slowdown has passed and a ground-rush type of existence has<br />

taken back its place.<br />

A friend and I were talking about the underappreciation of<br />

‘mental load’, despite its ongoing effects. We seem to more<br />

easily accept that someone is tired or less enthusiastic when it’s<br />

the result of physical exertion, yet a frenetic mind will have you<br />

run down in no time. The pressure of organising a household<br />

and/or caring for dependents is part of the mental load – and<br />

you haven’t even left the house yet. Add to that the pressures<br />

of work and it’s little wonder you can find yourself with little left<br />

in the tank at the end of the week.<br />

With <strong>Style</strong>, we offer you a moment to pause. It might seem<br />

a frivolous notion in such turbulent times – and, of course,<br />

everyone is going through their own challenges – but only you<br />

Catching a movie at Lincoln’s Apollo Cinema (17 West Belt) has<br />

been on the to-do list for quite some time. A friend’s birthday<br />

finally saw me arrive with pre-booked ticket on phone at the<br />

15-seat theatre, which is part of The Laboratory (restaurant, bar<br />

and brewery). Behind the ‘ticket holders only’ door, I discovered<br />

the plush seats and warm environs where movie-goers watch<br />

a curated collection of flicks. For my party, it was A Bump Along<br />

the Way – a comedy/drama, set in Northern Ireland, about what<br />

happens when an immature 44-year-old single mum ends up<br />

pregnant after a one-night stand! Grab a drink at the bar and<br />

take it and a Kapiti ice cream cone across the cobble stones with<br />

you. There’s no popcorn, but with the likes of hot chips or an<br />

antipasto board on the cinema menu, there are plenty of treats<br />

to top off a great night out. – Kate Preece


Okay, so this year – this most unusual of<br />

years – it’s all about home.<br />

Staying home, enjoying your very own<br />

backyard or that beautiful expanse we<br />

know as our entire countryside here in New<br />

Zealand.<br />

Holidays, breaks, refreshers, little weekends<br />

away are all to be enjoyed within our own<br />

boundaries and borders.<br />

Unlike other years, it’s about discovering<br />

or rediscovering what many Kiwis take for<br />

granted. Large, green open spaces, public<br />

galleries and museums (that unlike those<br />

in many cities around the world are free to<br />

visit), and rivers, lakes and mountains within<br />

driving distance for most.<br />

I can vividly remember being on a European<br />

trip with my family when the guide asked<br />

where we came from. After listening to our<br />

response, a long pause occurred, then a<br />

rather loud, disapproving Gaelic sniff. “Noo<br />

Zeeland, zee end of zee earth.” And at the<br />

time I thought it was, having taken 30 hours<br />

to arrive at our destination, but today that<br />

very isolation feels like a blessing. It’s easy<br />

to see why so many are also taking time<br />

to reinvest some love and attention in<br />

their own properties due to staying home<br />

rather than traveling, and businesses such<br />

as landscapers, renovation builders and<br />

interior designers are seeing the benefits of<br />

that change.<br />

If a staycation is currently on your radar and<br />

you want to take the time to focus on your<br />

own home, here are some options that<br />

might give you some satisfaction, add value<br />

… or both.<br />

First, Declutter<br />

Nail that garage first. Get rid of all the stuff<br />

that’s broken, outdated or no longer useful.<br />

If it’s still functional but of no use to you, give<br />

it away, recycle or dispose of it in a method<br />

that’s environmentally mindful, if possible.<br />

I personally use the garage as a bit of a<br />

dumping ground, much to the frustration<br />

of my husband, but I also love the feeling of<br />

nailing an area that’s long needed a tidy-up.<br />

Once you’ve done that, move inside and see<br />

if you can improve your surroundings and<br />

wellbeing by editing some of the stuff that<br />

fills your space.<br />

Gentle Changes<br />

With these two areas decluttered, let’s go for<br />

some interior changes.<br />

Move furniture, move art, have some fun and<br />

enjoy the changes.<br />

Edit, and what you don’t edit, use. Nothing<br />

needs to occupy a precious space where<br />

items are relegated as being ‘just for good’.<br />

Use everything you have, no matter its value<br />

or composition, and have fun.<br />

Your family space should convey a feeling of<br />

warmth, wellbeing and welcome.<br />

Step Outside<br />

During the lockdown period, I remember<br />

watching people in Spain and thinking, what<br />

must it be like not being permitted to go<br />

outside?<br />

This is where so many of us are fortunate.<br />

No matter your home’s size, your property<br />

address, whether you’re in a large residence<br />

or a compact unit, try to make the most of<br />

the outdoors. Your outdoors. Follow the<br />

sun (if there is any!) and give thanks that<br />

although we might not be able to travel the<br />

world, you’d travel the world to find what we<br />

have in our own backyard.<br />

It seems that not only myself but others have<br />

had a chance to stop chasing everything that<br />

appears greener somewhere else, instead<br />

appreciating what’s been in front of our<br />

noses the whole time. Home.<br />

a staycation.<br />

Recreators<br />

Designing a café takes careful consideration. For some, the visions<br />

could take an intensive four-day blitz to create; for others,<br />

the transformation could take seven and a half years.<br />

It is a dingy overcast day, where winter has definitely<br />

come out to play. The Montreal Street area by<br />

Moorhouse Avenue is ramping up with the flow of<br />

trucks and cars. But on Walker Street, just around the<br />

corner, there is a curious aberration.<br />

Meet Ally & Sid: the café recreated in just four days.<br />

And it is like a little light beacon, brightening the street<br />

from what used to be a rubber moulding factory.<br />

Samuel and Aimee Nimmo took over the lease for<br />

the café, which was formerly the Anchorage and then<br />

the Park Ranger, on a Friday in November last year.<br />

That left four days to turn it from a darkened café<br />

with walls, floors and tables coloured black, into their<br />

vision of a light, beach-inspired café.<br />

“We spent all day and night with our church friends,<br />

painting to 3am. Building counters, chopping up tables.<br />

We were honestly exhausted, it was crazy,” says<br />

Samuel.<br />

He felt his first inkling of dismay on Monday night<br />

when he looked around and saw there was much still to<br />

be painted, including the floor.<br />

“If we don’t get this done, we’re not going to be able<br />

to open. So we put the message out [on social media]<br />

and literally within half an hour, 20 people had shown<br />

up,” he says.<br />

His father, Lachlan Nimmo, a builder by trade, made<br />

smart work of a large black banquet table running<br />

through the length of the café, chopping it into smaller<br />

tables within 20 minutes.<br />

“I’ve never seen anyone work so hard,” says Samuel<br />

with a smile.<br />

It was the same for Aimee’s father, Danny Steel, a<br />

painter, who attacked the walls with his spray gun.<br />

The tables and benches were all stripped back: the<br />

tables to their raw beginnings, and the benches coated<br />

in white paint with a shabby chic look. Just a hint of<br />

the black peeks through in the in-between spaces, a<br />

reminder that these tables carry with them a history.<br />

The walls were painted a shade of white, as were<br />

the bookcase structures over the counters, where pot<br />

plants and keepsakes now reside.<br />

A softness is added through the peach-coloured<br />

feature wall at the back, but it is the mural on the white<br />

brick wall by the entrance that suddenly became a hit,<br />

appearing in Instagram feeds. Hues of peach in almost<br />

wave shapes cascade over themselves in the mural.<br />

“Our friend Saskia [Hoekendijk] had a dream. In the<br />

dream she saw a pink wall in our café, because we<br />

already had the apricotty colours going on. We said<br />

sweet, let’s do it,” says Samuel.<br />

“Once we did that, honestly it blew up on Instagram.<br />

Every person that came in was getting photos in front<br />

of it. We were stoked,” says Samuel.<br />

The garage door, which once saw customers roaring<br />

into the rubber moulding factory, now adds just<br />

the perfect touch to the café, where you imagine in<br />

summer it is thrown open so the café chatter and vibes<br />

continue into the street.

