A note to you
EDITOR
Have you looked up and suddenly found yourself in August?
You’re not alone. I’m feeling as though the lockdown
slowdown has passed and a ground-rush type of existence has
taken back its place.
A friend and I were talking about the underappreciation of
‘mental load’, despite its ongoing effects. We seem to more
easily accept that someone is tired or less enthusiastic when it’s
the result of physical exertion, yet a frenetic mind will have you
run down in no time. The pressure of organising a household
and/or caring for dependents is part of the mental load – and
you haven’t even left the house yet. Add to that the pressures
of work and it’s little wonder you can find yourself with little left
in the tank at the end of the week.
With Style, we offer you a moment to pause. It might seem
a frivolous notion in such turbulent times – and, of course,
everyone is going through their own challenges – but only you
can care for yourself, no matter what else is going on. Dip your
toes into our wellbeing section, discover what you could be
reading, and see what we’re watching. Give your brain some
time to unwind and reset.
If lockdown taught us anything, it was the value of slowing
down. So, let us help you, in Style.
The Perfect Engagement Ring
An engagement and wedding ring should be perfect.
There’s no question about it. You want a ring that
will last for years to come, made to an exceptionally high
standard. Polished Diamonds – Jewellery Design creates
the most accurate and perfect jewellery and can offer you
something that will last the distance. Polished Diamonds
has the ethos that buying an engagement ring is about
trust in the jeweller. Using Computer Aided Design (CAD),
3D printing, laser welding, and MRI scanning, they can
produce any ring design and draw it up in an accurate
model for your review. This enables design adjustments
to ensure perfection and your total satisfaction. Dan
Joines and his team guarantee that their clients end up
with the highest quality engagement or wedding rings at
the best price – this is the future of jewellery.
Each ring is 3D printed, then hand polished and set
with your chosen diamond or gemstone and finished to
perfection. The results speak for themselves. Polished
Diamonds design and produce the world’s most
accurate jewellery. They have over $120 million worth
of Gemmological Institute of America (GIA) certified
diamonds from their diamond cutting partners in
Belgium, New York, Hong Kong, Mumbai, and Israel, plus
an amazing supply of the finest gemstones imaginable.
Any jewellery design can be modelled and produced
with perfectly fitted wedding rings. Any gemstone can be
supplied, and any price point achieved. Also, on offer is a
range of men’s wedding rings, in titanium, zircon, classic
gold, and platinum. As manufacturing jewellers, they
offer a great price, high quality and ensure your complete
satisfaction with a lifetime guarantee. So, for Wedding,
Engagement or just because… why go anywhere else?
The little cinema that can
Catching a movie at Lincoln’s Apollo Cinema (17 West Belt) has
been on the to-do list for quite some time. A friend’s birthday
finally saw me arrive with pre-booked ticket on phone at the
15-seat theatre, which is part of The Laboratory (restaurant, bar
and brewery). Behind the ‘ticket holders only’ door, I discovered
the plush seats and warm environs where movie-goers watch
a curated collection of flicks. For my party, it was A Bump Along
the Way – a comedy/drama, set in Northern Ireland, about what
happens when an immature 44-year-old single mum ends up
pregnant after a one-night stand! Grab a drink at the bar and
take it and a Kapiti ice cream cone across the cobble stones with
you. There’s no popcorn, but with the likes of hot chips or an
antipasto board on the cinema menu, there are plenty of treats
to top off a great night out. – Kate Preece
Okay, so this year – this most unusual of
years – it’s all about home.
Staying home, enjoying your very own
backyard or that beautiful expanse we
know as our entire countryside here in New
Zealand.
Holidays, breaks, refreshers, little weekends
away are all to be enjoyed within our own
boundaries and borders.
Unlike other years, it’s about discovering
or rediscovering what many Kiwis take for
granted. Large, green open spaces, public
galleries and museums (that unlike those
in many cities around the world are free to
visit), and rivers, lakes and mountains within
driving distance for most.
I can vividly remember being on a European
trip with my family when the guide asked
where we came from. After listening to our
response, a long pause occurred, then a
rather loud, disapproving Gaelic sniff. “Noo
Zeeland, zee end of zee earth.” And at the
time I thought it was, having taken 30 hours
to arrive at our destination, but today that
very isolation feels like a blessing. It’s easy
to see why so many are also taking time
to reinvest some love and attention in
their own properties due to staying home
rather than traveling, and businesses such
as landscapers, renovation builders and
interior designers are seeing the benefits of
that change.
If a staycation is currently on your radar and
you want to take the time to focus on your
own home, here are some options that
might give you some satisfaction, add value
… or both.
First, Declutter
Nail that garage first. Get rid of all the stuff
that’s broken, outdated or no longer useful.
If it’s still functional but of no use to you, give
it away, recycle or dispose of it in a method
that’s environmentally mindful, if possible.
I personally use the garage as a bit of a
dumping ground, much to the frustration
of my husband, but I also love the feeling of
nailing an area that’s long needed a tidy-up.
Once you’ve done that, move inside and see
if you can improve your surroundings and
wellbeing by editing some of the stuff that
fills your space.
Gentle Changes
With these two areas decluttered, let’s go for
some interior changes.
Move furniture, move art, have some fun and
enjoy the changes.
Edit, and what you don’t edit, use. Nothing
needs to occupy a precious space where
items are relegated as being ‘just for good’.
Use everything you have, no matter its value
or composition, and have fun.
Your family space should convey a feeling of
warmth, wellbeing and welcome.
Step Outside
During the lockdown period, I remember
watching people in Spain and thinking, what
must it be like not being permitted to go
outside?
This is where so many of us are fortunate.
No matter your home’s size, your property
address, whether you’re in a large residence
or a compact unit, try to make the most of
the outdoors. Your outdoors. Follow the
sun (if there is any!) and give thanks that
although we might not be able to travel the
world, you’d travel the world to find what we
have in our own backyard.
It seems that not only myself but others have
had a chance to stop chasing everything that
appears greener somewhere else, instead
appreciating what’s been in front of our
noses the whole time. Home.
Here’s to your home and mine, and here’s to
a staycation.
Recreators
Designing a café takes careful consideration. For some, the visions
could take an intensive four-day blitz to create; for others,
the transformation could take seven and a half years.
Words Shelley Robinson
CLOCKWISE FROM LEFT: Aimee and Samuel Nimmo recreated an existing inner city café in four days; Dried flower arrangments
add to the beach vibe at Ally & Sid; Storybook perfection at a café and restaurant tucked away in Springston.

trinkets and floral arrangements; The mural has proved to be an
Instagram hit; Wicker chairs and natural materials add to the chilled
beachside vibe.
It is a dingy overcast day, where winter has definitely
come out to play. The Montreal Street area by
Moorhouse Avenue is ramping up with the flow of
trucks and cars. But on Walker Street, just around the
corner, there is a curious aberration.
Meet Ally & Sid: the café recreated in just four days.
And it is like a little light beacon, brightening the street
from what used to be a rubber moulding factory.
Samuel and Aimee Nimmo took over the lease for
the café, which was formerly the Anchorage and then
the Park Ranger, on a Friday in November last year.
That left four days to turn it from a darkened café
with walls, floors and tables coloured black, into their
vision of a light, beach-inspired café.
“We spent all day and night with our church friends,
painting to 3am. Building counters, chopping up tables.
We were honestly exhausted, it was crazy,” says
Samuel.
He felt his first inkling of dismay on Monday night
when he looked around and saw there was much still to
be painted, including the floor.
“If we don’t get this done, we’re not going to be able
to open. So we put the message out [on social media]
and literally within half an hour, 20 people had shown
up,” he says.
His father, Lachlan Nimmo, a builder by trade, made
smart work of a large black banquet table running
through the length of the café, chopping it into smaller
tables within 20 minutes.
