POLICIES FOR CATERING<br />

CATERING ORDER CUT-OFFS<br />

To ensure optimal selection and the best possible<br />

service, please book events at least two weeks in<br />

advance.<br />

Catering requests received less than seven days out<br />

will be accommodated to the best our abilities. An<br />

additional labor charge may be incurred if order is<br />

within 72 hours of delivery time and confirmed due to<br />

current labor rules pertaining to the Chicago’s Fair<br />

Work Week Ordinance.<br />

EMS ON-LINE ORDERS<br />

Orders put into EMS directly by the booking client will<br />

be reviewed and approved by NU Kellogg Catering.<br />

Additional costs may be incurred based on the event<br />

style and added to the event order. The updated<br />

event order will be returned to the booking client for<br />

approval prior to execution.<br />

GUEST COUNTS/CONFIRMATION<br />

All guest count confirmations must be sent three<br />

business days prior to the event. Any count change<br />

closer than three days will be accommodated when<br />

possible. Orders are not confirmed without an<br />

approved and signed BEO.<br />

BILLING/PAYMENT<br />

Form of payment (chart string) is required at time<br />

of booking and to confirm your order. Orders are not<br />

confirmed without payment information.<br />

SPECIAL DIETS<br />

All special dietary requests must be made when<br />

placing the order. Diners requiring more information<br />

can talk to an onsite manager.<br />

All food - allergic individuals must be aware that<br />

NU Catering handles and prepares egg, milk, wheat,<br />

shellfish, fish, soy, peanut and tree nut products,<br />

sesame products and other potential allergens in the<br />

production areas of our facility.<br />

CANCELLATION<br />

Cancellations and charges will follow these guidelines:<br />

• Five days or more prior to catering request –<br />

no charge*<br />

• Four days prior – 25% of total confirmed<br />

catering costs *<br />

• Three days prior – 50% of the total confirmed<br />

catering costs*<br />

• Two days prior to catering request – 75% of<br />

total confirmed catering costs*<br />

• 24 hours or less – 100% of the total confirmed<br />

catering costs<br />

Specialty items unique to your event may be paid at<br />

100% depending on the time frame of cancellation.<br />

*Labor may be charged to be in compliance with<br />

Chicago’s Fair Work Week Ordinance.<br />

SET-UP & STAFFING<br />

Service staff costs will be applied to events where<br />

personnel is needed on-site during the event. Events<br />

utilizing china will always require on-site service staff.<br />

All service staff requires a four-hour minimum per<br />

industry standard. NU Kellogg Catering will determine<br />

the amount of service staff required for an event.<br />

Weekend events will require an additional labor charge.<br />

Events where culinary staff is needed on-site,<br />

including passed hors d’oeuvres, plated meals, action<br />

stations, etc. will incur Culinary Staffing charges.<br />
