Tell us about the collaboration between Vans and the owners in creating the project to fit within the space.<br />
Our collaboration was excellent. 2020, really highlighted our need for more serving space and an outdoor<br />
bar. We had a limited area in the front of our property to maximize. We also had an existing structure to<br />
remodel and incorporate. Van’s was excellent at taking our needs and wants and figuring out the best way<br />
to do it. We also needed the structure to match and complement our existing building, and Van’s had<br />
excellent suggestions and finishing touches that made it feel like it had always been there.<br />
What are some of the difficulties that you have come across with designing these projects in Door County?<br />
Our biggest challenge is always using space wisely but with an eye on what we will need in the future. We<br />
do not have a lot of space to build on, so maximizing use and clever design is always important.<br />
What is the purpose of thise space?<br />
Our Wine & Cocktail Garden is the newest addition to Door Peninsula Winery's property. Since 1974, Door<br />
Peninsula has been making wines and boasts a catalog of over 60 wines and hard ciders. In the same<br />
property, Door County Distillery has been distilling spirits for over 10 years. The Wine and Cocktail garden<br />
marries both of these entities. We serve glasses of wine, craft cocktails, wine flights, and cocktail flights<br />
(bloody mary and old fashions). It is also our only pet friendly space, which is a goal we had. In the future we<br />
hope to host small tasting events and live music as well.<br />

What is the Golden Hour?<br />
So, I think we all know how beautiful golden hour actually is,<br />
right? It’s that first hour before sunrise or that last hour<br />
before sunset, where the air is filled with a flattering golden<br />
hue. 60 minutes twice a day, this happens. For me, golden<br />
hour is a sense of calm and this moment that makes you just<br />
stop to take it all in and enjoy it for yourself. Golden Hour is a<br />
feel-good smoothie pop up shop serving all things clean and<br />
organic. The kind of ingredients you can feel good about.<br />
Golden Hour was created for guests to just stop, whether it<br />
be for a minute or two or even an hour. To remember to take<br />
time for yourself, to feel good, and to care for your body.<br />
Who are the individuals behind Golden Hour?<br />
Just me, Miranda! I’m a one-woman show over here with a<br />
wonderful group of supporters who continue to encourage<br />
me along the way!<br />
Share a little insight into the nutritional value of<br />
your clean ingredients and menu choices...<br />
I strive to use only organic fruits and vegetables because of<br />
their lower pesticide residues. I also strive to find the best<br />
organic clean products, and when I say clean, I mean the<br />
fewer the ingredients the better. Just because something is<br />
organic doesn’t always mean it's healthy, so I’m always<br />
scouring the ingredient lists to be sure everything is as clean<br />
as possible. As far as the nutritional value to my menu<br />
choices, there are countless health benefits, so if I had to<br />
choose one to highlight it would be bananas!<br />
Bananas are the key ingredient in my smoothies and I also feel<br />
like they sometimes have a bad reputation for being too high<br />
in sugar, so this is a good one to talk about. I’ve been<br />
following Dr. Anthony Williams aka The Medical Medium for<br />
some time now and have read his countless books. He<br />
reminds us that bananas are made up of fiber, pulp, and even<br />
water too. Their fruit sugar content is the reason bananas<br />
have rich supplies of antioxidants, vitamins, and other<br />
phytonutrients to help us fight disease. Bananas can help<br />
reduce anxiety and depression; they improve the liver's ability<br />
to absorb nutrients, and my personal favorite, they are an<br />
important brain food!

enjoying operating as a pop-up shop, but never say<br />
never! I’m fairly certain that one day I’ll have a brick<br />
and mortar shop.<br />