The neon sign was used at Aimee and Samuel’s wedding and inspired<br />

the café’s name.<br />

With the colours and paint in place, it was time for Aimee, or<br />

“design genius” as Samuel likes to call her, to come in with her<br />

subtle touch to add in a distinct beach vibe with the décor.<br />

An area with wicker seats, a wooden table and a rug makes<br />

you feel as though this café could be happily ensconced on<br />

any beach location. Above the couch is an A+S neon sign that<br />

doesn’t detract but somehow seems to enhance the space.<br />

Perhaps it is because it is from Aimee and Samuel’s wedding.<br />

It sat on the reception table, and the couple wanted to reuse it<br />

in the café. Which is how the name came about.<br />

“We said, ‘How can we come up<br />

with a name that works with it?’ It was<br />

random, but it works,” says Samuel.<br />

He’s right. The name itself has that<br />

youthful and chilled exuberance that<br />

sticks out on the industrial street.<br />

The look is signed off with a beautiful<br />

arrangement from the Dried Flower<br />

Company.<br />

But make no mistake: although<br />

the vibe is chilled, Samuel’s approach<br />

to coffee is not. He is a true barista<br />

captivated by coffee, which means you<br />

are guaranteed a true brew.<br />

He grins and laughs when asked if<br />

he has a signature coffee. The short<br />

answer is yes, but, as it’s a bit of<br />

convoluted process to make, it’s only<br />

made for his special customers. Our lips<br />

are sealed!<br />

It’s late afternoon now and heading<br />

into the weekend. The lawyers, doctors,<br />

car salespeople and office workers that<br />

are their customers will swap out for<br />

families and friends.<br />

And so, the story has just begun for<br />

this haven settled amidst an industrial<br />

area, and created in just four days.