“I’ve never seen anyone work so hard,” says Samuel
with a smile.
It was the same for Aimee’s father, Danny Steel, a
painter, who attacked the walls with his spray gun.
The tables and benches were all stripped back: the
tables to their raw beginnings, and the benches coated
in white paint with a shabby chic look. Just a hint of
the black peeks through in the in-between spaces, a
reminder that these tables carry with them a history.
The walls were painted a shade of white, as were
the bookcase structures over the counters, where pot
plants and keepsakes now reside.
A softness is added through the peach-coloured
feature wall at the back, but it is the mural on the white
brick wall by the entrance that suddenly became a hit,
appearing in Instagram feeds. Hues of peach in almost
wave shapes cascade over themselves in the mural.
“Our friend Saskia [Hoekendijk] had a dream. In the
dream she saw a pink wall in our café, because we
already had the apricotty colours going on. We said
sweet, let’s do it,” says Samuel.
“Once we did that, honestly it blew up on Instagram.
Every person that came in was getting photos in front
of it. We were stoked,” says Samuel.
The garage door, which once saw customers roaring
into the rubber moulding factory, now adds just
the perfect touch to the café, where you imagine in
summer it is thrown open so the café chatter and vibes
continue into the street.
Style | Feature 23
The neon sign was used at Aimee and Samuel’s wedding and inspired
the café’s name.
With the colours and paint in place, it was time for Aimee, or
“design genius” as Samuel likes to call her, to come in with her
subtle touch to add in a distinct beach vibe with the décor.
An area with wicker seats, a wooden table and a rug makes
you feel as though this café could be happily ensconced on
any beach location. Above the couch is an A+S neon sign that
doesn’t detract but somehow seems to enhance the space.
Perhaps it is because it is from Aimee and Samuel’s wedding.
It sat on the reception table, and the couple wanted to reuse it
in the café. Which is how the name came about.
“We said, ‘How can we come up
with a name that works with it?’ It was
random, but it works,” says Samuel.
He’s right. The name itself has that
youthful and chilled exuberance that
sticks out on the industrial street.
The look is signed off with a beautiful
arrangement from the Dried Flower
Company.
But make no mistake: although
the vibe is chilled, Samuel’s approach
to coffee is not. He is a true barista
captivated by coffee, which means you
are guaranteed a true brew.
He grins and laughs when asked if
he has a signature coffee. The short
answer is yes, but, as it’s a bit of
convoluted process to make, it’s only
made for his special customers. Our lips
are sealed!
It’s late afternoon now and heading
into the weekend. The lawyers, doctors,
car salespeople and office workers that
are their customers will swap out for
families and friends.
And so, the story has just begun for
this haven settled amidst an industrial
area, and created in just four days.

You won’t find a coffee machine at Sue Gidden’s café
and restaurant tucked away in the countryside. Though
it raised a few eyebrows and her family tried to talk her out
of it, Sue knew what she wanted to create in her foodie
Springston sanctuary: a place where people could sit and let
their senses be charmed. And there was certainly no place
for a rude machine spouting steam and disrupting that peace.
“I do live by my own rules,” she laughs. But that is why
her café, Memorys, works so well: because she doesn’t
conform to what ‘ought’ to be in eateries.
And yes, you can still get a cup of coffee, but Sue wants
to make sure you only get the best. That means beautiful
French press and drip coffee, created from what she
considers to be the finest beans. She pays a bit extra to
make sure it is so. Because for this creator and collector of
memories, every person must depart with a little bit of that
special magic she has created in her Springston sanctuary.
Sue has always found beauty in what people no longer
want; a “magpie”, she grins.
And that is no more so than when she and her husband
Chris stumbled upon an overgrown property in Springston
12 years ago.
“The poor land agent was ready to shoot the gap. But we
promised we wouldn’t be long. We walked in through the
Labour of love
back entrance and there was an accumulation of debris. We
did a wander and the brains started whirring. We looked at
each other and said, ‘Bugger’.”
The property had snared its way into their hearts. Fortyfive
years earlier Sue had worked in hospitality and had
wanted to open her own place. But with family and life,
the timing just wasn’t right. But it looks like this property
was winking at them, telling them that now was the time.
Though they gave it a good nudge to convince themselves
otherwise.
“I suppose most people would say, ‘Walk away, don’t be
stupid.’ We went back four times to convince ourselves not
to take the step, but each time we felt more enthusiastic,”
she says.
She chuckles when she remembers the reactions of their
three daughters as they looked at the property.
“They stood with their mouths open,” she says.
It took seven and a half years for Sue and Chris to clear,
gut and renovate the property. Sue at the time was working
as a homestay coordinator at Lincoln High School, while
Chris was an engineer.
The property was a plant nursery and had a house and
three concrete block structures, two of which Sue suspects
were potting sheds. The third had a small kitchenette, toilet
and bathroom; likely, former staff amenities. And so
once the paperwork had been signed, Sue and Chris
got on with the job of creating the café and restaurant
they had so often dreamed about.
The staff amenities building was to be the restaurant:
stripped back to its bones, insulated, plastered and
completed with textured paint on the walls. The ceiling
was lined with recycled rimu.
Walking into it is like walking into the handsome
pages of a leather-bound storybook. Beautiful wooden
interiors, with thoughtful little trinkets, weave together.
“I didn’t want any commercial-type furniture in there.
After the [Canterbury] earthquakes [September 2010,
February 2011] people who had lost their homes were
going into new ones and decided they didn’t want their
old furniture, so I just gave it a new home,” she says.
Some she managed to save just as a bulldozer was
about to flatten them. Because for her, it is a terrible
thing to see good furniture come to a sad demise.
Walk through the restaurant and into the courtyard
and gardens and it is difficult to think it was once a
potholed, overgrown jungle. You’ll walk on the 15,000
recycled bricks laid by Sue and Chris, while in Sue’s
“pop it in” garden (called so because of her approach
to gardening) you’ll find memories of the couples’
walks and weekend trips – like the daisies grown from
a cutting taken during a walk in Diamond Harbour.
In spring, the courtyard will be dusted with blossoms,
while in autumn it’s a haven for a golden mix of leaves.
Across the courtyard, the two potting sheds have
been transformed into elegant rooms, where intimate
dinners of 6–12 people can be held.
The Gallery Room is Chris’s wish of a tin shed come
to life, with recycled corrugated iron as the cladding
while it’s lined with recycled rimu. Charming leather
couches, animal skin rugs and memorabilia create an
almost hunting lodge feel.
“You can go in there, take your coffee and just sit.
Like yesterday, I just opened the doors and the sun
streamed in. People who go in there are inclined to sit
there all day and don’t want to leave,” Sue chuckles.
It has an old coal range, butter churn and a rather
interesting looking “slasher” in the rafters: a gorse
cutter.
“My father-in-law as a teenager used to cut back
10 miles of gorse hedge around Tai Tapu with that,”
Sue says.
The second potting shed is now the Boardroom and
also lined with recycled rimu. It has a charming fireplace,
the sort you seldom see these days, and a dining table,
etched with the memories of family and friends laughing
and chatting while feasting on Sue’s fare.
It is not a “bums on seats place” where your table is
keenly eyed-up by the wait staff. Sue won’t be having any
of that. And she’ll cook for you with the same passion
and love she cooks for her own family and friends.
Though the menu changes fortnightly, you could feast
on such things as a yoga bowl, with warmed dahl on
a bed of spinach, roasted vegetables, mango chutney,
yoghurt and chapati pieces. Or perhaps you might try
an Italian pasta filled with pumpkin, served with a brown
butter Portobello sauce, pesto, pancetta and pecorino
cheese. Or maybe baked brie with shaved truffle and
truffle honey... or perhaps bruschetta with whipped goat’s
cheese, preserved figs and m nuka smoked bacon is
more your style?
