DUCHESSE SWEET POTATOES<br />

2 pounds sweet potatoes<br />

2 oz whole butter<br />

TT salt<br />

TT pepper<br />

1 T Cinnamon<br />

3 T Dark brown sugar<br />

1 egg<br />

2 egg yolk<br />

1/2 gallon water<br />

Makes 10 servings<br />

• Pre heat oven to 375ºF or 190ºC<br />

• Have a parchment paper lined sheet pan and a piping bag with a<br />

star tip ready to go<br />

• Peel and cube the potatoes and add them to the water and bring to<br />

a boil, cook till fork tender<br />

• Once the potatoes are done place potatoes, butter, cinnamon, sugar,<br />

salt, pepper, eggs and egg yolks into the colander/sieve attachment<br />

and mix.<br />

• Place milled potatoes into the piping bag and pipe, using a circular<br />

pattern, potatoes into mountain shape designs.<br />

• Brush with butter and bake for about 10 minutes or until browning<br />

starts<br />

PERFECT HAMBURGERS<br />

2 pounds meat (ribeye or tenderloin is the best to use)<br />

2 T salt<br />

TT pepper<br />

1 tsp garlic minced<br />

1 T chili powder<br />

2 pieces bacon diced<br />

1 T Worcestershire sauce<br />

1 slice white bread shredded<br />

Makes six patties<br />

• Place all the ingredients in the sausage/kebbe maker and grind using<br />

the large holes, then grind again using the smaller holes.<br />

• Once ground, shape the meat into patties and grill or pan fry<br />

• Venison can be used instead of beef but you will need to use more<br />

bacon to add fat to make it nice and juicy<br />
