LOCAL RECIPECheats' Apple StrudelA classic strudel with home-madestrudel pastry takes a long time to make... but using a pack of ready-rolled pastrymeans you can have a delicious fruitypudding on the table in less than an hour!Ingredients2 large dessert apples, peeled, cored andchopped50g raisins orsultanas1 tbsp cornflour50g caster sugar2 tsp groundmixed spice320g pack ready-rolled puff pastryBeaten egg, to glazeIcing sugar, to dustWhipped cream, custard and fresh berries,to serveReady in 55 minutes, serves 6Preheat the oven to 200C / 180C fan / gasmark 6. Line a baking sheet with bakingpaper.Place the apples and raisins or sultanas ina bowl. Mix together the cornflour, sugarand spice, add to the apples, tossing to coat.Unroll the pastry but keep it on the paper.Using a rolling pin, gently roll the pastry alittle thinner. With one long side facing you,spoon the apple mixture down the middle,along the length, leaving a 2cm borderat each end. Gently fold the two pastrylengths over to enclose the filling and pinchor fork the pastry together at the ends.Place seam-side down on the baking sheet.Brush all over with beaten egg. Bake for30-35 minutes until the pastry is crisp andgolden.
