On behalf <strong>of</strong> the International Olympic Committee,<br />

I should like to welcome Volume VII<br />

<strong>of</strong> the Encyclopaedia <strong>of</strong> Sports Medicine series.<br />

This new volume addresses nutrition in sport.<br />

Emphasis is given to the role <strong>of</strong> proper nutrition<br />

in enhancing good health, well being and<br />

the performance capacity <strong>of</strong> men and women<br />

athletes.<br />

I should like to thank all those involved in the<br />

preparation <strong>of</strong> this volume whose work is highly<br />

respected and appreciated by the whole Olympic<br />

Family.<br />

In planning the year-round conditioning programme<br />

and making the final preparations for<br />

competition, each athlete must carefully consider<br />

food intake in order to ensure that all tissues and<br />

body systems have available the essential elements<br />

for the provision <strong>of</strong> energy and proper<br />

function. Proper nutrition is also essential for<br />

maintenance <strong>of</strong> a body mass and composition<br />

appropriate to each sport event.<br />

The new volume, Nutrition in Sport, provides a<br />

wealth <strong>of</strong> information on the relationship <strong>of</strong> the<br />

metabolism <strong>of</strong> carbohydrates, fats and proteins<br />

as well as the important involvement <strong>of</strong> vitamins<br />

and minerals to success in sports performance.<br />

Special consideration is given to optimal performance<br />

in specific sports events. Emphasis is<br />

given to the role <strong>of</strong> proper nutrition in enhancing<br />

good health, well being and the performance<br />

capacity <strong>of</strong> men and women athletes. The editor,<br />

Pr<strong>of</strong>essor Ronald J. Maughan, has recruited over<br />

60 <strong>of</strong> the world’s leading nutritionists and physiologists<br />

to participate in this project. On behalf<br />

<strong>of</strong> the International Olympic Committee and its<br />

Medical Commission I should like to extend our<br />

sincere appreciation to the members <strong>of</strong> our Subcommission<br />

on Publications in the Sport Sciences<br />

and to Blackwell Science, who have made the<br />
