½ cup of shortening<br />
1 cup of sugar<br />
1 egg<br />
Aunt Ione’s<br />
Famous Whoopie Pies<br />
1 egg yolk<br />
2 cups flour<br />
2/3 cups baking cocoa<br />
¼ tsp salt<br />
1 tsp baking soda<br />
½ cup hot water<br />
2/3 cup heated buttermilk<br />
Fold sugar into shortening until well mixed. Beat whole egg and egg yolk in separate<br />
bowl. Mix into shortening sugar mixture. In a separate bowl add dry ingredients and<br />
mix together. Add dry ingredients into the shortening, sugar, and egg mixture and stir<br />
together. Add baking soda into hot water. Pour buttermilk into batter mix. Then add<br />
baking soda and hot water and mix. Spoon out batter onto parchment paper. Bake at<br />
350° for 10 minutes. Let cool.<br />
Filling<br />
2 cups powdered sugar<br />
1 egg white<br />
1 tsp vanilla<br />
½ cup softened butter<br />
½ cup shortening<br />
Mix sugar, egg white, and vanilla. Add softened butter. Mix. Add shortening. Mix.<br />
Match whoopie pie tops and bottoms so that both are approximately the same size.<br />
Frost the flat side of one size. Add second side so filling is in between two cakes.<br />

In the days when ice cream sundae cost much less, a<br />
10-year old boy entered a hotel coffee shop and sat at a<br />
table. A waitress put a glass of water in front of him. “How<br />
much is an ice cream sundae?”<br />
“Fifty cents,” replied the waitress.<br />
The little boy pulled his hand out of his pocket and<br />
studied a number of coins in it. “How much is a dish of plain<br />
ice cream?” he inquired.<br />
Some people were now waiting for a table and the<br />
waitress was a bit impatient. “Thirty-five cents,” she said<br />
brusquely.<br />
The little boy again counted the coins. “I’ll have the<br />
plain ice cream,” he said.<br />
The waitress brought the ice cream, put the bill on the<br />
table, and walked away. The boy finished the ice cream,<br />
paid the cashier and departed. When the waitress came<br />
back, she began wiping down the table then swallowed hard<br />
at what she saw. There, placed neatly beside the empty<br />
dish, were two nickels and five pennies—her tip.<br />

It is<br />
The Twelfth Month - A Bit of Nostalgia<br />
difficult to express our opinion about<br />
December. It is so special and means many<br />
different things to each one of us.<br />
The main event, of course, is Christmas, the celebration<br />
of the birth of our Lord Jesus Christ. Is this not what<br />
Christmas should be about?<br />
However, commercialism has intervened to a great<br />
extent. Halloween candy is not off the counters yet<br />
when Santa Claus is on dis-play. Have we lost the<br />
true meaning of Christmas?<br />
The hustle and bustle of shopping. The crowds,<br />
the rush. Oh, how I wish we could slow it all<br />
down. Go back to the “old days” when Dad<br />
chopped down the tree and it was trimmed<br />
by all the family. Home cooked pop-corn<br />
sewed together on a string then carefully<br />
put on the tree much the same way we<br />
use garland today.<br />
Ornaments handed down from one<br />
generation to another. Some I still have<br />
today All hand painted glass and so<br />
delicate. I have my own special little<br />
tree, aside form the regular one, that<br />
is all mine! Displayed are the old<br />
ornaments, now faded and dull but to me still so beautiful.<br />
Dad always brought home the tree about three days before<br />
Christmas. How exciting it was! A trip was made to the attic<br />
where the stand was dug out. The trunk of the tree was cut<br />
to fit and we were all set to decorate.<br />
We did not have the stands that held water then so no one<br />
thought much about the tree drying out. The needles did<br />
drop, but then we were not so foolish as to leave the tree<br />
in the house more than two or three days after Christmas.<br />
As I wrote this, my youngest daughter, Kim, asked me, “Ma,<br />
did you have the real candles?” I said, “Come on now, I’m<br />
not that old!” I don’t quite go back to the days when real<br />
candles adorned the tree. However, 1 can remember my<br />
grandmother telling me when she was a small child they<br />
did have them. What courage they had! There must have<br />
been someone on guard at all times. But how splendid it<br />
must have been to see the tree aglow with living lights!<br />
My Dad always had the job of testing the lights. There must<br />
be many of us who remember when one bulb went out the<br />
whole string did. Every bulb had to be tested till at last you<br />
found the culprit that fouled up the whole string.<br />
Christmas morning was something else. The anticipation<br />
was almost too much. We never put our gifts under the<br />
tree as we do today. My mom would hang two of her silk<br />
stockings on either side of the mantle and fill them with<br />
practically every item from the 5 & 10. My sister and I were<br />
I lucky, as there were only the two of us so we were very<br />
spoiled. Do you know how far a silk stocking can stretch?!<br />
Mother tried so hard to have everything come out equal<br />
and that’s difficult. I’ve been trying to do this for four<br />
children for years. Now there are twelve with the addition<br />
of husbands and grandchildren, but I still try. Where have all<br />
those days of long ago gone?<br />
They have not disappeared by a long shot. I know of many<br />
families who still carry on the traditions of those past years.<br />
Perhaps Dad does not chop down the tree. It may be storebought,<br />
but the love is there.<br />
The glow of what is to come shines in the eyes of the<br />
children. The anticipation of Santa, the gifts ... yes -but it is<br />
more than that, much more!<br />
The light that shines is love. The love of family and friends.<br />
Without this love and the love of our Lord Jesus Christ, how<br />
empty our lives would be.<br />

