Ed is back<br />

SIX MONTHS ago, Ed Lopas’<br />

promising rowing career looked<br />

potentially sunk.<br />

The 16-year-old from Little River<br />

was diagnosed with Hodgkin’s lymphoma,<br />

a form of blood cancer, in<br />

July last year which came as a shock.<br />

“I just thought I was a little sick,”<br />

Ed said. “I wasn’t expecting it to be<br />

as serious as it was.”<br />

After five months of successful<br />

chemotherapy, Ed was cleared<br />

to start physical activity again<br />

and late last week he joined his<br />

Christchurch Boys’ High School<br />

teammates at a rowing camp at<br />

Lake Hayes in Central Otago<br />

to prepare for a busy season<br />

ahead.<br />

The big goal is representing his<br />

school at the national Maadi Cup<br />

regatta at Lake Ruataniwha, in<br />

Twizel, in March.<br />

“I’d lost a lot of muscle over that<br />

time but to be this close to racing is<br />

a great feeling.’’<br />

The rowing team will try to<br />

break a world record in Ed’s name<br />

early next month to show their<br />

support.<br />

THERE’S A tremendous story on the front<br />

page today about Ed Lopas’ health battle.<br />

The 16-year-old, who hails from Little<br />

River, is a very promising sportsman.<br />

But when he was struck down with<br />

Hodgkin’s lymphoma, a form of blood<br />

cancer in July last year, the world for Ed and his family was<br />

turned upside down.<br />

Ed is a fighter and fit as a buck rabbit which no doubt<br />

helped him in his recovery. He went through five months of<br />

chemotherapy and is now back rowing.<br />

Ed was training at a camp at Lake Hayes in Central Otago<br />

last week.<br />

His goal is to represent his school at the Maadi Cup regatta in<br />

March.<br />

Ed’s determination will get him there.<br />

Funds nearly found for boat shed<br />

THE REBUILD of a historic<br />

boat shed in Moncks <strong>Bay</strong> has<br />

now been stalled for eight<br />

months.<br />

But Christchurch Yacht Club<br />

still in sight.<br />

in May using $1.174 million<br />

which came from the city council,<br />

Coastal Pathway Project and<br />

from grants the club raised itself.<br />

Since then, members have<br />

been busy with further fundraising<br />

to place a boatshed building<br />

on the deck.<br />

Mr Coppens would not<br />

disclose how much money was<br />

needed to complete the project<br />

as it still needs to go out for<br />

tender, making it “commercially<br />

sensitive.”<br />

However, he said the club<br />

has nearly reached its goal and<br />

is hoping to have the building<br />

finished before the <strong>2020</strong>/2021<br />

boating season, which starts in<br />

October.<br />

He said the club has previously<br />

gone to organisations such<br />

as Lotto, The Lion Foundation,<br />

Rata Foundation and Canterbury<br />

Community Trust for<br />

grants.<br />

“Those organisations have<br />

been very generous and supportive.<br />

“There are challenges around<br />

health and safety because we<br />

have to have handrails and all<br />

that sort of thing installed.<br />

That will be a part of the shed<br />

build.”<br />

Meanwhile, Redcliffs Residents<br />

a “nuisance” while it is fenced<br />

off as it has been narrowing the<br />

footpath.<br />

“It’s awkward for people to get<br />

around.”<br />

The original boat shed was<br />

demolished in June 2011 after it<br />

was damaged in the February<br />

<strong>22</strong>, 2011, earthquake.<br />

A LARGE crowd gathered to<br />

celebrate Margaret Jefferies at an<br />

open funeral on Saturday.<br />

The Lyttelton identity, who was<br />

a mother of five, died from breast<br />

cancer on <strong>January</strong> 13, aged 75.<br />

Ms Jefferies became a member<br />

of the New Zealand Order of<br />

Merit in 2018 for her services to<br />

the community.<br />

She was the chairwoman of<br />

Project Lyttelton, a non-profit,<br />

grass-roots organisation dedicated<br />

to building a healthy community<br />

with strong values.<br />

During her 15 years as a<br />

volunteer, she was involved in<br />

projects like waste reduction,<br />

a community-grown dinner,<br />

