The rainbowcocktail is fun and colourful as anybirthday should be while you can’t gowrong with a vanilla cake and sprinkles.Raise a glass to a one of a kindmagazine, team and many more fun Simsfilled issues.Classic Vanilla Cake32Cake:1 stick (8 tablespoons) unsaltedbutter, at room temperature, plusmore for the pans2 3/4 cups all-purpose flour,spooned and levelled, plus morefor the pans1 teaspoon baking powder1 teaspoon fine salt2 cups granulated sugar1/2 cup vegetable oil5 large eggs, at room temperature1 tablespoon pure vanilla extract1 cup milk
DirectionsFor the cake: Preheat the oven to 350degrees F. Butter the bottoms and sidesof two 9-inch round cake pans; dust withflour, and tap out the excess.Whisk together the flour, baking powderand salt in a medium bowl; set aside.Beat the butter, sugar and oil in a largebowl with an electric mixer on mediumhighspeed until light in colour and fluffy,about 5 minutes. Beat in the eggs, one ata time, and then the vanilla untilcombined.Alternate folding the flour mixture andthe milk into the batter with a spatula,adding the flour in three additions andthe milk in two, starting and ending withthe flour, until just smooth. Divide thebatter evenly between the preparedpans.Bake the cakes on the same oven rackuntil golden on top and the centersspring back to the touch, 35 to 40minutes. Rotate the pans about halfwaythrough if they seem to be browningunevenly. Let cool in the pans about 10minutes, then turn out onto cooling racksand let cool completely.For the frosting: While the cakes cool,beat the butter and salt in a large bowlwith an electric mixer on medium speeduntil smooth. Gradually beat in theconfectioners' sugar. Once it's all beenadded, increase the speed to mediumhigh,and beat until white and fluffy. Add2 tablespoons of the milk, and beat toincorporate. Beat in the remaining milk,one tablespoon at a time (the frostingwill be spreadable but not runny).To assemble: Place 1 cake layer right-sideup on a cake plate or stand, and spreadwith 1 cup of the frosting. Top with thesecond cake layer. Frost the top andsides of the cake with the remainingfrosting.The Double Rainbow1 ounce vodka1 ounce St. Germain elderflowerliqueur4 or so ounces of soda water4 dashes of grapefruit bitters (FeeBrothers brand)lemon peel for garnishrainbow ice cubesMake rainbow ice by adding foodcolouring to an ice cube tray, filling withwater and freezing.