You won’t find a coffee machine at Sue Gidden’s café<br />

and restaurant tucked away in the countryside. Though<br />

it raised a few eyebrows and her family tried to talk her out<br />

of it, Sue knew what she wanted to create in her foodie<br />

Springston sanctuary: a place where people could sit and let<br />

their senses be charmed. And there was certainly no place<br />

for a rude machine spouting steam and disrupting that peace.<br />

“I do live by my own rules,” she laughs. But that is why<br />

her café, Memorys, works so well: because she doesn’t<br />

conform to what ‘ought’ to be in eateries.<br />

And yes, you can still get a cup of coffee, but Sue wants<br />

to make sure you only get the best. That means beautiful<br />

French press and drip coffee, created from what she<br />

considers to be the finest beans. She pays a bit extra to<br />

make sure it is so. Because for this creator and collector of<br />

memories, every person must depart with a little bit of that<br />

special magic she has created in her Springston sanctuary.<br />

Sue has always found beauty in what people no longer<br />

want; a “magpie”, she grins.<br />

And that is no more so than when she and her husband<br />

Chris stumbled upon an overgrown property in Springston<br />

12 years ago.<br />

“The poor land agent was ready to shoot the gap. But we<br />

promised we wouldn’t be long. We walked in through the<br />

back entrance and there was an accumulation of debris. We<br />

did a wander and the brains started whirring. We looked at<br />

each other and said, ‘Bugger’.”<br />

The property had snared its way into their hearts. Fortyfive<br />

years earlier Sue had worked in hospitality and had<br />

wanted to open her own place. But with family and life,<br />

the timing just wasn’t right. But it looks like this property<br />

was winking at them, telling them that now was the time.<br />

Though they gave it a good nudge to convince themselves<br />

otherwise.<br />

“I suppose most people would say, ‘Walk away, don’t be<br />

stupid.’ We went back four times to convince ourselves not<br />

to take the step, but each time we felt more enthusiastic,”<br />

she says.<br />

She chuckles when she remembers the reactions of their<br />

three daughters as they looked at the property.<br />

“They stood with their mouths open,” she says.<br />

It took seven and a half years for Sue and Chris to clear,<br />

gut and renovate the property. Sue at the time was working<br />

as a homestay coordinator at Lincoln High School, while<br />

Chris was an engineer.<br />

The property was a plant nursery and had a house and<br />

three concrete block structures, two of which Sue suspects<br />

were potting sheds. The third had a small kitchenette, toilet<br />

and bathroom; likely, former staff amenities. And so<br />

once the paperwork had been signed, Sue and Chris<br />

got on with the job of creating the café and restaurant<br />

they had so often dreamed about.<br />

The staff amenities building was to be the restaurant:<br />

stripped back to its bones, insulated, plastered and<br />

completed with textured paint on the walls. The ceiling<br />

was lined with recycled rimu.<br />

Walking into it is like walking into the handsome<br />

pages of a leather-bound storybook. Beautiful wooden<br />

interiors, with thoughtful little trinkets, weave together.<br />

“I didn’t want any commercial-type furniture in there.<br />

After the [Canterbury] earthquakes [September 2010,<br />

February 2011] people who had lost their homes were<br />

going into new ones and decided they didn’t want their<br />

old furniture, so I just gave it a new home,” she says.<br />

Some she managed to save just as a bulldozer was<br />

about to flatten them. Because for her, it is a terrible<br />

thing to see good furniture come to a sad demise.<br />

Walk through the restaurant and into the courtyard<br />

and gardens and it is difficult to think it was once a<br />

potholed, overgrown jungle. You’ll walk on the 15,000<br />

recycled bricks laid by Sue and Chris, while in Sue’s<br />

“pop it in” garden (called so because of her approach<br />

to gardening) you’ll find memories of the couples’<br />

walks and weekend trips – like the daisies grown from<br />

a cutting taken during a walk in Diamond Harbour.<br />

In spring, the courtyard will be dusted with blossoms,<br />

while in autumn it’s a haven for a golden mix of leaves.<br />

Across the courtyard, the two potting sheds have<br />

been transformed into elegant rooms, where intimate<br />

dinners of 6–12 people can be held.<br />

The Gallery Room is Chris’s wish of a tin shed come<br />

to life, with recycled corrugated iron as the cladding<br />

while it’s lined with recycled rimu. Charming leather<br />

couches, animal skin rugs and memorabilia create an<br />

almost hunting lodge feel.<br />

“You can go in there, take your coffee and just sit.<br />

Like yesterday, I just opened the doors and the sun<br />

streamed in. People who go in there are inclined to sit<br />

there all day and don’t want to leave,” Sue chuckles.<br />

It has an old coal range, butter churn and a rather<br />

interesting looking “slasher” in the rafters: a gorse<br />

cutter.<br />

“My father-in-law as a teenager used to cut back<br />

10 miles of gorse hedge around Tai Tapu with that,”<br />

Sue says.<br />

The second potting shed is now the Boardroom and<br />

also lined with recycled rimu. It has a charming fireplace,<br />

the sort you seldom see these days, and a dining table,<br />

etched with the memories of family and friends laughing<br />

and chatting while feasting on Sue’s fare.<br />

It is not a “bums on seats place” where your table is<br />

keenly eyed-up by the wait staff. Sue won’t be having any<br />

of that. And she’ll cook for you with the same passion<br />

and love she cooks for her own family and friends.<br />

Though the menu changes fortnightly, you could feast<br />

on such things as a yoga bowl, with warmed dahl on<br />

a bed of spinach, roasted vegetables, mango chutney,<br />

yoghurt and chapati pieces. Or perhaps you might try<br />

an Italian pasta filled with pumpkin, served with a brown<br />

butter Portobello sauce, pesto, pancetta and pecorino<br />

cheese. Or maybe baked brie with shaved truffle and<br />

truffle honey... or perhaps bruschetta with whipped goat’s<br />

cheese, preserved figs and m nuka smoked bacon is<br />

more your style?<br />

When first starting out, Sue admits she was nervous<br />

and thought she ought to follow trends. But she<br />

squared up her shoulders, reminded herself she doesn’t<br />

like conforming, and cooked “food from the heart to<br />

feed the soul”.<br />

Likewise, Sue refuses to be seduced by other<br />

wineries trying to woo her because she considers<br />

Burnham’s Straight 8 Estate to be just the ticket.<br />

“I wouldn’t change the wine for anything. They are<br />

a small boutique winery; we complement each other,”<br />

she says.<br />

And so if the city has been chasing at your feet, seek<br />

out the cottage-like, memory-laden haven hidden away<br />

down a long drive in Springston. Relax and chatter<br />

away, while eating the gorgeous fare of a woman who<br />

knows just what you need. Food for your soul.<br />

Still life in lockdown<br />

In the final part of this exhibition series,<br />

Ady Shannon speaks to Gill Hay about what emerged<br />

on her canvas during lockdown.<br />

Artist Gill Hay works from a studio in her home<br />

overlooking Lyttelton Harbour. Large wooden easels<br />

are poised to take in the views of the working port, the<br />

sea and the landscape beyond. Inevitably, her work spreads<br />

throughout her home. The spare bedroom acts as a drying<br />

room for wet canvases, and brushes soak in turps on the<br />

kitchen bench. Her tools of the trade – canvases, paint pots,<br />

oil tubes and brushes – contribute to a colourful interior<br />

along with a sizeable collection of art and sculpture. Pieces<br />

of her own hang alongside the work of other New Zealand<br />

artists, many from Banks Peninsula. As a founding member<br />

of the crew responsible for Sculpture on the Peninsula and<br />

the event organiser of the biennial event, Gill is an artist<br />

immersed in her passion.<br />

Lockdown provided a rare opportunity for the usually<br />

busy artist-in-residence to focus on her work, with few<br />

distractions.<br />

“It was a luxury to have uninterrupted time like that for<br />

me,” Gill says, almost apologetically.<br />

When the Prime Minister announced the Level 4<br />

alert status was imminent, while many converged on<br />

supermarkets to stockpile toilet paper, Gill headed to an art<br />

supply depot to source canvases. The run on those outlets<br />

was as frantic as the run on supermarkets.<br />

“I went in to The Drawing Room on the afternoon of<br />

the Monday Level 4 was announced and there was hardly<br />

anything left on the shelves. Usually I plan the canvas sizes I<br />

want to purchase in advance. That day I just decided to get<br />

a few blank canvases and see what happens.”<br />

She purchased six canvases in varying sizes and over the<br />

course of lockdown, spent a good part of each day working<br />

to fill the blank space.<br />

She admits, “Not everything was successful, but that is<br />

normal. It’s a case of working things out as you go.”<br />

There is the possibility of swiping a canvas with turps<br />

when the paint doesn’t produce the desired effect, but as<br />

Gill says, “There is some scope for reinventing a canvas but<br />

there is something about a new and fresh canvas that you<br />

only get once.”<br />

In response to the Covid-19-inspired situation, this body<br />

of work has been inspired by the work of the still life Dutch<br />

masters, creating compositions with the objects at hand.<br />

Gill, a co-director of NZ Artbroker, was surprised<br />

by the level of interest in the artworks on their<br />

website during the lockdown period.<br />

“We had a record number of views and sold<br />

several works, including one to a buyer in Ireland and<br />

another to a buyer in Australia. Our sales have hardly<br />

been affected. In fact, they may be slightly up on this<br />

time last year.”<br />

She attributes the surge in sales to the impact of the<br />

lockdown and people having more time to spend on<br />

their computers.<br />

“People cancelling trips were probably wanting to<br />

buy something special to compensate. As an online<br />

business we were able to maintain the site and put<br />

up new works created as a response to the unique<br />

situation,” she says.<br />

Gill is optimistic the situation for New Zealand<br />

artists going forward will be positive.<br />

“Art is a luxury item and many people in that<br />

market have not been affected by the economic<br />

outfall. The government has put a lot of money into<br />

the arts. Once that is allocated, we will see some<br />

interesting work based on a time when people really<br />

had time to think. In New Zealand, many artists have<br />

work space and studios based in their homes and they<br />

were able to continue to work. In Europe and the UK<br />

space is limited, so they are not as fortunate.”<br />

Frobisher National Retail Manager Jessica Beavon gives us<br />

behind-the-scenes intel as to how showroom pieces come together.<br />

How do you select pieces for your<br />

showroom?<br />

This is certainly the most enjoyable<br />

part of my job. In this day and age<br />

we are spoilt for choice in just about<br />

everything from fashion to furniture.<br />

But there is a lot to take into<br />

consideration. For example, does this<br />

piece of furniture have a story? From<br />

where is it sourced? What inspired<br />

them to design this? Is it sustainable?<br />

Will our clients love it or hate it? Am<br />

I pushing the boundaries a little too<br />

much? I take all this and much more<br />

into consideration when selecting the<br />

perfect piece for our Christchurch and<br />

Auckland showrooms.<br />

What are your favourite items in the<br />

showroom right now?<br />

Because I hand-pick the items, it is<br />

particularly hard for me to have one<br />

favourite piece. For its functionality,<br />

design and comfort, I must say that<br />

I love the new Hulsta 414 sofa<br />

designed by Hoffmann-Kahleyss,<br />

made in Germany. The new sofa<br />

‘wraps around’ people sitting on it<br />

in a uniquely soft and wonderful<br />

way. Plus, the look matches its<br />

What would be your advice for<br />

Open-plan homes have become the<br />

people’s choice in recent decades; a<br />

development that has necessitated some<br />

creative thinking. Pockets of abundant space<br />

can end up being wasted. Put a stop to that<br />

with some cunning tactics that utilise every<br />

inch. With a clever use of colour, texture<br />

and furniture you can improve functionality<br />

and not clutter up your home.<br />

Take a seat<br />

Modular seating is ideal for allowing spaces in an<br />

open-plan living area to do double duty. An L-shaped<br />

sofa will define your main relaxation area and you<br />

could reconfigure additional modules with some easily<br />

moved chairs to form a separate conversation zone,<br />

with or without a coffee table on castor wheels that’s<br />

also a cinch to reposition. Matching ottomans and<br />

oversized cushions are great for children to move<br />

from A to B.<br />

The book nook<br />

How about turning that disused corner in your central<br />

seating area into a snug with a comfortable armchair<br />

you can quietly read in? Create zonal definition within<br />

a neutral colour scheme by painting the walls in a<br />

contemplative counterpart, such as perennial favourite<br />

Resene Quarter Duck Egg Blue, calm-and-misty green<br />

Resene Pale Leaf or dusty umber Resene Soothe.<br />

Cosy textiles such as linen cushions, or a woollen<br />

throw will further invite relaxation and you could<br />

extend this sentiment to your walls with a textured<br />

design from the Resene Wallpaper Collection to<br />

provide both colour and depth.<br />

Crafty storage<br />

Storage can be at a premium in open-plan homes.<br />

Remedy the issue in a generous master bedroom by<br />

installing a half-wall that can become a headboard<br />

on one side and cupboards on the other, painted in<br />

a hue that complements your décor. Running out<br />

of storage for children’s toys? Paint timber cubes or<br />

wooden boxes in playful pastels like Resene Tuft<br />

Bush, Resene Onahau and Resene Snowy Mint. If<br />

there’s a underutilised void under your stairs, you<br />

might wish to store them here and turn the space<br />

into a children’s craft station with a desk painted in a<br />

pale primrose like Resene Shalimar.


