Vodka Tart Dough

INGREDIENTS

2 1/2 cups unbleached all-purpose flour

1 tsp table salt

2 TB sugar

6 oz cold unsalted butter, cut into pieces

1/2 cup cold vegetable shortening, cut

into small bits

1/4 cup cold vodka

1/4 cup cold water

DIRECTIONS:

Mix all the dry together. Place chopped

fat into bowl and pulse to blend

Then add liquids and mix just enough to

make the mixture whole. Chill and use.

Peach Sour Cream Tart

INGREDIENTS:

4 oz sour cream

2 oz sugar

1/4 oz cornstarch

1 eggs scrambled

½ tsp vanilla

Pinch of nutmeg

½ lb of peaches sliced

6 oz of your favorite streusel

DIRECTIONS:

One nine inch Tart Ring lined with Tart

Dough and Par Baked

Bake 400 till set about 25 to 30 minutes

Streusel Topping

4 oz butter cold diced

3 oz sugar

2 oz brown sugar

1 tsp salt

1 tsp cinnamon

1/2 lb all-purpose flour

2 oz rolled oats

This makes 1# of product but freezes well

and is very versatile.

Easy Chocolate Icing Recipe

INGREDIENTS:

1/2 cup of butter (1 stick)

2/3 cup unsweetened cocoa powder

3 cups of powdered sugar

1/3 cup of milk

1 teaspoon of vanilla extract

DIRECTIONS:

Melt butter. Stir in cocoa.

Alternately add powdered sugar & milk,

beating to spreading consistency.

Add small amount of milk, if needed.

Stir in vanilla.

TIP:

If frosting is too thin to spread or pipe,

you can put it in the refrigerator to thicken

for a little bit, take it out, and then

stir so it becomes creamy again.

White Cake Recipe

PREHEAT OVEN:

Bake all cakes on 320 in convection

ovens.

Bake all cakes at 335 in normal ovens

oven.

INGREDIENTS:

2 3/4 cups sifted cake flour

4 teaspoons baking powder

3/4 teaspoon salt

4 egg whites

1 1/2 cups white sugar

3/4 cup butter

1 cup milk

1 teaspoon vanilla extract

1 teaspoon almond extract

(Absolutely Optional!)

DIRECTIONS:

Spray baking pans Well!!!

Measure sifted cake flour, baking powder,

and salt; sift together three times.

In a mixing bowl, beat egg whites

until foamy. Add 1/2 cup sugar gradually,

and continue beating only until

meringue will hold up in soft peaks.

Beat butter until smooth. Gradually

add remaining 1 cup sugar, and cream

together until light and fluffy. Add

sifted ingredients alternately with

milk a small amount at a time, beating

after each addition until smooth. Mix

in flavorings. Add meringue, and mix

thoroughly into batter. Place Batter

into Appropriate Sized Baking Dishes.

TIP:

If baking a layer cake, then fill each

pan with the same amount of batter. I

like to use a measuring cup.