There’s something magical about seeing the local farmer’s markets come to life after a long winter. Vendor booths are filled with<br />
spirited and passionate farmers offering fresh vegetables beaming with color, beautiful flower bouquets made with love, local raw<br />
honey, farm-fresh eggs, grass-fed meat and even samples of fermented sourdough bread all create a sensory experience that plays<br />
on the human desire to eat with connection and purpose<br />
Purchasing local food is not only a fun, explorative experience, it offers a multitude of health and environmental benefits. Oh, and<br />
don’t forget to always to have a large reusable farmer’s market bag to bring along, it’s easy to buy more than you anticipate with the<br />
abundance of freshness around you!<br />
Local food is nutrient-dense<br />
Eating local food is highly beneficial for your body because<br />
you receive more nutrients from food that was just harvested<br />
compared to food that ships to the grocery store from several<br />
states away. The longer produce sits on a truck, the greater<br />
chance it has of losing vitamins, minerals and nutrients.<br />
Additionally, a study conducted by Montclair State University<br />
revealed that the vitamin C content of broccoli was cut in half<br />
when it was shipped out of the country opposed to when it<br />
was sourced locally. When you think about it, local food<br />
usually gets harvested the same morning it gets sold and at<br />
peak ripeness, which is also when food maintains the highest<br />
amount of nutrients (and has the best culinary flavor!)<br />
Local food is fresh and flavorful<br />
There’s nothing quite like biting into that first juicy, bright red<br />
strawberry of the season, smelling the aroma of freshly<br />
chopped basil or indulging in the pungent, savory bite of a<br />
cooked garlic bulb mashed on top of sourdough bread. When<br />
our olfactory senses get a whiff of these smells (or even begin<br />
thinking of how good the food is going to taste), it stimulates<br />
our appetite because of the anticipation of the food about to<br />
be eaten, a phenomenon called the sensory specific appetite.<br />
This anticipation creates a multitude of physiological<br />
reactions (such as an increase of salvia and digestive enzymes)<br />
that help prepare the body for easier digestion of those<br />
specific foods we smell. If you walk into a kitchen with<br />
something delicious cooking, you know this phenomenon all<br />
too well. When we are excited to eat the fresh, local foods we<br />
cook, it not only helps prepare our digestive tract, it also<br />
increases our food enjoyment, creating a positive food<br />
experience that we will naturally crave to repeat again and<br />
again.<br />
Eating local allows you to experiment<br />
more in the kitchen<br />
Sometimes meal preparation can be<br />
intimidating and daunting, but basing your<br />
meal ideas off of local produce can help yield<br />
some clarity in what recipes to try out. It<br />
allows for more creative experimentation,<br />
especially knowing the food you are<br />
purchasing will have the most ideal flavor.<br />
Asparagus in the Spring, strawberries in early<br />
<strong>Summer</strong>, heirloom tomatoes in late <strong>Summer</strong><br />
and apples in Fall, there’s so much variety to<br />
choose from and a plethora of recipes to<br />
create with the ever-changing availability of<br />
fresh foods.<br />
Eating local reconnects you back to your<br />
body’s desire to eat within the seasons<br />
Before industrial food production, humans<br />
used to eat within the rhythm of the seasons,<br />
intuitively desiring cooling foods such as<br />
watermelon and cucumber in the summer<br />
when the temperature is hot and we need<br />
more hydration. Similarly, we crave eating<br />
grounding root vegetables such as squash and<br />
sweet potatoes during the colder seasons<br />
when our body needs heavier satiation and<br />
warmth. Maintaining a balance of eating<br />
seasonally and choosing local foods helps your<br />
body to stay in harmony and balance with the<br />
environment, leading to more vibrant health<br />
and an understanding of what foods your<br />
inner wisdom is naturally craving.<br />

and creates a deeper human<br />
connection and respect for<br />
growing food<br />
One of my favorite aspects of<br />
strolling through the farmer’s<br />
market (usually with a<br />
homemade lavender lemonade in<br />
hand) is that I mentally slow<br />
down and take in the beauty of<br />
seeing nature’s medicine in front<br />
of my eyes. I breathe slower, I<br />
begin to halt my usual quick<br />
walking pace, I relax my<br />
shoulders and allow myself to be<br />
fully present. An appreciation<br />
sets in for the smell, texture,<br />
color and taste of local fruits and<br />
vegetables as well as the human<br />
hands who work tirelessly to<br />
provide wholesome food to the<br />
community. It’s an inner<br />
enjoyment of feeling grateful and<br />
an hour of time taken to<br />
thoughtfully purchase food that<br />
will be used to create delicious,<br />
nourishing and healing meals.<br />

If you are looking for something sparkly and extra-special for yourself (or a loved one),<br />
stop in by Tricia Hanson and Tracy Jorns at T. Simon Jewelers. These sisters excel in oneof-a-kind<br />
custom-made jewelry designs, using bold and beautiful stones form all over the<br />
world in a wide array of colors and styles. T. Simon Jewelers is owned and operated solely<br />
by women, and was founded in 1997—for the last 25 years, Tricia and Tracy have been<br />
serving the people of Sturgeon Bay and Door County.
Tricia is a GIA-certified goldsmith, who<br />
became interested in making jewelry in high<br />
school and went on to study jewelry<br />
fabrication and goldsmith design at NWTC.<br />
GIA certification means that Tricia is certified<br />
by the Gemological Institute of America to<br />
evaluate stones for cut, color, clarity, carat<br />
weight, and more to identify and classify each<br />
stone. After going to work for another local<br />
jeweler for many years, and simultaneously<br />
making jewelry out of her home as a sidehustle,<br />
she decided she wanted to start her<br />
own business in the industry. “I was told I<br />
couldn’t do it, and was advised not to start a<br />
business by an economic development<br />
company.” shared Tricia; she has obviously<br />
proven them wrong.<br />
Tracy, Tricia’s sister, collaborates with Tricia in<br />
the design process of T. Simon’s custom<br />
designs and manages the Sturgeon Bay store.<br />
The sisters have created some truly beautiful<br />
designs together over the past 25 years, with<br />
the reputation for quality and service matching<br />
the breathtaking jewelry. T. Simon Jewelers<br />
not only creates unique custom pieces, but<br />
also carry pieces from top jewelry brands in<br />
the industry; the sisters also handle any repairs<br />
you may need.<br />
These women have built an amazing<br />
business together in Sturgeon Bay, and<br />
have recently added another family<br />
member to T. Simon Jewelers: Tricia’s<br />
daughter, Celina Simon. In the past few<br />
years, Celina has begun working side by<br />
side with her mother and aunt, further<br />
entrenching T. Simon’s women and familyowned<br />
legacy. Celina is currently working<br />
on her GIA certification.<br />
T. Simon Jewelers prides itself in helping<br />

