COMMUNITY & CONNECTIONS
As our community continues to grow and thrive, residents
remain focused on the importance of health and happiness
for themselves and their family. My summer publication is
full of self love, health and local business highlights. Sharing
just a small reflection of what our community has to offer. As
we are sharing a full years worth of publications, we wouldn't
have made it without the connections within our community.
Cannot wait to see what the next two years will bring.
Enjoy your summer as I know I will! I am looking forward to
the next couple months of Wisconsin summer and going "up
north" and enjoying the beautiful
lakes that we are surrounded with.
Tell us about the collaboration between Vans and the owners in creating the project to fit within the space.
Our collaboration was excellent. 2020, really highlighted our need for more serving space and an outdoor
bar. We had a limited area in the front of our property to maximize. We also had an existing structure to
remodel and incorporate. Van’s was excellent at taking our needs and wants and figuring out the best way
to do it. We also needed the structure to match and complement our existing building, and Van’s had
excellent suggestions and finishing touches that made it feel like it had always been there.
What are some of the difficulties that you have come across with designing these projects in Door County?
Our biggest challenge is always using space wisely but with an eye on what we will need in the future. We
do not have a lot of space to build on, so maximizing use and clever design is always important.
What is the purpose of thise space?
Our Wine & Cocktail Garden is the newest addition to Door Peninsula Winery's property. Since 1974, Door
Peninsula has been making wines and boasts a catalog of over 60 wines and hard ciders. In the same
property, Door County Distillery has been distilling spirits for over 10 years. The Wine and Cocktail garden
marries both of these entities. We serve glasses of wine, craft cocktails, wine flights, and cocktail flights
(bloody mary and old fashions). It is also our only pet friendly space, which is a goal we had. In the future we
hope to host small tasting events and live music as well.
getting to know Door County's
very own Clean eating pop-up shop,
Golden H
What is the Golden Hour?
So, I think we all know how beautiful golden hour actually is,
right? It’s that first hour before sunrise or that last hour
before sunset, where the air is filled with a flattering golden
hue. 60 minutes twice a day, this happens. For me, golden
hour is a sense of calm and this moment that makes you just
stop to take it all in and enjoy it for yourself. Golden Hour is a
feel-good smoothie pop up shop serving all things clean and
organic. The kind of ingredients you can feel good about.
Golden Hour was created for guests to just stop, whether it
be for a minute or two or even an hour. To remember to take
time for yourself, to feel good, and to care for your body.
Who are the individuals behind Golden Hour?
Just me, Miranda! I’m a one-woman show over here with a
wonderful group of supporters who continue to encourage
me along the way!
Share a little insight into the nutritional value of
your clean ingredients and menu choices...
I strive to use only organic fruits and vegetables because of
their lower pesticide residues. I also strive to find the best
organic clean products, and when I say clean, I mean the
fewer the ingredients the better. Just because something is
organic doesn’t always mean it's healthy, so I’m always
scouring the ingredient lists to be sure everything is as clean
as possible. As far as the nutritional value to my menu
choices, there are countless health benefits, so if I had to
choose one to highlight it would be bananas!
Bananas are the key ingredient in my smoothies and I also feel
like they sometimes have a bad reputation for being too high
in sugar, so this is a good one to talk about. I’ve been
following Dr. Anthony Williams aka The Medical Medium for
some time now and have read his countless books. He
reminds us that bananas are made up of fiber, pulp, and even
water too. Their fruit sugar content is the reason bananas
have rich supplies of antioxidants, vitamins, and other
phytonutrients to help us fight disease. Bananas can help
reduce anxiety and depression; they improve the liver's ability
to absorb nutrients, and my personal favorite, they are an
important brain food!

Where are you setting up your pop-up
I will be at Heirloom Cafe and Provisions in Baileys
at Peninsula State Park. Guests can find me on social
(goldenhourdoorcounty) to access my schedule,
Everything can also be found on my website.
Do you have any plans of getting a more
exclusive space?