When first starting out, Sue admits she was nervous
and thought she ought to follow trends. But she
squared up her shoulders, reminded herself she doesn’t
like conforming, and cooked “food from the heart to
feed the soul”.
Likewise, Sue refuses to be seduced by other
wineries trying to woo her because she considers
Burnham’s Straight 8 Estate to be just the ticket.
“I wouldn’t change the wine for anything. They are
a small boutique winery; we complement each other,”
she says.
And so if the city has been chasing at your feet, seek
out the cottage-like, memory-laden haven hidden away
down a long drive in Springston. Relax and chatter
away, while eating the gorgeous fare of a woman who
knows just what you need. Food for your soul.
Still life in lockdown
In the final part of this exhibition series,
Ady Shannon speaks to Gill Hay about what emerged
on her canvas during lockdown.
Artist Gill Hay works from a studio in her home
overlooking Lyttelton Harbour. Large wooden easels
are poised to take in the views of the working port, the
sea and the landscape beyond. Inevitably, her work spreads
throughout her home. The spare bedroom acts as a drying
room for wet canvases, and brushes soak in turps on the
kitchen bench. Her tools of the trade – canvases, paint pots,
oil tubes and brushes – contribute to a colourful interior
along with a sizeable collection of art and sculpture. Pieces
of her own hang alongside the work of other New Zealand
artists, many from Banks Peninsula. As a founding member
of the crew responsible for Sculpture on the Peninsula and
the event organiser of the biennial event, Gill is an artist
immersed in her passion.
Lockdown provided a rare opportunity for the usually
busy artist-in-residence to focus on her work, with few
distractions.
“It was a luxury to have uninterrupted time like that for
me,” Gill says, almost apologetically.
When the Prime Minister announced the Level 4
alert status was imminent, while many converged on
supermarkets to stockpile toilet paper, Gill headed to an art
supply depot to source canvases. The run on those outlets
was as frantic as the run on supermarkets.
“I went in to The Drawing Room on the afternoon of
the Monday Level 4 was announced and there was hardly
anything left on the shelves. Usually I plan the canvas sizes I
want to purchase in advance. That day I just decided to get
a few blank canvases and see what happens.”
She purchased six canvases in varying sizes and over the
course of lockdown, spent a good part of each day working
to fill the blank space.
She admits, “Not everything was successful, but that is
normal. It’s a case of working things out as you go.”
There is the possibility of swiping a canvas with turps
when the paint doesn’t produce the desired effect, but as
Gill says, “There is some scope for reinventing a canvas but
there is something about a new and fresh canvas that you
only get once.”
In response to the Covid-19-inspired situation, this body
of work has been inspired by the work of the still life Dutch
masters, creating compositions with the objects at hand.
“During lockdown life was quite still,
so I tied my work in with the lifestyle
I was experiencing. Lockdown provided
a unique chance to focus on something
and not be distracted or disturbed by
life or visitors. My dog was my constant
companion during the time in isolation.
She lay on the couch and watched
me paint. I felt her scrutiny, but she
doesn’t criticise.”
during the time in isolation. She lay on the couch and
Gill, a co-director of NZ Artbroker, was surprised
by the level of interest in the artworks on their
website during the lockdown period.
“We had a record number of views and sold
several works, including one to a buyer in Ireland and
another to a buyer in Australia. Our sales have hardly
been affected. In fact, they may be slightly up on this
time last year.”
She attributes the surge in sales to the impact of the
lockdown and people having more time to spend on
their computers.
“People cancelling trips were probably wanting to
buy something special to compensate. As an online
business we were able to maintain the site and put
up new works created as a response to the unique
situation,” she says.
Gill is optimistic the situation for New Zealand
artists going forward will be positive.
“Art is a luxury item and many people in that
market have not been affected by the economic
outfall. The government has put a lot of money into
the arts. Once that is allocated, we will see some
interesting work based on a time when people really
had time to think. In New Zealand, many artists have
work space and studios based in their homes and they
were able to continue to work. In Europe and the UK
space is limited, so they are not as fortunate.”
The exhibition featuring work
from Anna Dalzell, Gill Hay and Alison Erikson
will be held at NZ Artbroker Gallery,
241 Moorhouse Avenue, Christchurch,
7–22 November, 2020.
Style starts in the showroom
Frobisher National Retail Manager Jessica Beavon gives us
behind-the-scenes intel as to how showroom pieces come together.
How do you select pieces for your
showroom?
This is certainly the most enjoyable
part of my job. In this day and age
we are spoilt for choice in just about
everything from fashion to furniture.
But there is a lot to take into
consideration. For example, does this
piece of furniture have a story? From
where is it sourced? What inspired
them to design this? Is it sustainable?
Will our clients love it or hate it? Am
I pushing the boundaries a little too
much? I take all this and much more
into consideration when selecting the
perfect piece for our Christchurch and
Auckland showrooms.
What are your favourite items in the
showroom right now?
Because I hand-pick the items, it is
particularly hard for me to have one
favourite piece. For its functionality,
design and comfort, I must say that
I love the new Hulsta 414 sofa
designed by Hoffmann-Kahleyss,
made in Germany. The new sofa
‘wraps around’ people sitting on it
in a uniquely soft and wonderful
way. Plus, the look matches its
style: a sophisticated lounge sofa
featuring upholstered units that can
be combined in many different ways.
For its unique style and individuality,
I love the Casey Credenza chest by
Maison 55. It is crafted from a steel
cantilevered ‘L’ base in an oiled bronze
finish. A dry, open-grain grey oak case
surrounds the solid walnut drawer
fronts, each featuring a handsome
geometric diamond pattern.
How does a showroom bring a
different experience to a client than
simply looking online?
As consumers, we bounce between
stores, desktops and mobile devices.
The main difference here is the
human interaction; the one-on-one
conversation about a piece you are
interested in. But most importantly,
Image: Olivia Woodward Photography
it enables the customer to be able
to see and feel the materials. The
showroom features products in room
settings, which helps clients who find it
difficult to visualise these pieces in-situ.
We have the flexibility to change this
around for our customers so they can
see a piece in a different setting.
For someone who is looking for
individuality, what would you
recommend?
Frobisher Interiors pride themselves
on stocking bespoke unique pieces.
Our exclusive range of products, from
renowned designers like Kelly Hoppen,
offers ever-evolving style defined by
a subtle fusion of East meets West:
clean lines and neutral tones. We have
products and services to complement
any home or style. Whether it is a
cushion, chair or whole house design,
Frobisher Interiors has something for
everyone.
What would be your advice for
someone who knows they want to
change their look but doesn’t know
where to start?
Ask the important question of what
style they are trying to achieve first:
whether, for example, they want a
modern, mid-century, retro or eclectic
look. Start BIG! Make a decision on the
bigger pieces and then everything else
will fall into place.
Creating
nooks
Utilise space in open-plan
living by creating cosy
areas that won’t cramp your
family’s style.
Open-plan homes have become the
people’s choice in recent decades; a
development that has necessitated some
creative thinking. Pockets of abundant space
can end up being wasted. Put a stop to that
with some cunning tactics that utilise every
inch. With a clever use of colour, texture
and furniture you can improve functionality
and not clutter up your home.
Take a seat
Modular seating is ideal for allowing spaces in an
open-plan living area to do double duty. An L-shaped
sofa will define your main relaxation area and you
could reconfigure additional modules with some easily
moved chairs to form a separate conversation zone,
with or without a coffee table on castor wheels that’s
also a cinch to reposition. Matching ottomans and
oversized cushions are great for children to move
from A to B.
The book nook
How about turning that disused corner in your central
seating area into a snug with a comfortable armchair
you can quietly read in? Create zonal definition within
a neutral colour scheme by painting the walls in a
contemplative counterpart, such as perennial favourite
Resene Quarter Duck Egg Blue, calm-and-misty green
Resene Pale Leaf or dusty umber Resene Soothe.
