Peanut Brittle<br />

3 cups sugar<br />

1 cup karo syrup<br />

1 cup water<br />

1 tbsp vanilla<br />

2 tsp soda<br />

2 tbsp butter<br />

¼ tsp salt<br />

2 cup raw peanuts<br />

Mix sugar, syrup and water in medium sauce pan. Cook on<br />

medium until it comes to a boil. Insert candy thermometer. Stir<br />

constantly until 245. Add peanuts and stir until thermometer<br />

reaches 310. Add remaining ingrediants. Mix well and quickly<br />

spread onto 2 large cookie sheets. Cool completely, break and<br />

enjoy.<br />

Pot Pie<br />

2 pie crusts<br />

1/3 cup margarine<br />

1/3 cup chopped onion<br />

1/3 cup all purpose flour<br />

¼ tsp pepper<br />

1 ½ cup chicken broth<br />

2/3 cup milk<br />

2 ½ cup cooked chicken chopped in cubes<br />

2 cups frozen mixed vegatables<br />

Heat oven to 425. Prepare pie crust as directed on package for<br />

two crust pie, using 9 inch pie plate. In medium sauce pan, melt<br />

margarine over medium heat. Add onion cook for 2 minutes or<br />

until tender. Stir in flour and pepper until well blended. Stir in<br />

broth and milk. Cook stirring constantly until bubbly and thickened.<br />

Add chicken and mixed vegetables. Remove from heat.<br />

Spoon mixture into crust lined pan. Top with second crust and<br />

flute. Cut in several places. Bake at 425 for 30 – 40 minutes. Let<br />

stand for 5 minutes before serving. 6 servings.<br />

6 potatoes, medium cubed<br />

1 large chopped onion<br />

1 cup chopped celery<br />

1 can cream of chicken soup<br />

1 chopped carrot<br />

Salt to taste<br />

Top with shredded cheese<br />

Easy Peanut Butter Fudge<br />

1 jar peanut butter<br />

1 can white cake icing<br />

Empty both into bowl. Microwave until melted, stir, empty<br />

onto buttered plate<br />

Peach Banana Bread<br />

2/3 cup shortening<br />

1 cup sugar<br />

2 eggs<br />

1 ½ cups mashed bananas<br />

3 ½ cups self rising flour<br />

2 cups peach preserves<br />

1 cup chopped walnuts<br />

Heat oven to 350. Grease two loaf pans. In large bowl, combine<br />

shortening and sugar until well mixed. Add eggs one at a time<br />

beating well after each one. Add bananas, flour, preserves and<br />

walnuts. Mix well. Divide into pans, bake for 55 – 70 minutes or<br />

until toothpick is clean. Let cool in pans for 15 minutes. Remove<br />

from pans and cool completely. Makes 2 loaves.<br />
