Rob’s a cut above the rest<br />

YOUNG Cleveland butcher Rob Wright has been named the <strong>Australian</strong><br />

<strong>Meat</strong> <strong>Industry</strong> <strong>Council</strong> (AMIC) Apprentice of the Year.<br />

In the competition finals at the RNA Showgrounds <strong>Meat</strong> Hall, seven<br />

apprentices put their skills to the test.<br />

Each completed theory then practical exams, before being driven to<br />

the RNA show where they prepared value-added meals and prepared<br />

a rump tray for display.<br />

A big crowd gathered to encourage the apprentices as they<br />

showcased their trade for spectators and employers.<br />

Rob, of Cleveland Butchery, was announced the winner at a black tie<br />

awards dinner last week at the Royal on the Park in Brisbane.<br />

He received a trophy, which is on display at Cleveland Butchery.<br />

(next to Coles).<br />

Rob will now travel interstate to compete in the National<br />

Apprentice of the Year Competition.<br />

All the staff at Cleveland Butchery would like to extend big<br />

congratulations to Rob on this fantastic achievement.<br />

SHE is a young, vibrant cook who blends<br />

mangoes, sweet chilli and many other exotic<br />

flavours into her meals – not what you would<br />

expect behind the glass of a butchery.<br />

Ziser has been cooking up a storm since 2007,<br />

bringing zesty flavours to the Southern Downs<br />

community and has been noticed Queensland wide.<br />

Her new addition to the trophy cabinet was an<br />

Australia <strong>Meat</strong> <strong>Industry</strong> <strong>Council</strong> Awards<br />

Outstanding Achiever of the Year trophy after<br />

a gala awards night last weekend.<br />

Her managers Grant and Janette Lollback were very<br />

proud but not surprised about the important<br />

addition to their business being another big winner.<br />

“It was justification for all the hard work that<br />

she does that no-one else sees, she really<br />

deserved it,” Mrs Lollback said.<br />

“It is really encouraging to see young people<br />

doing so well in the meat industry especially<br />

a young female.”<br />

Mrs Lollback said they nominated her for the<br />

award focusing what she has achieved this<br />

year and the significant contribution it has<br />

brought to their over all business.<br />

This year in the Butchers Choice Queensland titles<br />

competition Miss Ziser won the casserole section<br />

and placed second in the wet dish section.<br />

At the Butchers Choice Competition for the<br />

outback region she won the wet dish section<br />

and the casserole section as well as placing third<br />

in the wet dish section and the pie section.<br />

Mrs Lollback said due to her success Miss Ziser is<br />

now supplying an additional 60 prepared meals<br />

to a supermarket in Toowoomba on top of the<br />

usual products made for sale and special orders.<br />

Far Northern butchers John and Suzie Clarke started<br />

experimenting with gourmet sausage recipes about 15 years ago<br />

when John’s mother moved to the Far North from Melbourne.<br />

Her gluten intolerance and appetite for the southern city’s posh<br />

nosh drove John to the butcher’s block, where he started adding to<br />

his humble range of sausages.<br />

Now his gourmet creations have snagged him a place in the<br />

<strong>Australian</strong> <strong>Meat</strong> <strong>Industry</strong> <strong>Council</strong>’s hall of fame.<br />

John and Suzie’s Bayview Heights butchery is the third butcher shop<br />

in the country - and the first in Queensland - to receive the<br />

council’s top honour.<br />

“We were very happy when we got the call,” Mrs Clarke said.<br />

“We’re the only butchers in the state to have won three national awards and<br />

now we have the hall of<br />

fame trophy too, which is<br />

something that not many<br />

other butchers can say.”<br />

The Clarkes started with<br />

a range of two or three<br />

original sausage flavours,<br />

but now their fridges are<br />

stocked with exotic<br />

combinations including<br />

sweet chilli chicken and<br />

coriander, and honey,<br />

lamb and rosemary.<br />

“She provides over and above the basic meat<br />

products in our counter,” Mrs Lollback said.<br />

“We have had many comments on her extra<br />

detail she puts into every meal.”<br />