Cosy textiles such as linen cushions, or a woollen
throw will further invite relaxation and you could
extend this sentiment to your walls with a textured
design from the Resene Wallpaper Collection to
provide both colour and depth.
Crafty storage
Storage can be at a premium in open-plan homes.
Remedy the issue in a generous master bedroom by
installing a half-wall that can become a headboard
on one side and cupboards on the other, painted in
a hue that complements your décor. Running out
of storage for children’s toys? Paint timber cubes or
wooden boxes in playful pastels like Resene Tuft
Bush, Resene Onahau and Resene Snowy Mint. If
there’s a underutilised void under your stairs, you
might wish to store them here and turn the space
into a children’s craft station with a desk painted in a
pale primrose like Resene Shalimar.
Business and pleasure
A study nook neatly housed in your living area is a
hack that lets you clock up extra hours while keeping
up with the everyday play. A built-in desk will truly
maximise the space or bargain hunt for a second-hand
desk and chair to update with paint. Opt for a distinct
colour or one that ties in with the rest of the room.
Wipe it with a clean dry cloth, then apply Resene
Waterborne Smooth Surface Sealer for an even finish
followed by Resene Lustacryl semi-gloss or Resene
Enamacryl gloss tinted with your chosen hue.
Separate your study zone from the rest of an
open-plan space with:
• A bank of freestanding open shelving in a chic
shade, like pale green Resene Edgewater or
Resene Colorwood Driftwood timber stain.
• A curtain you can draw around your nook when
you’re working and fling open when you’re not.
An ethereal sheer or heavier weight to mitigate
noise such as the Harmony Voile or Evolve
designs from the Resene Curtain Collection.
• A screen you can fold away. A timber or rattan
room divider could also be customised with
Resene paint or timber stain in the same way
you would a desk.
Top tips:
• Colour code individual zones within an
open-plan space, but include key accents
from your home’s overall palette as a
unifying constant.
• A change in flooring can be useful to
announce a shift in purpose or set a new
mood. Use a rug to herald the transition
from social to solitude or paint a concrete
floor with Resene Walk-on tinted to the hue
of your choice.
• You could also turn redundant space into an
indoor garden. Pots are easy to customise
with your favourite Resene colours. Add a
coat of Resene Aquapel & Terracotta Sealer
inside and out and allow to dry, then brush
on two coats of your chosen paint, allowing
it to dry between applications.
creating individual and beautiful spaces
At Ellen Estate Interiors creating individual and beautiful spaces is at the core
of what I do. I believe that great design is a process of communication, shared
inspiration with the client, whilst facilitating the experience from within my extensive
knowledge for a positive outcome. I am happily involved in new build, re-build,
renovations or zhoosing up an existing home environment meshing old with new to
create a whole new take on things.
My passion is creating elegant, stylish homes designed to reflect the client’s brief.
Good design stands the test of time, be it architecture, interiors or landscapes.
I use the best craftspeople – be it furniture makers, upholsters, joiners for kitchens and
bathroom or curtain makers to achieve an immaculate result. The showroom itself
is a ‘must visit’ destination, a constantly changing and evolving environment which
invites our clients to come in and experience beautiful ranges of interior products.
My experience and passion for comfortable luxury design is visible in every project,
from conception to installation, offering a truly personal service to each and every
client for modern living or existing homes.
Palette pleasers
Interior designer Michelle Laming explores the relationship
between colour and style.
36 Style | Interiors
T
he meshing together of –
at times opposing – trends
has seen a beautiful cohesion
emerge in interior design.
It is simple to recreate
these looks, and you don’t
need to go big each time.
Often a thoughtful addition,
such as a wishbone-backed
chair with a linen throw, can
conjure the vibe. Or, simply
update the colour palette
because, where once styles
drove the colour, it is now
colour that leads the way.
Back to earth
The urge to reconnect to our natural
environment has influenced today’s colour
palettes.
• Calibrate – explore and embrace
changes in a positive way. Tones
include soft coral and rose, with silver
and gold as an antidote.
• Balance – achieved with colours of sky,
sand, rose terracottas, smudgy neutrals
and, of course, everlasting green.
• Equilibrium – reflects what we see in
our natural environment, particularly in
the leafy green palette.
• Light – inspired by the ocean, with
vibrant and deep blues, and a whisper
of fragility in the lighter shades.
• Neutrals – celebrate that home is
truly where the heart is. A warm and
relaxed palette, from beige through
to a beautiful soft range of browns
with red undertones. Neutrals are
rich, soothing and provide a sense of
harmony within the home.
• Structurals – lead the way with black,
brown, dark grey and muddy/burnt
caramels to encase all other colours.

Trending now
These colour palettes come to life in the latest interior trends.
Image: Horgans
Japandi
A trend that combines the elegant
mix of Japanese minimalism and
Scandinavian simplicity. Think clean
lines with a subdued colour palette and
touches of wabi-sabi (imperfection) that
juxtapose the minimalist effect. Japandi
is centred on the acceptance of
transience and imperfection, sometimes
described as perfectly imperfect.
The minimalist look leaves space for
organic materials to breathe within the
discipline of these different styles.
Recreate this look in your home with
an organic linen throw on a wishbonebacked
chair or a natural wooden
hand-carved bowl on a Scandi marbletop
coffee table. This is about pairing
the beauty of craftsmanship with raw
materials and simple natural elements.
Transitional
Imagine the seamless meshing of the
traditional with the modern, through a
marriage of youthful exuberance and
time-honoured wisdom.
A very popular trend at the
moment, transitional furniture lines
are simple yet sophisticated, featuring
either straight lines or rounded profiles.
Think of an old villa with white internal
walls that are rich in architectural
features, such as cornices, ceiling roses
and Paris moulding.
Introduce this style with modern
pendants and a marble-top French
sideboard, a straight-armed sofa with a
white slipcover, and modern dark/jute
rugs. Cushions and other accessories
bring the old and the new together.
38 Style | Interiors
Luxe
Hark back to the sophistication and
refinement of the early Hollywood
era. Luxe interiors are sometimes
more expensive because they can
include investment pieces, such as
furniture, art, mirrors or chandeliers.
Metallic elements in gold,
champagne or copper are a must,
as are curves, perhaps from sofas
or chairs. Over-sized pieces are to
be expected. This style sees large
art above a fireplace, big lamps and
arched mirrors with gilt frames,
velvets and sateens, and large
feather-filled leopard-print cushions
with the odd tassel.
Introduce a good splash of colour
on curved sofas, but keep the base in
a coloured neutral (like Paris Grey).

Yin and yang
For the first time in interior styling,
we have what is referred to as the
‘mirror’ or ‘yin and yang’ style: white
one side, black the other, but with
the same design structure within both
styles. Heavily tilted towards rattan
and bamboo furniture or visible timber
grains on side tables, headboards and
drinks trolleys, the interesting thing is
how different a style can be created
purely through colour. The Hamptons
Ocean leans towards a smart holiday
vibe with light colours, timbers
and washed furniture, whereas the
same pieces painted or stained in black/
dark brown swing perfectly towards a
British Colonial style.
The mainstay Hamptons Ocean
colours are white, beige, Ming Blue or
pale grey, with a strong bias towards
stripes. British Colonial is typically the
Ralph Lauren approach, reflecting an
ivory base with black, brown and tan,
plus pops of emerald, Watermelon Red
or bright Dresden Blue.
Managing a building project
can be stressful at the best of
times, but managing a project in
Christchurch whilst the owners
lived in Australia, even more so.
Although when Lana and Aaron,
the owners of this modernist
rebuild of a 1960’s retreat on
Mt Pleasant reflect, they recall
feeling as though the stressful
part of their project was behind
them the minute the building
commenced.
“DJ Hewitt Builders exceptional
reputation for hill building was only
complimented by their exceptional
project management ability, easing
our concern of being overseas.