I don’t have any set plans as of right now. I’m really
enjoying operating as a pop-up shop, but never say
never! I’m fairly certain that one day I’ll have a brick
and mortar shop.
The menu at Golden Hour is housemade,
organic, gluten-free, dairy-free,
and vegan-friendly. Menu options
l
include: Smoothies, juice, coffee,
waffles, energy bites, lemonades, and
more! Both Heirloom and Backbone
s
have their menus available as well
during pop-ups so guests can have the
best of both worlds!
RECONNECTING BACK TO REAL FOOD
W H Y E A T I N G
LOCAL MATTERS
BY EMILY SCHIELD
There’s something magical about seeing the local farmer’s markets come to life after a long winter. Vendor booths are filled with
spirited and passionate farmers offering fresh vegetables beaming with color, beautiful flower bouquets made with love, local raw
honey, farm-fresh eggs, grass-fed meat and even samples of fermented sourdough bread all create a sensory experience that plays
on the human desire to eat with connection and purpose
Purchasing local food is not only a fun, explorative experience, it offers a multitude of health and environmental benefits. Oh, and
don’t forget to always to have a large reusable farmer’s market bag to bring along, it’s easy to buy more than you anticipate with the
abundance of freshness around you!
Local food is nutrient-dense
Eating local food is highly beneficial for your body because
you receive more nutrients from food that was just harvested
compared to food that ships to the grocery store from several
states away. The longer produce sits on a truck, the greater
chance it has of losing vitamins, minerals and nutrients.
Additionally, a study conducted by Montclair State University
revealed that the vitamin C content of broccoli was cut in half
when it was shipped out of the country opposed to when it
was sourced locally. When you think about it, local food
usually gets harvested the same morning it gets sold and at
peak ripeness, which is also when food maintains the highest
amount of nutrients (and has the best culinary flavor!)
Local food is fresh and flavorful
There’s nothing quite like biting into that first juicy, bright red
strawberry of the season, smelling the aroma of freshly
chopped basil or indulging in the pungent, savory bite of a
cooked garlic bulb mashed on top of sourdough bread. When
our olfactory senses get a whiff of these smells (or even begin
thinking of how good the food is going to taste), it stimulates
our appetite because of the anticipation of the food about to
be eaten, a phenomenon called the sensory specific appetite.
This anticipation creates a multitude of physiological
reactions (such as an increase of salvia and digestive enzymes)
that help prepare the body for easier digestion of those
specific foods we smell. If you walk into a kitchen with
something delicious cooking, you know this phenomenon all
too well. When we are excited to eat the fresh, local foods we
cook, it not only helps prepare our digestive tract, it also
increases our food enjoyment, creating a positive food
experience that we will naturally crave to repeat again and
again.
Eating local allows you to experiment
more in the kitchen
Sometimes meal preparation can be
intimidating and daunting, but basing your
meal ideas off of local produce can help yield
some clarity in what recipes to try out. It
allows for more creative experimentation,
especially knowing the food you are
purchasing will have the most ideal flavor.
Asparagus in the Spring, strawberries in early
Summer, heirloom tomatoes in late Summer
and apples in Fall, there’s so much variety to
choose from and a plethora of recipes to
create with the ever-changing availability of
fresh foods.
Eating local reconnects you back to your
body’s desire to eat within the seasons
Before industrial food production, humans
used to eat within the rhythm of the seasons,
intuitively desiring cooling foods such as
watermelon and cucumber in the summer
when the temperature is hot and we need
more hydration. Similarly, we crave eating
grounding root vegetables such as squash and
sweet potatoes during the colder seasons
when our body needs heavier satiation and
warmth. Maintaining a balance of eating
seasonally and choosing local foods helps your
body to stay in harmony and balance with the
environment, leading to more vibrant health
and an understanding of what foods your
inner wisdom is naturally craving.
