and green apple fruit character.
Apart from France, Sauvignon Blanc is
multiple regions of Australia, New Zealand
favourite with the variety topping bottled
white wine sales year after year.
Mud House Sauvignon Blanc
Tatachilla Sauvignon Blanc
Bordeaux is the home of the white blend,
with Sauvignon Blanc and Semillon being
most prominent. In Australia we have a
great range of Classic White blends
coming from a multitude of regions,
making this style of wine both versatile
Chardonnay
Chardonnay has the ability to thrive in a wide
variety of climates and absorb almost any
wine-making input. This has been key to its
rise in popularity over the last 40 years and
there is a consumer swing back to this
versatile and delicious varietal.
Pinot G
Pinot Gris and Pinot Grigio are the
same grape, Gris and Grigio are
respectively, the French and Italian
words for Grey. Never one to promote
Rose
Rosé has a long and diverse history and is
enjoying a resurgence as a versatile aperitif
and food wine. Driven by the winemaking of
Provence there has been a shift away from
sweeter wines and back to the classic dry
and savoury styles.
Pinot Noir
No other grape elicits such emotion or
devout worship among its enthusiasts.
Perhaps Pinot Noir owes its devoted
following to the fact that it is such a
difficult grape to cultivate and,
therefore, finding a good bottle of Pinot
Noir is such a rare and notable event.
Blended wines allow winemakers to
combine and complement favourable
years, there has been a shift towards cooler
climate expressions, paired with more balance in
oak use, lower alcohol levels and higher acidity.
BEER LINES
STANDARD
BEER TAP
GAS
REGULATOR
1 - KEG COUPLER
ROLE
IN SYSTEM
Engages the keg valve & allows liquid to leave the keg & travel to the tap.
Allows beer gas to enter the keg & push the beer along the lines to the tap.
MAINTENANCE
Should be completely dissembled every 90 days, cleaned & serviced.
Should be soaked in beer line cleaning solution every 14 days
when beer lines are cleaned.
TROUBLE
SHOOTING
There are 3 washers that need to be checked:
- Bottom seal washer which seals the coupler to the keg head.
- 2 x Internal washers used to seal the keg probe.
If these degrade it will lead to pressure changes & FOAMING BEER. No Beer:
- Check that coupler is ENGAGED!
100PROOF by PARAMOUNT NSW 25

2 - BEER LINES
ROLE
IN SYSTEM
MAINTENANCE
TROUBLE
SHOOTING
Allows beer to flow from the keg to the beer tap.
Made from different materials depending on the type of beer system.
Should be cleaned at a minimum every 14 days using an industry standard beer
line cleaner & flushed with cold water prior to dispensing beer.
For problematic or poorly maintaine beer lines increase the cleaning frequency to
once a week, if problems persist contact a draught beer system technician.
Poorly cleaned beer lines will lead to dispensing issues & off flavoured beer.
Beer lines used to pour wine or cocktails on tap will have to be replaced should
the venue want to pour beer through these lines again (flavour of previous
product will remain in the lines).
Beer lines are made from porous material, the aroma from any food items stored
in keg cool room will seep through the lines & into the beer.
3 - STANDARD TAP
ROLE
IN SYSTEM
MAINTENANCE
TROUBLE
SHOOTING
Connects to tap shank (font or wall mounted).
Controls the flow of beer through line & into serving vessel.
Should completely dissembled every 14 days, cleaned & serviced.
Cleaned with pipe cleaner & soak in beer line cleaning solution whilst
cleaning lines.
Check washers & gaskets next to tap handle & internal shaft, when these
degrade they cause pouring problems.
4 - GAS REGULATOR
ROLE
IN SYSTEM
MAINTENANCE
TROUBLE
SHOOTING
Connects to the gas bottle.
Comes with 2 gauges:
- 1 gives a reading for the amount of gas in the gas bottle.
- 1 tells you the applied gas pressure used to dispense beer.
There is a O-Ring which seals the regulator to the gas bottle, this should be
checked every time a bottle is replaced to prevent gas leaks.
Gas pressure levels are normally set by the beer system installer & take into
account a number of factors specific to the system. Gas pressure settings
SHOULD only be changed by a qualified technician.
Check gas contents of bottle, empty gas bottle will lead to either
flat/foaming/ no beer from the tap.
Check gas line is connected to the keg coupler & check that the gas lines
don’t have a leak.
technical information
All of the wines in the 100Proof Untapped program use 30L
KeyKegs, which are 100% recyclable when empty. You can give
your empty KeyKegs to your local recycling processor or email
info@keykeg.com for more information on how best to dispose
of the empty Kegs.
The KeyKeg consists of an average of 30% recycled plastics. In
addition, a KeyKeg saves more than 60% of transport costs and,
in contrast with steel kegs, does not need to be washed with
chemicals. This is partly what makes KeyKeg packaging more
sustainable.
All KeyKegs are fitted with a modified GR coupler. The probe has
been modified so that it works perfectly with the KeyKeg Bag-in-
Ball technology. This technology separates the dispensing gas
from the beverage, ensuring that the wine retains freshness and
guarantees a fresh pour every time.
The KeyKeg’s unique couplers will be issued on the
commencement of your Untapped agreement.
glassware
Glassware is an asset to your business, and needs to be looked
after. Most wine glasses are dishwasher safe, ensure that you
rinse them or give them a light clean in glass scrubber prior to
dishwasher clean.
Once the glasses are dry, they’ll need a polish preferably with a
microfibre polishing cloth, although a clean soft tea towel will
also work well.
TECHNIQUE
- Start by holding the glass by the stem and polishing the base
of the glass.
- Then cup the bowl of the glass and polish the outside of the
bowl in gentle circular motions, then repeat on the inside of
the glass.
- Remember to never hold both the stem and bowl at the same
time, as this will increase the likelihood of snapping the stem
and possibly injuring yourself.
Beer Clean
➞
Beer
CLEAN
➞
A properly cleaned glass will shed water evenly
in unbroken “sheets.”
On a glass with “invisible film”, water will break up
& form “droplets” on the surface of the glass.
2 salt test
NOT
Beer Clean
➞
Beer
CLEAN
➞
In a properly cleaned glass, salt sprinkled on the
interior of a wet glass will adhere evenly.
If not properly cleaned, salt will fall to the bottom
or adhere in a random pattern. Salt will not stick
wherever a greasy film is present.
3 head retention bubble test
NOT
Beer Clean
➞
Beer
CLEAN
➞
A properly cleaned glass will form a thick, tightlyknit,
creamy head. The beer will be sparkling-clear
and free of bubbles. A glass that is not properly
cleaned will have loose, large bubbles (fish eyes)
that will cause the head to disappear within ten to
sixty seconds. Bubbles will visibly rise from the
bottom of the glass & adhere to the sides.
4 lacing test
NOT
Beer Clean
➞
Beer
CLEAN
➞
In a properly cleaned glass, foam will adhere to the
inside of the glass, forming a parallel ring pattern
(lacing) as each sip of beer is taken.
In a glass that is not properly cleaned, foam
(if there is any) will adhere to the glass in a loose,
random pattern — or may not adhere at all.