Assisting the development of plans
with our designer, Urban Function
Architecture and collectively making
project decisions seemed far less
stressful also. As was getting
agreement between our insurance
representatives and the quantity
surveyors determining the cost of
the project, ultimately key to the
affordability of the rebuild project.
Daryl was very persistent and
eventually helped us secure an
agreement that was acceptable
to everyone,” says Lana.
A sanctuary of light and
warmth, this new build in
St Albans saw owners Emma
and Logan Robinson end their
two-year search in peace.
Words Shelley Robinson
42 Style | Architecture
It was the cedar panelling that got
people talking.
Emma Robinson laughs as she
recalls the builders saying people were
pulling up in their vehicles to ask about
the colour of the cedar on the garage.
And it’s easy to see why. The stunning
tone of the cedar, especially when lit
up with the subtle outdoor lighting,
encompasses the key objective for this
build – to provide warmth.
Despite a two-year search, Emma
and her husband Logan couldn’t find
the right property that spoke to them.
After a stint in the United Kingdom,
where even older homes are doubleglazed
and have central heating, they
wanted a place where their family
would be snug. Instead of adapting
to what someone else had built, they
decided to tailor-make their home.
Feature wallpaper in the media room
creates a textured look.
TOP: Emma and Logan wanted wood floors, but with two children who love to play
the scratch-proof laminate was a perfect compromise. ABOVE: The window seat
with bookcase is a family-favourite place.
Though they hadn’t built before, they didn’t
let that deter them. Instead they brought
in a team from DJ Hewitt who managed
everything for them, from the due diligence
on the land before the auction and relocation
of the existing house to the landscape and
interiors.
“Daryl [Hewitt] came to visit us and
everything snowballed from there,” says
Emma. “He helped us find our architect and
came to all our architect meetings as well,
which is what we needed because we were a
bit naïve.”
Emma was apprehensive about her own
design nous and initially veered towards
simple colours. But soon she had eye-catching
feature wallpaper in the media room and by
the entrance. And that was due to not only a
clever design friend, but the expertise of Tara
Hewitt of DJ Hewitt.
“She took me around all the bathroom,
tile and appliance shops and pointed me
in the right direction. She was so good at
narrowing it down before I even got there,”
Emma enthuses. “I’ve had friends that have
built and they have said, ‘I’ve got a thousand
choices of door handles,’ whereas it was so
straightforward with Tara.”
And the result is a beautiful cohesion
from outside to in. The home is filled with
a wondrous amount of light from the many
windows. The sliding doors that lead to the
deck open from both sides at an almost right
angle, creating a seamless joining of living
room, dining room and deck.
What the family wanted was a warm home
filled with light. They achieved that and so
much more in their personalised paradise.

Owner’s feedback
MAKE SURE: “If you really want something,
don’t be afraid to speak up and voice it. If
you have the right team, they will advise you
on the pros and cons.”
CHALLENGE: The budget. “We were lucky
we had a builder who was meticulous in his
quotes from the get-go.”
FAVOURITE PLACE: The window seat with
a bookshelf by it. “Sunny, warm and we find
ourselves curled up reading books and the
cat joins us.”
CLEVER SOLUTION: “We wanted wooden
floors in the kitchen but knew they would
get ruined with two boys who love to play.
Nextdore showed us a product that looks
like wood and is water and scratch-proof. It
has been incredible and people are surprised
to learn it is a laminate.”
Landscape architect Emma Johnston
has been designing for more than 27
years, including in the Cayman Islands
and the United Kingdom, but even she
sucks in her breath, with a bit of a laugh,
when she recalls the project.
“It was a challenge, for sure. It is a
pretty tiny area and when he [the client]
started reeling off what he wanted to fit
in, that was my challenge,” she says.
But the end result is seamless. Cook
on the barbecue, while chatting to
people enjoying a few brews at the bar,
then clean up in the outdoor kitchen
without breaking up the party. The bar
table even has a gas burner in the middle
for warmth. Not too shabby indeed.
An intimate vibe is created from the
thoughtful use of planting and louvre
shutters; it is almost as though the busy
city streets outside the walls don’t exist.
Intricate planning was required for this
project. Emma started by tackling the
best place for the covered area. This was
not as easy as it may seem because the
structure could not block the flow of
light into the home.
“That’s why I left the middle bit open
and pushed all the covered area to
the outside. The sun still goes into the
house,” she says. “If you had done it
around the other way, it would have
blocked the sun.”
The shelter was created with a louvre
system. When the sun shines, they are
52 Style | Landscaping
open, and if the heavens decide to fall, a
simple press on a remote closes them back
to their rain-proof form.
Somehow, the area retains an illusion of
space. Though we marvel at the magicians
that landscape artists must surely be, it
comes down to using “every little bit of
space” in a thoughtful way, says Emma.
“All the posts of the overhead structure, I
needed them to belong somewhere. That’s
why they come into the bench wall so they
are not taking up valuable space in the deck.”
Cages are ready to capture the evergreen
plantings as they grow to ensure they don’t
encroach on the space.
Emma prefers a design and build approach
to her projects.
“When you have the same company doing
design and build, it helps deal with all the
challenges when they arise. The designer is
on-site the whole time and available for all
decisions to be made. When that doesn’t
happen it can be a bit disjointed.”
But there is nothing disjointed about this
space. It is the backyard for those who love
to host and proves you don’t need a huge
space to create an entertainment area. Just a
very crafty landscape architect.
CLOCKWISE FROM TOP LEFT: The barbecue area fits seamlessly with the rest of the
outdoor dining area; The tiles on the barbecue are a standout feature; The plantings
have cages to help stop encroachment into the area when they are fully grown; Goom
Landscapes senior landscape architect Emma Johnston designed the space.
EXTERNAL AFFAIRS
with Tim Goom
Spring
into Spring!
It probably seems like the best place to be at the
moment is hiding indoors in the warmth - especially
when it might appear there isn’t much happening in
the garden. If you’re wanting your garden to flourish,
take action now to ensure when growth erupts it’s
ready to handle it!
Pruning
Roses should have been pruned by now- if not, don’t dally- sharpen
secateurs and get cracking! If you’ve procrastinated because you’re
worried you’ll get it wrong, just get stuck in. Roses are more robust
than you might think. Any dead or diseased stems need the chop!
Winter has plenty of pests and disease hiding amongst the leaf litter
so after pruning, give the canes and surrounding soil a good spray of
copper followed up two weeks later with spraying oil. Your herbaceous
perennials will have died back above ground so ensure you cut these
back to provide the best chance for spring growth. Under the ground,
the roots are alive and well and ready for action.
Mulching/Composting
To ensure your plants are primed, make sure your composting and
mulching is up to speed. August is a great time to get your first dose
of slow release fertiliser on the ground and applying light mulch at the
base of your plants will add a layer of protection to keep moisture in
and frost out.
Tools & Safety
Your gardening tools are probably tucked away out of sight in the
garden shed. What better time to check them out, undertake any
repairs and ensure any blades are sharpened. Obviously one of the
most vital pieces of equipment during spring and summer is your
lawn mower. Having this serviced now will ensure it is primed for the
coming lawn growth explosion.
by Goom
Safety first! It’s that time of the year when moss can get away on younot
just unsightly but also hazardous. A quick spray of Wet & Forget
will help keep things at bay and ensure visitors can make it to your front
door without running the gauntlet of a slippery path. Moss might be
attractive on a forest floor but not creeping over your paths!
Deck cleaning/Oiling
In the throes of winter, relaxing outdoors on your deck probably seems
a way off- but preparing your deck for the warmer weather can start
now. Regularly removing debris and dirt is vital to keep your deck
looking great- even when not in use. For oiling, hold fire until Spring
when the weather is slightly warmer to maximise absorption.
Breathe easy
The indoor plant fad is back with gusto.