school and community gardens,<br />

dual-purpose welcome and<br />

reusable shopping bags for new<br />

residents.<br />

In 2005, Ms Jefferies founded<br />

the Lyttelton <strong>Harbour</strong> Time-<br />

Bank, which promotes the concept<br />

is that people can trade their<br />

skills and for an equal amount of<br />

time on a non-financial basis.<br />

controversial Collett’s Corner<br />

A RESOURCE consent<br />

application for Lyttelton’s<br />

Collett’s Corner has attracted<br />

the views of 167 groups and<br />

individuals.<br />

The bulk of submissions<br />

recieved by the city council<br />

during public consultation for<br />

the residential and commercial<br />

development planned for Oxford<br />

St were behind the project.<br />

However while 133 voiced their<br />

support, 31 opposed the application<br />

and three were neutral.<br />

Ohu Development, the group<br />

behind the project, was the first<br />

in New Zealand to run a crowdfunding<br />

campaign to help pay<br />

for a commercial development.<br />

Lyttelton resident Greer<br />

Swindard was in support, and<br />

said: “I live close to the development<br />

and really want to see this<br />

succeed as I believe it will be<br />

great for the town and Whakaraupo<br />

as a whole.”<br />

Port Hills MP Ruth Dyson<br />

was also in favour.<br />

“This is an uplifting design<br />

which will be a positive statement<br />

on entering Lyttelton<br />

from Sumner Rd and contribute<br />

greatly to the life in Lyttelton,”<br />

said Ms Dyson’s submission.<br />

Some reasons submitters<br />

FEEDBACK: Some of the reasons people were opposed to<br />

Lyttelton’s Collett’s Corner were related to the building’s<br />

height, site coverage, limited parking and designs. ​<br />

included the height of the<br />

complex, site coverage, limited<br />

parking and the building not<br />

fitting in with the character of<br />

Lyttelton.<br />

There were a number of comments<br />

objecting to the application<br />

relating to the alteration of<br />

initial designs, including from<br />

Lyttelton Community Association<br />

chairman Ken Maynard.<br />

Mr Maynard made a submission<br />

on behalf of its members<br />

opposing the application.<br />

“The original emphasis was<br />

totally on a community facility<br />

with some accommodation.<br />

The current one is for a block of<br />

flats with a private roof-garden,<br />

effectively creating a vertical<br />

gated community, which is the<br />

antithesis of community and not<br />

wanted in Lyttelton,” said the<br />

submission.<br />

City council head of resource<br />

consenting John Higgins said<br />

staff will now prepare a report<br />

which will be presented at a<br />

submission hearing, which is<br />

ballparked for February.<br />

“There will also be an evidence<br />

exchange of experts closer to the<br />

hearing date.”<br />

The more than 100-year-old<br />

business Ice Cream Charlie was<br />

sold before Christmas and its new<br />

owners say it is in expansion mode.<br />

Ice Cream Charlie, also known<br />

as Vanilla Ices, which operates<br />

out of Victoria Square, now has<br />

stands at the weekends in Sumner<br />

as well as the Christchurch Farmers’<br />

Market at Riccarton Bush.<br />

New general manager Tim<br />

McIsaac, who is a part owner of<br />

the business with his family, said<br />

they were looking at other locations<br />

in New Zealand.<br />

“We are hoping to move it past<br />

being a Christchurch brand and<br />

we hope the rest of New Zealand<br />

will love it as much as people do<br />

here,” he said.<br />

“How that looks and how we<br />

implement that is what we are<br />

still working on.”<br />

Mr McIsaac owns and operates<br />

a finance company in Sydney. His<br />

family runs a farm in the <strong>Bay</strong> of<br />

Plenty.<br />

They bought the business<br />

before Christmas and have increased<br />

the number of employees<br />

from three to nine, which will<br />

soon increase to 11.<br />

The stands in Sumner and the<br />

farmers’ market, are effectivelty<br />

freezers on bikes, said Mr<br />

McIsaac. They have been named<br />

