Marmite (yeast extract) cake
Prep time: 15 mins Cooking time: 30 mins Serves 10-12
Marmite cake has a rich
flavour and is a must-try
for all umami enthusiasts.
Serve it warm from the
oven at brunchtime,
sliced into neat slabs.
• 70g butter
• 170g sugar
• 1 egg, beaten
• 160g plain flour
• 2 tsp baking powder
• ¼ tsp salt
• 250ml whole milk
For the topping:
• 120g butter
• 2 tsps Marmite
• 60g grated
Cheddar cheese
You will need: a 23 x
33cm Pyrex baking dish
1 Preheat the oven to 190°C
Gas 5. Beat the butter and sugar
until light, creamy and smooth.
Add the egg and beat well.
2 Sift the dry ingredients
together. Alternate adding the
dry ingredients and the milk
to the butter mixture. Mix
gently until well combined
and the batter is smooth. Pour
the batter into the baking dish
and bake in the preheated
oven for 25-30 minutes.
3 To make the topping, simply
melt the butter and mix in the
Marmite/yeast extract. Five
minutes before the cake is ready,
remove from the oven and prick
all over with a fork. Pour over
the melted butter and Marmite
mixture and sprinkle with the
grated Cheddar cheese. Return
to the oven for the final 5
minutes until the cake is cooked
and a skewer inserted into the
centre comes out clean, and the
cheese has melted and turned
slightly golden. This cake is best
served warm from the oven.
