In a small bowl combine apple, brown sugar, cinnamon, graham cracker crumbs and pecans. Remove wrap and sprinkle apple mixture over the risen dough. Bake at 350° 20-25 minutes or until well browned. Combine one packet of cream cheese frosting with the caramel topping. Drizzle over top of apple pie. Using a fl oured pizza cutter, cut widthwise into 2-inch strips, then cut diagonally into 2-inch strips, forming diamond shapes. Place 2 inches apart on baking sheets coated with cooking spray. Bake at 400° F for 8-10 minutes or until lightly browned. Remove to wire racks. For glaze, in a small bowl, combine the confectioners’ sugar, coconut extract and enough remaining milk to achieve desired consistency, drizzle over scones. Serve scones warm. Yield 1-1/2 dozen.