Business and pleasure<br />

A study nook neatly housed in your living area is a<br />

hack that lets you clock up extra hours while keeping<br />

up with the everyday play. A built-in desk will truly<br />

maximise the space or bargain hunt for a second-hand<br />

desk and chair to update with paint. Opt for a distinct<br />

colour or one that ties in with the rest of the room.<br />

Wipe it with a clean dry cloth, then apply Resene<br />

Waterborne Smooth Surface Sealer for an even finish<br />

followed by Resene Lustacryl semi-gloss or Resene<br />

Enamacryl gloss tinted with your chosen hue.<br />

Separate your study zone from the rest of an<br />

open-plan space with:<br />

• A bank of freestanding open shelving in a chic<br />

shade, like pale green Resene Edgewater or<br />

• A curtain you can draw around your nook when<br />

you’re working and fling open when you’re not.<br />

An ethereal sheer or heavier weight to mitigate<br />

he meshing together of –<br />

at times opposing – trends<br />

has seen a beautiful cohesion<br />

emerge in interior design.<br />

It is simple to recreate<br />

these looks, and you don’t<br />

need to go big each time.<br />

Often a thoughtful addition,<br />

such as a wishbone-backed<br />

chair with a linen throw, can<br />

conjure the vibe. Or, simply<br />

update the colour palette<br />

because, where once styles<br />

drove the colour, it is now<br />

Back to earth<br />

The urge to reconnect to our natural<br />

environment has influenced today’s colour<br />

palettes.<br />

• Calibrate – explore and embrace<br />

changes in a positive way. Tones<br />

include soft coral and rose, with silver<br />

Japandi<br />

A trend that combines the elegant<br />

mix of Japanese minimalism and<br />

Scandinavian simplicity. Think clean<br />

lines with a subdued colour palette and<br />

touches of wabi-sabi (imperfection) that<br />

juxtapose the minimalist effect. Japandi<br />

is centred on the acceptance of<br />

transience and imperfection, sometimes<br />

described as perfectly imperfect.<br />

The minimalist look leaves space for<br />

organic materials to breathe within the<br />

discipline of these different styles.<br />

Recreate this look in your home with<br />

an organic linen throw on a wishbonebacked<br />

chair or a natural wooden<br />

hand-carved bowl on a Scandi marbletop<br />

coffee table. This is about pairing<br />

Transitional<br />

Imagine the seamless meshing of the<br />

moment, transitional furniture lines<br />

are simple yet sophisticated, featuring<br />

either straight lines or rounded profiles.<br />

Think of an old villa with white internal<br />

walls that are rich in architectural<br />

features, such as cornices, ceiling roses<br />

and Paris moulding.<br />

Introduce this style with modern<br />

pendants and a marble-top French<br />

sideboard, a straight-armed sofa with a<br />

white slipcover, and modern dark/jute<br />

rugs. Cushions and other accessories<br />

bring the old and the new together.

Luxe<br />

Hark back to the sophistication and<br />

refinement of the early Hollywood<br />

era. Luxe interiors are sometimes<br />

more expensive because they can<br />

include investment pieces, such as<br />

furniture, art, mirrors or chandeliers.<br />

Metallic elements in gold,<br />

champagne or copper are a must,<br />

as are curves, perhaps from sofas<br />

or chairs. Over-sized pieces are to<br />

be expected. This style sees large<br />

art above a fireplace, big lamps and<br />

arched mirrors with gilt frames,<br />

velvets and sateens, and large<br />

feather-filled leopard-print cushions<br />

with the odd tassel.<br />

Introduce a good splash of colour<br />

on curved sofas, but keep the base in<br />

a coloured neutral (like Paris Grey).

Yin and yang<br />

For the first time in interior styling,<br />

we have what is referred to as the<br />

‘mirror’ or ‘yin and yang’ style: white<br />

one side, black the other, but with<br />

the same design structure within both<br />

styles. Heavily tilted towards rattan<br />

and bamboo furniture or visible timber<br />

grains on side tables, headboards and<br />

drinks trolleys, the interesting thing is<br />

how different a style can be created<br />

purely through colour. The Hamptons<br />

Ocean leans towards a smart holiday<br />

vibe with light colours, timbers<br />

and washed furniture, whereas the<br />

same pieces painted or stained in black/<br />

dark brown swing perfectly towards a<br />

British Colonial style.<br />

Managing a building project<br />

can be stressful at the best of<br />

times, but managing a project in<br />

Christchurch whilst the owners<br />

lived in Australia, even more so.<br />

Although when Lana and Aaron,<br />

the owners of this modernist<br />

rebuild of a 1960’s retreat on<br />

Mt Pleasant reflect, they recall<br />

feeling as though the stressful<br />

part of their project was behind<br />

them the minute the building<br />

commenced.<br />

“DJ Hewitt Builders exceptional<br />

reputation for hill building was only<br />

complimented by their exceptional<br />

project management ability, easing<br />

our concern of being overseas.<br />

Assisting the development of plans<br />

with our designer, Urban Function<br />

Architecture and collectively making<br />

project decisions seemed far less<br />

stressful also. As was getting<br />

agreement between our insurance<br />

representatives and the quantity<br />

surveyors determining the cost of<br />

the project, ultimately key to the<br />

affordability of the rebuild project.<br />

Daryl was very persistent and<br />

eventually helped us secure an<br />

agreement that was acceptable<br />

to everyone,” says Lana.<br />

warmth, this new build in<br />

St Albans saw owners Emma<br />

and Logan Robinson end their<br />

two-year search in peace.<br />

It was the cedar panelling that got<br />

people talking.<br />

Emma Robinson laughs as she<br />

recalls the builders saying people were<br />

pulling up in their vehicles to ask about<br />

the colour of the cedar on the garage.<br />

And it’s easy to see why. The stunning<br />

tone of the cedar, especially when lit<br />

up with the subtle outdoor lighting,<br />

encompasses the key objective for this<br />

build – to provide warmth.<br />

Despite a two-year search, Emma<br />

and her husband Logan couldn’t find<br />

the right property that spoke to them.<br />

After a stint in the United Kingdom,<br />

where even older homes are doubleglazed<br />

and have central heating, they<br />

wanted a place where their family<br />

would be snug. Instead of adapting<br />

to what someone else had built, they<br />

decided to tailor-make their home.<br />

Though they hadn’t built before, they didn’t<br />

let that deter them. Instead they brought<br />

in a team from DJ Hewitt who managed<br />

everything for them, from the due diligence<br />

on the land before the auction and relocation<br />

of the existing house to the landscape and<br />

interiors.<br />

“Daryl [Hewitt] came to visit us and<br />

everything snowballed from there,” says<br />

Emma. “He helped us find our architect and<br />

came to all our architect meetings as well,<br />

which is what we needed because we were a<br />

bit naïve.”<br />

Emma was apprehensive about her own<br />

design nous and initially veered towards<br />

simple colours. But soon she had eye-catching<br />

feature wallpaper in the media room and by<br />

the entrance. And that was due to not only a<br />

clever design friend, but the expertise of Tara<br />

Hewitt of DJ Hewitt.<br />

“She took me around all the bathroom,<br />

tile and appliance shops and pointed me<br />

in the right direction. She was so good at<br />

narrowing it down before I even got there,”<br />

Emma enthuses. “I’ve had friends that have<br />

built and they have said, ‘I’ve got a thousand<br />

choices of door handles,’ whereas it was so<br />

straightforward with Tara.”<br />

And the result is a beautiful cohesion<br />

from outside to in. The home is filled with<br />

a wondrous amount of light from the many<br />

windows. The sliding doors that lead to the<br />

deck open from both sides at an almost right<br />

angle, creating a seamless joining of living<br />

room, dining room and deck.<br />

What the family wanted was a warm home<br />

filled with light. They achieved that and so<br />

much more in their personalised paradise.

