Chilli and Lemon Seafood SpaghettiOn the table in less than 30 minutes, this is a a great speedy supper toserve any day of the week. Serve with slices of toasted ciabatta and arocket salad.Ready in: 20 minutes | Serves 4Ingredients400g spaghetti2 tbsp virgin olive oil2 garlic cloves, crushedSmall pinch of dried crushed chillies2 whole dried chillis, halved lengthwaysZest and juice of 1 large lemon100ml dry white wine150g raw king prawns150g squid rings, thawed if frozenHandful fresh mussels, cleaned (see TIP)2 tbsp fresh finely chopped coriander,plus extra sprigs to garnishSalt and freshly ground pepperHandful fresh basil leaves, to garnishBring a large pan of lightly salted water to the boil. Addthe pasta and cook for 12 minutes, or according to thepacket instructions, until just tender.Meanwhile, heat the oil in a large, deep pan over amedium heat. Add the garlic and stir for 2–3 minutesuntil soft, but not brown. Add the chilli flakes and wholechillies and cook for 1 minute then stir in the lemon zestand juice and wine. Bring to the boil and let the liquidbubble for 1 minute.Add the prawns, squid and mussels to the pan andcover and simmer for 5-6 minutes, shaking the panoccasionally, until the prawns are pink and the musselshave opened (discard any that remain closed).Drain the pasta and add to the pan with the choppedcoriander. Toss well to coat the pasta in the pan juices.Season to taste with salt and freshly ground blackpepper. Serve in warmed pasta bowls garnished with thecoriander sprigs and basil leaves.TIPScrub the fresh mussels clean and pull away the straggly ‘beards’.