And in today’s modern environment, air-purifying
plants need to stick around.
Words Sue Witteman
56 Style | Home
M
any fads come and go in the world of what’s fashionable,
and while some should never come back into our lives
– leg warmers, tight perms, yellow conifers – others should
always be in fashion. Into this category I place indoor plants
and, in particular, air-purifying plants.
Style | Home 57
The why
We live and work in houses and offices that are
constantly giving off chemicals, many of which are
really not good for us. And this is where we introduce
our cape-wearing heroes, the indoor plants, for they
can do something that borders on the miraculous
– transform those chemicals from nasty to harmless.
Worse still are hermetically sealed buildings, both
offices and homes, in which there is a lack of fresh air
blowing through. The air in the building can be more
polluted than the air outside.
Our heroes
Different plants absorb differing amounts of toxins,
and different plants deal with different toxins, so the
clever thing is to have a variety of plants to cover all
the toxic bases. Each person has a personal breathing
space of about 0.2 cubic metres and most people
occupy this space for long periods of time – when at
the computer, watching TV, sleeping – and by adding
a plant to this breathing zone you are not only
getting something pleasing to look at, you are getting
a biological system that will filter the nasties out of
your air – with very little input from you.
How many should I get?
To work out how many plants to use, aim for one
15cm plant for every 10sqm of home or office, or
15 to 18 plants for an area of 170sqm (which is the
average size of a Kiwi home).
58 Style | Home
What plants to use
The answer is basically all plants, though there are some that will be more effective than others.
Also, the size of the plant will dictate its ability to do the job – bigger is better. The following is a selection of those
effective, readily available plants to begin your clean-air family:
• Peace lily
• Mother-in-law’s tongue – Sansevieria
• Flamingo flower – Anthurium
• Ivy – Hedera helix (surprisingly, this scores high in its
ability to remove toxins)
• Weeping fig – Ficus benjamina
• Rubber plant – Ficus robusta
• Dracaena sp.
• Boston fern – Nephrolepis exaltata
• Aloe vera
• Bamboo or reed palm – Chamaedorea seifrizii
• Dwarf date palm – Phoenix roebelenii
• Chinese evergreen – Aglaonema modestum
• Heartleaf philodendron – Philodendron scandens
• Spider plant – Chlorophytum comosum
• Broadleaf lady palm – Rhapis excelsa
• Devil’s ivy – Epipremnum aureum
• Kentia palm – Howea forsteriana
• Chrysanthemums – though last on this list, they
actually score up the top of the scale in terms of
air-filtering ability. Plant in the garden when flowering
has finished and buy more to put back inside.

Face to face
After a busy first year in business, Lovoir Beauty’s Teresa Sime says
it is just the beginning for the salon.
What are some of your achievements from the
past year?
I built this salon from scratch within a year, working
countless hours to get it exactly the way I wanted it to
be. Hearing the positive feedback from our clients and
staff is definitely good motivation to keep going!
I think it is really important also to look after your staff
by nurturing them as the beautiful people they are. I find
that the industry can sometimes forget this, so I have
taken measures to ensure our staff are very well looked
after. This simple approach has manifested its way along
the chain to dramatically elevate the experience our
wonderful clients have.
What is the key to maintaining good relationships
with your customers?
The spa experience should not end when clients leave.
They trust us with a purpose and that is results. Whether
it is skin-related or pure relaxation, we use every tool in
our power to give it to them. Not only do we provide
clients with a high-end spa experience in each visit, but
we also give them many opportunities for feedback so
that we can continue to improve their experience. In such
a competitive market, it’s incredibly important for our
clients to know that they’re valued. Personal attention is
critical!
What are you looking forward to next?
Being able to fine-tune our treatments and client
experience. We have so many amazing modalities at
our disposal with a brand new OBSERV Skin Diagnostic
Device, IPL for hair removal and skin rejuvenation and we
are a Dermapen Gold Authorised Treatment Provider.
Having access to technology gives us so many options for
helping our clients on their skin journey.
How has skincare developed during your time in
the industry?
I have been in the beauty industry for 13 years now and
skincare has developed at a phenomenal rate. We now
have skincare that can repair telomeres, chromosomes
and DNA and alter the production of melanin, to name
a few. Skincare is getting fine-tuned in laboratories, but
we’re also seeing a resurgence of professional-strength
natural and organic skincare, which is fantastic. Clients are
more aware of what they’re applying and consuming now.
If you had one piece of skincare advice, what would it be?
Find a beauty therapist who listens to what you need
and who you enjoy and trust. Listen to their advice. Your
beauty therapist has trained for years and continues to
train to bring you the best results. Consumers are blasted
by social media and advertising so much that it can be very
difficult to know what you could and should be doing to
actually achieve the results you’re after.
5 tips for that
winter glow
Nourish, protect and adjust to warmer colour tones.
Words Emma Peters
1. Proper cleansing
Daily cleansing and regular exfoliating encourage
the turnover of new skin cells. This will remove
excess dead skin cells from the surface, allowing
for better absorption of your skincare products.
2. Skin prep
In the winter months, the skin has a tendency
to be lacklustre and drier than usual. To counter
this, step up your ‘skin food’. Choose a rich
moisturiser that will add extra hydration to the
skin. A great bonus step is to seal moisture
in with a serum or primer that will prep
the skin for flawless foundation application.
Aleph Serum/Primer contains nourishing
and regenerating ingredients to offer extra
protection to the skin barrier, while enhancing
its appearance over time.
3. Choose cream-based products
Selecting a cream-based concealer, foundation
and cheek colour is a must for winter skin. Not
only will this look and feel better on dry skin, it
will continue to nourish the skin throughout the
day, adding an extra layer of protection against
the elements.
4. Blush those cheeks
Year round, blush is important. It’s even more
so in the winter months when the skin is at its
palest. Once you even out your skin tone with
foundation, it’s crucial to add some colour back
in the right areas with a little cheek tint. This
often seems counter-intuitive to those with
high colour in their cheeks, but it will mean the
difference between a pallid complexion and a
healthy glow.
5. Select warm rich tones
Winter is a great excuse to choose shades that
you might shy away from otherwise. Warm, rich
tones, such as plum, terracotta and burgundy on
the cheeks, lips and eyes, are a great way to give
winter skin a boost and lend a bit of comforting
creativity to your look.

Dunedin has some spectacular beaches if you
have a few hours to kill and are reasonably fit,
especially Sandfly Bay on Otago Peninsula, which
has awesome dunes to climb – or you can take
Drive
There are plenty of options for going for a nice
Sunday drive from Dunedin, but you can also find
several good drives within the city. A nice afternoon
out is a trip to Aramoana for a walk along the pier,
stopping for lunch at Careys Bay Historic Hotel on
the way there and maybe a coffee on the way back
at Port Chalmers, along with a browse of the shops.
In the other direction, head to Brighton for a walk
Ephemera (NZ)
Tina Shaw
(Bateman Books, $29.99)
What inkling did Tina Shaw have that the New Zealand
she so deftly creates in Ephemera would be so relatable
amid the global Covid-19 pandemic?
After a worldwide crisis, life has come to a
standstill. Airports closed. No electricity, broadband
or, horrifyingly, coffee. Supermarkets, hospitals and
medicine are all a thing of the distant past.
And what protagonist Ruth desperately needs is
medicine for her sister, who is dying from tuberculosis.
There are whispers of an arsenal of drugs at Huka
Lodge, so the former ephemera librarian, somewhat
foolhardily, travels up the Waikato River via a DIY
steamboat with two men. Ruth, who thinks she has led
a sheltered life, soon learns that not even New Zealand
society is immune to the unpalatable parts of basic
survival instincts.
An absolute marvel of a book. Humour is inserted at
just the right time to catch your breath, but be warned;
within the first few sentences, you are sucked into a
world where to survive the choices you make may
mean you no longer recognise yourself.