A and a bar, all to fit into a rather snug<br />

inner-city backyard?<br />

Landscape architect Emma Johnston<br />

has been designing for more than 27<br />

years, including in the Cayman Islands<br />

and the United Kingdom, but even she<br />

sucks in her breath, with a bit of a laugh,<br />

when she recalls the project.<br />

“It was a challenge, for sure. It is a<br />

pretty tiny area and when he [the client]<br />

started reeling off what he wanted to fit<br />

in, that was my challenge,” she says.<br />

But the end result is seamless. Cook<br />

on the barbecue, while chatting to<br />

people enjoying a few brews at the bar,<br />

then clean up in the outdoor kitchen<br />

without breaking up the party. The bar<br />

table even has a gas burner in the middle<br />

for warmth. Not too shabby indeed.<br />

An intimate vibe is created from the<br />

thoughtful use of planting and louvre<br />

shutters; it is almost as though the busy<br />

city streets outside the walls don’t exist.<br />

Intricate planning was required for this<br />

project. Emma started by tackling the<br />

best place for the covered area. This was<br />

not as easy as it may seem because the<br />

structure could not block the flow of<br />

light into the home.<br />

“That’s why I left the middle bit open<br />

and pushed all the covered area to<br />

the outside. The sun still goes into the<br />

house,” she says. “If you had done it<br />

around the other way, it would have<br />

blocked the sun.”<br />

The shelter was created with a louvre<br />

system. When the sun shines, they are

open, and if the heavens decide to fall, a<br />

simple press on a remote closes them back<br />

to their rain-proof form.<br />

Somehow, the area retains an illusion of<br />

space. Though we marvel at the magicians<br />

that landscape artists must surely be, it<br />

comes down to using “every little bit of<br />

space” in a thoughtful way, says Emma.<br />

“All the posts of the overhead structure, I<br />

needed them to belong somewhere. That’s<br />

why they come into the bench wall so they<br />

are not taking up valuable space in the deck.”<br />

Cages are ready to capture the evergreen<br />

plantings as they grow to ensure they don’t<br />

encroach on the space.<br />

Emma prefers a design and build approach<br />

to her projects.<br />

“When you have the same company doing<br />

design and build, it helps deal with all the<br />

challenges when they arise. The designer is<br />

on-site the whole time and available for all<br />

decisions to be made. When that doesn’t<br />

happen it can be a bit disjointed.”<br />

But there is nothing disjointed about this<br />

space. It is the backyard for those who love<br />

to host and proves you don’t need a huge<br />

space to create an entertainment area. Just a<br />

very crafty landscape architect.<br />

Spring<br />

into Spring!<br />

It probably seems like the best place to be at the<br />

moment is hiding indoors in the warmth - especially<br />

when it might appear there isn’t much happening in<br />

the garden. If you’re wanting your garden to flourish,<br />

take action now to ensure when growth erupts it’s<br />

ready to handle it!<br />

Pruning<br />

Roses should have been pruned by now- if not, don’t dally- sharpen<br />

secateurs and get cracking! If you’ve procrastinated because you’re<br />

worried you’ll get it wrong, just get stuck in. Roses are more robust<br />

than you might think. Any dead or diseased stems need the chop!<br />

Winter has plenty of pests and disease hiding amongst the leaf litter<br />

so after pruning, give the canes and surrounding soil a good spray of<br />

copper followed up two weeks later with spraying oil. Your herbaceous<br />

perennials will have died back above ground so ensure you cut these<br />

back to provide the best chance for spring growth. Under the ground,<br />

the roots are alive and well and ready for action.<br />

Mulching/Composting<br />

To ensure your plants are primed, make sure your composting and<br />

mulching is up to speed. <strong>August</strong> is a great time to get your first dose<br />

of slow release fertiliser on the ground and applying light mulch at the<br />

base of your plants will add a layer of protection to keep moisture in<br />

and frost out.<br />

Tools & Safety<br />

Your gardening tools are probably tucked away out of sight in the<br />

garden shed. What better time to check them out, undertake any<br />

repairs and ensure any blades are sharpened. Obviously one of the<br />

most vital pieces of equipment during spring and summer is your<br />

lawn mower. Having this serviced now will ensure it is primed for the<br />

coming lawn growth explosion.<br />

Safety first! It’s that time of the year when moss can get away on younot<br />

just unsightly but also hazardous. A quick spray of Wet & Forget<br />

will help keep things at bay and ensure visitors can make it to your front<br />

door without running the gauntlet of a slippery path. Moss might be<br />

attractive on a forest floor but not creeping over your paths!<br />

Deck cleaning/Oiling<br />

In the throes of winter, relaxing outdoors on your deck probably seems<br />

a way off- but preparing your deck for the warmer weather can start<br />

now. Regularly removing debris and dirt is vital to keep your deck<br />

looking great- even when not in use. For oiling, hold fire until Spring<br />

when the weather is slightly warmer to maximise absorption.<br />

and while some should never come back into our lives<br />

– leg warmers, tight perms, yellow conifers – others should<br />

always be in fashion. Into this category I place indoor plants<br />

and, in particular, air-purifying plants.

The why<br />

We live and work in houses and offices that are<br />

constantly giving off chemicals, many of which are<br />

really not good for us. And this is where we introduce<br />

our cape-wearing heroes, the indoor plants, for they<br />

can do something that borders on the miraculous<br />

– transform those chemicals from nasty to harmless.<br />

Worse still are hermetically sealed buildings, both<br />

offices and homes, in which there is a lack of fresh air<br />

blowing through. The air in the building can be more<br />

polluted than the air outside.<br />

Our heroes<br />

Different plants absorb differing amounts of toxins,<br />

and different plants deal with different toxins, so the<br />

clever thing is to have a variety of plants to cover all<br />

the toxic bases. Each person has a personal breathing<br />

space of about 0.2 cubic metres and most people<br />

occupy this space for long periods of time – when at<br />

the computer, watching TV, sleeping – and by adding<br />

a plant to this breathing zone you are not only<br />

getting something pleasing to look at, you are getting<br />

a biological system that will filter the nasties out of<br />

your air – with very little input from you.<br />

How many should I get?<br />

To work out how many plants to use, aim for one<br />

15cm plant for every 10sqm of home or office, or<br />

15 to 18 plants for an area of 170sqm (which is the<br />

average size of a Kiwi home).

