Foodie Rich Tango-Lowy helps you search the aisles
No one really knows why they’re called
strawberries. Some say it’s because the
fields were bedded with straw, but there’s no
evidence strawberry fields are or ever were
bedded with straw. Some say it’s because
unchecked strawberries grow as if they’re
“‘strewn”‘ across a field, but that seems a
bit of a stretch as well. Whatever the long
lost reason, strawberries are strawberries
and the etymology is lost to us. Even the origin
is rather fuzzy. Strawberries have grown
in many parts of the world for thousands of
years; there’s evidence that Romans cultivated
them as far back as 200 BC.
The bright sweet strawberry we’ve all
come to know and love is a more modern
affair. When Europe first knocked on America’s
door they found the locals enjoying
sweet delicious strawberries (variety F. virginiana).
They brought cuttings back to the
Old Country for study and cultivation. In
the early 1700s a French soldier returned to
France with strawberry cuttings from Chile
(F. chiloensis). The two hybridized, resulting
in the great grandaddy of today’s sweet
fragrant fruit.
The largest, sweetest strawberries you’ll
ever taste are grown in the rich fields in and
around Santa Maria, Calif., as any fortunate
soul who’s experienced them will attest.
Big as your fist and like eating sugar. The
annual Santa Maria Valley strawberry festival
is held in late April and it will change
your view of strawberries forever.
That said, New Hampshire farmers have
been growing some mighty fine strawberries
this year and I’ve been mightily partaking.
Strawberries
Strawberries and Chocolate
I’m a chocolatier and a purist. When
I want strawberries and chocolate I aim
for the most powerful flavor experience
I can create. Here it is.
Warm a cup or so of jam, preferably
apricot or raspberry, in a small saucepan
until it just begins to simmer. Stir in
a good drizzle of fruity red wine or port
and let cool about five minutes. Meanwhile,
wash the strawberries and dry
them well. Dip each strawberry in the
jam and set it on waxed paper to set up
for 15 or 20 minutes. Transfer the strawberries
to a beautiful platter and serve
with small chunks of very good very
smooth very dark chocolate such as
Valrhona, Scharffen-Berger, or El Rey.
(If you’re truly serious, seek out Valrhona’s
64 percent Manjari.)
for $10. Trinity High School is at 582
Bridge St. in Manchester. See www.
classicclambake.com for more on the
event.