Agatha and Betty, with the plan<br />

to work their way through the<br />

alphabet in naming all their new<br />

stands after women’s names from<br />

yesteryear.<br />

where they have served for more<br />

than a decade.<br />

Over the years Mr de Latour<br />

has been an exhibitor, volunteer,<br />

committee member, show president<br />

in 1981 and then supervising<br />

marshal in the jumping ring<br />

for 21 years until 2005.<br />

The de Latours farmed 1115ha<br />

at Lavericks <strong>Bay</strong> on Banks Peninsula,<br />

farming up to 4500 sheep<br />

and 950 head of cattle.<br />

On February <strong>22</strong>, 2011, the day<br />

of the Christchurch earthquake,<br />

the de Latours downsized, moving<br />

to the 148ha Lynhurst farm<br />

at Okains <strong>Bay</strong>, where they breed<br />

200 Angus and Angus-cross<br />

cattle.<br />

The couple’s daughter and<br />

son-in-law, Harriet and Lloyd<br />

Chapman, have taken over the<br />

Lavericks <strong>Bay</strong> farm.<br />

in the community over the<br />

years including with the Le<br />

Bons <strong>Bay</strong> Cricket Club, the<br />

Banks Peninsula Racing Club,<br />

the Akaroa Community Health<br />

Public cruises back<br />

on Tug Lyttelton<br />

AFTER THREE years, it’s<br />

back to smooth sailing for Tug<br />

Lyttelton.<br />

The 112-year-old tugboat was<br />

fully booked for its second day<br />

running a public cruise around<br />

the harbour on Sunday.<br />

It had been out of commission<br />

for three years due to a need<br />

for repairs and the requirement<br />

to pass a number of expensive<br />

surveys.<br />

Tug Lyttelton Preservation Society,<br />

whose members voluntarily<br />

keep the tug in full working order,<br />

had financial struggles over<br />

this period as passenger cruise<br />

tickets go towards keeping the<br />

tug operational.<br />

The passenger cruise was originally<br />

scheduled to take place in<br />

December 2018 but was pushed<br />

back to <strong>January</strong>, then February<br />

and then to this boating season<br />

due to delays with the passenger<br />

service licence.<br />

Grants from the city council<br />

and other fundraising meant the<br />

society was able to repair the vessel<br />

and have it pass a $83,240 dry<br />

dock survey so there would be no<br />

more delays.<br />

For its first day on <strong>January</strong><br />

12, two 45-minute-long sessions<br />

were held and between them,<br />

there were about 100 passengers.<br />

sly. Electric bikes make the hills<br />

Cycling on the roads can be<br />

intimidating but the cycleways<br />

are connecting up now and<br />

there are classes available to help<br />

adults get back in the saddle. I’ve<br />

been told Christchurch was a city<br />

of bikes in the 60s with hundreds<br />

of cyclists flooding into the city<br />

every morning and night.<br />

I’m lucky living on the Purple<br />

Line as there’s a bus every 10min<br />

at peak times. It takes longer but<br />

idea to provide transport when<br />

the buses stop running.<br />

However, there may be<br />

unintended consequences where<br />

young people not from Sumner<br />

(who don’t have a drivers licence)<br />

will be stuck there without<br />

a service to get them back<br />

home, and they might get up to<br />

mischief.<br />

Topsy Rule – Of course there are<br />

concerns with these buses. We<br />

had them before, known as booze<br />

buses.<br />

Each Friday and Saturday<br />

night the drivers decided not to<br />

let the occupants vomit on their<br />

buses, so they unloaded them<br />

outside my home at the Redcliffs<br />

Cutting and they all vomited<br />

over the footpath and my<br />

garden.<br />

hazard, which I proceeded to<br />

clean up with my disinfectant<br />

and hose, as a volunteer.<br />

BIRDS OF THE ESTUARY<br />

Elegant heron a<br />

common sight<br />

Tanya Jenkins is the manager of the Avon-<br />

Heathcote Estuary Ihutai Trust, a non-profit<br />

organisation formed in 2002 to protect<br />

one of New Zealand’s most important<br />

coastal wetlands. Each week she introduces<br />

a new bird found in the estuary. Her column<br />