“Many things have changed in the jewelry<br />
industry over the last 25 years, not only in<br />

serving their clients may have changed, but<br />

the market, Tricia has added a laser welder to<br />
her arsenal recently, which allows her to work<br />

work on her bench behind the scenes,<br />
creating new, never-before-seen designs and<br />
repairing antique, never-to-be-replaced ones.<br />

Hummus<br />

We love a dish that can be made from the pantry, and one that can be<br />
customized even more. Homemade hummus is easier than you think, and just<br />
about anything can be used as a dipper - think fresh cut veggies, pita slices,<br />
bagel chips, pretzels, and more. The most time-consuming part of this recipe<br />
is shelling the chickpeas, which you can skip in a pinch. Try some of the<br />
variations we have listed below to keep it interesting<br />
Yield: 1¼ cups<br />
Ingredients<br />
1 c cooked or canned chickpeas<br />
2 T reserved liquid from chickpeas<br />
⅓ c tahini (sesame seed paste)<br />
1 clove garlic, peeled and crushed<br />
6 T lemon juice<br />
½ t salt<br />
1T olive oil<br />
Directions<br />
Drain chickpeas, reserving 2T of liquid.<br />
If desired, remove skins from chickpeas. Doing<br />
this under running water speeds up this process.<br />
In a food processor or blender, puree chickpeas<br />
with liquid, tahini, garlic, lemon, and salt by<br />
blitzing in 20-30 second intervals until desired<br />
consistency is attained.<br />
Spoon mixture into a shallow bowl, using the back<br />
of the spoon to create a well in the center.<br />
Drizzle the olive oil over the hummus and sprinkle<br />
with fresh herbs if you have them.<br />
If using any additional toppings or garnishes,<br />
spoon them into the center of the dish now.<br />
Serve as a dip or use as a spread for sandwiches.<br />
Variations<br />
Add roasted red peppers, caramelized onions, or a head of roasted garlic for deeper flavor.<br />
Blend an avocado into the mixture to add creaminess and color.<br />
Top with pine nuts, sesame seeds, or whole chickpeas for texture.<br />
Up the lemon juice if you love the freshness.<br />
Sprinkle cayenne on top for heat or paprika for color and smokiness.<br />
Garnish with a tablespoon of fresh herbs, like parsley, dill, or chives.

Kristen Ambos and her team want to educate area homebuyers so they can take<br />
advantage of the great lending programs available through the United States<br />
Department of Agriculture (USDA) that incentivize properties in rural<br />
communities.<br />
“It’s a phenomenal product that is super under used,” Ambos says, “it’s like free<br />
money!” Many lenders aren’t educated on the products, so they don’t offer them<br />
to their borrowers, even though they can be a better option financially for their<br />
clients.<br />
There are many advantages to USDA loans; the most prominent is that it requires<br />
0% down. This is especially helpful for those whose cash is tied up and don’t<br />
think they can make a down payment. They are also flexible on credit scores, so if<br />
a borrower has a lower score or is working on building their credit, they still can<br />
qualify for a mortgage.<br />
Another way it saves borrowers money is that the PMI is about half of a typical<br />
FHA loan, so the monthly payment is more affordable. There is also no<br />
prepayment penalty, and they are based off of a conventional 30 year fixed<br />
mortgage.<br />
There are a few drawbacks, though usually they aren’t significant enough to<br />
warrant Ambos recommending a different product. First, eligibility has<br />
geographical restrictions, but this itself is a misconception because almost<br />
everywhere but large cities qualify, which means most of Wisconsin and the<br />
Midwest is included.<br />
There are also income restrictions that are based on the number of people in the<br />
household, so it can be a great product for those who earn more but again are<br />
short on cash assets for a down payment. The 0% down also means more money<br />
available to help with closing costs or appraisal gaps.<br />
The process is the same as other loan products, so it’s not more complicated<br />
than conventional mortgages. All it takes is approval from the USDA, which can<br />
sometimes take a week to get.<br />
Ambos recommends that homebuyers who are interested in the program go to<br />
the USDA loan website, enter the property they are looking at purchasing, and<br />
check if it’s eligible. She is a huge believer in government loan products, and her<br />
team has written many USDA loans over the years, always recommending them<br />
to those who qualify. She warns that it is important to work with an agent that<br />
understands them inside and out, so that they can reassure a seller that they are<br />
a qualified buyer.<br />
