TYPICAL CUISINE AND FOOD PRODUCTS<br />
Traditional <strong>Cadore</strong> cooking is based around the humble, yet deliciously<br />
genuine produce to be found locally. The dishes you will find in the numerous<br />
refuges, restaurants and hotels in the valley are often those traditionally<br />
enjoyed locally on special occasions. First courses include casunziei<br />
(triangular ravioli filled with red beet and potatoes, served with melted butter<br />
and spersada, a kind of smoked ricotta), canedi (a kind of large gnocchi) and<br />
minestra de fasuoi (bean soup); main courses generally feature game, cured<br />
meats and cheeses (unfailingly accompanied with polenta or potatoes); while<br />
typical sweets include zopes (fritters sprinkled with sugar), péta (made with<br />
dried figs and grapes) and crafin a la sanvidota (a sort of sweet doughnut).<br />
Well worth a mention is the typical produce of the valley, such as the beef<br />
from Vodo di <strong>Cadore</strong>, horse-meat from San Vito di <strong>Cadore</strong> and cabbage from<br />
Vinigo di <strong>Cadore</strong>. Cheese is of fundamental importance in the local diet, and<br />
here you will find plenty of restaurants, shops, etc. that are part of the Belluno<br />
Dolomites cheese and flavours route.<br />
Das Schigebiet <strong>Valboite</strong> in San Vito di <strong>Cadore</strong>, am Fuß des Monte Antelao,<br />
gehört gemeinsam mit Auronzo, Misurina und Cortina D‘Ampezzo zu einer<br />
großen Schiregion, die Teil des <strong>Dolomiti</strong> Superski ist. Ein einziger Schipass<br />
gilt für die ganze Region. Das Boite Tal mit seinen 16 km Pisten (fast zu 100 %<br />
mit Beschneiungsanlagen versorgt) hat für seine Gäste Schi- und Snowboardschulen,<br />
in denen ausgebildete Schilehrer Anfängern und Fortgeschrittenen<br />
Unterricht erteilen. Das Gebiet ist ideal für einen Familienurlaub. Für Kinder gibt<br />
es ein ganz spezielles Areal, auf dem sie Schi fahren lernen und sich im Schnee<br />
vergnügen können. Natürlich kann man hier auch alle Wintersportausrüstungen<br />
kaufen oder leihen. Um zu den Liftanlagen in San Vito und Cortina d‘Ampezzo<br />
zu gelangen, gibt es einen Schibus, der für alle Besitzer eines Schipasses kostenlos<br />
ist. Mit der <strong>Dolomiti</strong> Card haben die Gäste im Winter 2009 wieder die<br />
Möglichkeit, die Schitour in Cortina d’Ampezzo und in <strong>Cadore</strong> zu unternehmen;<br />
speziell dazu werden Unterkünfte zu vergünstigten Preisen geboten.<br />
NICHT NUR SCHILAUF<br />
Das Boite Tal hat einmalige Routen für Schitourenläufer, besonders im Gebiet<br />
San Vito di <strong>Cadore</strong> und auch für Schneeschuhwanderungen, bei denen man<br />
den Zauber der Dolomiten erlebt. Zahlreiche geführte Wanderungen werden<br />
vom Tourismuskonsortium organisiert. Und in Borca und Vodo di <strong>Cadore</strong> kann<br />
man Eis laufen. Wirklich amüsant für Groß und Klein sind auch Schlittenfahrten.<br />
Nach einem erlebnisreichen Tag kann man im Wellness Center im Centro<br />
Vacanze in Borca di <strong>Cadore</strong> ausspannen, und sich in einem erholsamen<br />
Ambiente mit herrlichem Blick auf den Monte Pelmo so richtig erholen.<br />
KULINARISCHES UND HEIMISCHE PRODUKTE<br />
Die Küche in der Region <strong>Cadore</strong> ist traditionell „arm“ und verwendet einfache,<br />
heimische Zutaten. Die Gerichte, die in den vielen Berghütten, Restaurants<br />
und Hotels serviert werden, sind meist die „Festtagsrezepte“: „Casunziei“,<br />
dreieckige Nudeltaschen gefüllt mit roten Rüben und Kartoffeln und<br />
übergossen mit zerlassener Butter, und die „Spersada“, geräucherter Quark,<br />
die „Canedi“ (Knödel) und die „Minestra de fasuoi“ (Bohnensuppe) sind die<br />
Vorspeisen; Wildgerichte, Wurst und Käse (immer mit Polenta oder Kartoffeln<br />
serviert) gibt es als Hauptspeise, und danach die „Zopes“, „Péta“ oder „Crafin<br />
a la sanvidota“. Andere lokale Spezialitäten aus dem Tal sind das Rindfleisch<br />
aus Vodo di <strong>Cadore</strong>, das Pferdefleisch aus San Vito di <strong>Cadore</strong> und der<br />
Grünkohl aus Vinigo di <strong>Cadore</strong>. Überall serviert wird Käse, die wichtigste Kost<br />
in <strong>Cadore</strong>. Und deshalb gibt es hier auch einige Betriebe, die zur Käsestrasse<br />
der Bellunesischen Dolomiten gehören.<br />
