Casuistic and methodology: the nutritio<strong>na</strong>l consumption of 128 adolescents of a school of middleclass society of São Paulo was evaluated. For this evaluation the method of 24 h registration and photographicdocumentation was applied in or<strong>de</strong>r to estimate the portions. The consumption of fat in s<strong>na</strong>cks in a percentagehigher than 30% was consi<strong>de</strong>red to be excessive. Results: the s<strong>na</strong>cks constituted 30.5 % of daily caloricconsumption for males and 34.1% for females. There was excessive fat consumption in 36% of the young ma<strong>na</strong>nd 51.3% of the young woman. Conclusion: the consumption of s<strong>na</strong>cks provi<strong>de</strong>s the major energy supplywhen compared to the main meals; adolescents eat often s<strong>na</strong>cks as nutritio<strong>na</strong>l consumption, the nutritio<strong>na</strong>lquality of these consumed s<strong>na</strong>cks is i<strong>na</strong><strong>de</strong>quate, above all due to increased quantity of lipids. The implicationof these bad habits for health suggests the adoption of prophylactic and corrective measures, with the aim ofestablishing the consumption of the main meals -breakfast, lunch and dinner.Keywords: Nutrition assessment. Food consumption.ResumenObjetivo: evaluar el papel <strong>nutricio<strong>na</strong>l</strong> <strong>de</strong> las meriendas en la alimentación <strong>de</strong> <strong>adolescentes</strong> <strong>de</strong> clase media.Casuística y metodología: fue evaluado el consumo alimentar <strong>de</strong> 128 <strong>adolescentes</strong> <strong>de</strong> u<strong>na</strong> escuela <strong>de</strong> clasemedia <strong>de</strong> la ciudad <strong>de</strong> San Pablo. Para evaluar se aplicó el método recordatorio <strong>de</strong> 24 h y el registro fotográfi copara estimativa <strong>de</strong> las porciones. La ingestión <strong>de</strong> gordura en la merienda en porcentaje superior a 30% fueconsi<strong>de</strong>rada excesiva. Resulta<strong>dos</strong>: las meriendas constituyeron 30,5% <strong>de</strong> la ingestión <strong>de</strong> calorías diarias para elsexo masculino y 34,1% para el sexo femenino. Hubo ingestión <strong>de</strong> gordura excesiva en 36% <strong>de</strong> los muchachosy 51,3% <strong>de</strong> las jóvenes. Consumo<strong>de</strong> alimentos.IntroduçãoConsi<strong>de</strong>ram-se <strong>lanches</strong> os episódios <strong>de</strong> ingestãoalimentar realiza<strong>dos</strong> entre as três principais refeiçõesdo dia, sendo esta prática alimentar uma característicacomum durante a adolescência 1-3 . O comportamentoalimentar <strong>dos</strong> <strong>adolescentes</strong> é influenciado pelas necessida<strong>de</strong>snutricio<strong>na</strong>is e energéticas, pelo hábito alimentarfamiliar, pelo vínculo social com seus pares e pelaimagem corporal 4 . Estes dois últimos fatores po<strong>de</strong>mlevar o adolescente a uma prática alimentar i<strong>na</strong><strong>de</strong>quada,caracterizada por: omissão <strong>de</strong> refeições, freqüenteconsumo <strong>de</strong> alimentos fora <strong>de</strong> casa (geralmente ricosem lipídios e carboidratos simples), consumo excessivo<strong>de</strong> refrigerantes, ingestão <strong>de</strong> alimentos muito energéticose insufi ciência <strong>de</strong> <strong>de</strong>termi<strong>na</strong><strong>dos</strong> nutrientes 5-11 . Acontribuição <strong>dos</strong> <strong>lanches</strong> no total <strong>de</strong> nutrientes consumi<strong>dos</strong>diariamente constitui, habitualmente, <strong>de</strong> 25 a50% da <strong>dieta</strong> <strong>dos</strong> jovens 12-15 . O consumo <strong>de</strong> <strong>lanches</strong>é um <strong>dos</strong> fatores preditivos do excesso <strong>de</strong> peso entreos <strong>adolescentes</strong> 2 e po<strong>de</strong> <strong>de</strong>termi<strong>na</strong>r, em longo prazo, o<strong>de</strong>senvolvimento <strong>de</strong> doenças crônicas, como diabetes,obesida<strong>de</strong> e aterosclerose 9 . Isto se <strong>de</strong>ve à manutençãodas preferências alimentares estabelecidas durante aadolescência <strong>na</strong> vida adulta 16,17 .Devido à influência do meio sobre os hábitos alimentares,foi realizado um estudo transversal, para avaliar aimportância <strong>dos</strong> <strong>lanches</strong> em um grupo <strong>de</strong> <strong>adolescentes</strong><strong>de</strong> classe média urba<strong>na</strong> da cida<strong>de</strong> <strong>de</strong> São Paulo.Casuística e méto<strong>dos</strong>O estudo foi aprovado pelo Comitê <strong>de</strong> Ética emPesquisa da Faculda<strong>de</strong> <strong>de</strong> Saú<strong>de</strong> Pública da Universida<strong>de</strong><strong>de</strong> São Paulo (FSP-USP), pela direção da27
