Without doubt the most prestigious and iconic sparkling wine<br />

in the world, Champagne has graced the tables and salons of<br />

Kings and Queens, Tsars and Emperors, and one certain Prime<br />

Minister who apparently drank two bottles a day.<br />

Only ever made in the Champagne region, the northernmost<br />

wine growing region of France, it was originally produced<br />

as a still wine. In fact, until the Eighteenth Century the<br />

Champagnoise considered bubbles to be a fault and did all<br />

they could to keep the fizz out, not least because the bottles<br />

kept exploding due to the internal pressure. It was only<br />

when English glassmakers created a technique for making<br />

bottles that could withstand this internal pressure that the<br />

Champagne industry as we know it, began.<br />

The ultimate celebration wine, Champagne is also<br />

remarkably good with food. It’s perfect with shellfish, roast<br />

chicken, or anything deep fried. In fact, one of my all-time<br />

favourite wine and food pairings is Champagne and ‘chip<br />

shop’ Fish and Chips. Try it.<br />

As a lover of Champagne, it’s difficult to pick out a favourite,<br />

but I personally have a soft spot for Pommery. I’m also<br />

always pleasantly surprised by just how good our own house<br />

Champagne, Jules Feraud is; light and fresh, but with just<br />

enough biscuity richness to add real complexity.<br />