The answer is basically all plants, though there are some that will be more effective than others.<br />

Also, the size of the plant will dictate its ability to do the job – bigger is better. The following is a selection of those<br />

effective, readily available plants to begin your clean-air family:<br />

actually score up the top of the scale in terms of<br />

After a busy first year in business, Lovoir Beauty’s Teresa Sime says<br />

it is just the beginning for the salon.<br />

What are some of your achievements from the<br />

past year?<br />

I built this salon from scratch within a year, working<br />

countless hours to get it exactly the way I wanted it to<br />

be. Hearing the positive feedback from our clients and<br />

staff is definitely good motivation to keep going!<br />

I think it is really important also to look after your staff<br />

by nurturing them as the beautiful people they are. I find<br />

that the industry can sometimes forget this, so I have<br />

taken measures to ensure our staff are very well looked<br />

after. This simple approach has manifested its way along<br />

the chain to dramatically elevate the experience our<br />

wonderful clients have.<br />

What is the key to maintaining good relationships<br />

with your customers?<br />

The spa experience should not end when clients leave.<br />

They trust us with a purpose and that is results. Whether<br />

it is skin-related or pure relaxation, we use every tool in<br />

our power to give it to them. Not only do we provide<br />

clients with a high-end spa experience in each visit, but<br />

we also give them many opportunities for feedback so<br />

that we can continue to improve their experience. In such<br />

a competitive market, it’s incredibly important for our<br />

clients to know that they’re valued. Personal attention is<br />

critical!<br />

What are you looking forward to next?<br />

Being able to fine-tune our treatments and client<br />

experience. We have so many amazing modalities at<br />

Device, IPL for hair removal and skin rejuvenation and we<br />

are a Dermapen Gold Authorised Treatment Provider.<br />

Having access to technology gives us so many options for<br />

How has skincare developed during your time in<br />

the industry?<br />

I have been in the beauty industry for 13 years now and<br />

skincare has developed at a phenomenal rate. We now<br />

have skincare that can repair telomeres, chromosomes<br />

and DNA and alter the production of melanin, to name<br />

a few. Skincare is getting fine-tuned in laboratories, but<br />

we’re also seeing a resurgence of professional-strength<br />

natural and organic skincare, which is fantastic. Clients are<br />

more aware of what they’re applying and consuming now.<br />

If you had one piece of skincare advice, what would it be?<br />

Find a beauty therapist who listens to what you need<br />

and who you enjoy and trust. Listen to their advice. Your<br />

beauty therapist has trained for years and continues to<br />

train to bring you the best results. Consumers are blasted<br />

by social media and advertising so much that it can be very<br />

Nourish, protect and adjust to warmer colour tones.<br />

1. Proper cleansing<br />

Daily cleansing and regular exfoliating encourage<br />

the turnover of new skin cells. This will remove<br />

excess dead skin cells from the surface, allowing<br />

for better absorption of your skincare products.<br />

2. Skin prep<br />

In the winter months, the skin has a tendency<br />

to be lacklustre and drier than usual. To counter<br />

this, step up your ‘skin food’. Choose a rich<br />

moisturiser that will add extra hydration to the<br />

skin. A great bonus step is to seal moisture<br />

in with a serum or primer that will prep<br />

the skin for flawless foundation application.<br />

Head north from Dunedin for 25km and at low tide<br />

you can wander along the beach and black stone<br />

caves to little Canoe Beach and the small Mapoutahi<br />

headland, once a fortified Maori p . There is a sandy<br />

track and staircase across the headland’s neck to reach<br />

the longer Purakaunui Beach. Or retrace your steps to<br />

Doctors Point, stopping for a coffee at Waitati, or head<br />

up to the Orokonui Ecosanctuary to see some local<br />

wildlife.<br />

Discovery World<br />

Otago Museum’s Discovery World is now known as<br />

the T hura Otago Community Trust Science Centre<br />

and has 45 hands-on science interactive displays,<br />

including the three-tier Tropical Forest. Then there is<br />

the digitally interactive Beautiful Science gallery and the<br />

Perpetual Guardian Planetarium to wow visitors.<br />

Dunking<br />

Moana Pool is open for swimming, and its leisure, dive<br />

and spa pools are also open, as are its hydroslides. If<br />

you are into surfing, Dunedin has a wealth of beaches<br />

known for producing good waves, from St Clair and St<br />

Kilda to Aramoana and Allans Beach.<br />

Small-batch ice cream handmade in Dunedin is served<br />

Dungeon<br />

Dunedin Prison is a rare example of a purpose-built<br />

courtyard prison. Designed by John Campbell and built<br />

in 1896, the Heritage NZ Category 1 listed building was<br />

operational until 2017 and is now looked after by the<br />

Dunedin Prison Trust. Tours will restart in November. It is<br />

just one of Dunedin’s historical buildings to have a look at<br />

in the central city, including the well-photographed Dunedin<br />

Railway Station and the First Church.<br />

Dune<br />

Dunedin has some spectacular beaches if you<br />

have a few hours to kill and are reasonably fit,<br />

especially Sandfly Bay on Otago Peninsula, which<br />

has awesome dunes to climb – or you can take<br />

in the spectacular views from the top viewing<br />

platform. More easily accessible are Boulder Beach<br />

and Victory Beach further down the peninsula. At<br />

all these beaches, you have a chance of seeing sea<br />

lions, seals or penguins.<br />

Aramoana<br />

Drive<br />

There are plenty of options for going for a nice<br />

Sunday drive from Dunedin, but you can also find<br />

several good drives within the city. A nice afternoon<br />

out is a trip to Aramoana for a walk along the pier,<br />

stopping for lunch at Careys Bay Historic Hotel on<br />

the way there and maybe a coffee on the way back<br />

at Port Chalmers, along with a browse of the shops.<br />

In the other direction, head to Brighton for a walk<br />

along the beach and a coffee.<br />

Dowling Street<br />

Home to some of the city’s most popular street<br />

art and art galleries, including Milford Galleries, the<br />

Blue Oyster Art Project Space, the Artist’s Room<br />

and the Brett McDowell Gallery. All feature work<br />

by New Zealand artists, from the emerging and<br />

experimental artists at Blue Oyster to the more<br />

established at Milford Galleries. Within a couple<br />

of blocks are the Dunedin Public Art Gallery, the<br />

Gallery De Novo and the RDS Gallery, which<br />

have just opened their first exhibitions post-Covid<br />

lockdown.<br />

or, horrifyingly, coffee. Supermarkets, hospitals and<br />

medicine are all a thing of the distant past.<br />

And what protagonist Ruth desperately needs is<br />

medicine for her sister, who is dying from tuberculosis.<br />

There are whispers of an arsenal of drugs at Huka<br />

Lodge, so the former ephemera librarian, somewhat<br />

foolhardily, travels up the Waikato River via a DIY<br />

steamboat with two men. Ruth, who thinks she has led<br />

a sheltered life, soon learns that not even New Zealand<br />

society is immune to the unpalatable parts of basic<br />

survival instincts.<br />

An absolute marvel of a book. Humour is inserted at<br />

just the right time to catch your breath, but be warned;<br />

within the first few sentences, you are sucked into a<br />

world where to survive the choices you make may<br />

mean you no longer recognise yourself.<br />

My favourite character is Shimlara, Georgio’s<br />

daughter, because, like all Globagaskarians, she can read<br />

minds. According to Georgio, Globagaskar is 2000 years<br />

more technologically advanced than Earth.<br />

I enjoyed this book because it has enough suspense<br />

to keep you reading. If you enjoy adventure, this series<br />

is for you! I devoured all three within a few days.<br />

It is a disease that cannot be seen, but<br />

many women suffer from it, often feeling<br />

like they are alone. Oxford Women’s<br />

Health gynaecologist Simon Jones<br />

explains the facts behind endometriosis<br />

and what treatment can look like.<br />

Endometriosis is an inflammatory disease that affects<br />

up to one in 10 New Zealand women. Because it has<br />

many symptoms, diagnosing the condition can be difficult,<br />

and often women don’t realise that issues such as period<br />

pain, bowel problems, pain during sex, and tiredness can<br />

be an indication that they have the disease.<br />

If women have period pain, that lasts more than one<br />

or two days, and prevents them from attending work or<br />

school, they should definitely talk to their GP or contact<br />

us at Oxford Women’s Health. It is important not to leave<br />

symptoms too long before seeking advice, as it is much<br />

easier to manage the disease when it is in its early stages.<br />

I get painful periods. Does this mean I have endometriosis?<br />

Not necessarily. It is normal for some girls to experience painful or erratic<br />

