Quello delle birre è un universo smisurato, ma composto<br />
da una struttura molto semplice, fatta di 4 elementi<br />
naturali: acqua, orzo, lievito e luppolo.<br />
Acqua. La sua presenza nella birra finita oscilla fra il<br />
90 e il 93%. Dev’essere pura, di sorgente, ricca di<br />
sostanze minerali e organiche. Le birre più famose<br />
del mondo devono la propria originalità e rinomanza<br />
alla speciale natura delle acque con cui vengono<br />
preparate.<br />
Cereali. Sono l’elemento base per la produzione<br />
della birra. Il più utilizzato è l’orzo, graminacea originaria<br />
dell’Asia occidentale, anche se non l’unico<br />
(vengono impiegati pure frumento, riso, segale e<br />
mais). Da esso si ricava il malto d’orzo, sostanza base<br />
ottenuta dalla prima lavorazione di questo cereale.<br />
Lievito. Sono microscopici funghi unicellulari, ricchi<br />
di vitamine ed enzimi, che trasformano gli zuccheri<br />
in alcol e anidride carbonica. Appartengono a due<br />
famiglie principali: saccharomyces carlsbergensis o<br />
uvarum, usato per birre a bassa fermentazione, e<br />
saccharomyces cerevisiae, per quelle ad alta fermentazione.<br />
Luppolo. È una grande pianta rampicante, i cui fiori<br />
femminili contengono la luppolina, sostanza aromatica<br />
e resinosa che conferisce alla birra il caratteri-<br />

The universe of beer is vast. However,<br />
it is based on a very simple structure,<br />
composed of four natural ingredients:<br />
water, cereals, yeast and hops.<br />
Water. Its presence in beer ranges from<br />
90% to 93%. It must be pure, it must<br />
originate from a spring and it must be rich<br />
in mineral and organic substances. The<br />
world’s most renowned beers owe their<br />
character and fame to the special nature<br />
of the water with which they are brewed.<br />

Cereals. These are the basic element for<br />
producing beer. The most widely used is<br />
barley, a grass originating from western<br />
Asia, although others are also used (such<br />
as wheat, rice, rye and corn). It is from<br />
the first stage of processing of this cereal<br />
that barley malt is obtained.<br />
Yeast. These are microscopic singlecelled<br />
fungi, rich in vitamins and<br />
enzymes, that turn sugar into alcohol and<br />
carbon dioxide. Yeast is subdivided into<br />
two main families: saccharomyces<br />
carlsbergensis (uvarum) used for brewing<br />
bottom-fermented beer, and<br />
stico gusto amaro. I componenti più importanti del<br />
luppolo sono i tannini, gli oli e gli acidi amari, ottimi<br />
antisettici e conservanti.<br />
Modalità di produzione. Esistono due grandi tipologie<br />
di birra: le birre ad alta fermentazione e quelle<br />
a bassa fermentazione. Questi due processi, e<br />
quindi il tipo di birra ottenuta, sono determinati<br />
dalle caratteristiche del lievito impiegato, che agisce<br />
a diverse temperature.<br />
L’alta fermentazione è sviluppata dal ceppo fungino<br />
saccharomyces cerevisiae, che svolge il proprio<br />
ruolo fra i 16 e i 23° C. Durante il processo di fermentazione,<br />
questi lieviti salgono in superficie, trasformando<br />
lo zucchero in alcol e producendo<br />
anidride carbonica. L’alta fermentazione è il metodo<br />
più antico e dà origine a birre corpose, dal gusto intenso<br />
e aromatico, tipicamente inglesi, raggruppate<br />
fra le Ale.<br />
La bassa fermentazione è sviluppata dal ceppo fungino<br />
saccharomyces carlsbergensis (o uvarum), che<br />
si attiva fra 5 e 8° C. I lieviti lavorano in recipienti<br />
chiusi (lager) depositandosi sul fondo, in modo che<br />
l’anidride carbonica rimanga nella birra. Questo metodo,<br />
diffusosi con lo sviluppo del controllo delle<br />
temperature, permette di produrre birre dal gusto<br />
leggero e fragrante. n<br />

Hops. It’s a large vine whose female<br />
flowers contain lupulin, an aromatic,<br />
resinous substance that gives beer its<br />
distinctive bitter taste. The most important<br />
substances found in hops are tannins, oils<br />
and bitter acids, which are excellent<br />
natural antiseptics and preservatives.<br />
Two main methods exist for brewing<br />
beer: top fermentation and bottom<br />
fermentation. These two processes, and<br />
the resulting beer, are determined by<br />
the characteristics of the type of yeast<br />
used, which acts at different<br />
temperatures.<br />
Top fermentation is caused by the<br />
saccharomyces cerevisiae yeast, which is<br />
active at a temperature of between 16<br />
and 23° C. During the fermentation<br />
process, this yeast rises to the surface,<br />
turning sugar into alcohol and<br />
producing carbon dioxide. Top<br />
fermentation is the oldest brewing<br />
method and results in full-bodied beers<br />
with an intense and aromatic taste, such<br />
as British Ales.<br />

Bottom fermentation is caused by the<br />
saccharomyces carlsbergensis (uvarum)<br />
yeast, which is active at a temperature of<br />
between 5 and 8° C. In this case the yeast<br />
acts in closed containers (lager), where it<br />
deposits at the bottom, allowing the<br />
carbon dioxide to remain in the beer. This<br />
method, which became widespread when<br />
it became possible to control brewing<br />
temperatures, is used to brew beers with<br />
a delicate and fragrant taste. n<br />
