What you see in the restaurant itself is almost like
theatre. But it only gets really interesting when
you find out everything that happens beforehand,
backstage as it were. We always do our best to
give our customers what they expect.
My job is to find out at each table which wine
people would like best. In a few seconds, with just
a couple of specific questions, I make a choice
from a good 300 different types of wine. I try to
remember all the information about our guests’
favourite wine, region, country or even brand so
that I can give them optimal service.
The highest accolade is a customer who comes
back for more. But we give all our guests the
same care and attention.
