Avon Park revamp to start 

THE $5.5 MILLION 

redevelopment of Avon Park 

in the Ōtākaro Avon River 

Corridor will start next week. 

Citycare has been awarded 

the contract, which involves the 

creation of the longterm 

stopbanks, along 

with an upgrade of 

the park’s recreational 

facilities, removal of 

contaminated material, 

planting, and a portion 

of the City to Sea 

Pathway.

river’s flood capacity.

establishment committee. 

“This philosophy sees us 

working with the river, rather 

than attempting to constrain it 

to accommodate our plans. 

“This is important as the 

future impacts of sea level rise 

and more extreme weather 

make inundation of low-lying 

areas more likely, and increasingly 

expensive to prevent,” he 

said. 

Construction will be carried 

out in multiple phases and is 

expected to be completed in 

November 2025. 

The park’s upgraded recreational 

facilities will include a 

nature-based play space, pump 

track, exploratory trails, basketball 

court, mini football field, 

and barbecue area. 

The City to Sea Pathway will 

go through the park, providing 

a safer option for cyclists 

accessing Kerr’s Reach sport 

clubs, as well as the general 

public.

as part of the project.

Board signs off on Māori immersion school

The results of a city council 

survey show Diamond Harbour 

residents are in favour of 

building a new fire station but 

split on the school. 

The survey, under taken in 

February, found 50.9 per cent 

of respondents from Diamond 

Harbour were opposed to the 

school being built, 34.9 per cent 

were fully in favour, 8.9 per cent 

were somewhat in favour, and 

5.3 per cent were not sure.

Plenty of options when cooking with pork 

Pork is often considered 

a treat, but there are 

many ways to present this 

versatile meat 

• Brush with reserved glaze near 

the end of cooking. 

Great served with risotto or 

creamy polenta. 

Sirloin roast pork with 

stuffed baked apples 

Ingredients 

Serves 3-4 

500g trim pork sirloin roast or 

mini roast 

1 tbsp olive oil 

Salt and pepper to taste 

4 small apples 

3/4 cup fresh bread-crumbs 

2 tbsp finely chopped sage leaves 

1 shallot, diced 

1tsp crushed garlic 

2 tbsp table spread 

Method 

• Preheat oven to 200 deg C. 

• If using a traditional roast, brush 

meat with oil then season with salt 

and pepper. 

• Core apples with an apple 

corer. Using tip of a sharp knife, 

cut through skin around the 

circumference of each apple. 

• Combine breadcrumbs, sage, 

garlic, salt, pepper and shallot. • 

Mix in 1 tablespoon of spread. Stuff 

apples with this mixture. 

• Dot tops with remaining 

tablespread. 

• Place in a roasting pan with pork. 

Cook roast for 35min according 

to packet instructions. Cook 

traditional roast for 10 minutes at 

200 deg C. 

• Reduce heat to 160 deg C, and 

continue cooking for 35-40min. 

• Cover and rest roast for 10min 

before carving. 

• Remove apples once soft and 

cooked. Keep warm. 

• Great served with a kumara mash 

and steamed green beans. 

Mustard and 

pomegranate BBQ pork 

Serves 4 

Ingredients 

500gm pork steaks 

1 tbsp wholegrain mustard 

¼ cup pomegranate glaze 

1 tsp Chinese five-spice 

Method 

• Cut steaks into four portions. 

Combine mustard, pomegranate 

glaze and five spice. 

• Brush over cutlets. Cover and 

refrigerate for 30min. 

• Preheat a barbecue or grill. 

• Remove steaks from fridge, 

scraping off any excess 

marinade. 

• Grill on medium-high for 

about 8-10 minutes depending 

on thickness, turning often. 

Schnitzel with Asian 

flavours 

Serves 4 

Ingredients 

300-400gm pork schnitzel 

½ cup flour 

Flaky sea salt and freshly ground 

black pepper to taste 

1 large egg 

2 tbsp coconut milk or plain 

milk 

1 cup dried breadcrumbs 

3 kaffir lime leaves, deveined 

and finely chopped 

2 tbsp each: chopped coriander 

leaves, mint 

2-3 tbsp rice bran oil 

Method 

• If necessary, pound schnitzels 

with a rolling pin until thin. 

• Combine flour, salt and pepper 

in a shallow dish. 

• Whisk egg and coconut milk 

or milk in another shallow bowl. 

• Place breadcrumbs, kaffir lime 

leaves and chopped herbs in a 

third shallow dish. 

• Coat schnitzels with flour, dip 

in beaten egg, then coat with 

crumb mixture. Chill for 5min. 

