<strong>October</strong> is a great time to give back and be grateful,<br />

especially as Thanksgiving is just around the corner!<br />

In my opinion, it’s really important to help the less<br />

fortunate and express your gratitude towards others.<br />

Some ways to express you’re thankful can be as simple as just<br />

saying those words. Sometimes we can assume someone else<br />

knows that deep down we are really grateful for something<br />

they did for us, but often, people appreciate to actually hear<br />

the words thank you.<br />

Along with being thankful, giving back and helping out either<br />

a friend, family member or community is an effective way to<br />

say thank you. Some inspirations include donating extra food<br />

to a local food drive, donating your time to an organization<br />

to help others and even offering to look after the neighbour’s<br />

kids for a few hours. These things are small, but they truly<br />

make a big difference in at least one person’s life!<br />

For this month’s special feature, I decided to share a family<br />

favourite fall-time treat! These pumpkin squares are so<br />

delicious- I’m pretty sure you’ll love them. Be sure to share<br />

PUMPKIN SQUARES<br />

Ingredients:<br />

For Cake<br />

1/2 cup butter or margarine<br />

1/2 cup granulated sugar<br />

1/2 cup packed brown sugar<br />

2 eggs<br />

14 oz canned pumpkin (not filling)<br />

1 cup all-purpose flour<br />

1 tsp cinnamon<br />

1/4 tsp nutmeg<br />

1/4 tsp ginger<br />

1 tsp baking powder<br />

1/2 tsp baking soda<br />

1/4 tsp table salt<br />

For Frosting:<br />

4 oz soften cream cheese<br />

1/4 cup butter or margarine<br />

1 tsp vanilla extract<br />

2 cups icing sugar<br />

Directions:<br />

Preheat oven to 350 degrees F and grease a 9 x 13 baking pan.<br />

Cream butter and sugar together. Beat in sugar then eggs one at a time.<br />

Slowly beat in pumpkin.<br />

Add remaining ingredients, stir, and scrape batter into greased pan<br />

Bake at 350 F for about 25/27 minutes, until inserted toothpick comes out<br />

clean.<br />

Cool for at least 60 minutes, then frost with cream cheese icing.<br />

Cake-<br />

Frosting-<br />

Beat cream cheese, butter and vanilla until smooth.<br />

Gradually add icing sugar until frosting is combined and fluffy.<br />