Liane Moriarty
(Penguin Random House, $15 each)
In book one, Nicola Berry and the Petrifying Problem with
Princess Petronella, Nicola is surprised to see a stranger
arrive in her geography class. The stranger’s name is
Georgio and he has come to Earth from his planet,
Globagaskar. He makes the whole class (except Mrs
‘Zucchini’, their teacher) take an odd test to see who
will be the so-called Earthling Ambassador.
My favourite character is Shimlara, Georgio’s
daughter, because, like all Globagaskarians, she can read
minds. According to Georgio, Globagaskar is 2000 years
more technologically advanced than Earth.
I enjoyed this book because it has enough suspense
to keep you reading. If you enjoy adventure, this series
is for you! I devoured all three within a few days.
It is a disease that cannot be seen, but
many women suffer from it, often feeling
like they are alone. Oxford Women’s
Health gynaecologist Simon Jones
explains the facts behind endometriosis
and what treatment can look like.
Endometriosis is an inflammatory disease that affects
up to one in 10 New Zealand women. Because it has
many symptoms, diagnosing the condition can be difficult,
and often women don’t realise that issues such as period
pain, bowel problems, pain during sex, and tiredness can
be an indication that they have the disease.
If women have period pain, that lasts more than one
or two days, and prevents them from attending work or
school, they should definitely talk to their GP or contact
us at Oxford Women’s Health. It is important not to leave
symptoms too long before seeking advice, as it is much
easier to manage the disease when it is in its early stages.
At Oxford Women’s Health, we see many women
every year with endometriosis and offer a range of
options for alleviating symptoms and treating the disease.
This includes everything from lifestyle coaching and
nutritional advice to surgery.
Specialist care
and treatment for
every stage of a
woman’s life.

Oxford Women’s Health specialist Simon Jones
answers 5 common questions on endometriosis.
I get painful periods. Does this mean I have endometriosis?
Not necessarily. It is normal for some girls to experience painful or erratic
periods in their first few years of menstruation. However, if the pain lasts
more than one or two days and is preventing you from doing the things
you enjoy in life, you should talk to your GP or book an appointment with
a gynaecologist.
Is there a “cure” for endometriosis?
There is no guaranteed cure for endometriosis but once diagnosed it can
be managed by using a variety of treatment options. At Oxford Women’s
Health, we perform laparoscopic operations to both diagnose and remove
endometriosis. We also use offer hormonal medications (like the pill),
physiotherapy, coaching, and lifestyle advice to help minimise the impact
of the disease.
What is the easiest way of explaining endometriosis to people?
Endometriosis is a condition in which tissue that normally lines the uterus
– the endometrium – grows outside the uterus. It usually affects fallopian
tubes, ovaries and tissue lining the pelvis. Surrounding tissue can also
become irritated. The disease causes pain, which can be severe when you
are having a period. Thankfully, effective treatments are available.
I feel quite alone because people struggle to understand the
pain I am in. Is this normal? What can I do?
This is normal but you are definitely not alone in living with endometriosis.
Oxford Women’s Health is lucky to have Endometriosis and Pelvic Pain
Coach and Consultant, Deborah Bush, as part of the team. She is available
to provide coaching and lifestyle advice to our patients. The Endometriosis
NZ website https://nzendo.org.nz/ also offers ways to access support.
Taking time off work because of endometriosis is not always
easy, or understood by management. Are there ways to lessen
the impact on our daily lives?
It is a good idea to speak to your manager about your condition and
the support you may need. You can then find solutions that work for
both of you. There are a number of lifestyle changes that women with
endometriosis find useful. For example, regular exercise and avoiding
certain foods are often beneficial. Physiotherapy can also be helpful.
At Oxford Women’s Health, we want you to leave every
appointment feeling better than when you arrived.
We understand it can be difficult living with health problems but
sometimes finding sympathetic expert help can feel even harder.
Our staff are friendly, respectful and professional, so you can feel
comfortable while receiving the very best advice and treatment.
We have 15 health professionals who are highly-respected leaders
in their fields of gynaecology, obstetrics, oncoplastic breast and
general surgery, physiotherapy, nutrition and endocrinology.
Cocoon comfort
Fire up your wellbeing in dreary winter months.
Words Deanna Copland
Wellbeing (n.)
A state characterised by health,
happiness and prosperity,
according to the dictionary.
In other words, wellbeing is
that desirable condition where
we thrive (prosperity) both
physically (health) and mentally
(happiness).
And yes, that can even
be found on those grey old
winter days; after all, home
is where the heart is. There
is something quite warming
about the memories created
in the cooler months: a
fire crackling away, candles
flickering, slippers, stacks of
good books and the aromas
of slow-cooked hearty meals.
You can make a big impact on
your health by making a few
changes to your lifestyle in
your winter home to keep it a
sanctuary for your wellbeing.
Restorative rest, not binge-watching
Bunker down and get into bed earlier to read. As
appealing as it is to binge-watch crime series, this
is not the most restorative way to unwind after
a day at work so try to set a bedtime that allows
seven to eight hours of overnight repair. Being
well-rested helps with stress adaption, tolerance of
others, pain sensitivity and blood sugar regulation,
so this is a great time to recharge.
Smell = digestion
Digestion starts through the olfactory system
(smell), so a slow cooker is a wonderful
investment. You can make an array of things
in them, from vegetarian curries to self-saucing
puddings. The Beef Rendang Curry (page 88),
for example, uses cheaper cuts of meat to
provide a good source of collagen for skin,
hair and joint health. Make a double batch and
freeze one to enjoy another time.

Air it out
Hippocrates, the father of medicine, stated centuries ago that
“What you eat, your lifestyle and the place in which you live affects
your health.” Health issues from asthma, allergies, attention deficit
hyperactivity disorder and eczema to hormonal imbalances, infertility
and chronic fatigue syndrome may be caused or exacerbated by
environmental exposure. Spending more time indoors can mean
you are exposed to more pollutants. Healthy Home, Healthy
Family author Nicole Bijlsma writes about how indoor air has been
estimated to be five to 10 times more polluted than outdoor air.
This is due to volatile organic compounds (VOCs) that are released
by building materials, glues, cleaning and air freshening products, etc.
There are currently 145 million chemicals registered for use on the
world’s largest chemical database, and every 60 seconds another 20
chemicals are registered; we are exposed to more chemicals than
ever before.
• Ensure your spaces are well ventilated to avoid mould exposure.
• Microfibre cloths are great to clean with – try to use cleaning
products that do not contain chemicals that adversely impact
animal, plant or human health.
• Taking shoes off at the door is also worthwhile, especially if you
have children playing on the floor.
Indoor plants (page
55) can act as natural
air purifiers, but just be
sure to keep them out
of bedroom areas due
to microbes in the soil.
Tips for finding a bit of ease, and does collagen in your coffee work?
Essentially
Cursing through gritted teeth those
jolly grey days when the washing is
piling up? Try some instant sunshine
by putting pink grapefruit essential
oil in your diffuser and let the sweet
fragrance sweep over you, reviving
your body and mind. It is reported to
thought to help release anger.
Instant bliss
Could the “World’s most relaxing song” send your frazzled weekday
into a Sunday? In 2016, UK band Marconi Union released ‘Weightless’,
a song they developed with sound therapists to help reduce anxiety,
blood pressure and heart rate. Mindlab International research says it
reduces anxiety by 65 per cent. We gave it a whirl on deadline day,
and well, it’s like a warm cup of tea right in your heart space. It does
come with a warning not to listen to it while driving, so perhaps don’t
use it in the car – even if the kids are yelling at each other.
Kondo your newsfeed
In the wake of the overconsumption
a specific amino acid formulation
that targets the production of new
collagen. As a major component
of connective tissue in the body,
adding collagen to soups, smoothies
or your daily coffee should actually
be of benefit if you feel your diet
is lacking in gelatinous-based foods.
