producers throughout all Italian regions and expertly selected<br />

It was 1960 when Aldo Carozzi began to market products from the valley.<br />

In the heart of Valsassina, in Ballabio first and then in Pasturo, Carozzi Formaggi<br />

began to manage the production and maturing of cheeses, growing with each<br />

generation and establishing itself abroad.<br />

Carozzi has been committed to combining the precious artisan skills of their cheesemakers<br />

with the adaptation to more modern taste for over 50 years. This has helped them produce a wide<br />

range of unique cheeses, the result of passion and dedication and some lucky guesses, which over the years<br />

Il Fiorino dairy history begins around 1750, when the<br />

Fiorini family establishes itself from the Tuscan-Romagna<br />

Mountains to Roccalbegna, in Maremma. There is where the<br />

transhumance comes from, the annual "pilgrimage" that the<br />

shepherds do with the sheep in search of the best pastures.<br />

Il Fiorino today: The process, which takes place entirely within<br />

the dairy, is still today exclusively artisanal and relies on a careful selection of raw<br />

materials, first on the list is the sheep's milk, which is collected within the<br />

neighbourhood of 30 km from the company. In the case of particular cheeses, such as<br />

raw milk pecorino, and the Riserva del Fondatore, milk collection is even more selective.<br />

The story of Il Fiorino is built with little steps, without losing the humbleness and high values that are<br />

at base of Il Fiorino philosophy and linked with the long dairy experience achieved during all these long<br />

working years. Devotion is recognised by national and international awards, received for the excellence of<br />

their cheeses. Just to mention the last successes with the two Super Gold obtained at the World Cheese<br />

Awards 2018 in Bergen, Norway, with Riserva del Fondatore and Grotta Il Fiorino.<br />

Furthermore golden, silver and bronze for other products such as Pecorino Toscano PDO, Pecorino<br />

Bartarello and Pecorino with Basil Pesto.<br />

Mozzarella di Bufala Campana DOP has ancient origins. In Campania, it is produced since 1100. Here, in<br />

fact, the mild climate and fertile lands have encouraged the breeding of the Buffalos that provide the<br />

Each Caciocavallo is an unique piece completely<br />

handmade and produced only with bovine milk in<br />

the best farms of our territory. It is a niche product<br />

thanks to its long seasoning period of 1 year in an<br />

aerated and dry cave. After this slow phase, all<br />

tasting and smell of Apulia will be concentrated<br />

inside the heart of the product.<br />

Burrata<br />

Burrata is a cow's milk fresh white creamy cheese<br />

with a soft consistency and a delicate taste.<br />

Externally made with a thin fresh rind of pasta<br />

filata mozzarella and filled with cream and<br />

stretched mozzarella.<br />

COMPANY HISTORY<br />

Albiero started producing in 1938 collecting milk from<br />

nearby areas. In 1955 Albiero built the factory in<br />

Montorso Vicentino, in Veneto Region, where Lino Albiero,<br />

the company founder, established his business activity.<br />

The early stages of his activity can be considered handicraft.<br />

The Albiero shake-up was completed in 1984 when they became part of the<br />

Consorzio Provolone Valpadana. Another shake-up took place between 1990-92<br />

when it was decide to take part in a EU project to improve quality and to adopt<br />

the most rigorous controls, starting from the first step of the supply chain.<br />

COMPANY HISTORY<br />

From the tradition and love for cheeses born Casa Madaio, a dairy farm<br />

situated in Campania, in the National Park of Cilento.<br />

Four generations handed down from father to son the techniques of ripening<br />

and producing cheeses. The result is a product not only authentic, but unique.<br />

The cheeses are realized in a natural and passionate way, enriched by the history<br />

of a refiners family, who has been able to protect and preserve his traditions.<br />

PRODUCT HIGHLIGHT<br />

Provolone valpadana is a stringy Italian cheese made from thermised cow's milk. It is produced using the<br />

technique of spinning the curds which is also the way in which mozzarella is made, a method that has been<br />

in use since the middle ages. Provolone valpadana has a generally sweet and delicate flavour which becomes<br />

spicier and more pronounced through age.<br />

There are two types of provolone available: Piccante and dolce.<br />

This Provolone piccante is aged for a longer period of time, giving it a significantly<br />

sharper taste than its younger brother, Provolone dolce.<br />

The word 'mandarone' refers to the shape so the Provolone valpadana, which<br />

resembeles that of a very large tangerine. It is important to note that provolone<br />

valpadana is a DOP product, this stands for Denominazione di Origine Protetta.<br />