periods in their first few years of menstruation. However, if the pain lasts<br />

more than one or two days and is preventing you from doing the things<br />

you enjoy in life, you should talk to your GP or book an appointment with<br />

a gynaecologist.<br />

Is there a “cure” for endometriosis?<br />

There is no guaranteed cure for endometriosis but once diagnosed it can<br />

be managed by using a variety of treatment options. At Oxford Women’s<br />

Health, we perform laparoscopic operations to both diagnose and remove<br />

endometriosis. We also use offer hormonal medications (like the pill),<br />

physiotherapy, coaching, and lifestyle advice to help minimise the impact<br />

of the disease.<br />

What is the easiest way of explaining endometriosis to people?<br />

Endometriosis is a condition in which tissue that normally lines the uterus<br />

– the endometrium – grows outside the uterus. It usually affects fallopian<br />

tubes, ovaries and tissue lining the pelvis. Surrounding tissue can also<br />

become irritated. The disease causes pain, which can be severe when you<br />

are having a period. Thankfully, effective treatments are available.<br />

I feel quite alone because people struggle to understand the<br />

pain I am in. Is this normal? What can I do?<br />

This is normal but you are definitely not alone in living with endometriosis.<br />

Oxford Women’s Health is lucky to have Endometriosis and Pelvic Pain<br />

Coach and Consultant, Deborah Bush, as part of the team. She is available<br />

to provide coaching and lifestyle advice to our patients. The Endometriosis<br />

Taking time off work because of endometriosis is not always<br />

easy, or understood by management. Are there ways to lessen<br />

In other words, wellbeing is<br />

that desirable condition where<br />

we thrive (prosperity) both<br />

physically (health) and mentally<br />

And yes, that can even<br />

be found on those grey old<br />

winter days; after all, home<br />

is where the heart is. There<br />

is something quite warming<br />

about the memories created<br />

in the cooler months: a<br />

fire crackling away, candles<br />

flickering, slippers, stacks of<br />

good books and the aromas<br />

of slow-cooked hearty meals.<br />

You can make a big impact on<br />

your health by making a few<br />

changes to your lifestyle in<br />

your winter home to keep it a<br />

sanctuary for your wellbeing.<br />

Restorative rest, not binge-watching<br />

Bunker down and get into bed earlier to read. As<br />

appealing as it is to binge-watch crime series, this<br />

is not the most restorative way to unwind after<br />

a day at work so try to set a bedtime that allows<br />

seven to eight hours of overnight repair. Being<br />

well-rested helps with stress adaption, tolerance of<br />

others, pain sensitivity and blood sugar regulation,<br />

so this is a great time to recharge.<br />

Smell = digestion<br />

Digestion starts through the olfactory system<br />

(smell), so a slow cooker is a wonderful<br />

investment. You can make an array of things<br />

in them, from vegetarian curries to self-saucing<br />

puddings. The Beef Rendang Curry (page 88),<br />

for example, uses cheaper cuts of meat to<br />

provide a good source of collagen for skin,<br />

hair and joint health. Make a double batch and<br />

freeze one to enjoy another time.

Air it out<br />

Hippocrates, the father of medicine, stated centuries ago that<br />

“What you eat, your lifestyle and the place in which you live affects<br />

your health.” Health issues from asthma, allergies, attention deficit<br />

hyperactivity disorder and eczema to hormonal imbalances, infertility<br />

and chronic fatigue syndrome may be caused or exacerbated by<br />

environmental exposure. Spending more time indoors can mean<br />

you are exposed to more pollutants. Healthy Home, Healthy<br />

Family author Nicole Bijlsma writes about how indoor air has been<br />

estimated to be five to 10 times more polluted than outdoor air.<br />

This is due to volatile organic compounds (VOCs) that are released<br />

by building materials, glues, cleaning and air freshening products, etc.<br />

There are currently 145 million chemicals registered for use on the<br />

world’s largest chemical database, and every 60 seconds another 20<br />

chemicals are registered; we are exposed to more chemicals than<br />

ever before.<br />

• Ensure your spaces are well ventilated to avoid mould exposure.<br />

• Microfibre cloths are great to clean with – try to use cleaning<br />

products that do not contain chemicals that adversely impact<br />

animal, plant or human health.<br />

• Taking shoes off at the door is also worthwhile, especially if you<br />

have children playing on the floor.<br />

Beef Rendang Curry<br />

INGREDIENTS<br />

1 tsp cinnamon<br />

¼ tsp cardamom seeds<br />

1 star anise<br />

1 tsp clove powder (or 4 cloves)<br />

1 chilli (optional)<br />

5 garlic cloves<br />

3cm piece ginger, peeled<br />

2 stalks fresh lemongrass, white part only, cut into pieces<br />

6 macadamia nuts<br />

40g shredded coconut, toasted<br />

1 Tbsp peanut oil<br />

1kg gravy beef, cut into 2–3cm pieces<br />

1 can coconut milk<br />

½ tsp salt<br />

1 tsp palm sugar, to taste<br />

METHOD<br />

1. Place cinnamon, cardamom, star anise and<br />

cloves into a frying pan and heat until fragrant.<br />

Allow to cool slightly. Use a food processor<br />

to crush into a powder along with macadamia<br />

nuts.<br />

2. Add chilli (if using), garlic cloves, ginger and<br />

lemongrass to food processor and mix. Scrape<br />

down the sides of the mixing bowl with a<br />

spatula and repeat the process, until a smooth<br />

paste consistency is achieved.<br />

3. Add peanut oil to a pan and cook beef on a<br />

high setting for 1–2 minutes on each side, until<br />

browned.<br />

4. Place browned meat, spice paste, shredded<br />

coconut, coconut milk, salt and sugar into a<br />

slow-cooker and set on low for 6–7 hours.<br />

5. Allow to rest for 5 minutes before serving on<br />

a bed of steamed rice or cauliflower rice.

