Rezept von Sternekoch Stefan Hermann Rehrücken mit Pilzen und Kohlrabi-Püree Zutaten für 4 Personen: 1 Strang Rehrücken (600 bis 800 g, ausgelöst), 2 EL Don Carlos natives Olivenöl extra <strong>VOM</strong> <strong>FASS</strong>, Salz, Pfeffer, 1 EL Butter, 3-5 Wacholderbeeren, 2 Zweige Rosmarin. 300 g Pilze (Pfifferlinge, Steinpilze, Champignons, etc.), 1-2 EL Don Carlos natives Olivenöl extra <strong>VOM</strong> <strong>FASS</strong>, 5 Schalotten, 200 g Sahne, 1 EL Kalbsjus, 2 EL gehackte Blattpetersilie. Den Rehrücken parieren, portionieren und mit Salz und Pfeffer würzen, dann im Olivenöl anbraten. Bei 160 °C im Ofen für ca. 4 bis 6 Minuten garen. In einer Pfanne die Butter bräunen, die Wacholderbeeren und Rosmarin dazugeben. Das Rehfleisch hineinlegen, immer wieder mit dem Bratenjus beträufeln und im Anschluss das Fleisch in Alufolie gewickelt ruhen lassen. Die Pilze säubern (falls aus der Dose, dann gut abtropfen lassen) und in einer Pfanne mit dem Olivenöl anbraten. Die gewürfelten Schalotten dazugeben und mit Salz und Pfeffer würzen. Die Sahne aufgießen, Kalbsjus hinzugeben und einköcheln lassen. Blattpetersilie zugeben und mit Salz abschmecken. Die Pilze zusammen mit dem Fleisch servieren. Für das Kohlrabi-Püree: 3 Kohlrabi, 300 g Sahne, Salz, Cayennepfeffer, Butter. Die Kohlrabi schälen, in 2 cm große Würfel schneiden und in einem Topf mit Wasser kochen. Kurz vor Ende der Garzeit das Wasser abgießen, die Sahne hinzufügen und garkochen. Zum Schluss pürieren, passieren und mit den Gewürzen abschmecken und etwas Butter unterrühren. Recipe by Michelin Star Chef Stefan Hermann Venison with Mushrooms and Kohlrabi Puree Ingredients: Serves 4 For the Venison: 1 piece of venison (600-800 g), 2 tablespoons <strong>VOM</strong> <strong>FASS</strong> Don Carlos Extra Virgin Olive Oil, <strong>VOM</strong> <strong>FASS</strong> Salt & Pepper, 1 tablespoon butter, 3-5 Juniper berries or allspice, 2 sprigs of Rosemary, 300 g mushrooms (chanterelles, porcini mushrooms, etc.), 1-2 tablespoons <strong>VOM</strong> <strong>FASS</strong> Don Carlos Extra Virgin Olive Oil, 5 peeled shallots, diced, 200 g cream, 1 tablespoon veal jus, 2 tablespoons flat-leaf parsley. For the Kohlrabi Puree: 3 Kohlrabi (turnip cabbage), 300 g cream, <strong>VOM</strong> <strong>FASS</strong> Salt & Pepper, cayenne pepper, butter. Peel the Kohlrabi, cut it into 2cm/1” cubes and boil in water until tender. Shortly before the end of the cooking time, drain the water and add cream. Finish to cook until tender. Finally, mash, strain, and season. Directions: Remove fat, bones and sinews from the venison. Season with salt and pepper and sauté in oil. Transfer to the oven and cook at 160C/320F for 4 - 6 minutes. Heat some butter in a frying pan until brown and add herbs. Add the venison and continuously coat venison with the browned butter. Wrap the venison in aluminum foil and allow to rest before serving. Wash and clean the mushrooms and dry them on a paper towel. Then, sauté mushrooms with oil in a frying pan. Add the diced shallots, and season with salt and pepper. Pour in cream, add veal jus, and boil down everything. Add leaf parsley, and season to taste with salt and pepper. Serve the mushrooms with the venison. Wine Recommendation: Bourgogne Pinot Noir “Secret de Famille” – Maison Bichot, Art.12286 Recette du chef étoilé Stefan Hermann CHEVREUIL aux cèpes et purée de choux-raves Ingrédients : 1 filet de selle de chevreuil (600 à 800 g), 2 CS Don Carlos huile d´olive vierge extra, Sel, Poivre, 3-5 baies de genièvre 2 branches de romarin, 300 g de cèpes lavés, 5 échalotes épluchées, 200 g de crème, 1 CS de fond de veau, 2 CS persil plat, Huile d’olive vierge extra aux arômes de cèpes Préparation : Parer la selle de chevreuil, la détailler en morceaux, assaisonner ceux-ci et les faire revenir dans l´huile. Faire rôtir au four à 160 °C pendant 4 à 6 minutes. Ajouter un peu de l´huile d´olive vierge extra Don Carlos <strong>VOM</strong> <strong>FASS</strong> et ajouter les aromates. Y déposer le chevreuil et l‘arroser avec le jus de cuisson pendant toute la cuisson, puis laisser reposer. Nettoyer les cèpes, les rincer puis les laisser égoutter sur un torchon. Les faire revenir à la poêle avec de l‘huile. Ajouter les échalotes émincées, saler et poivrer. Verser la crème, ajouter le fond de veau et laisser réduire. Ajouter du persil plat et corriger l‘assaisonnement avec du sel et de l´huile d´olive vierge extra aux arômes de cèpes. Purée de choux-raves : 3 choux-raves, 300 g de crème, Sel, Piment de Cayenne, Beurre Éplucher les choux-raves, les détailler en cubes de 2 cm de côté et les faire cuire. Quelques instants avant qu‘ils ne soient cuits, vider l‘eau de cuisson, ajouter la crème et laisser mijoter jusqu’à ce qu’ils soient tendres. Enfin, réduire le chou en purée, passer au chinois et ajuster l‘assaisonnement. Suggestion de vin : Bourgogne Pinot Noir « Secret de Famille » – Maison Bichot, art. 12286