aims to raise the understanding of the<br />

values and uniqueness of the area.<br />

A TALL and elegant bird, the<br />

white-faced heron is actually<br />

quite new to New Zealand<br />

This heron species introduced<br />

themselves in the 1940s and<br />

are now commonly seen in<br />

our estuary, McCormacks <strong>Bay</strong>,<br />

Charlesworth Wetland, Linwood<br />

canal, Bexley and even on sports<br />

fields and paddocks – but only<br />

after heavy rain, as they prefer<br />

to search for their food while<br />

wading in shallow water.<br />

They are awesome birds to observe<br />

while they stand patiently.<br />

Without moving as much as a<br />

feather, they wait for prey to be<br />

within sight to then at lightning<br />

speed grab either a small fish,<br />

crab, worm, mouse, lizard or<br />

frog. Lizards and frogs are more<br />

common around the estuary than<br />

most people are aware of.<br />

Cooking rice properly<br />

is a no grainer<br />

Rice has the ability to<br />

transform a relatively<br />

simple dinner into<br />

a stunning feast. It’s<br />

readily available,<br />

inexpensive, filling,<br />

and the perfect<br />

blank slate for the<br />

base of many classic<br />

dishes<br />

A rice cooker is great if<br />

you cook rice regularly and<br />

if you’ve got ample storage<br />

space. The microwave<br />

is an option, too – there<br />

are many pre-packaged<br />

options for those who are<br />

short on time and can<br />

afford the premium price of<br />

convenience.<br />

But you needn’t splash<br />

out on any special gadgets<br />

or ingredients to serve up<br />

a pot of beautifully tender,<br />

and fluffy rice. The stovetop<br />

method is not as hard<br />

as you might think – as<br />

long as you remember a<br />

couple of simple rules.<br />

Not all rice is equal and<br />

should be treated differently<br />

if you want to get the best<br />

out if your preferred grain.<br />

Below, I’ll detail how<br />

to cook the perfect pot of<br />

white long-grain, brown,<br />

and aromatic (basmati or<br />

jasmine) rice.<br />

All the methods use<br />

one cup of uncooked rice,<br />

which will make three cups<br />

when cooked.<br />

White long-grain rice<br />

Step 1: Rinse, rinse, rinse.<br />

Step one is always the<br />

same. Unless you want a<br />

pot of lumpy wallpaper<br />

paste, you must rinse the<br />

starch off your rice.<br />

Put the uncooked rice in<br />

a fine-mesh strainer and<br />

run it under the cold tap<br />

until the water runs clear.<br />

Step 2: Bring 1½ cups of<br />

water to the boil in a small<br />

saucepan with a lid, over a<br />

high heat.<br />

Step 3: Add the rice and<br />

some salt. If you’re feeling<br />

indulgent, you can also add<br />

a tablespoon of butter at<br />

this point. It will add a layer<br />

of richness, but is purely<br />

optional.<br />

Step 4: Cover and reduce<br />

the heat to low. Cook for<br />

18-20min until the water is<br />

absorbed.<br />

Important: Don’t lift the<br />

lid to peek, and absolutely<br />

don’t stir the rice during the<br />

absorption stage. This will<br />

break down the grains and<br />

release more starch, leaving<br />

you with a gluggy pot of<br />

white couscous.<br />

Step 5: Remove from<br />

the heat and let it stand,<br />

covered for 10min. The<br />

steam will finish off the<br />

cooking process.<br />

Uncover and fluff your<br />

perfect rice with a fork<br />

before serving.<br />

Brown rice<br />

Step 1: Repeat after me:<br />

rinse, rinse, rinse.<br />

Step 2: In a covered<br />

medium saucepan bring<br />

eight cups of water to the<br />

boil.<br />

Step 3: Add the rice<br />

and boil, uncovered, for<br />

30-35min until the rice<br />

is tender but just a little<br />

chewy.<br />

Step 4: Drain the rice in a<br />

strainer and return it to the<br />

saucepan. Cover and let it<br />

steam (off the element) for<br />

a further 10min.<br />

Step 5: Add salt to taste<br />

and butter (if you wish).<br />

Fluff with a fork and serve.<br />

Aromatic rice<br />

Step 1: All together now .<br />

. . rinse, rinse, rinse!<br />

Step 2: Boil the kettle/<br />