Purchasing local food allows
for a slow-down mentality
and creates a deeper human
connection and respect for
growing food
One of my favorite aspects of
strolling through the farmer’s
market (usually with a
homemade lavender lemonade in
hand) is that I mentally slow
down and take in the beauty of
seeing nature’s medicine in front
of my eyes. I breathe slower, I
begin to halt my usual quick
walking pace, I relax my
shoulders and allow myself to be
fully present. An appreciation
sets in for the smell, texture,
color and taste of local fruits and
vegetables as well as the human
hands who work tirelessly to
provide wholesome food to the
community. It’s an inner
enjoyment of feeling grateful and
an hour of time taken to
thoughtfully purchase food that
will be used to create delicious,
nourishing and healing meals.
Don’t forget to make a note of
when your local farmer’s markets
are happening and make it a
priority to enjoy the food
shopping experience!

Sisters
make it
Sparkle
in Sturgeon Bay
WRITTEN BY BRIGETTE BAUDHUIN | PHOTOGRAPHY BY BRANDI KRAUSE
If you are looking for something sparkly and extra-special for yourself (or a loved one),
stop in by Tricia Hanson and Tracy Jorns at T. Simon Jewelers. These sisters excel in oneof-a-kind
custom-made jewelry designs, using bold and beautiful stones form all over the
world in a wide array of colors and styles. T. Simon Jewelers is owned and operated solely
by women, and was founded in 1997—for the last 25 years, Tricia and Tracy have been
serving the people of Sturgeon Bay and Door County.

Tricia is a GIA-certified goldsmith, who
became interested in making jewelry in high
school and went on to study jewelry
fabrication and goldsmith design at NWTC.
GIA certification means that Tricia is certified
by the Gemological Institute of America to
evaluate stones for cut, color, clarity, carat
weight, and more to identify and classify each
stone. After going to work for another local
jeweler for many years, and simultaneously
making jewelry out of her home as a sidehustle,
she decided she wanted to start her
own business in the industry. “I was told I
couldn’t do it, and was advised not to start a
business by an economic development
company.” shared Tricia; she has obviously
proven them wrong.
Tracy, Tricia’s sister, collaborates with Tricia in
the design process of T. Simon’s custom
designs and manages the Sturgeon Bay store.
The sisters have created some truly beautiful
designs together over the past 25 years, with
the reputation for quality and service matching
the breathtaking jewelry. T. Simon Jewelers
not only creates unique custom pieces, but
also carry pieces from top jewelry brands in
the industry; the sisters also handle any repairs
you may need.
These women have built an amazing
business together in Sturgeon Bay, and
have recently added another family
member to T. Simon Jewelers: Tricia’s
daughter, Celina Simon. In the past few
years, Celina has begun working side by
side with her mother and aunt, further
entrenching T. Simon’s women and familyowned
legacy. Celina is currently working
on her GIA certification.
T. Simon Jewelers prides itself in helping
customers find jewelry that they can
treasure for a lifetime, and continue to
share from generation to generation.
“Many things have changed in the jewelry
industry over the last 25 years, not only in
the styles but in how customers choose to
shop,” said Tracy. “Many people
communicate with us through email, text,
or Facebook now, unlike the more direct
approach of 25 years ago.” The methods of
serving their clients may have changed, but
the level of quality and customer service
has not.
In addition to maintaining GIA certification
status and continually studying the trends of
the market, Tricia has added a laser welder to
her arsenal recently, which allows her to work
with all types of metals and gives them a
competitive advantage with upgraded
technology. Tricia handles all of the goldsmith
work on her bench behind the scenes,
creating new, never-before-seen designs and
repairing antique, never-to-be-replaced ones.
Tricia, Tracy and Celina work tirelessly to
maintain an expert level of care and
commitment to their craft.
These women are truly professionals and look
forward to helping you create a custom
design, find a special gift, or repair a piece
that is near and dear to your heart. They pride
themselves in the customer service they are
able to deliver, and the comfortable, fun
atmosphere that you are sure to find at T.
Simon Jewelers; when clients are looking for a
special something for themselves or a loved
one, Tricia, Tracy and Celina will ensure they
leave with a one-of-a-kind, quality product
that will last for generations.
