Mirhami <strong>2030</strong><br />

In 2004, sales from food services— a wide range <strong>of</strong> businesses that includes restaurants,<br />

cafeterias, street vendors, caterers and drinking places— totaled nearly $37 billion. Despite<br />

increased sales, pr<strong>of</strong>it margins declined from 5.8% in 2001 to 3.3% in 2003. The reason for the<br />

shrinking pr<strong>of</strong>its was that expenses— mainly food and labour costs— was rising faster than<br />

revenues.<br />

The food services industry employs more than one million Canadians, and almost one­half <strong>of</strong><br />

them are aged 15 to 24. In fact, nearly one in five young workers is employed in food services.<br />

With the popularity <strong>of</strong> drive­through, take­out and delivery services, the percentage <strong>of</strong> meals<br />

prepared in restaurants but eaten elsewhere increased to 61% <strong>of</strong> all food services meals in 2004,<br />

up from 53% in 1994.<br />

Some more facts and figures about food services:<br />

§ On average, Canadian households visit a restaurant for a meal or snack 520 times a year.<br />

§ More than 90,000 food services and drinking places operate in Canada— about one for<br />

every 350 Canadians.<br />

§ Canadian households spend an average <strong>of</strong> 30% <strong>of</strong> their food budget on food services,<br />

compared with 42% for American households.<br />

§ The average check size at a restaurant is $6.12, including taxes but excluding tips.<br />

§ The most popular food and beverage at Canadian restaurants are French fries and<br />

c<strong>of</strong>fee.<br />

2.6.2 Russia<br />

The turnover <strong>of</strong> food processing has continuously increased during last few years. The value <strong>of</strong><br />

investment for food industry is on the second place after oil and gas industry. <strong>Food</strong> companies<br />

have modernized their production and purchased modern technology. Due to this investment<br />

Russian food industry begins to be on equal level with the foreign industry. Net income <strong>of</strong><br />

Russians have grown already nine years in row which fact has a good impact on consumer good<br />

market. In spite <strong>of</strong> growing own production need to import food products is large. However<br />

from 2005 to 2006 the growth <strong>of</strong> imports <strong>of</strong> foodstuffs decreased from 25,6 % to 23,9 %. 23 <strong>of</strong><br />

Russian’s food companies are on top 300 biggest companies in the country. The biggest is<br />

Wimm­Bill­Dann (dairy company). Brewing industry is mostly owned by foreign companies,<br />

the biggest <strong>of</strong> them is Baltika.<br />

2.6.3 Germany<br />

The value <strong>of</strong> Germany’s domestic food and beverage industry was 106,1 billion Euro (+1,8 %)<br />

and exports 31,1 billion Euro (+9.2 %). The food sector is one <strong>of</strong> the most important<br />

industries in Germany. Its 5900 companies are engaged in intense competition as the high<br />

degree <strong>of</strong> maturation. The sector generates over 23 % <strong>of</strong> its turnover abroad. The share <strong>of</strong> meat<br />

products is 22,8 % <strong>of</strong> total food industry turnover, dairy 16 %, alcohol beverages 9,3 %,<br />

confectionery 8,4 % and bakery products 8,3 % in 2006. <strong>Food</strong> production and food imports<br />

grew strongly in 1990’s in Germany.<br />

2.6.4 China<br />

<strong>Food</strong> industry output 2003 was 1.24 trillion Yuan (149.4 billion USD), which meant + 20 %.<br />
