establishment committee.<br />
“This philosophy sees us<br />
working with the river, rather<br />
than attempting to constrain it<br />
to accommodate our plans.<br />
“This is important as the<br />
future impacts of sea level rise<br />
and more extreme weather<br />
make inundation of low-lying<br />
areas more likely, and increasingly<br />
expensive to prevent,” he<br />
said.<br />
Construction will be carried<br />
out in multiple phases and is<br />
expected to be completed in<br />
November 2<strong>02</strong>5.<br />
The park’s upgraded recreational<br />
facilities will include a<br />
nature-based play space, pump<br />
track, exploratory trails, basketball<br />
court, mini football field,<br />
and barbecue area.<br />
The City to Sea Pathway will<br />
go through the park, providing<br />
a safer option for cyclists<br />
accessing Kerr’s Reach sport<br />
clubs, as well as the general<br />
public.<br />

The city council will now consider<br />

due to a conflict of interest.<br />

The results of a city council<br />
survey show Diamond Harbour<br />
residents are in favour of<br />
building a new fire station but<br />
split on the school.<br />
The survey, under taken in<br />
February, found 50.9 per cent<br />
of respondents from Diamond<br />
Harbour were opposed to the<br />
school being built, 34.9 per cent<br />
were fully in favour, 8.9 per cent<br />
were somewhat in favour, and<br />
5.3 per cent were not sure.<br />

Joint issues will affect most of us at some<br />
point. They can appear in any joint, such as<br />
the neck, back, shoulders, elbows, wrists,<br />

Sirloin roast pork with<br />
stuffed baked apples<br />
Ingredients<br />
Serves 3-4<br />
500g trim pork sirloin roast or<br />
mini roast<br />
1 tbsp olive oil<br />
Salt and pepper to taste<br />
4 small apples<br />
3/4 cup fresh bread-crumbs<br />
2 tbsp finely chopped sage leaves<br />
1 shallot, diced<br />
1tsp crushed garlic<br />
2 tbsp table spread<br />
Method<br />
• Preheat oven to 200 deg C.<br />
• If using a traditional roast, brush<br />
meat with oil then season with salt<br />
and pepper.<br />
• Core apples with an apple<br />
corer. Using tip of a sharp knife,<br />
cut through skin around the<br />
circumference of each apple.<br />
• Combine breadcrumbs, sage,<br />
garlic, salt, pepper and shallot. •<br />
Mix in 1 tablespoon of spread. Stuff<br />
apples with this mixture.<br />
• Dot tops with remaining<br />
tablespread.<br />
• Place in a roasting pan with pork.<br />
Cook roast for 35min according<br />
to packet instructions. Cook<br />
traditional roast for 10 minutes at<br />
200 deg C.<br />
• Reduce heat to 160 deg C, and<br />
continue cooking for 35-40min.<br />
• Cover and rest roast for 10min<br />
before carving.<br />
• Remove apples once soft and<br />
cooked. Keep warm.<br />
• Great served with a kumara mash<br />
and steamed green beans.<br />
Mustard and<br />
pomegranate BBQ pork<br />
Serves 4<br />
Ingredients<br />
500gm pork steaks<br />
1 tbsp wholegrain mustard<br />
¼ cup pomegranate glaze<br />
1 tsp Chinese five-spice<br />
Method<br />
• Cut steaks into four portions.<br />
Combine mustard, pomegranate<br />
glaze and five spice.<br />
• Brush over cutlets. Cover and<br />
refrigerate for 30min.<br />
• Preheat a barbecue or grill.<br />
• Remove steaks from fridge,<br />
scraping off any excess<br />
marinade.<br />
• Grill on medium-high for<br />
about 8-10 minutes depending<br />
on thickness, turning often.<br />
Schnitzel with Asian<br />
flavours<br />
Serves 4<br />
Ingredients<br />
300-400gm pork schnitzel<br />
½ cup flour<br />
Flaky sea salt and freshly ground<br />
black pepper to taste<br />
1 large egg<br />
2 tbsp coconut milk or plain<br />
milk<br />
1 cup dried breadcrumbs<br />
3 kaffir lime leaves, deveined<br />
and finely chopped<br />
2 tbsp each: chopped coriander<br />
leaves, mint<br />
2-3 tbsp rice bran oil<br />
Method<br />
• If necessary, pound schnitzels<br />
with a rolling pin until thin.<br />
• Combine flour, salt and pepper<br />
in a shallow dish.<br />
• Whisk egg and coconut milk<br />
or milk in another shallow bowl.<br />
• Place breadcrumbs, kaffir lime<br />
leaves and chopped herbs in a<br />
third shallow dish.<br />
• Coat schnitzels with flour, dip<br />
in beaten egg, then coat with<br />
crumb mixture. Chill for 5min.<br />
• Heat oil in a large, non-stick<br />
frying pan on medium.<br />
• Add schnitzels. Cook<br />
for 1-2 minutes each side, until<br />
golden. Serve immediately.<br />

GROWTH: Trees for Canterbury long-time volunteer Ricky values the<br />
friendships he’s made over 28 years.<br />

two-way street’<br />
RICKY HAS been volunteering at Trees<br />
for Canterbury for 28 years, spending his<br />
time weeding, moving plants and keeping<br />
other volunteers “in check”.<br />
But most importantly, he’s been making<br />
lifelong friendships and connections.<br />
The 62-year-old spends two days a week<br />
at the not-for-profit centre, contributing<br />
towards the garden’s goal of planting two<br />
million trees across Canterbury.<br />
The well-established community organisation<br />
promotes a sense of involvement<br />
and education for physically and intellectually<br />
disadvantaged people – working to<br />
save the earth while they’re at it.<br />
Ricky’s work at Trees for Canterbury<br />
started in 1996 when the centre was at<br />
its old site at Opawa Rd, meaning he’s<br />
seen the organisation grow, change and<br />
develop over the years.<br />
He said his years of experience allow<br />
him to arrive in the morning and know<br />
just what needs to be done.<br />
“When I see a job, I get it done – I’ve<br />
been here long enough that I don’t need to<br />
be told anymore,” Ricky said.<br />
While his work at the centre began<br />
because of a passion for plants, it has been<br />
his workmates and sense of comraderie<br />

legroom, headroom, although<br />
the latter is a touch tighter for<br />
taller back occupants than I<br />
expected. Some will lament the<br />
loss of the third row that was a<br />
big draw card in the previous<br />
model.<br />
The RX is armed with the latest<br />
Lexus Safety System + package<br />
providing advanced safety and<br />
accident prevention technologies.<br />
These either warn the driver of a<br />
collision or help them reduce the<br />
severity of an impact.<br />
Safety features include a radar<br />
based pre-collision system with<br />
autonomous emergency braking<br />
and all-speed dynamic radar<br />
cruise control.<br />
Independent suspension<br />
delivers a nice blend of comfort<br />
and handling. AWD maximises<br />
traction across a broad range<br />
of road surfaces and weather<br />
conditions.<br />
Given its height and weight,<br />
the RX was nimble and easy<br />
to manage over twisty terrain.<br />
However, this isn’t an overtly<br />
sporty SUV. I suspect that<br />
mantle sits firmly with the new F<br />
Sport turbo.<br />