• Heat oil in a large, non-stick 

frying pan on medium. 

• Add schnitzels. Cook 

for 1-2 minutes each side, until 

golden. Serve immediately.

friendships he’s made over 28 years.

Volunteering ‘a 

two-way street’ 

RICKY HAS been volunteering at Trees 

for Canterbury for 28 years, spending his 

time weeding, moving plants and keeping 

other volunteers “in check”. 

But most importantly, he’s been making 

lifelong friendships and connections. 

The 62-year-old spends two days a week 

at the not-for-profit centre, contributing 

towards the garden’s goal of planting two 

million trees across Canterbury. 

The well-established community organisation 

promotes a sense of involvement 

and education for physically and intellectually 

disadvantaged people – working to 

save the earth while they’re at it. 

Ricky’s work at Trees for Canterbury 

started in 1996 when the centre was at 

its old site at Opawa Rd, meaning he’s 

seen the organisation grow, change and 

develop over the years. 

He said his years of experience allow 

him to arrive in the morning and know 

just what needs to be done. 

“When I see a job, I get it done – I’ve 

been here long enough that I don’t need to 

be told anymore,” Ricky said. 

While his work at the centre began 

because of a passion for plants, it has been 

his workmates and sense of comraderie 

that’s kept him for so long. 

“It’s been 28 years over the two sites, 

and it’s all about the people for me,” Ricky 

said. 

“There’s been volunteers come and go, 

some ending up being permanent workers, 

and I’ve been here to help them all 

through it.” 

Ricky said he’s far from retirement, with 

at least another 10 years of volunteering 

ahead of him. 

Trees for Canterbury manager Steve 

Bush said volunteers are the backbone of 

the organisation, and it’s a two-way street 

for the value they bring. 

“Our volunteers really get something 

out of the work they do, it gives them a 

sense of self belief and a community connection,” 

said Bush. 

“This is more than just an 

environmental group. The work brings 

them into an idea of fostering life skills, 

work skills and increasing their chance of 

employment.”

The RX 350h features a nonturbo 

2.5-litre petrol hybrid 

powertrain, E-Four all-wheel 

drive system – both cut and paste 

jobs from the Toyota Highlander 

and standard in three of the four 

model range. 

The outlier is the 273kW RX 

500h F Sport. To put that into 

context, that output betters 

the standard powertrain used 

across the rest of the range by a 

whopping 90kW. 

While it’s the entry point into 

the RX club, the 350h offers a 

high standard of luxury and 

premium materials. 

The Limited model supplied 

for this road test takes things 

up a level with standard 21-inch 

dark metallic alloy wheels, 

world first BladeScan adaptive 

Ratings out of 10: Performance 7; Handling 7; Build Quality 

8; Comfort 8; Passenger and Load Space 7; Styling 7; Value 

for money 6; Safety – Five Star ANCAP crash rating.

Parked up in the engine bay is 

a top-notch self-charging hybrid 

electric drivetrain, featuring a 

highly efficient Atkinson cycle 

2.5-litre four-cylinder petrol 

engine. 

Light, compact and matched 

with a power dense electric 

motor it delivers a more than 

handy combined output of 

184kW. 

It made a positive statement 

with its purposeful pulling 

power from standing starts. 

Energy levels taper off a tad 

at higher revs, a space where 

the hybrids aren’t so effective. 

Nonetheless, it underlines the 

advances Lexus have made and 

continue to make with this 

technology. 

A good example of this was 

the test vehicle’s ability to run 

for lengthy periods on electricity 

alone in urban driving. The crisp 

shifting auto is hard to fault 

largely because it rarely ever 

deviates from the high standard 

it sets. 

Flat-folding rear seats create 

a large rear cargo area. There’s 

an abundance of front and rear 

legroom, headroom, although 

the latter is a touch tighter for 

taller back occupants than I 

expected. Some will lament the 

loss of the third row that was a 

big draw card in the previous 

model. 

The RX is armed with the latest 

Lexus Safety System + package 

providing advanced safety and 

accident prevention technologies. 

These either warn the driver of a 

collision or help them reduce the 

severity of an impact. 

Safety features include a radar 

based pre-collision system with 

autonomous emergency braking 

and all-speed dynamic radar 

cruise control. 

Independent suspension 

delivers a nice blend of comfort 

and handling. AWD maximises 

traction across a broad range 

of road surfaces and weather 

conditions. 

Given its height and weight, 

the RX was nimble and easy 

to manage over twisty terrain. 

However, this isn’t an overtly 

sporty SUV. I suspect that 

mantle sits firmly with the new F 

Sport turbo.