jug. You’ll need two cups of<br />

boiling water for basmati rice<br />

or 1½ cups for jasmine rice.<br />

Step 3: In a small<br />

saucepan, heat some butter<br />

and/or oil until it’s just<br />

starting to shimmer. Add the<br />

uncooked, rinsed rice and<br />

some salt to the pan and stir<br />

until the water from rinsing<br />

has evaporated and the rice is<br />

coated in the butter/oil.<br />

Continue to saute,<br />

stirring constantly (you<br />

don’t want it to stick and<br />

burn), until a starchy film<br />

forms on the bottom of the<br />

pan – about 2min. Your rice<br />

should have a slightly toasty<br />

aroma at this point.<br />

Step 4: Carefully add the<br />

boiling water and reduce<br />

the heat to low. Cover the<br />

saucepan and cook until<br />

the water is completely<br />

absorbed – about 18min.<br />

Step 5: Take the pan off<br />

the heat and let it steam,<br />

covered for a further 10min.<br />

Fluff with a fork and serve.<br />

Business degree<br />

or diploma – you<br />

choose.<br />

Committing to degree-level study is<br />

a big decision for many people. So Ara<br />

Institute of Canterbury has come up with<br />

a study option that makes that decision<br />

much easier.<br />

“We think of it as the ‘try before you buy’<br />

option,” Nigel Young, head of Enterprise<br />

and Digital Innovation at Ara, says. “You<br />

can enrol for a New Zealand Diploma in<br />

Business, do a year of study and then at the<br />

end of that year you can decide if you want<br />

to leave with your diploma, or continue on<br />

to a full degree.”<br />

Nigel explains that this option makes it<br />

much easier to transition to degree-level<br />

study. “Regardless of what you decide to<br />

do at the end of your first year, you<br />

still get a great qualification. And<br />

of course, if you choose to leave<br />

with the diploma, you can always<br />

come back and carry on to a degree<br />

qualification at a later date if you<br />

want to.”<br />

The ‘try before you buy’ option<br />

isn’t the only flexible aspect of Ara’s<br />

Bachelor of Applied Management<br />

degrees. They can be studied<br />

full-time or part-time, and many<br />

classes are delivered in the evenings<br />

and online. “It means you can<br />

realistically fit study around work<br />

and other commitments,” Nigel says.<br />

The Bachelor of Applied Management<br />

is available in 11 specialities including<br />

Allied Press Limited employs over 450 people on a permanent<br />

basis across its 15 sites in the South Island. We operate across<br />

multiple media platforms (print, online, digital) delivering news,<br />

information and entertainment through our various regional<br />

and city publications, including printing and publishing of<br />

newspapers from our print centre in Dunedin and a commercial<br />

print facility in Alexandra.<br />

The role<br />

Reporting to the Operations Manager, the main purpose of<br />

the position is to ensure smooth running of our newspaper,<br />

commercial publication and facility maintenance.<br />

Some of the key accountabilities include:<br />

• Production remains uninterrupted.<br />

• Production equipment availability is maximised.<br />

• Preventative maintenance is prioritised to ensure minimal<br />

downtime.<br />

The business has just invested in a major upgrade to the<br />

electrical/electronic systems on the printing press, scheduled to<br />

commence in the New Year. This presents the ideal opportunity<br />

to learn from the installation and commissioning engineers to<br />

enable the successful candidate to hit the ground running.<br />

Your skills and experience<br />

We are looking for a registered Electrician ideally from an<br />

Industrial background holding a current practising licence. The<br />

ideal candidate would be competent and confident in using<br />

computers and experienced in PLC’s, Analogue/Digital control<br />

and AC/DC motor drive systems. Although not essential,<br />

knowledge of Goss Press and Ferag mailroom will be a bonus.<br />

This is a full-time permanent position working the day shift from<br />

Monday to Friday, with rostered ‘On call’.<br />