Diets used to have more gelatinous
cuts of meat, like shanks, tendons
and oxtail, but nowadays we opt
for different cuts, which means we
may need a supplemental boost.
Interestingly, research investigating
collagen supplementation for
patients with fibromyalgia showed
positive effects on all symptoms.
There is also evidence to show that
chronic bursitis and osteoarthritis
are improved with collagen
supplementation.”
Soup from scraps
Before you hiff out the stragglers in the vege drawer,
take Sarah Burtscher’s advice and save money, food and
the planet with soup.
Photos Jet Campbell
Style | Food 93
TIP
Do this the day before
you go shopping so
you have a clean vege
drawer and no veges to
throw out.
Forgotten Vege Soup
This soup sees a fabulous clean out of the fridge.
Look at what you have neglected in the fridge
vege drawer, and this is literally what this meal is
made from. I call it a ‘flexible framework’ recipe,
as you can use all sorts of different ingredients
but the ‘basic frame ingredients’ remain the same.
You can include most fridge-kept veges, or potato
or k mara, remembering they are all going to be
whizzed up together at the end.
BASIC FRAME INGREDIENTS
2 Tbsp olive oil
1 onion (use up odds and ends if need be)
2–4 garlic cloves
1–1½ cups milk or milk alternative
2 dried bay leaves
2 cups chicken or vegetable stock
salt and pepper to taste
For years I’ve been clearing out the fridge
and using up the ugly and forgotten
foods by cooking up what I’ve termed a
‘fridge cleaner’. This could be a soup, cake,
casserole, or whatever. I started looking into
food waste, and, wow, do we throw out a
lot of food in New Zealand!
According to Love Food Hate Waste
NZ: “New Zealanders throw away 157,389
tonnes of food a year. That is equivalent
to 271 jumbo jets of food that has to go
somewhere to rot, instead of being eaten.
[...] All of this food is worth about
$1.17 billion each year.”
A lot of household cooks just don’t know
what to do with the sad-looking fruit in their
fruit bowl, or the limp carrots in their vege
drawer. So, I started Fridge Cleaner Cooking
(fridgecleaner.co.nz) to showcase how to
make forgotten everyday ingredients into
delicious, nutritious meals.
FLEXIBLE INGREDIENTS
¾ of a very limp cauliflower/broccoli or
2 medium potatoes/k mara
parsnip
4 stalks celery
2 rashers bacon
METHOD
1. Roughly chop all veges, including your celery
leaves if they are not too old.
2. Sauté bacon, onion and garlic in olive oil in a
heavy-based pot.
3. Add the rest of the ingredients, including
a handful of celery leaves, and cook off for
approximately 10 minutes.
4. Pour in enough stock to just cover
all ingredients.
5. Add bay leaves and remaining celery leaves,
then simmer until all veges are tender.
6. Remove from the heat, fish out the bay leaves
and blend till smooth (I like to use a wand).
7. Add milk, stir well and put the bay leaves
back in.
8. Taste and season, adding more salt or
pepper as required.

One square meal
For those who love beetroot, chocolate and ginger, you are in for a
treat with this delectable brownie recipe.
Words Kristina Jensen
Style | Food 95
Beetroot Chocolate
Ginger Brownie
TIP
Cook beetroot whole
whenever possible.
If they have been cut
in any way, they bleed
their juice into the boiling
water and the flesh
tastes rather insipid.
It is a vegetable that the Romans considered
to be an aphrodisiac – and when teamed with
chocolate in this delicious brownie recipe, well,
that is quite a combination.
The natural earthy sweetness of beetroot
makes it excellent for baking, and it also contains
betaine, which is a mood enhancer. So get your
measuring cups out and get baking this deliciously
healthy treat that can actually make you feel good.
Note: It is important to have the ingredients for this
brownie ready to mix together, as the chocolate tends
to go hard as soon as it is mixed in with the beetroot.
INGREDIENTS
2 large beetroot (roughly 500g)
200g plain chocolate (70% cocoa)
or dark chocolate melts
200g brown sugar
3 eggs
¾ cup plain flour (for gluten free,
use fine rice flour)
¼ cup cocoa powder
2 tsp powdered ginger
100g butter, melted
2 tsp vanilla extract
METHOD
1. Line a sponge roll baking tin with baking paper.
2. Place the whole unpeeled beetroot in a pot and
cover with water. With the lid on, bring to the boil,
then turn down the heat and simmer for 20 minutes.
3. Remove the pot from the heat, tip off the water and
leave the beetroot to cool for half an hour with the
lid off the pot.
4. Once cool, carefully peel off the beetroot skin and
grate.
5. Melt the chocolate gently in a bain-marie.
6. While the chocolate is melting, whisk or beat
together the sugar and eggs in a large bowl for about
two minutes, until the mix is thick.
7. Sift the flour, cocoa powder and powdered ginger
together and add to the egg/sugar mix, folding in
gently until combined.
8. In the following order, add the grated beetroot,
melted butter, vanilla extract and lastly the melted
chocolate to the large bowl, and mix together until
the ingredients are well integrated.
9. Pour into the prepared tin and bake for 20 minutes
at 180°C (fan oven if possible). Then drop the
temperature to 150°C for a further five minutes.
The brownie should be just cooked and caramelising
slightly around the edges.
10. Allow to cool in the tray and then cut into squares.
Dust with icing sugar if desired.
HOW TO MELT CHOCOLATE IN A BAIN-MARIE
Break the chocolate into pieces and place in a small
pot. Place the small pot inside a slightly larger pot
containing 2–4cm of water. Bring the water in the
larger pot up to a simmer and stir the chocolate
pieces in the small pot until they melt.

Let us be-gin
Boutique gin production is booming, but are you too afraid to go near a
potential tearjerker? Kate Preece shares some game-changers.
I
f the thought of a tall glass of G&T has
you suppressing a sob, it’s time to make
new memories. Like chardonnay, tastes
have changed, and as such the range of gins
readily available will make for much happier
experiences all round. The flavours this
juniper-based spirit can boast range from
grapefruit to gingerbread – and that’s not
gin-snobbery talking, that’s a fact. So why
not start with one that will truly challenge
those reoccurring preconceptions?
Currently pouring
If you’ve dabbled in the
Japanese gin world you’ll
know that their range of
botanicals, unsurprisingly,
delivers a range of tastes
distinctively different to those
of other countries. With
very little English writing on
the bottle to guide me, my
taste buds yelled ‘lemongrass’
when I first sipped my Nikka
Coffey G&T. Upon further
research, it’s likely the result
of the combination of four
types of Japanese citrus (none
of which I had heard of) and
a bit of pepper. Best served
strong to make the most of
the subtle nuances.
Spanish flair
Transport yourself to a place far, far
away with this doosy of a Galician
gin. Even the novice will be able to
taste liquorice in an ice-filled glass
of Nordés gin, but there’s also sage,
verbena and mint among its 11
botanicals. Named after the Nordés
wind that blasts in from the Atlantic
Ocean, it a fresh pick-me-up that
demands another round.
Wine or what?
For the last month of winter, it’s okay to mix your
wine and your spirits. The Four Pillars Bloody Shiraz
Gin adds Australian grapes to its solid white spirit
base. It’s a good way to pull the wool over the eyes
of non-believers as it truly does blend these two top
drops in one. For something quieter (i.e. under 30%
alcohol), a sloe gin (infused with English sloe berries)
will keep the home fires burning too.
Spicy number
The Opihr Oriental Spiced Gin
comes in at the cheaper end of the
boutique gin scale (as low as $56),
but brings with it a mighty impact.
Imagine you’re eating a fragrant
curry and finish off with a slice of
citrus. With cardamom and cumin in
its ingredient list, the Opihr is much
easier to drink than to say or spell.