<strong>La</strong>yer it with other melty varieties in macaroni and cheese, grilled cheese<br />

sandwiches, and grilled panini. Or serve it in chunks for snacking with jams,<br />

mostarde, salami, and other cured meats. Add a cold beer to the mix and you’re set!<br />

only with grass, hay and certified no GMO feed, it is also<br />

strictly prohibited to use any method to force the production, high attention to<br />

the animal well-being. That is why in their stables they still have animals that<br />

are easily over 10 years of age, uncommon in other type of cattle breeding.<br />

Gennari production started in 1991 and has always tried to be sustainable in respect of the environment,<br />

COMPANY HISTORY<br />

History began in Acerno, south of Italy, in the second half of the 18th century when grandfather Agostino<br />

Villecco decided to visit Sardinia having heard about the excess of sheep milk on the island.<br />

He then made periodical trips to Sardinia during winter times when sheep have just lambed and started<br />

milking, and returning to Acerno in the spring, as the raw materials ran out. This was the way the Villecco’s<br />

family started production in Sardinia of Moliterno, Toscanello, Pecorino Romano and ricotta becoming 100%<br />

Sardinian.<br />

Their production processes are modernized and the company is appreciated in different parts of the world.<br />

The decisive step was taken when the many small dairies scattered all over the area were centralized into one<br />

large production center in Nureci, where the company enjoyed success on a daily bases.<br />

After 27 years of learning everything he could about the making of San Daniele Ham Natalino, Dall'Ava and<br />

his son Carlo finally realised their dream to have their own Prosciutteria. In 1982 they rented the oldest<br />

Prosciutteria in the centre of the ancient town of San Daniele and started to produce their own hams.<br />

So what are the differences between Parma hams and San Daniele hams?<br />

The area of production of Prosciutto di Parma is humid and quite foggy. That is why this type of Italian cured<br />

meat needs more time to mature. The meat used in the production of the two hams is almost similar.<br />

The differences lie in the production technique and of course in the climate.<br />

Prosciutto San Daniele is produced with the trotters left on, these are removed in the production of Parma<br />

ham. That may be another reason why the first is a bit less fat than the second one, as the trotter left intact<br />

supports the drainage of fat and liquids. Although Prosciutto San Daniele seasons faster than his brother<br />

from Parma, it usually ages for some more months than the Parma ham (minimum 12 months).<br />

The salting process of San Daniele hams takes less time than the Parma hams, so they develop their typical<br />

sweet and delicate flavour which is much sweeter than Prosciutto di Parma.<br />

The “I Contadini” farm, which is run by the third generation of young men, was born in one of the most<br />

suitable areas for the cultivation of vegetables, in Puglia, specifically in Salento, which is said to be<br />

“the land of sun, sea and wind”.<br />

The “I Contadini” farm makes directly use of the “integrated production” technique to cultivate more than<br />

20 hectares of open fields vegetables: which are “San Marzano” tomatoes, cherry tomatoes, eggplants,<br />

summer squashes, sweet peppers, hot peppers, artichokes and many other products.<br />

Many vegetables are naturally dried up by the sun of Salento, so that all excess water is taken away and the<br />

products are preserved in all its Organoleptic and nutritive qualities.<br />

The milling activity began in the mid 1950s when Felice Marino learned that there was a small mill for sale<br />

in the town of Cossano Belbo, complete with the original mill stones and rollers. Together with his wife and<br />

her parents, he began to produce a range of flours. At the time, it was mainly the roller mill that was used<br />

to produce "easy to work" and "fast to bake" flours - a symbol of modern times taking their toll.<br />

Fast foods and the additives and preservatives they contain (up-graders and thickeners) have brought about<br />

a variety of health problems, such as obesity, colitis, hypertension, diabetes and food intolerance. This<br />

has led to an increasing trend away from fast foods in favour of the genuine simplicity and goodness of<br />

traditional foods.<br />

In this new context Mulino Marino believe to have found their mission.<br />

Thanks to the natural old Franc mill stones they began to grind traditional, biologically farmed cereals, pure<br />

ground, that have been neither hybridized nor genetically altered. Today the passion from Felice has been<br />

passed on to the next family generation and they continue to work with the same belief.<br />