Hummus
Homemade
By Olivia Kassner
We love a dish that can be made from the pantry, and one that can be
customized even more. Homemade hummus is easier than you think, and just
about anything can be used as a dipper - think fresh cut veggies, pita slices,
bagel chips, pretzels, and more. The most time-consuming part of this recipe
is shelling the chickpeas, which you can skip in a pinch. Try some of the
variations we have listed below to keep it interesting
Yield: 1¼ cups
Ingredients
1 c cooked or canned chickpeas
2 T reserved liquid from chickpeas
⅓ c tahini (sesame seed paste)
1 clove garlic, peeled and crushed
6 T lemon juice
½ t salt
1T olive oil
Directions
Drain chickpeas, reserving 2T of liquid.
If desired, remove skins from chickpeas. Doing
this under running water speeds up this process.
In a food processor or blender, puree chickpeas
with liquid, tahini, garlic, lemon, and salt by
blitzing in 20-30 second intervals until desired
consistency is attained.
Spoon mixture into a shallow bowl, using the back
of the spoon to create a well in the center.
Drizzle the olive oil over the hummus and sprinkle
with fresh herbs if you have them.
If using any additional toppings or garnishes,
spoon them into the center of the dish now.
Serve as a dip or use as a spread for sandwiches.
Variations
Add roasted red peppers, caramelized onions, or a head of roasted garlic for deeper flavor.
Blend an avocado into the mixture to add creaminess and color.
Top with pine nuts, sesame seeds, or whole chickpeas for texture.
Up the lemon juice if you love the freshness.
Sprinkle cayenne on top for heat or paprika for color and smokiness.
Garnish with a tablespoon of fresh herbs, like parsley, dill, or chives.

MORTGAGE MINUTE WITH
Kristen
Ambos
& TEAM
Written By Olivia Kassner
Photography By Julie M. Gile Photography
Kristen Ambos and her team want to educate area homebuyers so they can take
advantage of the great lending programs available through the United States
Department of Agriculture (USDA) that incentivize properties in rural
communities.
“It’s a phenomenal product that is super under used,” Ambos says, “it’s like free
money!” Many lenders aren’t educated on the products, so they don’t offer them
to their borrowers, even though they can be a better option financially for their
clients.
There are many advantages to USDA loans; the most prominent is that it requires
0% down. This is especially helpful for those whose cash is tied up and don’t
think they can make a down payment. They are also flexible on credit scores, so if
a borrower has a lower score or is working on building their credit, they still can
qualify for a mortgage.
Another way it saves borrowers money is that the PMI is about half of a typical
FHA loan, so the monthly payment is more affordable. There is also no
prepayment penalty, and they are based off of a conventional 30 year fixed
mortgage.
There are a few drawbacks, though usually they aren’t significant enough to
warrant Ambos recommending a different product. First, eligibility has
geographical restrictions, but this itself is a misconception because almost
everywhere but large cities qualify, which means most of Wisconsin and the
Midwest is included.
There are also income restrictions that are based on the number of people in the
household, so it can be a great product for those who earn more but again are
short on cash assets for a down payment. The 0% down also means more money
available to help with closing costs or appraisal gaps.
The process is the same as other loan products, so it’s not more complicated
than conventional mortgages. All it takes is approval from the USDA, which can
sometimes take a week to get.
Ambos recommends that homebuyers who are interested in the program go to
the USDA loan website, enter the property they are looking at purchasing, and
check if it’s eligible. She is a huge believer in government loan products, and her
team has written many USDA loans over the years, always recommending them
to those who qualify. She warns that it is important to work with an agent that
understands them inside and out, so that they can reassure a seller that they are
a qualified buyer.
Kristen Ambos and her team are experts in the mortgage field. Not only a
resource to her current clients, Ambos uploads weekly Mortgage Minute videos
and has a wealth of information on her social media pages. She is a great person
to get in touch with for any mortgage questions, and she is truly passionate
about helping buyers get into their dream home. Follow along on her Instagram
advice.