Ingredients:<br />
Eggplant Parmesan<br />
3-4 Eggplants, 20 Ripe Plum Tomatoes, 1 Onion, Basil, Parsley<br />
4 Cloves of Garlic, 1 Small Can Tomato Paste, Sunflower Oil,<br />
Salt, 3 Eggs, Parmesan, Flour<br />
Cut Onion and garlic into fine pieces. Heat up skillet with sunflower oil.<br />
Sautee onion and garlic until brown.<br />
Chop plum tomatoes into small pieces and add it to the onion and garlic, simmer at a<br />
medium heat. Add half a gallon of water. When it boils add parsley and basil. Add salt to<br />
taste. Add 1/2 can of tomato paste for consistency. Boil for 1.5 hours or until the tomatoes<br />
are all dissolved or broken down.<br />
Cut eggplants into fine slices. Beat 3 eggs and dip eggplant into egg and flower then<br />
deep fry in vegetable oil. After all eggplant is fried place a layer of eggplant into a deepdish<br />
oven container. Add a layer of sauce on top of the eggplant. Add parmesan cheese.<br />
repeat layers of eggplant, sauce and parmesan until the continer is full.<br />
Heat up oven at 350 degrees. Place container in oven for about 20 mins covered with foil<br />
and the last 5 minutes uncovered until the top is brown and crunchy.<br />
Cut up into slices and enjoy!<br />

1 small garlic bulb<br />
1/4 c. olive or vegetable oil<br />
2 tbls. fresh minced thyme or<br />
2 t. dried thyme<br />
3 1/2 cups of chicken broth<br />
Directions<br />
Cut squash into 8 large pieces. Place cut side<br />
up in a 15x10x1” baking pan. Cut 1/4” off tops<br />
of onions and garlic bulbs. Place cut side up in<br />
baking pan. Brush with oil; sprinkle with thyme.<br />
Cover tightly and bake at 350° for 1 1/2 - 2<br />
hours or until vegetables are very tender. Uncover<br />
and let stand until lukewarm. Remove peel from<br />
squash and onions; remove soft garlic from skins.<br />
Combine vegetables, broth and cream in small<br />
batches in a blender or food processor until<br />
smooth. Transfer to large saucepan. Add parsley,<br />
salt & pepper. Heat through (do not boil). Garnish<br />
with thyme or pumpkin seeds if desired.<br />

Chocolate Covered Peanut Butter Balls<br />
(1) 16.2 oz. jar of peanut butter<br />
1 stick melted butter<br />
1 lb. confectioners sugar<br />
2 tsp. Vanilla<br />
1 semi sweet morsels 12 oz bag<br />
plus 2 oz.<br />
1/3 cake paraffin<br />
Mix all ingredients except for the chocolate and paraffin until smooth.<br />
Shape into small balls and refrigerate. In top of double boiler, melt<br />
paraffin then add chocolate chips. Dip balls in the chocolate and<br />
place on waxed paper on a cookie sheet. Use a toothpick to pick up<br />
the balls and dip them, then patch up the whole on top with a little<br />
more chocolate using the same toothpick. Refrigerate.<br />

5 large eggs<br />
3/4 ounce of lemon extract<br />

3 teaspoons baking powder<br />
1 cup of orange juice (no pulp)<br />
Using a stand mixer with the paddle attachment, mix together the oil and sugar, then add eggs and then<br />
the lemon extract and orange juice. Add baking powder and when that is mixed in add flour. The dough will<br />
be very sticky. After it is all mixed, let it stand in the refrigerator for about an hour. This will make handling<br />
the dough much easier. (Usually while one batch is in the fridge now is a good time to make a 2nd batch).<br />
Roll out the dough into balls about the size of golf balls. Bake on non-stick cookie sheets or grease<br />
regular cookie sheets with a non-sticking baking spray like PAM. Bake in a preheated oven at 350* for<br />
about 10-12 mins (baking times will vary based on ovens). The cookies will start to crack open on the tops<br />
when they are done and they will brown on the bottom. They will not brown on the top so be careful not to<br />
overcook them. Place on a wire rack to cool.<br />
Make a frosting of confectionery sugar and lemon extract and just enough milk for the right consistency<br />
for the glaze. Sprinkle with non parels or a half slice of maraschino cherries.<br />