take Sarah Burtscher’s advice and save money, food and<br />

the planet with soup.<br />

Forgotten Vege Soup<br />

This soup sees a fabulous clean out of the fridge.<br />

Look at what you have neglected in the fridge<br />

vege drawer, and this is literally what this meal is<br />

made from. I call it a ‘flexible framework’ recipe,<br />

as you can use all sorts of different ingredients<br />

but the ‘basic frame ingredients’ remain the same.<br />

You can include most fridge-kept veges, or potato<br />

or k mara, remembering they are all going to be<br />

whizzed up together at the end.<br />

BASIC FRAME INGREDIENTS<br />

2 Tbsp olive oil<br />

1 onion (use up odds and ends if need be)<br />

2–4 garlic cloves<br />

1–1½ cups milk or milk alternative<br />

2 dried bay leaves<br />

2 cups chicken or vegetable stock<br />

salt and pepper to taste<br />

For years I’ve been clearing out the fridge<br />

and using up the ugly and forgotten<br />

foods by cooking up what I’ve termed a<br />

‘fridge cleaner’. This could be a soup, cake,<br />

casserole, or whatever. I started looking into<br />

food waste, and, wow, do we throw out a<br />

lot of food in New Zealand!<br />

According to Love Food Hate Waste<br />

NZ: “New Zealanders throw away 157,389<br />

tonnes of food a year. That is equivalent<br />

to 271 jumbo jets of food that has to go<br />

somewhere to rot, instead of being eaten.<br />

[...] All of this food is worth about<br />

$1.17 billion each year.”<br />

A lot of household cooks just don’t know<br />

what to do with the sad-looking fruit in their<br />

fruit bowl, or the limp carrots in their vege<br />

drawer. So, I started Fridge Cleaner Cooking<br />

(fridgecleaner.co.nz) to showcase how to<br />

make forgotten everyday ingredients into<br />

delicious, nutritious meals.<br />

FLEXIBLE INGREDIENTS<br />

¾ of a very limp cauliflower/broccoli or<br />

2 medium potatoes/k mara<br />

parsnip<br />

4 stalks celery<br />

2 rashers bacon<br />

METHOD<br />

1. Roughly chop all veges, including your celery<br />

leaves if they are not too old.<br />

2. Sauté bacon, onion and garlic in olive oil in a<br />

heavy-based pot.<br />

3. Add the rest of the ingredients, including<br />

a handful of celery leaves, and cook off for<br />

approximately 10 minutes.<br />

4. Pour in enough stock to just cover<br />

all ingredients.<br />

5. Add bay leaves and remaining celery leaves,<br />

then simmer until all veges are tender.<br />

6. Remove from the heat, fish out the bay leaves<br />

and blend till smooth (I like to use a wand).<br />

7. Add milk, stir well and put the bay leaves<br />

back in.<br />

8. Taste and season, adding more salt or<br />

pepper as required.

treat with this delectable brownie recipe.<br />

It is a vegetable that the Romans considered<br />

to be an aphrodisiac – and when teamed with<br />

chocolate in this delicious brownie recipe, well,<br />

that is quite a combination.<br />

The natural earthy sweetness of beetroot<br />

makes it excellent for baking, and it also contains<br />

betaine, which is a mood enhancer. So get your<br />

measuring cups out and get baking this deliciously<br />

healthy treat that can actually make you feel good.<br />

Note: It is important to have the ingredients for this<br />

brownie ready to mix together, as the chocolate tends<br />

to go hard as soon as it is mixed in with the beetroot.<br />

INGREDIENTS<br />

2 large beetroot (roughly 500g)<br />

200g plain chocolate (70% cocoa)<br />

or dark chocolate melts<br />

200g brown sugar<br />

3 eggs<br />

¾ cup plain flour (for gluten free,<br />

use fine rice flour)<br />

¼ cup cocoa powder<br />

2 tsp powdered ginger<br />

100g butter, melted<br />

2 tsp vanilla extract<br />

METHOD<br />

1. Line a sponge roll baking tin with baking paper.<br />

2. Place the whole unpeeled beetroot in a pot and<br />

cover with water. With the lid on, bring to the boil,<br />

then turn down the heat and simmer for 20 minutes.<br />

3. Remove the pot from the heat, tip off the water and<br />

leave the beetroot to cool for half an hour with the<br />

lid off the pot.<br />

4. Once cool, carefully peel off the beetroot skin and<br />

grate.<br />

5. Melt the chocolate gently in a bain-marie.<br />

6. While the chocolate is melting, whisk or beat<br />

together the sugar and eggs in a large bowl for about<br />

two minutes, until the mix is thick.<br />

7. Sift the flour, cocoa powder and powdered ginger<br />

together and add to the egg/sugar mix, folding in<br />

gently until combined.<br />

8. In the following order, add the grated beetroot,<br />

melted butter, vanilla extract and lastly the melted<br />

chocolate to the large bowl, and mix together until<br />

the ingredients are well integrated.<br />

9. Pour into the prepared tin and bake for 20 minutes<br />

at 180°C (fan oven if possible). Then drop the<br />

temperature to 150°C for a further five minutes.<br />

The brownie should be just cooked and caramelising<br />

slightly around the edges.<br />

10. Allow to cool in the tray and then cut into squares.<br />

Dust with icing sugar if desired.<br />

HOW TO MELT CHOCOLATE IN A BAIN-MARIE<br />

Break the chocolate into pieces and place in a small<br />

pot. Place the small pot inside a slightly larger pot<br />

containing 2–4cm of water. Bring the water in the<br />

larger pot up to a simmer and stir the chocolate<br />

pieces in the small pot until they melt.

Boutique gin production is booming, but are you too afraid to go near a<br />

potential tearjerker? Kate Preece shares some game-changers.<br />

I<br />

f the thought of a tall glass of G&T has<br />

you suppressing a sob, it’s time to make<br />

new memories. Like chardonnay, tastes<br />

have changed, and as such the range of gins<br />

readily available will make for much happier<br />

experiences all round. The flavours this<br />

juniper-based spirit can boast range from<br />

grapefruit to gingerbread – and that’s not<br />

gin-snobbery talking, that’s a fact. So why<br />

not start with one that will truly challenge<br />

those reoccurring preconceptions?<br />

Currently pouring<br />

If you’ve dabbled in the<br />

Japanese gin world you’ll<br />

know that their range of<br />

botanicals, unsurprisingly,<br />

delivers a range of tastes<br />

distinctively different to those<br />

of other countries. With<br />

very little English writing on<br />

the bottle to guide me, my<br />

taste buds yelled ‘lemongrass’<br />

when I first sipped my Nikka<br />

Coffey G&T. Upon further<br />

research, it’s likely the result<br />

of the combination of four<br />

types of Japanese citrus (none<br />

of which I had heard of) and<br />

a bit of pepper. Best served<br />

strong to make the most of<br />

the subtle nuances.<br />

Spanish flair<br />

Transport yourself to a place far, far<br />

away with this doosy of a Galician<br />

gin. Even the novice will be able to<br />

taste liquorice in an ice-filled glass<br />

of Nordés gin, but there’s also sage,<br />

verbena and mint among its 11<br />

botanicals. Named after the Nordés<br />

wind that blasts in from the Atlantic<br />

Ocean, it a fresh pick-me-up that<br />

demands another round.<br />

Wine or what?<br />

For the last month of winter, it’s okay to mix your<br />

wine and your spirits. The Four Pillars Bloody Shiraz<br />

Gin adds Australian grapes to its solid white spirit<br />

base. It’s a good way to pull the wool over the eyes<br />

of non-believers as it truly does blend these two top<br />

drops in one. For something quieter (i.e. under 30%<br />

alcohol), a sloe gin (infused with English sloe berries)<br />

will keep the home fires burning too.<br />

Spicy number<br />

The Opihr Oriental Spiced Gin<br />

comes in at the cheaper end of the<br />

boutique gin scale (as low as $56),<br />

but brings with it a mighty impact.<br />

Imagine you’re eating a fragrant<br />

curry and finish off with a slice of<br />
